The Dietary Behaviors, Taste Preferences, and Nutrient Intakes of Obese Children Consuming Unbalanced Diets (편식하는 비만 아동의 식행동, 맛 선호도 및 영양 섭취 상태)

  • This study was designed to evaluate the nutritional status and dietary problems of obese elementary students consuming unbalanced diets. Blood parameters, body-image perceptions, taste preferences, and nutrient intakes of 40 obese elementary students with unbalanced diets were compared to those of 40 additional obese elementary students as a control. The averages for age, height, weight, and obesity index were 11.5 years, 142.0 cm, 51.0 kg, and 35.4% in the study group and 11.8 years, 144.0 cm, 53.5 kg, and 36.3% in the control group, respectively. The major disliked foods by the students in the study group were vegetables (65%) particularly Kimchi (15%), as well as fish(15%), and pulses (10%). Mean serum cholesterol, blood glucose, GOT/GPT, and hemoglobin levels were 175.1 mg/dL, 89.2 mg/dL, 24.1/18.9 IU/L, and 14.3 g/dL in the study group and 182.8 mg/dL, 91.3 mg/dL, 28.3/33.9 IU/L, and 14.7 g/dL, in the control group, respectively. Approximately 60${\sim}$80% of the subjects responded that they eat a meal everyday, and the remainder skipped at least one meal. The preference for salty tasting foods was significantly lower in the study group, but the preference for hot tasting food was higher as compared to the obese control group(p<0.05, p<0.05). The daily energy intakes of the study and control groups were 1,768.3 kcal and 1,572.7 kcal, respectively, but there was no significant differences between them. Daily intakes of animal protein, fat, animal fat, and vitamin $B_2$ were significantly higher in the study group than in the control group. In conclusion, this study found that obese children consuming unbalanced diets strongly disliked vegetables, particularly Kimchi, as well as hot tasting foods; however, they preferred salty foods. Daily intakes of animal protein and fat were higher in the study group as compared to obese children not consuming unbalanced diets.

Physicochemical and Antioxidant Properties of Sponge Cake made using Barley Sprout and Green Tea (새싹보리와 녹차 스펀지케이크의 이화학적 및 항산화적 품질 특성)

  • This study investigated the physicochemical and antioxidant properties of sponge cakes made using different amounts (2 and 4%) of barley sprout powder (BSP) and green tea powder (GTP), respectively. The results showed that the baking loss rate of GS2 (2% green tea) and GS4 (4% green tea) was 12.39% and 11.96%, respectively in the green tea addition group, which was higher than that of the barley sprout group, but significantly lower than that of the control group at 13.34% (p<0.05). The specific volumes of the sponge cake containing barley sprout and green tea 2% and 4% were between 2.84-2.95 mL/g, which was significantly higher compared to the control group at 2.69 mL/g (p<0.05). The sugar content was significantly higher in the control group and the barley sprout addition group at 2.30°Brix (p<0.05). As for the volume index, the control group with the lowest value at 13.43 showed a significant difference compared to the addition groups. The volume index significantly decreased as the addition amount increased, measuring 14.07 in BS4 (4% BSP) compared to 14.87 of BS2 (2% BSP) in the barley sprout group (p<0.05). In cross-sectional photography, the color became darker than that of the control group as the quantum of additives increased. In terms of the DPPH and ABTS radical scavenging activity, the total phenol content, and total flavonoid content, the groups with the addition of barley sprout and green tea showed higher antioxidant activity than the control group (p<0.05).

