As a preliminary study for developing cooking techniques to improve cooked rice flavor, we surveyed consumer perceptions on purchasing rice and the consumption of cooked rice. The quantity of rice purchased by consumers was in the range of $1O{\sim}20$ kg. The purchase criterion for 50% of the subjects was the taste of the cooked rice, and half of the subjects bought their rice at a supermarket. A majority (90%) of the subjects consumed the rice within 1 to 4 months, storing it raw in the package (32.4%) or in a container at room temperature. The rice was cooked for 2 to 5 persons (65%), 1 to 2 times a day (70%) with a pressure cooker (76%). The rice and water volume were measured by eye. The cooked rice was eaten immediately (41.8%) or in 1 to 2 days (48.6%) by keeping it in an electric cooker (63.6%). The subjects perceived the rice cultivar (37.9%) as the major factor for the cooked rice flavor, as well as the region of origin (21.3%), and storage period (11.9%); the cultivars of Ilmi, Ilpoom and Chuchung were preferred. In conclusion, the consumers regard rice as a principal food; however, the methods to measure rice and water are not standardized. To improve the taste of cooked rice, consumers depend on cooking equipment and the rice cultivar.
This study was performed to investigate the sanitation management and the sanitation knowledge of managers in military foodservice by questionnaires and inspection of foodservice facilities. Thirty managers working in military foodservice were given questionnaires and the related facilities located in the northern part of Kyeongki-Do, Korea were inspected. Most of the facilities(76.%) were built more than ten years ago, they are now decreptit and the internal temperature was high with poor ventilation in the kitchen. An education program on sanitation was conducted less than four times a month (63.3%) while the education materials and resources from the upper-unit(80%) along with their self-renewment of data was poor(once a month, 60%). In the sanitation knowledge examination, the percentage of correct answers were 76% in terms of facilities, 72% in terms of personal sanitation, 71% in terms of receiving and storage, 63% in terms of the environment and 57% in terms of the cooking process. The results of this study suggest that the modernization of foodservice facilities and equipment, along with additional sanitation machinery and equipment, a guaranteed working environment and upgraded sanitation education will be required to improve the sanitation management in military foodservice.
The study was conducted to assess sanitary concepts of employees and needs of HACCP-based sanitation training program for elementary school foodservice operations. Subjects consisted of 370 foodservice employees. Foodservice employees' demographic characteristics were surveyed, and their food sanitation knowledge was tested. Food sanitation knowledge included 4 dimensions of foodborne disease & food microbiology; sanitary management in food product flows; personal hygiene management; and equipment & facility sanitation management. The data were analysed using the SPSS package for descriptive analysis, t-test and ANOVA test. The average sanitation knowledge score was 9.5 out of 15. The working periods of foodservice employees were singnificantly(p<01) related to food sanitation knowledge dimensions. Correct answering rate of 4 sanitation management dimensions were 74.4% in foodborne disease & food microbiology; 536% in sanitary management in food product flows; 78.7% in personal hygiene management; and 50.5% in equipment & facility sanitation management. 6 items in 4 sanitation knowledge dimensions under mean score were identified. Those items were temperature danger zone, thawing method of frozen foods, cooking & holding temperature, proper sampling & storage methods, proper storing methods in refrigerator, and proper washing & sanitizing method for utensils. Identified 6 items were included in 12 critical control points developed for the elementary school generic HACCP plan, and should be emphasized in implementing HACCP-based sanitation training program.
This study was carried out to investigate foodservice management practices of 100 child care centers nationwide, and to provide background information for developing foodservice management policies at child care centers. Approximately 20% of the child care centers had a separate dining room; most of the centers were vulnerable to sanitation or safety problems. The percentage of the centers that planned menus was about 60% and 10% established standardized recipes. Fourteen percent of the centers kept records for distribution and menu evaluation and 33% kept sanitation management records. Since only 7% of the centers employed a dietitian, foodservice in most centers were not managed by professionals. The results of menu assessment revealed that 56.5% of the national/public child care centers received 19 points or higher out of 21 points, whereas 5.6% of the private child care centers received the same scores. Proper usage and storage of raw food, sanitary management of equipment and facilities, waste management/leftover food treatment, and basic facility of cooking zones were performed well by many centers. The overall scores of foodservice performance were only 31.2 out of 60 points, representing relatively poor safety management, food procurement management, and facilities and equipment management. These results indicate that the foodservice management of the child care centers are in a relatively poor state. Since nutrition management of the most centers was performed by non-professionals, it may not be possible to provide proper nutrition for health and normal growth of preschool children and to perform efficient nutrition education programs. The following suggestions are strongly recommended in order to improve foodservice performance at child care centers. First, foodservice administration should be performed by a dietitian, and second, efforts should be focused on strengthening nutrition and sanitation management.
6 Central commissary and 2 conventional school foodservice operations were assessed in terms of time-temperature relationship and microbiological quality, and monitoring control methods were identified through hazard analysis during the phases of prodution and distribution. 2 conventional schools from Seoul and 6 commissary schools from Kyungkido were participated in the survey. Meals produced in central commissary were distributed to satellites, therefore delivery practices of foods were identified as critical. Microbiological test results for commissary and conventional schools revealed that microbiological quality of foods was mainly related to time-temperature management, types of food, and equipment sanitation not to the foodservice system used. Time-temperature profiles at temperature danger zone (7.2-60$^{\circ}C$) observed were to be related to the following sanitary practices: cooked vegetables were held at temperature danger zone for relatively longer delayed time (15-38$^{\circ}C$: 15-226 min, 7-60$^{\circ}C$: 75-226 min), and same results were observed for deep-fat fried cutlets (15-38$^{\circ}C$: 15-151 min, 7-60$^{\circ}C$: 33-151 min). Menu items with various ingredients and frequent contacts with hands and equipments during the production flow were held at temperature danger zone for longer delaying time than other menu items with brief prodution stages. Based on hazard analysis critical control points, microbiological quality was collectively affected by time-temperature relationships, equipment sanitation, proper cooking methods, and sanitary management competencies of dietitians. Microbiological test results of working equipments and surface of dishes and trays showed that immediate action should be taken. Cutting boards used in central kitchen were also showed similar results of potential dager of cross-contamination. Effective sanitary control methods were urgently needed.

