To compare the dietary and urinary minerals with serum lipid and minerals this study was carried out on 30 rural housewives in Kyunggi area. Mean intake of energy was 1770.3Kcal and protein 55.5g per day. Mineral intakes per day were measured; sodium 4330mg phos-phorus 485.7mg calcium 388.0mg zinc 8.99mg and copper 2.23mg Urinary minerals were analy-sed ; sodium 4379mg phosphorum 371.3mg calcium 190.0mg zinc 328.0mg and copper 49.6mg. Serum contents of lipid and minerals were : cholesterol 169.0mg% triglyceride 70.6mg% $\beta$-lipoprotein 304.9mg% sodium 142.3mM phosphorus 3.94mg% calcium 9.06mg% zinc 1215.7 ppb and cooper 620.0ppb. Eietary sodium and zinc urinary copper were significantly related with serum lipids.
The protective effects of high levels of dietary iron, copper, zinc or protein on lead toxicity were studied In chicks. Growth retardation, reduction of feed intake, anemia and accumulation of lead in the bone and kidney were observed in chicks fed a diet containing 500mg lead as chloride per kg of feed for 42 days. Early changes due to ingested lead were inhibition of red blood cell ${\delta}$-aminolevulinic acid dehydrase at all doses and no effect of iron, copper, zinc or protein addition were observed. Tibia lead accumulation was reduced in chicks receiving additional dietary iron or zinc compared to the lead only group but increased in chicks given supplementary protein. Decreased body weight gain was overcome by supplementary zinc or protein in chicks fed lead but not by supplementary iron. Overall the results of this study show that lead poisoning can be partly reduced by providing supplementary iron, zinc or protein, but the interaction of these element remained to be elucidated.
Nickel toxicity and interactions of nickel with zinc, copper, and lead were studied in glowing chicks fed supplemented diet. Feed intake and growth rate of the chick were reduced by 250mg nickel as a sulfate salt per kg of feed. The toxicity of nickel was decreased by zinc or copper supplementation, but not lead. High nickel feed increased nickel level in kidney and decreased zinc levels in tibia and plasma. However, low zinc levels in tibia and in plasma were reversed by zinc supplementation. Hemoglobin, packed cell volume, and aortic elastin content were increased in chicks fed nickel. These results suggest that nickel toxicity is induced by interference with zinc metabolism.

Intakes and excretions of zinc and copper were determined for 8 female adolescents (aged 16.4$\pm$0.5 y; body mass index 20.4$\pm$1.3kg/$m^2$; body fat 33.3$\pm$2.5%; bone mineral density of lumbar spine in L2-L4; 0.96$\pm$0.08g/$\textrm{cm}^2$) when they consumed diets basal and high in calcium for 6 days each. All subjects consumed a basal Ca diet containing 800 mg, Korean RDA level of the subjects, and a high Ca diet containing 1200mg, RDA plus 2 SDs of calcium intake. The diets provided 58% of energy intake as carbohydrate, 25% as fat, and 17% as protein. Food, urine and fecal samples were collected during the last 3 days of each feeding period and were assayed. Mean daily intakes on the basal and high calcium diets, respectively, were 6.57 and 6.37 mg for zinc and 910 and 812 $\mu\textrm{g}$for copper. Fecal excretion of copper and zinc in relation to intake was significantly greater on the high calcium than on the basal calcium diet. Hence, apparent absorption rate was significantly lowered from 98.7% on the basal calcium diet to 97.9% on the high calcium diet for zinc from 66.3% to 56.4% for copper, respectively. Urinary loss of copper was not detectable but that of zinc was 0.38mg on the basal diet and 0.47mg on the high calcium diet. Copper retention was 899$\pm$105$\mu\textrm{g}$/day on the basal calcium diet and 792$\pm$20.8$\mu\textrm{g}$/day on the high calcium diet, and zinc retention was 3.95$\pm$0.91mg/day and 3.11$\pm$0.89mg/day. Thus, copper and zinc retention was significantly decreased on the high calcium diet (p<0.05). Summarizing the results, apparent absorption and retention of zinc and copper were significantly decreased by calcium supplementation. Therefore, it is suggested that interactions among minerals should be considered in determining RDA.
