The Evaluation of Service Employees' Sanitary Management in Hotels (특급 호텔 레스토랑 서비스 제공자의 위생 관리 평가)

  • The purpose of this study was to evaluate the sanitary management of hotel employees in Seoul. The results were summarized as follows : The total mean of sanitary management perception by factor was 3.91${\pm}$0.62, in which personal sanitation, property management, environment and facility factors were, in order, 3.99${\pm}$0.82, 3.91${\pm}$0.75, 3.90${\pm}$0.86 and 3.85${\pm}$0.82, respectively. This study showed that there was a significant difference in the perception of sanitary management among environment, facility and property management by age based on general characteristics. While there were no differences by hiring type, there was a significant difference among environment, facility and property management with personal sanitation factor according to the employee’s career path. There was also a significant difference between property management and personal sanitation factor according to hotel management style. In addition, a significant difference was observed among environment facility and property management with personal sanitation factor according to work place. In conclusion, it is imperative to continue educational programs for sanitary management by career, work place and management style in order to improve sanitary management of hotel employees’.

Effects of Temperature and Time on the Cookery Properties of Sous-vide Processed Pork Loin

  • This study investigated the effects of temperature ($50^{\circ}C$, $55^{\circ}C$, and $60^{\circ}C$) and time (12 and 24 h) on the cookery properties of sous-vide (SV) processed pork loin. As an indicator of cookery properties, cooking loss, expressible moisture (EM), pH, differential scanning calorimetry (DSC), shear force, total plate count (TPC) and CIE color were measured and compared with fresh (FC) and cooked control (CC, $75^{\circ}C$ for 30 min). SV treatments at $50^{\circ}C$ showed higher tenderness and lower cooking loss comparing to CC. DSC result indicated that thermal transition of collagen was a key factor affecting the cooking loss and shear force of meat. In comparison of CC, risks of insufficient pasteurization and uncooked color generation were not shown in SV processed meat. Therefore, the results indicated that SV had a potential advantage to produce tender and moist meat, and the best SV condition of pork loin was estimated at $50^{\circ}C$ for 24 h.

Quality Characteristics of Yackwa Prepared by Different Amounts of Egg White (난백의 첨가수준에 따른 약과의 품질특성)

  • Yackwa was prepared by the addition of different amounts of egg white, and the samples were analyzed by texture profile analysis, Hunter's colorimetry and sensory evaluation during 5 days of storage. Tn texture profile analysis, the hardness, gumminess and chewiness of Yackwa were increased in all the samples during storage and the texture parameters were increased by increasing egg white level. No significant difference was observed in the lightness, redness and yellowness (p〉0.05), but Hunter's color values were slightly increased during storage in all the samples. In sensory evaluation, no significant difference was observed among the samples during storage except the increase of crispiness and overall acceptance by the addition of egg white. The results showed that Yackwa prepared with 10 g of egg white/(100 g of other ingredients ---약과재료 얼마당 10g 첨가인지 명확히 해야 함) had an acceptable sensory quality.

Quality Characteristics of Soy Ice Creams as Affected by Enzyme Hydrolysis Times and Added Calciums (효소처리시간과 칼슘의 종류를 달리한 칼슘강화 콩아이스크림의 품질특성)

  • The effects of hydrolysis times and calcium source additions (calcium lactate, calcium carbonate), on the qualify characteristics of soy ice cream prepared with soy protein isolate(SPI), were studied. Increasing the hydrolysis time decreased the viscosity and overrun of soy ice creams, but increased the melt-down property. The addition of calcium lactate increased the viscosity of the soy ice cream mix, but no changes were observed from the calcium carbonate addition. The overrun of calcium lactate samples was higher than on addition of calcium carbonate. The addition of calcium lactate and calcium carbonate resulted in decreased melt-down properties, although these effects were more evident in the calcium lactate samples. However, calcium carbonate addition resulted in higher scores in the overall quality of the soy ice creams. In conclusion, better soy ice cream could be prepared by treating the SPI with Flavorzyme for 50 min, along with calcium fortification in the form of calcium carbonate.

Quality Characteristics of Functional Muffins Containing Hesperetin (Hesperetin이 첨가된 기능성 머핀의 품질 특성)

  • The quality characteristics of muffins prepared with hesperetin (0.2, 0.4 or 0.8%), a flavonoid, were evaluated. There were no significant differences in volumes and heights of the muffins due to the various additions of hesperetin, or in the L, a and b values of the crust and crumb of the various muffin groups. The sweetness of the muffins containing the highest level of hesperetin (0.8%) gave the highest scores in the sensory test. A stepwise regression analysis showed the sweetness and after taste were the significant factors affecting the overall preference for the muffins. Therefore, hesperetin may be useful as a muffin additive as its addition did not impair the sensory characteristics of the muffins.

