This study was carried out to investigate the effects of different milking systems (AMS, automatic milking system and CMS, conventional milking system) and of supplemental fat feeding on milk composition and milk fat characteristics. The composition, MFG (milk fat globule) size, fatty acids (FAs), and free fatty acids (FFAs) of the milk from 4 AMS and 4 CMS dairy farms were analyzed on the basis of the milking system and feeding of protected fat. The milking system did not affect milk composition, MFG size, and milk FAs, but FFA content of AMS milk were significantly higher than that of CMS milk. Feeding of protected fat resulted in the production of milk much higher in LCFAs (long chain FAs); however, the milk composition was not affected by fat supplementation. Cows administered protected fat supplements produced milk containing MFGs with a large average diameter.

This experiment was conducted in three trials to evaluate optimal ambient temperature for a novel milk replacer feeding system designed for early-weaned pigs, compared to commercial dry diets fed within a conventional hot nursery. A total of 165 PIC genotype pigs were weaned at $13.89{\pm}0.7$ days of age and allotted to one of two dietary treatments in three trials based on weight and litter origin. Each trial consisted of pigs fed dry diets (DD) and pigs fed milk replacer (MR) which was offered in one of 3 different ambient temperatures. Pigs fed milk replacer were housed in a specialized nursery building in which one half of each pen contained an enclosed hover that was thermostatically maintained at $32^{\circ}C$ while the exterior ambient temperature (where milk was fed) was set at either 17 (trial 1), 24 (trial 2) or $32^{\circ}C$ (trial 3). Pigs fed dry diets with the conventional nursery were maintained at $30^{\circ}C$ for each trial. From d 21 to d 49, all pigs were fed DD within a standardized hot nursery environment. During the first week (d 14-21), pigs fed MR showed increased ADG from 214% to 228% over control pigs fed DD (p<0.001), regardless of ambient temperature. As ambient temperature was increased from 17 to 24 to $32^{\circ}C$, ADG of MR-fed pigs was increased by 214%, 220% and 228% over those of pigs fed DD, respectively. ADFIs of MR-fed pigs at $17^{\circ}C$, $24^{\circ}C$, and $32^{\circ}C$ compared with pigs fed DD were increased by 108%, 139% and 164% from d 14 to d 21, respectively. Fed efficiency (G/F) of MR-fed pigs at $17^{\circ}C$, $24^{\circ}C$, and $32^{\circ}C$ compared with pigs fed DD were 199%, 162% and 139% of those of pigs fed DD, respectively. As ambient temperature increased, diarrhea scores showed a slight tendency to increase. The advantage of MR feeding was greater when the ambient temperature was higher, but G/F was impaired with increased ambient temperature. We conclude that ambient temperature within the specialized nursery influenced behavior, MR feed intake, and probably piglet energy expenditure. There were no differences between MR-fed and DD-fed pigs for ADG, ADFI and G/F in the subsequent growth period (d 21 to d 49, p>0.05). Maximal advantage of MR feeding was obtained at the intermediate ($24^{\circ}C$) ambient temperature during the overall period (p<0.05). Results from this experiment indicate that a milk replacer feeding system utilized in the early postweaning period can maximize pig growth performance, and that ADG, ADFI and G/F were affected by different ambient temperatures within MR-fed pigs. The high or low temperatures could not support the maximal growth of pigs fed MR.
This study was conducted to investigate the effect of organic feed containing rice bran and soybean hull as organic by-products on milk production of mid-lactation dairy goats. Four Saanen dairy goats (initial BW $59.4{\pm}7.4$ kg, average 6 lactation months, fourth kidding) were allocated into conventional feed group (T1) and organic feed group (T2) with 2${\times}$3 crossover design for 9 weeks. Experimental diets were formulated to contain 23 MJ ME/d, 382 g CP/d DM based on NRC (1981) and AFRC (1998). Dry matter (DM) intakes of concentrate and silage were higher in T2 (1,232 and 96 g/d) than T1 (1,105 and 91 g/d) (p<0.05). However, DM intake of hay was higher in T1 (488 g) than T2 (347 g) (p<0.05). Total DM intake had no significant difference between T1 and T2. Although no significant difference was found in milk yield between treatments, T2 numerically increased (+150 g/d) compared with T1. There were no significant differences in milk composition and milk urea nitrogen (MUN) between T1 and T2. Relative to T1, T2 significantly increased the stearic acid (C18:0) and linoleic acid (C18:2) (p<0.05). Overall results of the present experiment indicated that organic feed could not adversely affect DM intake and milk production in dairy goats compared with conventional feed.
