A Enzymatical Characteristics Study of Kyenegum (계내금(鷄內金)의 효소학적 특성 연구)

  • Objective : Kyenegum(Galli Stomachichum Corium) has been popularly used long as the digestive. The purpose of this study was to investigate the enzymatic characteristic of Kyenegum crude enzyme. Methods : To evaluate of the enzymatic characteristic of Kyenegum, we examined the activity of Kyenegum crude enzyme from optimum solvent, optimum temperature and pH of crude Kyenegum extract. Futhermore, we examined the effects of NaCI and acidity of crude Kyenegum extract. Results : The Kyenegum was composed with crude protein about 20%, crude lipid 2%. The optimum Kyenegum dry condition, optimum extract solvent, optimum temperature and optimum pH were $4{\sim}6$ hours at $60^{\circ}C$, commercial apple vinegar, $50^{\circ}C$ and 2.0. Conclusion : The result suggests that the Kyenegum crude enzyme extract very strong enzyme in temperature, NaCl and acidity, respectively.

Effect of dietary carbohydrate sources on apparent nutrient digestibility of olive flounder (Paralichthys olivaceus) feed

  • Apparent digestibility coefficients (ADCs) of dry matter, crude protein, crude lipid, nitrogen-free extract, and energy in selected carbohydrate sources including wheat flour (WF), ${\alpha}-potato$ starch (PS), ${\alpha}-corn$ starch (CS), Na alginate (AL), dextrin (DEX), and carboxymethyl cellulose (CMC) were determined for olive flounder. The olive flounder averaging $150{\pm}8.0g$ were held in 300-L tanks at a density of 30 fish per tank. Chromic oxide was used as the inert marker. Feces were collected from the flounder by a fecal collector attached to a fish rearing tank. Apparent dry matter and energy digestibilities of flounder fed WF, PS, CS, and DEX diets were significantly higher than those of fish fed AL and CMC diets. Apparent crude protein digestibility coefficients of flounder fed PS and CS diets were significantly higher than those of fish fed AL, DEX, and CMC diets. Apparent crude lipid and nitrogen-free extract digestibility coefficients of flounder fed PS and DEX diets were significantly higher than those of fish fed WF, CS, AL, and CMC diets. The present findings indicate that PS and DEX could be effectively used as dietary carbohydrate energy compared to WF, CS, AL, and CMC for olive flounder.

A Study of Functional Jeolpyon Prepared with Silk Protein (Silk Protein을 첨가한 기능성 절편의 제조에 관한 연구)

  • The purpose of this study is to reach silk protein added in differing amounts to Jeolpyon, Korean traditional rice cake, using rice powder as its primary material, estimation of the micro organism quality, physicochemical property, sensory evaluation and the property of storage period (20${pm} 5 ^{\circ}C$). In the physicochemical property, the content of proximate composition of rice powder was measured as 38.11% of moisture, 56.62% of total sugar, 5.11% of crude protein, 0.52% of crude lipid, 0.25% of ash. And the raw material of silk protein was measured as 6.61% of moisture, 91.22% of crude protein, 6.41% of crude lipid and 0.75% of ash. The pH of raw material for rice powder and silk protein Jeolpyon showed mild acidity as 6.41 and 6.23, respectively. In rice powder and silk protein, total free sugar contents was 0.89% and 0.02%, and total amino acids contents was 4.28% and 52.21 %, respectively. For sensory evaluation. color, taste, softness and adhesiveness were significantly acceptable in control and adding 1 % silk protein. Control and samples added 1$\sim$3% silk protein had high sensory score color in overall acceptance. In conclusion. Jeolpyon can be manufactured with nutritious Jeolpyon by adding silk protein.

  • This study was carried out to obtain fundamental data on the metabolism of hibernant fish loach, Misgurnus mizolepis. Main focus was on the compositon of muscle components and its changes in fresh - water loach before and after spawning season and before and after hibernation. Distributional changes of carbohydrate, protein and lipid in the muscle tissues were also investigated. Change patterns of miosture and crude protein, and moisture and crude lipid were in inversely proportional, i.e. : moisture amount showed the lowest value after spawnig season, the highest just after hibernation, but crude protein and crude lipid were the highest values after spawning season, and the lowest just after hibernation. Carbohydrate showed the highest value just before hibernation and tended to decrease thereafter. Muco layer of epidermis and muscle cell of hypodermis layer in loach were remarkable in its PAS dyeing degree after sapwning season, and it was presumed to include high percentage of protein or carbohydrate. Dermis layer became thinner before spawning hibernation. Lipid component in female tended to distribute relatively widely in the muscle cell layer before spawning season, but in case of male mainly in muco layer and epidermis layer. It appeared that lipid was spreaded mainly in epidermis and hypodermis tissue after spawning season, while it prevailed in almost all tissues but tended to decrease after hibernation.

