Monitoring of Microorganism Contamination of Ice for Foods in the Store and Hygienic Management Methods (식품접객업소 얼음에 대한 미생물학적 오염도 조사 및 관리방안)

  • The purpose of this study is to monitor the microbial contamination of ice collected from food stores or restaurants from all over the country. From the ice collected on a regional basis, it was observed that the average number of total aerobic bacteria (TAB) of samples from Seoul was the highest, showing 2.31 log CFU/g, while that of samples from Jeolla-do was the lowest, showing 1.83 log CFU/g. The food-borne pathogens (Staphylococcus aureus, Listeria monocytogenes) were not detected from the ice. Also the average number of TAB of packaged ice (commercial ice) was 0.45 log CFU/g lower than that of ice from ice-making machine. Among three types of stores (the bakery, the dessert store and the beverage store), ice from dessert store showed the highest number of TAB (2.37 log CFU/g). This study suggests that the hygienic management of the ice from the stores is necessary. Therefore, to ensure the hygienic management of ice, not only the ice-making machine should be sanitized on a regular basis but also a thorough individual hygiene is required from food manufacturing workers.

  • South Korea is the representative consumption country of herbal medicines and most of herbal medicines circulating in Korea have been importing from the developing countries of Southeast Asia such as China, Vietnam, Indonesia and so forth. Domestic hygiene and safety are continuously proposed because herbal medicines which are circulating have the possibility could remain contaminants or residues. Physicochemical contaminants such as heavy metals, persistent organic pollutants, radionucleosides, microbial toxins, biological contaminants such as microorganisms and animals, agrochemical residues such as pesticides, substances used for fumigation, antiviral agents, and solvent residues are classified as major contaminants and residues in herbal medicines from 2005 September WHO.$^{1)}$ Currently our administration have established a permission standard and the inspection criteria against the heavy metal, the residual pesticides and a residual sulfur dioxide. Furthermore our administration is continuously monitoring and conducting researches for the policies and their scientific ground against herbal medicines. But the appearances or discoveries of the harmful new species due to environmental and industrial developments are becoming social problems. Therefore it may be necessary to continuously consider and investigate regarding hereupon. Recently, the contamination of the mycotoxins against foods such as cereals, nuts and the powdered red pepper have developed and started became problematic issue, and possibility of contamination against the herbal medicine is proposed. And since populations who are using the herbal medicines very limited to several nations, recognition and researches about contamination of mycotoxins in herbal medicines are very insufficient. Therefore it will be need to more focus on the international regulation of quality control and safety for herbal medicines. Now on, we are going to introduce the importance, occurrence, characteristic properties, World-wide research trends and detoxification of aflatoxins, which is known as the most potent mutagen, carcinogen and teratogen mycotoxins.

Market Growth, Competition, and Distribution Structure in Major Cities of the East Sea Rim (환동해지역 거점도시에서의 시장성장과 경쟁 및 유통구조: 후쿠오카, 울산 및 옌지의 시장을 중심으로)

  • Purpose - This is a comparative study of the market development and characteristics of Ulsan in South Korea, Fukuoka in Japan, and Yanji in China, which are major East Sea Rim cities with adjacent areas of similar natural characteristics of the sea and the country. Particularly, it considers these aspects while focusing on the evolution of networks that appear in the distribution system and at the same time examining the institutions of market activation and regulations that are handled by the central and the local government and the changing logistics due to the development of transportation and the concern of food safety, using a meso-analysis approach. Research design, data, and methodology - The study used a historical and comparative approach with a focus on case studies. It made use of various materials such as local newspaper articles, reports, literature, interviews with experts, discussions with local merchants, discussions with customers, and so forth. Results - In the case of Fukuoka, from the 1960s, due to the entry of supermarkets, supermarkets expanded and they have now come to a dominant market position in the current market. They offer a convenient and comfortable environment while providing a large mall offering a variety of educational and cultural activities for customers to meet the customers' needs, such as the preferences of Korean tourists, who appear to prefer Japanese foods. The Fukuoka City Central Wholesale Market has been exporting fruits and vegetables as well as seafood products to Korea, China, and so forth. In the case of Ulsan, as in the early 2000s, due to the expansion of supermarkets, the traditional markets have been shrinking and further, the modernization of traditional markets was conducted under the auspices of the Small Business Administration. In addition to the large discount malls, the expansion of SSM is expected to further drive the small trader bay. Shopping malls, department stores, and traditional markets contend with each other in Yanji, China, but a large number of citizens appear to prefer traditional markets and imported milk in the supermarket after the melamine scandal in China. Recently, the WanYuan (萬源) wholesale market has been partially completed and made an attempt to become a logistics hub in Northeast Asia. Conclusions - For the development of Korea's retail industry, it is important to offer the government with proposals regarding desired regulation. On the other hand, in order to enable the business of traditional markets, it requires an association for cultural tourism. At present, it would be better to provide a venture fund for the youth rather than infrastructure support. This study emphasizes the importance of institutions and policy to develop networks in the East Sea Rim. Future studies should conduct a survey on customers, managers, and merchants more carefully and systematically to understand the market situation while considering the size of the city and its evolution of markets, as well as policies and institutions.