This study was conducted to manufacture new value-added corn dog using potato, milk powder and egg as nutritious and surplus agricultural and livestock products. A typical corn dog was manufactured with corn dog powder, potato, milk powder and egg as the same method of conventional corn dog. Corn dogs were divided into four groups; control group A [conventional corn dog], group B [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 1: 1: 2)], group C [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 2: 1: 2)], group D [corn dog manufactured with the fixed content of corn dog powder, milk powder, and egg, potato, water (3: 3: 1: 2: 2)], Viscosity of corn dog batter, pH of corn dog, rheology and sensory evaluation were measured. There were no significant differences for viscosity and pH between original corn dog and manufactured corn dog (p>0.05). However, hardness and brittleness of manufactured corn dog D were superior to the other groups (p<0.05). Also, manufactured corn dog D was superior to the other groups by the results of sensory evaluation. Therefore, these results suggest that it may be possible to manufacture new value-added corn dog which can help to stimulate the consumption of nutritious and surplus agriculture and livestock products.

This study was conducted to evaluate the feeding value of jambo grass (Sorghum $bicolour{\times}Sorghum$ sudanefe) silage and mott grass (Pennisetum purpureum) silage as a replacement of conventional fodder (jambo grass) in the diet of lactating Nili buffaloes (Bubalus bubalis). Thirty early-lactating ($45{\pm}4$ days), multi-parous Nili buffaloes, ten in each group, were allotted to three experimental diets. Jambo grass and mott grass were ensiled with molasses (at 2% of fodder DM) in two trench silos for 30 days. The control diet (JG) contained 75% jambo grass while the other two diets contained 75% jambo grass silage (JGS) and 75% mott grass silage (MGS). The remaining 25% DM in each diet was supplied by concentrates. Diets were mixed daily and fed twice a day ad libitum for 120 days. Dry matter intake (DMI) was higher with the JG diet compared with JGS and MGS diets. However, DMI as % body weight did not differ significantly in buffaloes fed either fodder or silage based diets. Crude protein (CP), digestible CP and NDF intakes were significantly higher on JG compared with silage-based diets. Apparent total tract digestibilities of DM, CP and NDF were similar in buffaloes fed JG, JGS and MGS diets. Milk yield (4% FCM) was similar in buffaloes fed JG and silage based diets. Fat, total solids, solid not fat, CP, true protein and non-protein nitrogen content of milk were similar in buffaloes fed fodder or silage based diets. The present results indicated that jambo grass and mott grass ensiled with 2% molasses for 30 days could safely replace the conventional fresh grass fodder (75% DM) in the diet of lactating Nili buffaloes without affecting their milk yield.

Objective: The aim of the present study was to investigate the effect of dietary zinc supplementation of Friesian cows on chemical-nutritional and aromatic properties of Caciocavallo cheese after 7 days (C7) and 120 days (C120) of ripening. Methods: Twenty eight Friesian cows, balanced for parity, milk production and days in milk, were randomly assigned to 2 groups. The control group (CG) was fed with a conventional complete diet, while the experimental group (zinc group, ZG) received a daily zinc supplementation of 60 mg for kg of dry complete feed. During the experimental period, the milk yield was monitored and samples of milk and caciocavallo cheese were collected and analyzed for chemical-nutritional composition and aromatic profile. Results: The enrichment of dairy cows diet with zinc, did not influence milk yield and composition, however a marked reduction of somatic cell count was evidenced. Both in milk and cheese the ZG samples were characterized by a lower concentration of satured fatty acids and an increase in oleic, vaccenic and rumenic acids. The aromatic profile of dairy products was also positively affected by dietary zinc intake, with an increase in concentration of carboxylic acids, esters and lactones. Conclusion: The present results suggest a positive role of dietary zinc intake in improving the quality of bovine milk and related cheese, in particular for the increase in concentration of bioactive fatty acids such as rumenic acid. The changes evidenced in cheese through the analysis of the volatile profile, would be consistent with the development of interesting organoleptic properties, although further evaluations should be performed to confirm the consumer acceptability of these changes.
Data pertaining to 1111 first lactation performance record of Karan Fries (Holstein-Friesian $\times$ Zebu) cows spread over a period of 21 years and sired by 72 bulls were used to examine the efficiency of sire indices for lactation milk production using auxiliary traits. First lactation length, first service period, first calving interval, first dry period and age at first calving were considered as auxiliary traits. The efficiency of this method was compared with simple daughter average index (D), contemporary comparison method (CC), least-square method (LSQ), simplified regressed least-squares method (SRLS) and best linear unbiased prediction (BLUP) for lactation milk production. The relative efficiency of sire evaluation methods using one auxiliary trait was lower (24.2-32.8%) in comparison to CC method, the most efficient method observed in this study. Use of two auxiliary traits at a time did not further improve the efficiency. The auxiliary sire indices discriminate better among bulls as the range of breeding values were higher in these methods in comparison to conventional sire evaluation methods. The rank correlation between breeding values estimated using auxiliary traits were high (0.77-0.78) with CC method. The rank correlation among auxiliary sire indices ranged from 0.98 to 0.99, indicating similar ranking of sire for breeding values of milk production in all the auxiliary sire indices.