The result obtained were summarized as follows: 1. Proximate percentage of boiled whale meat(pectoral, pelvic, fin, flank) of moisture and crude lipid and crude protein from samples shown to be : moisture was pectoral 16.4%, pelvic 36.2%, fin 46.2%, flank 19.2%, crude lipid was pectoral 54.1%, pelvic 42.8%, fin 15.8%, flank 40.6%,crude protein was pectoral 29.4%, pelvic 20.5%, fin 29.5%, flank 28.6%. 2. The fatty acid composition of total lipid were composed of pectoral 27.2%, pelvic 28.9%, fin 33.3%, flank 23.4% of oleic acid and pectoral 12.7%, pelvic 11.1%, fin 11.3%, flank 14.0% of palmitic acid pectoral 10.8%, pelvic 7.9%, fin 7.6%, flank 2.1% of docosahexaenoic acid, pectoral 14.2%, pelvic 7.5%, fin 1.9%, flank 7.2% of eicosenoic acid, pectoral 5.1%, pelvic 5.7%, fin 4.4%, flank 5.7% of myristic acid, 16: 0 11∼14 % of high saturated fatty acid. generally most of 18: 1ω9 of boiled whale meat's each portion, 22:6 7∼12%, 20:5 1∼14% of polyenoic fatty acid. 18:3 showen to be 1% make an expection of pectoral and fin portion the total lipid were most of netural lipid's about 90%, monoenic fatty acid were most of 19∼22% of saturated fatty acid, 77∼80% of monoenic fatty acid level of 47∼56% of 18:1 16:1 was markelly high to those of total lipid. 3. Optimal Dietary Protein and Lipid Levels for Growth of Juvenile Israeli Carp Cyprinus carpio

  • A feeding trial of four dietary protein levels (20, 30, 40, and 50%) and two lipid levels (7 and 14%) with a factorial design was conducted to determine the optimal dietary protein and lipid levels for juvenile Israeli carp Cyprinus carpio. Triplicate groups of fish (average body weight, $1.3{\pm}0.02g$) were fed the experimental diets for 9 weeks. Survival of fish was not affected by either dietary protein or dietary lipid level. Weight gain and feed efficiency increased as dietary protein levels increased up to 40 and 50%, respectively. Weight gain was higher in fish fed the high-lipid diets with 20 and 40% protein content. Feeding efficiency increased as the dietary lipid level increased for the 30, 40, and 50% protein diets. Daily feed intake decreased with increasing protein level and the minimum feed consumption was observed in fish fed the 50% protein diet with 14% lipid content. Moisture and lipid contents of the whole body were affected by both dietary protein and lipid levels. The crude lipid content of fish fed the 14% lipid diet was higher than that of fish fed the 7% lipid diet at each protein level. The results of this study indicate that a diet containing 40% protein with 14% lipid content is optimal for the growth and effective protein utilization of juvenile Israeli carp.

The quality Characteristics of Saccharified Minor Cereal Gruel Prepared with Different Grain Kojis (곡류 코지를 이용하여 제조한 당화잡곡죽의 품질 특성)

  • This study investigated the quality characteristics of saccharified minor cereal gruel prepared with different grain kojis (rice, buckwheat, sorghum, adlay, and Italian millet koji). The moisture, crude protein, crude lipid, and crude ash contents of raw materials showed ranges of 11.12 - 12.85; 5.81-16.24; 0.56 - 4.36, and 0.28 - 1.93%, respectively. The crude protein, crude lipid, and crude ash contents of the samples showed ranges of 1.64 to 2.44; 0.08 to 0.28, and 0.09 to 0.18%, respectively. The pH, L, a, and b values ranged from 6.11- 6.43; 58.72 - 65.96; 2.92 - 5.76, and 7.81- 9.42, respectively. The viscosities of saccharified minor cereal gruel prepared with different grain kojis were significantly (p<0.05) lower than the unsaccharified minor cereal gruel. After the saccharification, the soluble solids, glucose, and maltose content were significantly (p<0.05) increased, with ranges of $9.58-10.61^{\circ}Brix$; 0.64 - 0.90%, and 0.32 - 0.50%, respectively. A sensory evaluation indicated that minor cereal gruels saccharified using sorghum koji and adlay koji were more acceptable than unsaccharified minor cereal gruel. In conclusion, the cereal kojis could be used as a gruel processing method that would increase the sensory properties and nutritional values of gruels.