  • The natives of the genus Corbicula have shown worldwide dispersion in recent times, which has caused great ecological and economic impacts on the introduced ecosystems. The species reported from the genus have been consumed as food and explored for medicine with pharmacological activity. Consequently, the demand of Corbicula sp. in the South Korean domestic market has increased and so also it's associated import to the country. However, due to the absence of identification keys of imported Corbicula, the market is facing confronting situations. We hypothesized that the mitochondrial Cytochrome Oxidase I gene (CO-I) based molecular profiling could be a necessary technique for identification of Corbicula sp. in the South Korea domestic market. The genetic analysis identified both Corbicula japonica and Corbicula fluminea from the market foods. C. japonica and C. fluminea are inhabitants in Korea, but C. fluminea production has decreased in Seomjingang river basin. Therefore, C. fluminea identified from this study, is expected to be imported from China and would have a mixed sales in Seomjingang river side basin.

Analysis of food choice motivation according to health consciousness of overseas consumers: focus on American and Japanese consumers (해외 소비자의 건강관심도에 따른 식품선택 동기 분석: 미국 및 일본 소비자를 중심으로)

  • Purpose: The purposes of this study were to understand the health interest of consumers in the United States and Japan and thus understand the motivation of food choices, in order to provide basic data on the country's strategy based on healthy and correct food choices in the future. Methods: A customer survey was conducted in 2019 from October 18 to 31, and it targeted 115 American and 120 Japanese local consumers between the ages of 20- to 64-years-old. Eight questions were formed using General Health Interest. Based on food choice motivation, 27 questions were reconstructed and asked about demographic information. All data were analyzed by SPSS Statistics (ver. 25). Results: Health consciousness was categorized into 2 types: nutrition-seeking type and preference-seeking type. Based on these 2 factors, customers were grouped into 3 clusters: healthy dietary life-seeking group, nutrition balance-seeking group and health indifference group. Food choice motivation was categorized into 4 types: health, efficiency, value, and mood. All 3 groups showed a high tendency for efficiency in common. The results show that consumers want higher satisfaction with their time and money invested in food consumption. It is believed that the focus and investment of market segmentation strategy should be focused on product development, especially for American and Japanese consumers who are interested in health. Conclusion: The results of this study reflect consumer needs that can assist in the selection of healthy and correct foods in the future.

A Study on the Nutritional Status of Lunch Box of Elementary School Students in Kyungnam Area (경남지역 국민학교 아동의 도시락 영양실태에 대한 조사연구)

  • The main purpose of these studies was the improvemen of nutritional supply and of the future physical coditions. The two groups which were regional difference were chosen and research for the nutritional status of elementary school students. The nutritional status of lunch-box between one elementary School of 98 students in the 6th year grade(hence-forward it was called "A-Group"), located at the center of Masan City, being provided the milk and the other elementary School of 134 students in the 6th year grade(hence-forward it was called "B-Group"), located in the small farm and fishing villages of Kusan-myun, Euichang-kun, Kyungnam province, were seweyed from the period of Nov. 20, 1986 to Dec. 4, 1986 and conclusion were as follows: 1. Nutritional status of lunch-box 1) It is indicated that in the case of A-Group, the nutirtional intake except animal protein and vitamin A were lower than the Recommended Daily Allowances of Korenas and in the case B-Group, was also lower than except vitamin A respectively and especially in both groups, the percentage of Fe was lowest and intended difference between A Group and B was that B-Group in the intake of calorie, fat, Ca, Fe and etc were lower than A-Group. 2) The total calorie-intake was short of the extent to approx. 83.8% as compared to the RDA. On the viewpoint at ratio of intake of caloric nutrients, A-Group appeared to be 69.5 : 16.5 : 14 and B-Group, 77.5 : 19.5 : 13 in order carbohydrate, protein and fat. As a result of the above ratio, B-Group depended upon carbohydrate as a staple food more than A-Group. It can be considered that the total calorie-intake is short, and that the amount of lunch-box was greatly insufficient for taking optimal nutrition. 3) Calorie, carbohydrate, vitamin B, and niacin were taken nutrition from a staple food and protein from at similar ratio of staple and subsidiary food and fat, Fe, vitamin A, vitamin B1, adn vitamin C were mainly taken from a staple food. It was indicated that B-Group was higher at the supply-ratio by a staple food than A-Group. 3. The realities of improvement of physical conditions The improvement of physical conditions of the two groups were lower in accordance with Korea Children's Growth Standard, but B-Group was inferior to A-Group. 4. Seeing that the total intake of nutrition being taken at lunch time was lower as campared to the RDA intakes between the two Groups were remakably different, a lot of efforts should be made to improve the calorie-intake for the purpose of the farm and fishing villages. For balanced intake of nutrition, selection of foods and various cooking ways are important, therefore, throughout the expansion of the lowest stratum of elementary schools for milk-supply, high-quality protein, fat, Ca, vitamin B2 and etc should be supplied to the growing students. That can narrow the gaps of the intake of nutrition and physical condition between the students who live in cities and the students who live in the country.