The purpose of this study was to evaluate the relation of nutrients intake and copper status between nonvegetarian female college students and lacto-ovo-vegetarian female college students. The height, weight and serum copper concentrations were determined. Food nutrients analysis procedure was made by computer using food composition table. The results was summarized as followed; 1) Mean values of weight & height were respectively 53.581$\pm$1.68kg.157.051$\pm$1.43cm in nonvegetarians and 51.23$\pm$1.45kg.156.65$\pm$1.24cm in facto-ovo-vegetarians. 2) The average intakes of protein, fat, carbohydrate, fiber, Ca, P, Fe and Vit. C were above the RDA in the two groups, but those of calories was below the RDA in non-vegetarians. Especially, fiber and icon intakes were significant in the two groups(p< 0.01, p< 0.05). 3) The percentage of iron absorption was 7.64% in nonvegetarians and 5% in facto-ovo-vegetarians. 4) Mean serum copper values of nonvegetarian and vegetarian were 107.08$\pm$14.39ug/100m1 and 113.31$\pm$20.86ug/100ml, respectively.
This study was conducted to assess the relationships between maternal dietary intakes and milk contents of minerals and trace elements, and the correlation among levels of these milk constituents. Maternal dietary intakes were measured and milk samples were collected at 2∼5 days, 2, 4, 6 and 12 weeks postpartum from 29 lactating women. The results obtained are sumarized as follows: 1) The overall mean nutrient intakes of lactating women in this study were below the recommended allowances and there were extensive individual variations between subjects. 2) Concentrations of minerals and trace elements in matured human milk showed the same range reported from different countries with the exception of calcium, magnesium, manganese and molybdenum which were relatively high. 3) There were no significant relationships between maternal dietary intakes of minerals and the corresponding mineral levels of human milk. In addition, no significant correlations were found between maternal vitamin C intake and the iron contents of milk. These were significant positive correlations between maternal calcium intake and the magnesium level of milk ; between maternal protein intake and the contents of zinc and copper in human milk. Maternal energy intake was negatively correlated with milk sodium level. 4) Pearson correlation coefficient showed positive significant relationships between levels of 17 pairs of various mineral and trace elements : sodium and potassium, iron ; potassium and calcium, phosphors, magnesium, iron, copper, manganese ; calcium and magnesium, iron manganese, molybdenm, nickel ; magnesium and iron, molybdenum ; iron and copper ; nickel and manganese.
An experiment was conducted to investigate the effects of supplemental copper (Cu) chelates (methionine, chitosan and yeast) on the performance, nutrient digestibility, serum IgG level, gizzard erosion, Cu content in the liver and excreta and the level of total cholesterol in breast muscle and serum of broiler chickens. Two hundred and forty hatched broiler chickens (Ross$^{(R)}$ 208) were assigned to 4 treatments: control, 100 ppm Cu in methionine chelate (Met-Cu), 100 ppm Cu in chitosan chelate (Chitosan-Cu) and 100 ppm Cu in yeast chelate (Yeast-Cu). Each treatment had six replicates of 10 (5 males+5 females) birds each. Weight gain and feed intake tended to be higher in Cu chelate treatments than the control; weight gain was significantly higher in the Met-Cu chelate treatment and feed intake was significantly higher in the Yeast-Cu chelate treatment than the control (p<0.05). Feed/gain was significantly different between treatments in which Met-Cu was lowest followed by the control, Chitosan-Cu and Yeast-Cu. DM availability was increased by Cu chelates among which chitosan-Cu showed the highest DM availability. Cu chelates supplementation tended to increase gizzard erosion index, and Cu content in the liver was highest in the Met-Cu treatment. Supplementation of Cu chelates tended to decrease total cholesterol level in breast muscle and serum but tended to increase the level of HDL in serum. It was concluded that dietary supplementation of 100 ppm Cu in chelates increased weight gain, feed intake and DM availability. Met-Cu was more effective than Chitosan-Cu or Yeast-Cu in improving productivity of broiler chickens.