  • To evaluate the chemical characteristics of organic Korean cabbages, the content of moisture, crude protein, crude lipid, crude ash, dietary fiber, mineral, vitamin C, free sugar, organic acid, chlorophyll and carotenoid were analyzed in organic and nonorganic cabbages. The levels of crude protein, crude lipid, crude ash, soluble dietary fiber, insoluble dietary fiber, minerals(Ca, P, Ee, Mg, S, Zn), ascorbic acid, dehydroascorbic acid, fructose, glucose, sucrose, chlorophyll a, chlorophyll b and carotenoid in organic cabbages were higher than those in nonorganic cabbages. However, the content of moisture, malic acid, citric acid, potassium in organic cabbages were lower than those in nonorganic cabbages.

Effects of Dietary Composition, Feeding Satiation Rate and Feeding Frequency of Extruded Pellets on Growth and Body Composition of Flounder Paralichthys olivaceus (부상사료의 사료조성, 공급율 및 공급횟수가 넙치의 성장 및 체조성에 미치는 영향)

  • A feeding trial of two extruded pellets (EPI, 45% crude protein with 7% crude lipid and EP2, 47% crude protein with 10% crude lipid)${\times}$ two satiation rates (satiation and 80% satiation)${\times}$ three feeding frequencies (three, two and one meal a day) factorial design with three replications was carried out to investigate the optimum feeding frequency and satiation rate for growth of juvenile flounder. Flounder averaging 55 g were fed a extruded pellets for 58 days. Daily feed intake was affected by dietary composition, feeding frequency and satiation rate (P<0.05). Weight gain of fish fed the EP1 and EP2 was not affected by both dietary composition and feeding frequency (P>0.05), but affected by feeding satiation rate (P<0.05). Weight gain of fish fed the each of EP1 and EP2 twice daily with satiation was the highest among treatments, but was not significantly different to that of fish fed the diets three times daily with satiation feeding. Feed efficiency and protein efficiency ratio of the fish were not affected by dietary composition, feeding frequency and satiation rate (P>0.05). Moisture, crude protein and crude lipid contents of the muscle of fish were affected by satiation rate. Moisture and crude protein contents of the liver were affected by dietary composition. Based on fish performance results, it can be concluded that the proper feeding frequency for the growth of juvenile flounder grown from 55 g to 90 g is two meals a day with satiation feeding, regardless of dietary composition used in this study.

Analysis of the Amino Acids Content of Three Neopyropia Dentata Cultivars under the Two Different Aquafarm Environment in Haenam, Korea (해남의 김 양식장별 잇바디돌김(Neopyropia dentata) 3품종의 아미노산 성분 분석)

  • This study aims to assess the water quality of the Eoran and the Imha aquafarm with different aquafarm environments in Haenamn-gun, and analyzed the composition of total amino acids (TAAs) and free amino acids (FAAs) in three Neopyropia dentata cultivars (Yuldo, Supum1 and 2) in two aquafarms. Mean water temperature ranged from 22.9 to 10.9℃ during September to November 2018. In Eoran aquafarm, the water quality analysis showed that NO2-N was high in September, NH4-N and COD in October, and NO3-N, DIN, and DIP in November. In Imha aquafarm, the water quality analysis showed that NH4-N and COD was high in September, NO3-N and DIN in October, and NO2-N and DIP in November. We confirmed the proximate composition, amino acid composition (TAA/FAA) in two auqufarms. In the Eoran aquafarm, the 'Yuldo' cultivar had significantly higher crude lipid content than two other cultivars (Supum 1 and 2). The 'Supum1' cultivar had significantly higher moisture content, whereas the highest content of crude protein, crude lipid, crude ash, and carbohydrates was found in the 'Supum2' cultivar. In the Imha aquafarm, the content of crude lipid and crude ash was highest in the 'Yuldo' cultivar. The highest content of crude protein and carbohydrates was found in the 'Supum1' cultivar, while the 'Supum2' cultivar had the highest content of moisture. The highest concentration of glutamic acid belong to TAAs is observed in all cultivars from Eoran and Imha aquafarm, while all cultivars in two aquafarm also contained higher content of alanine among the detected FAAs.