Physicochemical and Gelatinization Properties of Starch and Flour from Pigmented Rice(Suwon 415)

  • 본 연구는 유색미 가루와 전분의 이화학적 특성 및 호화특성을 알아보기 위하여 수행되었다. 유색미 가루와 전분의 일반성분, 가루의 식이섬유 함량 및 보수력을 분석하였다. 주사전자현미경을 이용하여 가루와 전분의 형태를 관찰하였다. 유색미 전분의 청가 및 아밀로오스 함량을 측정하였고, 가루와 전분의 물결합 능력, 팽윤력과 용해도를 조사하였으며, RVA에 의하여 호화특성을 조사하였다. 유색미 가루의 일반성분은 수분 13.5%, 조단백질 9.1%, 조지방 2.2%, 회분 1.4%, 조섬유 1.3%이었고, 전분의 경우는 수분 13.6%, 조단백질 0.45%, 조지방 0.11%. 회분 0.12%이었다. 백미나 현미에 비하여 단백질의 함량이 매우 높았으며. 조지방과 회분, 조섬유의 함량은 백미에 비하여는 휠씬 높았고, 현미와는 비숫한 수준이었다. 유색미의 식이섬유 함량은 불용성 식이섬유가 3.3% 수용성 식이섬유 2.4%로 총 7.7%였다. 분리된 불용성 식이섬유의 보수력은 약 7.12(g $H_2O$/g NDF)로 매우 물자의 친화력이 큰 편이었다. 주사전자현미경에 의한 관찰결과 가루의 경우는 전분 주위에 단백질 등의 다른 성분들이 있는 것을 볼 수 있었으며, 전분은 다른 쌀 전분과 마찬가지로 불규칙한 다각형의 형태였으며, 크기는 대부분 2-5$\mu\textrm{m}$의 범위로 비교적 균일하였다. 유색미 전분의 청가는 전분이 0.11, 아밀로오스가 0.82. 아밀로펙틴이 0.07이었으며, 아밀로오스 함량은 16.8%이었다. 물결합 능력은 가루가 248%, 전분이 146%이었다. 팽화력과 용해도는 가루와 전분 모두 7$0^{\circ}C$ 이후 증가하였으며 전분이 가루보다 더 급격히 증가하였다. RVA에 의한 호화양상에서 가루와 전분의 호화온도는 각각 85.7$^{\circ}C$와 66.2$^{\circ}C$로 나타났다. 최고점도는 가루가 127.7 RVU, 전분이 243.3 RVU로 차이가 컸으나. setback 후의 점도는 176 RVU과 187.7 RVU로 큰 차이가 없었다. 호화액의 consistency는 가루와 전분이 각각 92와 94로 비슷하였다.

Influence of sugar alcohol and enzyme treatment on the quality characteristics of soy ice cream (당알콜과 효소의 종류가 대두아이스크림의 품질특성에 미치는 영향)

  • The effects of bromelain and $\alpha$-chymotrypsin treatments on the functional properties(foaming capacity, foaming stability, emulsifying capacity, and emulsifying stability) of soy protein isolate(SPI) and the addition of various sweeteners(sucrose, sorbitol, xylitol) on the quality attributes(viscosity, overrun ratio, melt-down property, and sensory characteristic) of soy ice cream were studied. SPI was more effectively hydrolyzed with $\alpha$-chymotrypsin than bromelain, resulting in a better foaming and emulsifying capacity. Adding xylitol could significantly improve the viscosity, overrun and melt-down property of soy ice creams while the effect was the lowest in the sucrose addition. Bromelain treatment caused a lower apparent viscosity of SPI suspension compared with $\alpha$-chymotrypsin treatment and untreated. The overrun ratios of the soy ice cream prepared with bromelain and $\alpha$-chymotrypsin treated SPI were 18.9∼25.9% and 24.9∼40.3%, respectively as a result of freezing with agitation for 20 min in an ice cream maker. Comparatively, untreated SPI could bring only 15.8∼21.4% overrun ratios after operating for 15 min. The bromelain treatment caused high melt-down tendency of the product while soy ice cream with untreated SPI showed an opposite trend. In sensory characteristics, no significant differences in the strength of beany flavor were noted among the samples. Sweetness, bitter taste, icy feel, and mouthfeel of the product were greatly affected by the enzyme-treatment of SPI. Soy ice cream added with xylitol after $\alpha$-chymotrypsin treatment was the most acceptable among all samples.