Three experiments were conducted to investigate the hypothesis that cows grazing on pasture produce the highest proportion of c-9 t-11 CLA in milk fat and no further increase can be achieved through supplementation of diets rich in linoleic acid, such as full-fat extruded soybeans or soybean oil. In experiment 1, 18 lactating Holstein cows were used in a randomized complete block design with measurements made from wk 4 to 6 of the experiment. In experiment 2, three cannulated lactating Holstein cows were used in a $3{\times}3$ Latin square design. Each period was 4 wk with measurements made in the final wk of each period. Cows in both experiments were assigned at random to treatments: a, conventional total mixed ration (TMR); b, pasture (PS); or c, PS supplemented with 2.5 kg/cow per day of full-fat extruded soybeans (PES). In both experiments, feed intake, milk yield, milk composition, and fatty acid profile of milk and blood serum were measured, along with fatty acid composition of bacteria harvested from rumen digesta in experiment 2. In experiment 3, 10 cows which had continuously grazed a pasture for six weeks were assigned to two groups, with one group (n = 5) on pasture diet alone (PS) and the other group (n = 5) supplemented with 452 g of soy oil/cow per day for 7 d (OIL). In experiment 1, cows in PS treatment produced 350% more c-9, t-11 CLA compared with cows in TMR treatment (1.70 vs. 0.5% of fat), with no further increase for cows in PES treatment (1.50% of fat). Serum c-9, t-11 CLA increased by 233% in PS treatment compared with TMR treatment (0.21 vs. 0.09% of fat) with no further increase for cows in PES treatment (0.18% of fat). In experiment 2, cows in PS treatment produced 300% more c-9 t-11 CLA in their milk fat compared with cows in TMR treatment (1.77 vs. 0.59% of fat), but no further increase for cows in PES treatment (1.84% of fat) was observed. Serum c-9, t-11 CLA increased by 250% for cows in PS treatment compared with cows in TMR treatment (0.27 vs. 0.11% of fat), with no further increase for cows in PES treatment (0.31% of fat). The c-9, t-11 CLA content of ruminal bacteria for cows in PS treatment was 200% or more of TMR treatment, but no further increase in bacterial c-9, t-11 CLA for cows in PES treatment was observed. Supplementation of soy oil in experiment 3 also did not increase the c-9 t-11 CLA content of milk fat compared with cows fed a full pasture diet (1.60 vs. 1.54% of fat). Based on these findings, it was concluded that supplementing with feeds rich in linoleic acid, such as full-fat extruded soybeans or an equivalent amount of soy oil, to cows grazing perennial ryegrass pasture may not increase milk fat c-9 t-11 CLA contents.
Chloramphenicol (CAP) is a very effective broad-spectrum antibiotic which had been widely used in animal production. However, the drug is not approved in many countries for use in food-producing animals because of its potential toxicity and the possibility of residues in food products. In this study, a modified microbiological assay was developed for the sensitive detection of CAP residues in meat and milk. The method was characterized by the extraction of CAP with ethyl acetate, addition of $0.15\;\mu\textrm{g}$ oxytetracycline/ml in the phosphate buffer diluent (pH 6.0), a luteus ATCC 9341. The lowest levels of CAP detected in muscle tissues and milk were $0.025\;\mu\textrm{g}/ml\;and\;0.05\;\mu\textrm{g}/g$, respectively. Recovery rates free CAP from milk were 68.5%, from bovine muscle 65.1%, from swine muscle 63.8%, and from chicken muscle 59.4%, respectively, and the coefficients of variation were 1.8~15.1%. The results showed that the detection limits of CAP residues in animal products could significantly be improved by the modified microbiological assay than the conventional ones.
Soy protein based formula (SPF) has been developed for infants who are at a high risk for atopic dermatitis (AD) and cow's milk protein allergy (CMA). We performed this study to evaluate the therapeutic efficacy and safety of SPF compared to conventional hydrolyzed cow's milk formula (hCMF) in the feeding of infants with AD and CMA. 38 infants (12 to 24 months of age) diagnosed with CMA and AD were randomized to receive either SPF or hCMF for 12 weeks. Follow-up was conducted at 4, 8 and 12 weeks. Growth parameters of the infants were evaluated during each visit. Clinical evaluations, including AD severity scores, pruritus, specific immunoglobulin E (IgE) (cow's milk protein and soy protein) levels of peripheral blood, were made at enrollment and week 12. Analysis was performed on the 32 infants (SPF: n=16, hCMF: n=16) who completed the 12-week intervention. Eczema area and severity index (EASI) scores, a measure of the severity of AD, and pruritus were significantly reduced after 12 weeks compared to enrollment in the both groups; however, the median changes for EASI scores and pruritus were not statistically different between the two groups. The growth parameters did not differ significantly between both groups at any assessed time point. This study suggests that SPF could be useful in decreasing the severity of AD without affecting infant growth status. Therefore SPF could provide an adequate and safe alternative to hCMF in treating infants with AD and CMA during the first 12 to 24 months of their life.
