Study on Development of Herbal Feed Supplement for Ducks

  • GD68 is newly developed herb complex prescription. The constituent herbs of GD68 were Massa Medicata Fermentata, Atractylodis Rhizoma Alba, Poria, Zingiberis Siccatum Rhizoma, Crataegi Fructus, Saccarum Granorum, Agastachis Herba, Taraxaci Herba, Perillae Herba, Scutellariae Radix, Astragali Radix, Ginseng Radix, Houttuyniae Herba and Halloysitum Rubrum. The aim of this study was to examine feed value of GD68 in duck. The weight gain of ducks fed with supplemental GD68 high compared to those of the control. The feed intake and mortality of ducks fed with supplemental GD68 low compared to those of the control. The moisture, crude lipid and calorie content of the ducks fed GD68 were decreased, but the crude protein content of the ducks fed GD68 was increased. And we investigated the effect of GD68 on the production of cytokines in human T-cell line, MOLT-4 cells. GD68 plus concanavalin A (Con A) increased the interferon-$\gamma$ and interleukin-2 production compared with Con A alone. These results indicate that the supplemental GD68 may improve the production, meat quality and immunity of ducks.

Physicochemical Properties of High Yielding Non-waxy Rice Flours Extruded with Different Moisture Contents (다른 수분함량으로 압출성형한 다수확 멥쌀가루의 이화학적 특성)

  • To improve the textural properties of gluten free rice flour based products, the physicochemical and pasting properties of extruded non-waxy rice flours using extruder were investigated. The high yielding Tongil type rice variety, Hanarum was used. Hanarum rice flour was prepared by dry milling from soaked and dried rice grain. The operation conditions of twin screw extruder were 250 rpm of screw speed, $160^{\circ}C$ of barrel temperature, and 24, 27, and 30% of moisture content. Hanarum extruded rice flour (HERF) were lower in crude lipid and ash contents, but higher in crude protein than Hanarum rice flour (HRF). The color values of HERF showed significantly different (p<0.05) with different moisture contents. Water binding capacities, apparent amylose contents, and damaged starch of HERF were higher than those of HRF. Moisture contents affected water binding capacities of HERF. Solubility increased with increasing heating temperature and solubilities of HERF differed significantly (p<0.05). X-ray crystallinity was changed after extrusion cooking and that of HERF showed sharp peaks at $2{\theta}=18-20^{\circ}$. The pasting viscosities of HERF kept lower values (~ 10 RVU) constantly.

Effects of Sources and Levels of Dietary Carbohydrate on Growth and Body Composition of Juvenile Sea Cucumbers, Apostichopus japonicus

  • A factorial feeding trial of different levels of three carbohydrate sources (wheat flour, $\alpha$-potato starch, and sodium alginate) was conducted to determine proper sources and levels of dietary carbohydrate for juvenile sea cucumbers. Three replicate groups of juvenile sea cucumbers (770 mg average weight) were fed the experimental diets once a day for 10 weeks. After feeding trial, survival of sea cucumbers was not significantly different between diets. The body weight of sea cucumbers was significantly (P<0.01) affected by both source and level of dietary carbohydrate, tending to decrease as dietary carbohydrate level increased. Body weight of sea cucumbers fed a 25% wheat flour diet was the highest but was not significantly different from that of sea cucumbers fed diet containing 10% wheat flour with 15% sodium alginate (P>0.05). No significant differences were observed in contents of moisture, crude protein, crude lipid and ash of sea cucumbers among dietary treatments. These results suggest that sea cucumbers utilize wheat flour and sodium alginate more efficiently than they do $\alpha$-potato starch, and that a formulated diet containing 43-60% carbohydrate may be suitable for juvenile sea cucumber culture.

Development and Characterization of Seasoned Laver with Concentrated Cooking Oyster Effluent Using RSM (반응표면분석법을 활용한 조미굴김의 개발 및 특성)

  • To develop a seasoned laver from cooking oyster effluent (C-COE), this study optimized the C-COE concentration, roasting temperature and time using response surface methodology (RSM). The optimal C-COE concentration, roasting temperature and time for producing seasoned laver from C-COE were 31.0%, 182.2℃ and 21.1 sec, respectively. The proximate composition of the seasoned laver prepared with C-COE under the conditions was 5.2% moisture, 37.4% crude protein, 8.2% crude lipid, 11.1% ash, 38.1% carbohydrate. The water activity of the prototype seasoned laver was 0.038. The prototype had stronger taste and flavor intensities than a commercial product. There was no difference (P>0.05) in the Hunter color value between the prototype and the commercial product. The peroxide (POV) and acid values (AV) of the prototype were 6.0 meq/kg and 1.4 mg KOH/g, respectively, which are considered acceptable. The results suggest that the seasoned laver with C-COE developed can be industrialized.

A Study on the Dietary Fiber Intake and Iron Metabolism in Korean Female College Students (일부 여대생의 식이섬유 섭취와 철분대사에 관한 연구)

  • This study was conducted to evaluate dietary fiber intake, iron status, and their correlations in 50 female college students living in Seoul. The nutritional status was analyzed using 3-day dietary record, duplicated diet collection, and venous blood sampling. The mean values for age, height, weight, BMI, and blood pressure of the subjects were 23.2 years, 160.2cm, 53.9kg, 21.0kg/$m^2$, and 110.1/68.4mmHg, respectively. Daily intakes of enery, protein, fiber, crude fiber, iron, and heme iron were 1635.5㎉, 54.3g, 22.5g, 6.8g, 16.2mg, and 0.2mg, respectively. Fiver intake was positively correlate with energy, protein, carbohydrate, vitamin C, iron, and crude fiber intakes. Also, iron intake was positively correlated with energy, protein, lipid, carbohydrate, and vitamin C intakes. There was a significant correlation between heme iron and MFP(meat, fish, poultry) intakes. To exame the iron balance, iron intake and excretion were measured. Iron intake and excretions through urine and feces were 19.5mg, 8.5mg, and 1.6mg, respectively. Based on these iron retention and iron apparent absorbability were calculated as 9.4mg and 52.4%, respectively. There was no significant relationship between dietary fiber intake and iron status. However, there were significant positive correlation between fiber intake and urinary iron excretion.