Current status and prospects of the authentication of Angelica species (Angelica 속 식물의 종판별을 위한 연구현황 및 전망)

  • Medicinal plants resources are becoming important assets since their usages have been expanded to the development of functional foods for human health, natural cosmetics, and pharmaceutical industries. However, names are different from each country and their phylogenetic origins are not clear. These lead consumers to be confused. In particular, when they are morphologically similar and distributed as dried roots, it is extremely difficult to differentiate their origins even by specialists. Recently, molecular markers have been extensively applied to identify the origin of many crops. In this review, we tried to overview the current research achievements for the development of suitable 'origin identification' regarding to the differentiation of Angelica species. Furthermore, more advanced techniques including amplification genome based marker analyses are also discussed for their practical applications in the authentication of particular medicinal plant in Angelica species.

Rapid Detection of Enterotoxigenic Staphylococcus aureus by Polymerase Chain Reaction (중합효소 연쇄반응에 의한 식중독성 황색포도상구균의 신속한 검출)

  • Staphylococcal food poisoning is the major cause of bacterial food poisoning occurring in this country. Therefore government regulates commercial foods through Official Dictionary of Food that there should be free of enterotoxigenic Staphylococcus aureus in Korean rice cakes, bread, and a box lunch. Since at least 5 days are required to identify the S. aureus by the official method in the Dictionary it is difficult to prevent the food poisoning and the investigation of the outbreaks. In this report an improved determination method of the S. aureus has been developed using polymerase chain reaction (PCR) technique. Sense and antisense primers for specific amplification of genes encoding staphylococcal enterotoxins were designed and synthesized for the PCR. Rapid chromosomal DNA isolation method was also developed from S. aureus using lysostaphin. The PCR condition was developed as follows. Reaction solution $(50\;{\mu}l)$ consisted of target DNA $2\;{\mu}l$ (about 20ng), 10X buffer $5\;{\mu}l$, primer 100pmole, dNTP (10 mM) $4\;{\mu}l$ and Taq DNA polymerase 2.5 unit in a thin-wall tube. Operation condition of the PCR was 5 min pre-denaturation at $94^{\circ}C$, 15 sec denaturation at $94^{\circ}C$, 15 sec annealing at $50^{\circ}C$, 20 sec extension at $72^{\circ}C$, and 5 min post-extension at $72^{\circ}C$, and 30 cycles of denaturation-annealing- extension. Using the PCR with Perkin Elmer GeneAmp PCR system 2400, types of enterotoxigenic S. aureus could be identified from Ddok or bread in a day.

Changes in Free Amino Acids of Yellow Corvenia, Pseudosciaena manchurica, during Gulbi Processing (굴비 가공(加工)중의 유리아미노산의 변화)

  • Gulbi, salted and dried yellow corvenia, is one of widely consuming fish foods in this country. This study was attempted to establish the basic data for evaluating the taste compounds of Gulbi. The free amino acids were analysed by amino acid autoanalyser. In the free amino acid composition of raw yellow corvenia, abundant amino acids were glutamic acid, alanine and lysine and then leucine, glycine, serine and threonine in order. Such amino acids like proline, valine, methionine, tyrosine and phenylalanine were poor in content. The changes of free amino acid composition in the extract of yellow corvenia during Gulbi processing was not observed. In the extract of Gulbi product, glutamic acid, lysine, leucine, alanine and valine were dominant holding 20.0%, 12.9%, 11.1%, 10.1% and 8.5% of total amino acids respectively. The amounts of total free amino acids of yellow corvenia increased more than 3.6 times as compared with that of raw sample during Gulbi processing. It is convinced that the characteristic flavor of Gulbi was attributed to such amino acids like lysine and alanine known as kweet compounds, as glutamic acid with meaty taste, and as leucine known as bitter taste.

A study on the Activation Schemes of Cold Chain Logistics System in Incheon Port (인천항 콜드체인 물류체계 활성화 방안에 관한 연구)

  • Ports have been facing the adverse impacts of the global recession. In terms of imports, with a vast consumption hinterland, the Incheon Port has developed as the metropolitan's gateway. Additionally, the port's exports to China has been increasing due to a consistent increase in the demand of cold chain foods in the country. Considering the short distance between the Incheon Port and the ports in Northern China, the Incheon Port can serve as a logistics hub and a distribution center for exporting processed foodstuffs to China. The establishment of a cold chain logistics system at the Incheon Port will prove to be a robust strategy. After reviewing studies and interviews from various departments, this study suggested strengths, weaknesses, opportunities, and threats (SWOT) facing the Incheon Port, based on a SWOT analysis; it also recommended competitive strategies for the port. Additionally, the study used the analytic hierarchy process (AHP) to identify important factors such as the infrastructural, operational, cost, and technology factors. This study identified the infrastructural factor to be highly critical to the activation of the Incheon Port's cold chain system. Based on the results, the study proposed policies and strategy directions.
