Effect of Steam-Dried Hizikia fusiformis Powder on the Rheological and Sensory Profile of Bread (자건(煮乾) 톳 분말 첨가가 제빵의 물성 및 관능품질에 미치는 영향)

  • To establish the optimum formular for processing bread with steam-dried Hizikia fusiformis flour(SHF), it was incorporated into wheat flour by the ratio of 0, 1, 3, 5 and 7% based on a flour weight. Evaluation was performed on the rheological and sensory profile of bread, such as specific loaf volume, water holding capacity(WHC) and height, appearance and Hunter's color value, mechanical texture properties, and sensory value. Increase in the addition of SHF led to the tendency that the expansive force of dough fermentation reduced, and an increase in the textural properties of bread. And cohesiveness, gumminess, and chewiness indicated the tendency of a little reduction as influenced by adding more dried Hizikia fusiformis powder. As for sensory properties and flavor components of the white bread, in case of color and flavor, more than 3% of increase in the addition of the dried Hizikia fusiformis powder led to a drop in preference, and more addition led to a fall in taste and softness. Overall, it was found that adding less than 3% of dried Hizikia fusiformis powder is proper for dough in breadmaking.

Research Trends in the Service Quality of Korean Restaurants - Centering on the Researches in Academic Journals from 2000 to 2008 - (국내 한식당의 서비스 품질과 관련된 연구 논문의 경향 분석 - 2000~2008년 학술지에 수록된 연구를 중심으로 -)

  • The purpose of this study is to study academic tendency in the researches on the service quality of Korean restaurants by analyzing the studies related to the service quality of Korean restaurants. As a result of this study, the studies related to the service quality of Korean restaurants, included in 7 academic journals selected, are totally 26 articles. Among them, there are 14 researches targeting medium-large size Korean restaurants with more than 100 seats. In the methodological aspect, the scales, which were used most frequently in measuring the service quality of Korean restaurants, were indicated to be SERVQUAL in Parasuraman et al.(1988), DINESERV in Stevens et al.(1995) and Brady & Cronin(2001)'s scale. Also, as a result of examining the tendency of researches related to the service quality in Korean restaurants in the contextual aspect, the interaction quality between employees and customers out of customers' perceived service quality was surveyed to have greater influence upon customers' behavioral reaction than the physical quality or technical quality. Consequently, in order to conduct an institutional research through examining the service quality in Korean restaurants, understanding the customers' perceived service quality needs to be implemented preferentially with a systematically verified scale. Moreover, such researches on the service quality of Korean restaurants appear to focus on specific subjects. Thus, in order to escape from this tendency, it is necessary to explore creative research subjects and design diversely and scientifically analytical methods.

The Influence of Career Barriers on College Students Majoring in Culinary Arts on Career Preparation Behavior - The Moderating Effect of Self-efficacy - (조리 전공 대학생이 지각하는 진로장벽이 진로준비행동에 미치는 영향 - 자기효능감의 조절효과를 중심으로 -)

  • The objective of this study is to investigate the influence of career barriers on college students majoring in culinary arts on career preparation behavior, and the moderating effect of self-efficacy between career barriers and career preparation behavior. For this purpose, the data was collected through a questionnaire survey from four hundred and eleven students majoring in culinary arts at colleges in South Korea. The data were analyzed by using factor analysis, reliability analysis, multiple regression analysis, and hierarchical analysis with SPSS 18.0. The results are as follows. Among the career barriers, the lack of job information and lack of interest had a significant negative influence on information gathering behavior, although physical inferiority had a significant positive influence on information gathering behavior. The lack of self-concept clarity and lack of job information had a significant negative influence on practical efforts, while conflicts with important others and physical inferiority had a significant positive influence on practical efforts. In addition, the lack of self-concept clarity, lack of job information, and lack of interest had a significant negative influence on tool preparation behavior. Pysical inferiority had a significant positive influence on tool preparation behavior. Self-efficacy showed a partial moderating effect between the lack of job information and tool preparation behavior. Managerial implications and limitations were also discussed.

Study on Culinary Educational Usefulness of Korean Style Jang-based Seasoning, Spices and Herb Mix Classification (한식 조리교육을 위한 한식양념장 분류체계의 타당성에 관한 연구)

  • This study sought to prove the validity of Hansik Yangnyomjang classification Korean culinary education. survey was conducted among Korean Cuisine professionals, culinary instructors, culinary professionals and potential students from various backgrounds. ata were collected by self-administered questionnaires and analyzed by reliability analysis, frequency analysis and t-test. any differences in terms of the validity of Hansik Yangnyomjang classification between groups based on their majors, teaching experiences, and knowledge of sauce classification. First, the result showed that fermented Jang is core element Korean cuisine. Second, Hansik Yangnyomjang classification needs to be organized around Balhyojang. Third, Hansik Yangnyomjang classification for beginners and foreigners who want to learn Korean Cuisine relatively easily. Finally, the term 'sauce' is not suitable for replacing Yangnyomjang.

Quality Characteristics of Sugar-snap Cookies by additions of Curcuma Longa L. Powder (강황분말을 첨가한 Sugar-snap cookies의 품질 특성)

  • The purpose of this study is to investigate the quality characteristics of sugar-snap cookies prepared with Curcuma Longa L. powder(0, 3, 6, 9, 12, 15%) substituted for flour. The pH of the dough of sugar-snap cookies ranged from 6.58 to 7.32, and their moisture contents ranged from 9.09% to 10.77%. The width and spread factor of sugar-snap cookies decreased significantly with increase in Curcuma Longa L powder content(p<0.05); Lightness decreased significantly as the Curcuma Longa L. powder content increased while redness and yellowness increased significantly(p<0.05). Hardness increased with more powder added, and sensory evaluation indicated that the samples with 6% of the powder received higher scores in terms of taste, color, flavor, texture and overall tastes. As a result, sugar-snap cookies with 6% of Curcuma Longa L. powder were valued as best.