This thesis has two objects: Firstly, the arrangement of basic data and formulating a system of experiment and practice in home economics and Secondly, the groping the way of improving the problems raised in the home economics education spot. A questinaire is used as the research tools for the fitness of content, of experiment and practice in the home economics and SPSS/PC(sup)+ and Scheffe Test are used for investigation. The results are as follows. 1. Students recognize the importance of experiment & practice more than the teacher. In the type of middle school teachers engaged in the girl’s middle school recognize the importance of experiment & practice more than those of coeducation middle school. 2. The percent of the school which executes over the 50% of experiment & practice in the contents of text book is 70%. The most numerous in the sphere of guiding is ‘seperate practice of student’. The reason of not executing the experiment & practice are ‘the concentration of the theory education’and ‘the lack of equipment and tools’3. Practice room for cooking was mostly established, but practice room of sewing was established only 5.6%. The contents of textbook for clothing sphere can be executed by using the equipment & tools of school only 9.2%. 4. 40% of the students feel that the content level of experiment & practice is difficult. Most of the students feel that the content level of experiment & practice, especially in the sphere of clothing, in unproper on the level fitness of contents by grade. 5. Most of the students assent on the positive effect for the degree and the most important cause for its not contributing to the everday life is the lack of experiment & practice in school. 6. Most of the students feels positively on the interest degree of content and the students who though much of the experment & practice feels positively on the interest degree of content.
The purpose of this study was to examine how housing facilities have been progressed, how housing life has been technicalized and which factors contributed to the modernization of Korean housing in the economic development era. Review of advertising material for apartment sales in the newspaper from 1970s' to the 1990s' are mainly utilized to follow up the changes of kitchen equipment and furnitures, bathroom equipments, heating and cooking facilities and their fuel system, information and telecommunication system as well as security and intelligent system. However, high technology in apartment was a symbol of modem housing in each time. The improvement of housing facilities brought about the improvement of efficiency in household works. In other words, housing space plays as "Living Machine". And appearance of new technology systems leaded to a pluralistic activities in the home. As well as improvement on the material environments accelerated the individualization phenomena in housing space.
This study was conducted a part of the project developing the standards of national board test for the dietitian's licence. The purpose of this study was to verify the dietitian's job description. To do this the survey was carried out for the frequency, criticality and difficulty of each job description with 4 point scales. The subjects was 521 dietitians, who have been working over 3 years at their position. The results are following ; 1. The each duty, task and task elements are verified with survey results. 2. Duties with high frequency and criticality were menu management, purchasing, storage and stock management, operational management for cooking, system management for distribution and sanitation management. 3. Duties with middle frequency and high criticality were managing equipment and facility, food service management, human resources management and self-development. 4. Duties with low frequency and high criticality were nutritional assessment for life cycles, nutrition therapy, nutrition education and disease management. 5. For difficulty, food service area show lower than of nutrition service area.
The survey was conducted by using questionnaires in order to investigate the expectation of over middle aged people on dietary living during their elderly life. Many persons(41.9%) anticipate that some kind of change will happen in dietary living during their elderly life. They are willing to prepare their own meals by themselves (73.5% of male and 86.6% of female). It is expected that they prefer various kinds of foods, korean traditional foods, home-made foods, natural food to processed food, and nutritionally balanced foods. The balance of nutrition and easiness of digestion should be primarily considered as a base of food choice, and then taste or convenience. The result of this study indicates that korean traditional food culture can not be easily changed. If food industries had a plan to produce some items for future silver generation, they should make efforts to develop processed foods considered the nutrition and digestibility, natural foods packed conveniently for home-cooking, and food preparation equipment used easily by elderly people.
Foodservice at elementary schools has been provided nation-wide. It is predictable that foodborne diseases would increase continuously. Formation of a counterplan is urgently needed. This study was designed to identify the stage which contains the critical control points (CCPs) for the microbiological management of HACCP (Hazard Analysis Critical Control Point) at the foodservice provided at elementary schools. Foodservice places at four elementary schools in Seoul were sampled and the overall hygiene of cooking, utensils and equipment, employees, and environment by season were examined. The results showed that the number of bacteria in overall samples was increased and that E. coli, Salmonella and Staphylococcus by biochemical test emerged in more diverse samples in summer than in spring. Particularly, the number of aerial bacteria in summer was three-fold greater than that in either spring or winter. E. coli 0157 was not detected, although Salmonella was identified by PCR analysis in the meat knives, chopping boards, waste bins and meat dish at elementary school foodservice. According to this data, cross-contamination should be managed in the stage of mixing up the ingredients with improper equipments and insanitary treatments. Thus, the establishment of SSOP (Sanitation Standard Operating Procedures) and GMP (Good Manufacturing Practice) at elementary school foodservice is stringently required, along with sanitation education for workers and employees as CCPs.
