A Study on the Removal Efficiency of Harmful Pollutants in the Cooking Chamber (조리실내의 유해오염물질 제거율에 관한 연구)

  • The purpose of this study is to reduce the contaminants (total volatile organic compounds (TVOCs), fine particle, odor and total airborne bacteria) during cooking process in cooking chamber, and to decrease the health damage in indoor space that has bad work environment. In order to solve the shortcomings of existing air purifiers and remove all kinds of pollutants effectively, this study focused on the development of indoor air purifiers which are made of bar type. Bio-ceramics filter which combines activated carbon and loess. The air cleaners developed with 4 measuring items including TVOCs, particulate matter, complex odor and total airborne bacteria were measured comparing their pre-service test to their post-service test after a period of time. The measured results showed higher removal efficiency of 91.02% as the concentration of TVOCs was reduced from $2,500{\mu}g/m^3$ to $223{\mu}g/m^3$. Second, the particulate matter removal ratio was 97.51% efficient with average concentration of $26.68{\mu}g/m^3$. Third, the odor showed 95.20% reduction as air dilution ratio averaged out at 144. Last, total airborne bacteria was eliminated by over 94% showing the changeable concentration from $787{\sim}814CFU/m^3$ to $47{\sim}40CFU/m^3$. In addition, the removal rate of harmful pollutants is excellent, and it is expected that the environment of the existing poor cooking room will be greatly improved by using the developed air purifier in combination with the ventilation device and the stove hood.

A Study on Utilization and Consumption Promotion of Seafood in Elementary School Lunch Program (초등학교 급식의 수산물 이용실태 및 소비촉진 방안에 관한 연구)

  • The objective of this study consists in promoting seafood consumption by increasing its intake opportunities for children through analysis of seafood using frequency in the elementary school lunch program. For that purpose, randomly sampled out from elementary schools through the county were 155 dietitians and 5th grade 3581 children, on whom a mail survey was conducted to analyse their seafood using frequency, and preference, and lunch menu by seasons. Results of this study are as follows : The seafood using frequency of the respondents represented the highest value in one or two times a week, while obstacles in seafood use presented high values in the safety of food by 71.6% and children preference by 68.4%. The seafood intake frequency of the respondents showed the highest value in three or four times a week by 34.5% and the places of seafood intake indicated the highest response in the home by 43.5% and then school lunch and dining out. The dietitians responded that children for the most part had not a preference for seafood, whereas the children pointed out average by 46.2%. As for reasons for avoidance of seafood, the dietitians expressed the highest response in it depends cooking methods by 45.8%, while the children because of its peculiar taste and smell by 42.1%. Their required improvement showed the highest response in the taste improvement by 51.8%. The children most preference for seafood that dietitians thought included fried Alaska pollack and shrimp cutlet, while dislikes braised mackerels and seasoned cold jelly fish. Cooking methods frequently used were represented in order of soup, hot soup, and stew, and the children's preferred cooking method was from fried food. Above results suggested that the intention to increase seafood using frequency is needed to at the time of planning the menus so that more seafood-providing opportunities can be given. The development of cooking methods is urgently needed that can change the taste or the smell of seafood, and concurrently with this conveniences be taken into account in eating such as elimination of bones, etc. as early as the states of purchase or checking of seafood. The reflection of the preferred cooking methods is thought to contribute to the enhancement of satisfaction with the seafood as well as to the reduction of food remnants. The recommendation of intake of low preference but nutritionally good seafood is required to be expanded in nutrition education.

Changes in 4'-O-methylpyridoxine (ginkgotoxin) and antioxidant activity in ginkgo biloba seeds in different cooking conditions (조리조건에 따른 은행알의 4'-O-methylpyridoxine (ginkgotoxin) 함량 및 항산화 활성 변화)

  • The purpose of this study was to examine the best cooking condition to decrease 4'-O-methylpyridonxine (MPN, ginkgotoxin) and increase the antioxidative effect. We also examined the change in color of ginkgo biloba seeds after different cooking methods and times. MPN content was decreased with an increase in the cooking time. For the reduction of MPN content, the most efficient cooking method was pan-frying. In particular, MPN content was largely reduced after 8 min of pan-frying. 1,1-Diphenyl-2-picrylhydrazyl radical scavenging activity and total flavonoid content were increased after 11 min of pan-frying and this level was maintained until 14 min. The total phenolic compound content was maintained for up to 30 min by steaming and 11 min by pan-frying. Therefore, the optimum condition was established by pan-frying from 8 to 11 min.