A study on the Perception of Edible Insects and Edible Insect Foods of College Students Majoring in Culinary Arts

  • This study presents basic data that can be easily used in the field of cooking about edible insects which are future food and alternative food by investigating the perception of edible insects among culinary majors, who are potential consumers who can improve the utilization of edible insects. As a result, 79.0% of all subjects responded that they have heard of edible insects, and the methods of obtaining information on edible insects were 'friends, colleagues, family members, etc.' 76.8% had the experience of purchasing edible insects, and 71.9% of them purchased 'online' as the purchase method. The reason for purchasing edible insects was 'curiosity', and the purchase of edible insects in the form of 'food or food added' was the highest. In the future, 70.1% are willing to use edible insects, and in particular, the intention to participate in the 'development of new products using edible insects' was the highest. Therefore, in order to improve the utilization and consumption promotion of edible insects, which are emerging as future food resources, it is necessary to develop a multifaceted plan to improve the awareness of edible insects for university students majoring in cooking and to develop educational programs for developing various menus.

  • This study was conducted with the purpose of surveying the high school and university students and culinary teachers in charge of guidance in cooking related departments to see the recognition levels of culinary practice education and to suggest improvement plans. The subjects of this research were 616 culinary high school students, 419 culinary university students, and 103 culinary teachers. The collected data was compared and analyzed by frequency and percentage. The collected data was analyzed(i. e., $X^2$ test and t-test) using SPSS 14.0(SPSS Inc, Chicago, USA). Learning demands were shown to be high and much more practice was demanded, so it is required to raise the importance of culinary arts as a subject. Manpower placement, such as practice assistant teachers and practice teachers, is necessary and more training support for teachers' professional ability expansion is required. Moreover, it is required that practices after theory study, video education, and practice demonstrations should be performed and multimedia developed. Detailed practice demonstrations should be enabled and foreign subject education should be performed. The general evaluation in which feedback is appropriately made, along with the evaluation of practice courses and results needs to be performed. Positive school life should be prepared by performing proper course education simultaneously.

Quality Changes of Minimally Processed Sliced Deodeok (Codonopsis lanceolata) during Storage by Packaging Method (포장방법 차이에 따른 신선편이 슬라이스 더덕의 저장 중 품질 변화)

  • In this study, the changes that occurred in the quality of minimally processed sliced Deodeok (Codonopsis lanceolata) in relation to the packing method during storage at $7^{\circ}C$ were investigated. The storage tests were conducted for seven days using PE sealing, but PP sealing and vacuum packaging preserved the Deodeok for 14 days. On the seventh day, the vinyl-packaged Deodeok showed a remarkable fall in quality with 4.5 °Brix, but the PP-sealed and vacuum-packaged Deodeok showed slight falls with 6.4 and $6.8^{\circ}Brix$, respectively. The PE- and PP-sealed Deodeok did not show significant differences in texture and moisture content for two days, and the moisture content was highest in the vacuum-packaged Deodeok during storage. In relation to the total viable cell and the coliform count, the vacuum-packaged Deodeok showed the lowest rate of increment during storage, followed by the others. Thus, the bubble-washed and vacuum-packaged minimally processed sliced Deodeok was found to have the best quality.

  • The purpose of this study is to identify the causality between satisfaction /stress with school life and drinking-related behaviors of students majoring in the Dept. of Culinary Arts. The majors taught in college will connect to the job in the future directly. Therefore, in this regard, the results of this study have great importance for Dept. Culinary Arts student training. Results indicated that a positive perception of drinking partially influenced the levels at < ${\beta}=-.219$, p<0.01> a partial impact on school life satisfaction and stress. Negative perceptions also appeared to influence < ${\beta}=.445$, p<0.01> and < ${\beta}=.213$, p<0.01> levels of satisfaction and stress. Therefore, drinking behavior appears to affect the college life experience stress. Schools will have to incorporate this as part of the curriculum to correct the drinking behavior of students.

The Current Trends and the Prospective View of the Molecular Gastronomy (분자미식학의 현황과 앞으로의 전망)

  • Molecular gastronomy is a science that deconstructs the classic haute cuisine and applies science knowledge and laboratory techniques to create textures and flavors in unusual ways. The term 'Molecular Gastronomy' was introduced in 1988 by French chemist 'Herve This' and Oxford physicist 'Nicholas Kurti'. It has since been adopted by both world culinary establishments and scientists, from 'El Bulli' to 'Harold McGee'. Since most world-top prestigious restaurants and chefs were enthralled by this revolunary culinary movement, molecular gastronomy and molecular cooking have drawn a growing interest of lots of Korean people in the food industry until now. However, Korean foodservice industry is unlikely to be ready to develop this advent-garde culinary movement because molecular gastronomy is still an insufficiently established concept of culinary science and philosophy in Korea. Besides, there are many clumsy abuses of putative and clinically unproven bio-chemical components in kitchens and restaurants in the name of culinary science or culinary arts. Such a careless approach and attitude towards an important exercise like a cooking is highly deplorable. Thus it is still too far early to expect the prospective path of molecular gastronomy in Korea without understanding the core principle of molecular gastronomy and having any cultural support.