This study was aimed at evaluating the lipid status of 122 pregnant women, who were attending peripheral community clinics in low-income areas and were vulnerable in terms of public health, by anthropometric measurements, estimating dietary intakes and analyzing serum lipids content and fatty acids composition. Regarding the skinfold thickness, it has increased more significantly in suprailliac than in triceps, biceps, subscapular, which means body fat has been accumulated in central parts more than in distal parts of the pregnants. It is found that intakes of energy, protein, lipid and carbohydrate are desirable while calcium, zinc and copper are low and sodium is excessive. Regarding dietary fat intake, the energy $\%$ of fat was within the same range as RDA(20%) for adults, but energy $\%$ intake from each fatty acid was usually low, especially energy % of monoun-saturated fatty acid intake was below RDA for adult women. And intake ratio of $\omega$6$\omega$3 fatty acids was desirable. Accordingly, it is thought that dietary fat intake was balanced in quality. Serum lipids concentrations were increased with the length of pregnancy and were higher as compared with non-pregnant women. Polyunsaturated fatty acids, especially $\omega$6 fatty acids, have gradually decreased with the length of pregnancy. Serum lipids content and fatty acids composition were not greatly influenced by dietary fat but serum free fatty acid level was negatively related to energy, carbohydrate, fatty acids and cholesterol intake. On the basis of the above results, it can be predicted that lipid metabolism for mother and fetus is changed by pregnant status and multilateral research on maternal nutrition in terms of areas and income levels will have to be made. An experiment was conducted to determine the influence of dietary inorganic (copper sulfate) and organic (copper proteinate) forms of copper and energy level on performance and nutrient utilization of broiler chickens. Two hundred day-old commercial Vencobb broiler chicks were purchased and randomly distributed to 20 cages of 10 birds each. These replicates were randomly assigned to one of five treatments in a (($2{\times}2$)+1) factorial arrangement. These two factors were sources of Cu ($CuSO_{4}$ vs. Cuproteinate) and dose of Cu supplements (200 mg and 400 mg/kg dietary dry matter) and the control (no supplemental Cu). After the starter period (up to 3 weeks), from d 22 onwards another factor i.e. energy at two levels (2,900 vs. 2,920 kcal/kg diet) was introduced with the previous factorial arrangements by subdividing each replicate into two equal parts, for two energy levels, without disturbing the dose and source of Cu supplement. Cu-salt supplementation linearly increased (p<0.01) live weight (LW), live weight gain (LWG) and feed conversion ratio (FCR) at 3 weeks, whereas cumulative feed intake (CFI) was unaffected (p>0.05). LWG and FCR were higher (p<0.01) in Cu-proteinate supplemented birds compared to $CuSO_{4}$ supplementation. A linear dose response (p<0.01) of Cu was found for the performance of broiler chickens. Birds having a higher energy level in the finisher stage increased (p<0.01) LWG and FCR. Cumulative feed intake was similar (p>0.05) across the groups up to the 5th week. Cu-proteinate increased performance of broiler chickens compared to $CuSO_{4}$. Dose of supplemental Cu-salt irrespective of source showed a linear response (p<0.01) for performance. Supplementation of Cu-proteinate increased metabolizability of DM (p<0.01), NFE (p<0.05), total carbohydrate (p<0.01) and OM (p<0.01) at the starter period. Increased dose of Cu-salt linearly increased (p<0.01) metabolizability of DM, CP, CF, NFE and OM. Higher energy level in the diet improved DM (p<0.05), EE (p<0.01), NFE (p = 0.01), total carbohydrate (p<0.01) and OM (p<0.01) metabolizability. Cu-proteinate supplementation showed better nutrient utilization compared to CuSO4. Dose of Cu linearly increased DM, CP, EE, NFE, total carbohydrate and OM metabolizability. CF metabolizability was unaffected (p>0.05) among the treatments. In conclusion, dietary supplementation of Cu-salt more than the requirement may improve performance and nutrient utilization in broiler chickens even with a high energy finisher diet. Cu-proteinate showed better performance and nutrient utilization compared to $CuSO_{4}$.