Effects of Cooking and Drying Methods on the Taste Component and Microstructure of Shrimp (새우의 맛성분과 미세구조에 미치는 가열 및 건조방법의 영향)

  • Effects of cooking and drying methods on the taste component and microstructure of shrimp, Metapenaeus joyneri, were investigated. The nucleotides and their related compounds of fresh shirmp such as ATP, ADP, AMP, IMP, inosine and hypoxanthine were detected. AMP was detected as a trace amount in fresh shrimp, however, it increased up to $23.5{\sim}45.7{\mu}$ moles with cooking and drying due to the decomposition of ATP and ADP to AMP during cooking and drying. The major component of the free amino acids of fresh shrimp was arginine followed by glycine, lysine, proline and alanine. These free amino acids contents were 70% of the total free amino acids. One hundred grams of fresh shrimp contained 1,198mg (dry basis) of the total free amino acids. However, for hot air and freeze dried cooked shrimps it was decreased down to 342mg (dry basis) and 503mg (dry basis), respectively. It might be due to the dissolution of soluble amino acids during cooking. Hot air-and freeze-dried fresh shrimps was higher in hardness and brittleness but lower in cohesiveness and gumminess than hot air-and freeze-dried ones with boiling and microwave heating. Freeze dried shrimp had softer myofibril texture than hot air dried one. At the same time, more dense and multiporous structure in the tissue could be obtained from the hot air and freeze drying, respectively, after microwave heating of shrimps.

The Effects of Satisfaction with Culinary-Related Majors at Local Junior Colleges on Learning Immersion and Self-Efficacy

  • This study investigated the influence of major satisfaction on learning flow and self-efficacy of students majoring in culinary arts at local junior colleges. In the 2022-2 semester, 260 freshmen and sophomore college students majoring in culinary from five junior colleges in the Gwangju and Jeonnam regions were analyzed. For data processing, SPSS Ver. 25.0 was used. The data is used to measure reliability by Cronbach's α, t-test, ANOVA, Pearson's correlation coefficient, and multiple regression analysis. The results of this study are as follows : First, there was a difference in satisfaction between freshmen and sophomores in major satisfaction with cooking related departments at local junior colleges. Second, there was a significant effect of satisfaction with cooking-related majors at local junior colleges on learning immersion. Third, there was a significant effect of satisfaction with cooking-related majors at local junior colleges on self-efficacy. In conclusion, it was found that major satisfaction affects learning immersion and self-efficacy for both students enrolled in cooking-related departments at local junior colleges. In the future, we suggest follow-up research on educational measures to increase learning immersion and self-efficacy for students who are not majoring in cooking in the high school curriculum and students who are insufficient in major classes due to part-time jobs during the semester.

Effects of Different Feeding Regimes on Deer Meat (Venison) Quality Following Chilled Storage Condition

  • This study was conducted to investigate the effect of different feeding regimes on the quality of deer meat (venison) following storage at $4^{\circ}C$ for various durations. Twelve 5-year-old elk stags about 350 kg were stratified by weight and randomly assigned to one of four dietary treatments (three elk stags per treatment). The dietary treatments consisted of a feeding concentrate of 1.5% of body weight (T1), feeding concentrate of 1.8% of body weight (T2), feeding concentrate ad libitum (T3), or a home-mixed ration ad libitum (T4). The pH values of deer meat were not significantly different among treatment groups but were affected by duration of storage. Cooking loss increased under T4 treatment with increasing storage time at $4^{\circ}C$ (p<0.05). Increased storage time also resulted in significant decreases in shear force under T2 and T3 treatment compared to that under other dietary treatments (p<0.05). Lightness ($L^*$), redness ($a^*$), and yellowness ($b^*$) parameters were not significantly different among treatment groups, but lower values of $a^*$ and $b^*$ were observed under T1 and T4 treatment with increasing durations of storage (p<0.05). The chemical and fatty acid composition had no significantly different among treatments. Therefore, meat quality was most affected by increased storage time at $4^{\circ}C$. These results may serve as the basis for further study of deer meat (venison) from Korea.