Effects of Physicochemical and Gel Properties of Starches Purified from Korean and Chinese Mungbeans with Different Methods (한국산과 중국산 녹두로부터 방법을 달리하여 분리한 전분의 이화학적 및 겔 특성에 미치는 영향)

  • To compare the physicochemical and gel properties of mung bean starches prepared by different purification methods, starches from Korean Eohul variety and Chinese mung bean (MB) with or without hull using alkaline solution or water as solvent were purified. The optimum conditions for making muk were investigated. Apparent amylose and total dietary fiber contents, water binding capacity, solubility and pasting properties by RVA were analyzed. The characteristics of starch gels (10% dry basis) were measured for 0 and 4 day stored at $4^{\circ}C$. The protein and ash contents were significantly different (p<0.05) and lowered in starch from dehulled MB using alkaline solution. The starches from dehulled MB using alkaline solution showed the lowest color differences. Apparent amylose contents of Eohul and Chinese starches showed 37.06-39.03% and 31.57-32.74%, respectively. Chinese starch was higher in water binding capacity but lower in solubility at $85^{\circ}C$ than others. Peak, trough, cold, and breakdown viscosities of Eohul starch were higher than those of Chinese one. Mung bean starch gel made immediately exhibited clear and glossy appearance but became whiter like milk. The crystallinities of starch and starch gel showed A and B types, respectively. The hardness, gumminess, and resilience of starch gel made immediately and hardness, cohesiveness, gumminess, and resilience of 4 day stored gels were different significantly (p<0.05). Especially, Eohul starch gels purified from hulled MB showed higher resilience (bending property) and hardness. Therefore, it was suggested that high quality muk would be made using MB starch purified from hulled Korean mung bean using water as solvent.decreased in contain more than 20% of SGP added groups. The optimal concentration of SGP was found in the range of less than 10%.

Chitinase Activity and Textural Property of Leek Added Kimchi During Fermentation (부추첨가 김치의 발효과정 중 chitinase 활성과 조직감)

  • Several ingredients of kimchi including chinese cabbage, garlic, leek, big green onion, and small green onion were assayed for their chitinase activities. Kimchi with various leek contents (4, 8, 12%) were fermented at 15$^{\circ}C$ for 9 days and the chitinase (EC 3.2.1.14) activity and textural properties were determined. The chitinase activity of the ingredients was in the order of garlic>leek>small green onion>chinese cabbage>big green onion. During fermentation, the chitinase activity of kimchi juice appeared more prominent than that of kimchr tissue, however, it was decreased in all kimchi samples among which the control sample showed a remarkable drop. The activity of chitinase in kimchi tissue increased until 3rd or 5th day of fermentation and then decreased. The puncture force of all kimchi samples decreased and those of leek-added kimchi were higher than those of control. The above results suggested that the addition of leek for kimchi preparation could contribute to the improvement of textural qualities of kimchi due to chitinase activities of leek during fermentation.

Quality Characteristics of Noodle Added with Browned Oak Mushroom(Lentinus edodes) (갈변 표고버섯(Lentinus edodes)을 첨가한 국수의 품질 특성)

  • The principal objective of this study was to assess the quality properties of noodles to which browned oak mushroom (Lentinus edodes) paste was added at concentrations of 10%, 20%, and 30% to wheat flour, respectively. With regard to the cooking properties of the noodles, the weight and water absorption of the cooked noodles increased with increasing paste contents, but the turbidity of the noodle soups decreased (p<0.05). The hardness and gumminess of the uncooked and cooked noodles decreased significantly in proportion to the quantity of added paste, except in the case of the cooked noodles with 30% paste. The springiness and cohesiveness of both noodles with Lentinus edodes paste were significantly higher than in the controls. The lightness of the uncooked and cooked noodles decreased in accordance with the amount of added paste. However, the yellowness of both noodles was significantly increased. Moreover, the results of our sensory evaluation showed that the cooked noodles with 20% and 30% added Lentinus edodes paste had higher values. Thus, Lentinus edodes paste added to a concentration of up to 30% was shown to effectively improve the quality of noodles.