Physicochemical Profiles of Chub Mackerel Scomber japonicus Bones as a Food Resource

  • The present study was conducted to characterize physicochemical properties of chub mackerel bones (CMB) to evaluate its potential as a food resource. The proximate composition of CMB showed 40.4% moisture, 13.8% crude fat, 15.2% crude protein, and 28.7% ash. The major minerals in CMB were calcium (26.27 g/100 g) and phosphorus (15.88 g/100 g). The amino acids were rich in glycine, proline, glutamic acid, and alanine. The contents of total and neutral lipids, glycolipid and phospholipid were shown to be 16.05%, 95%, 2.32%, and 3.15%, respectively. The major fatty acids were C22:6, C16:0, C18:1, C20:5, C18:0, C17:0, C14:0, C20:1 in order. The fatty acid contents of total and neutral lipid were in a range of 39.25% and 44.54% for saturated and 33.61% and 34.05% for polyunsaturated, respectively. The breaking strength and hardness of intact CMB were 10.01 and $50.03kgf/cm^2$, whereas those of CMB heated for 45 min at $121^{\circ}C$ were 0.40 and $1.94kgf/cm^2$, respectively.

Studies on the MEJU Processing Aptitude of Recommended Soybean Varieties 1. Characteristics of Soybean Varieties as Raw Material, Soaking and Boiling Process (대두 품종에 따른 메주가공 적성 연구 -제1보 대두 품종별 원료 특성 및 침지, 증자 특성-)

  • As a result of survey of one hundred grain weight and been husk/whole bean ratio of 25 soybean varieties, the one was ranged 12.1∼27.1g and Saeal was highest as 27.1g, and Kwangan was lowest as 12.1g, while the other was revealed that Sinpladal 2 was highest as 9.40%, and Jangyebo was lowest, as 6.13%. Contents of crude protein were ranged 38∼48.5% which Tanback was highest as 48.5%, and Jangyeob was lowest as 39%. Crude lipid contained 17∼22%, and Muhan was highest as 48.5% and Tanback was lowest as 39%. Range of water uptake ratio and hardness after soaking were 235.9∼202.8% and 0.890∼2.593kg/3.14$\textrm{mm}^2$ and Jinpum was highest as 2.593kg/3.14$\textrm{mm}^2$, while Tanwon was lowest as 0.066kg/3.14$\textrm{mm}^2$.

Component Analysis and Antioxidant Activity of Maca (마카(Lepidium meyenii)의 부위별 함유성분 및 항산화 활성 비교)

  • This study examined the components and physicochemical properties of Lepidium meyenii as a natural health food source. To accomplish this objective, the general and antioxidative contents of Lepidium meyenii were measured. Total contents of carbohydrates, crude protein, crude lipid, and ash were 56.04%, 33.77%, 1.49%, and 3.7%, respectively(dry wright basis). Total phenol contents of the 70% ethanolic extracts of Lepidium meyenii were 189.9 mg/g, 152.5 mg/g. Total flavonoid contents of the 70% ethanolic extracts were 166.0 mg/g, 78.2 mg/g. The antioxidative activities of Lepidium meyenii were significantly increased in a dose dependent manner on DPPH(1,1-diphenyl-2-picrylhydrazyl) radical scavenging, ABTS (2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) radical scavenging, FRAP(ferric reducing antioxidant power) activity, reducing power. The general nutrients and other antioxidant bioactive materials in Lepidium meyenii were also potential materials for good health food.

Chemical Compositions in Rice Hulls of 26 Varieties (벼 품종별 왕겨의 화학적 성분)

  • The chemical copositions in rice hulls of twenty six varieties which are one of the largest agricultural by-products in Korea were analyzed. The chemical compositions were 8.56~9.70% moisture, 10.01~17.16% ash, 44.02~55.50% crude fiber, 0.26~2.90% crude protein, 9.20~14.50% starch, and 0.28~0.69% lipid. There were no significantly difference in chemical compositions among twenty six varities. The mineral contents(mg/100g) were 14.3~392.4mg K, 59.4~389.1mg Ca, 31.78~377.8mg Zn, 19.4~104.4mg Na, 12.9~47.6mg Mg, 12.8~37.0mg Si, 8.3~30.5mg Fe, 7.9~26.1mg Al, 7.6~23.5mg Mn, and 6.3~40.3mg P. The contents of IDF (insoluble detergent fiber), SDF(soluble detergent were 70%, 1~2%, 67~73%, 51~60%, 11~17% and 0.3~2%, respectively. The lignin content was higher in Hwa-Young and Mankum than in others. The amounts of ethanol extracts of rice hulls were 1.01~1.52%. In conclusion, the chemical compositions were not significantly difference among twenty six rice hulls varieties.

  • This study investigated the effect of diets supplemented with different levels (0, 1, 3, and 5 %) of turmeric Curcuma longa L. powder (TP) on the body composition of black rockfish Sebastes schlegeli. Fish weighing $10.05{\pm}0.44$ g were fed to apparent satiation twice daily for 8 weeks. Adding TP decreased crude lipid levels and increased crude protein and ash levels. Abundant fatty acids in the TP-added group were C16:0, C18:1 n-9 (cis), and C22:6 n-3. The major amino acids in samples were glutamic acid, aspartic acid, glycine, leucine, alanine, lysine, and arginine.