Estimating Effects of Attributes on Pizza Restaurant Choice by University Students (대학생들의 피자 전문점 선택에 영향을 미치는 속성에 대한 평가)

  • The purpose of this study was to measure the pizza purchasing behavioral characteristics of respondents and importances of factors affecting pizza purchase, to estimate the effects of attributes on pizza restaurant choice, and to predict probability of selecting a particular pizza restaurant The questionnaire consisted of two parts: The paired experimental profiles, purchasing behavior and importances of factors affecting pizza purchase. This study generated profiles of 16 hypothetical pizza restaurant based on the seven attributes. The profiles comprised 16 discrete sets of variables, each of which had two levels. For this study, researcher randomly selected 150 students of university as respondents. Twenty students did not complete the survey instrument, resulting in a final sample size of 129. All estimations were carried out using frequency, correlation, phreg procedure of SAS package. The results were as followed Based on the estimated model, the -2LL(B) statistic for a model with all explanatory variables was 5585.761 and the Chi-square statistic is 134.786 with 7 df (p<0.001). At p<0.001, we would reject the null hypothesis that the attributes do not influence choice. The parameter estimate for price was highest, followed by late delivery time, promised delivery time, money-back guarantee, discount, pizza variety, and pizza temperature. The result from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.

Study of Dietary Attitudes and Diet Management of Married Immigrant Women in Korea according to Residence Period (한국 결혼이주여성의 거주기간에 따른 식태도 및 식생활 관리에 관한 연구)

  • The purpose of this study was to examine the dietary attitudes and meal management of married immigrant women according to residence period in Korea. The study was conducted by administering a questionnaire survey to 220 married immigrant women in Korea. More than one third of the immigrant women who stayed in Korea less than 3 years tended to eat a limited variety of foods. Irregularity of meal time decreased as residence time period increased (P<0.05). As immigrant women stayed longer in Korea, they became more responsible for the diet of their family (P<0.001) and had more time to share breakfast and dinner with all family members (P<0.05). Nearly half of immigrant women in all residence periods indicated their husband's family as the most influential factor in acquiring Korean foods (P<0.05). Immigrant women became more familiar with Korean cooking and recognition of nutritious foods (P<0.001) the longer they lived in Korea and more enjoyable meal times with family (P<0.05). In summary, as the period of residence in Korea increased, the dietary attitudes of immigrant women became more positive towards Korean food and diet culture. Further, immigrant women became more responsible for guiding children's dietary habits and offering healthy foods to their family as residence period increased. Therefore, the government and social programs should conduct constant and organized lessons on Korean culture and cooking according to residence period for immigrant women to build up stable and positive dietary attitudes.

Measurement of Viscoelastic Properties of Heat Denatured Gluten Network (열변성 글루텐의 점탄성 측정에 관한 연구)

  • A method for the measurement of viscoelastic properties of heat denatured gluten network was developed in order to evaluate the noodle making quality of wheat flour. The stress relaxation of elongated heat denatured gluten network could be expressed by 6-element generallized Maxwell model. The tensile force of heat denatured gluten network increased by the heating time. The elastcity and viscosity of the first exponential term which covers 70-74% of the total relaxation increased as cooking time was extended up to 1q min. The addition of gluten network strengthening agent, potassium bromate, at 1000ppm level reduced the elasticity and viscosity, while weakening agent, L-cystein, increased them. The relaxation time decreased after 11 min of cooking in both cases. The elasticity and viscosity of heat denatured gluten were affected differently by the concentration of added urea.

Estimation of Attributes Affecting University Students to Select the Pizza Restaurant by Gender (성별에 따른 대학생의 피자전문점 선택에 영향을 미치는 속성 평가)

The parameter estimate for late delivery time with male student group was highest, and the parameter estimate for price with female student group was highest. The pizza restaurant that charged \20,000, offered 100% discount on eleventh pizza, promised to deliver pizza in 40 mins, usually delivered the pizza as promised time, offered only 1 type of pizza crust, delivered warm pizza, offered the money-back guarantee was favored by each of male student group and female student group. The results from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.