Effect of Prunus mume Extract on Gastric Secretion in Rats and Carbon Tetrachloride Induced Liver Damage of Rabbits (매실추출물이 흰쥐의 위액분비 및 사염화탄소로 유발시킨 가토의 간장장애에 미치는 영향)

  • The aim of this study is to investigate effects of Prunus mume extract on gastric secretion in rats and experimentally carbon tetrachloride-induced liver damage of rabbits. The groups of Prunus mume extract showed excellent increasing effect in total acidity and peptic activity and decreasing effect on gastric volume than the control group whereas clear differences were not found between sample adminstered group and control group in gastric pH. In liver function test Prunus mume extract exhibited rapid recuperation of liver function that is sGPT activity showed an apparant decreasing effect from the 6th day total cholesterol and alkaline phosphatase level from the 10th day respectively compared to the control group in carbon tetrachloride-intoxicated rabbits. It is, is suggested that Pruns mume extract can be used as the stomachics to promote the gastric digestion by increasing the peptic activity and health food to shorten the recovery time from liver diseases.

Effectiveness of HACCP-based Training on the Food Safety Knowledge and Behavior of Hospital Foodservice Employees

  • To prevent food-borne diseases and ensure food safety, foodservice operators have been implementing the HACCP system in their facilities. Employees' knowledge of food safety can be improved through training and, as a result, their food safety behavior can be positively changed. A nonequivalent pretest and posttest control group model was designed to investigate the effectiveness of HACCP-based training on hospital foodservice employees' food safety knowledge and behavior, and to determine relationships between food safety knowledge and food safety behavior. The subjects used in this study were 84 hospital foodservice employees, assigned either to the intervention group (n=44) or the control group (n=40). Data were analyzed using the Statistical Package for the Social Sciences (SPSS). Descriptive statistics were computed, while the Student's t-test and ANCOVA (Analysis of Covariance) were used to investigate significant differences between groups, and the Pearson correlation was used to determine significant correlations. There were significant gains in both food safety knowledge and behavior, after the HACCP-based training. However, no significant correlation was found between food safety knowledge and food safety behavior. Based on this study we conclude that HACCP-based training is effective in improving both the food safety knowledge and food safety behavior of hospital foodservice employees.

Quality Characteristics of Convenient Chicken Porridge Made with Fresh Ginseng Powder (수삼가루를 첨가한 간편식 닭죽의 품질 특성)

  • This study investigated the quality characteristics of convenient chicken porridge prepared with fresh ginseng powder (FGP). The porridge made with the addition of FGP showed significantly higher or similar pH at 5.99-6.13 compared to porridge made without adding FGP. The convenient chicken porridge with FGP had lower viscosity and higher spreadability than the control group (p<0.05). This porridge exhibited higher lightness (L) and yellowness (b) values but a lower redness (a) value than the control group (p<0.05). The porridge made with the addition of 0.4% blanched FGP (BG0.4) displayed higher total polyphenol content, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activities than the other types of chicken porridge (all p<0.05). The porridge with the addition of FGP showed weaker "rice grain size", "glossiness", "appearance cohesiveness", "cooked rice aroma", "sweet taste", "texture cohesiveness", "thickness", and "stickiness" than the control group (all p<0.05). The appearance and flavor acceptance were significantly higher or similar for the porridge samples made with the addition of 0.2% non-blanched FGP (NBG0.2) and 0.4% non-blanched FGP (NBG0.4) when compared with those of the control group.

Effects of Zinc on the Antioxidative Enzymatic System and Metallothionein Synthesis in Streptozotocin-induced Diabetic Rats (Zinc 투여가 Streptozotocin 유발 당뇨쥐의 항산화효소계와 Metallothionein합성에 미치는 영향)

  • The present study was carried out to investigate the effects of zinc and vitamin E on the antioxidative defense mechanism in the liver of streptozotocin(STZ)-induced diabetic rats. Levels of blood glucose of STZ-diabetic rats were higher than that of control, but ZDM($ZnSO_{4}$ 10mg/kg injection+STZ) group was lower than those of DM(STZ injection) and EDM(vitamin E 400mg/kg diet+STZ) group. Levels of plasma insulin were lower in all three STZ-diabetic groups than those of control. Thiobarbituric acid reactive substances(TBARS) peroxide values(LPO) in liver were increased 2.3-fold in DM group compared with those of control, while LPG in ZDM group was lower than that of DM group, and EDM group had similar tendency compared with that of control. Reduced glutathione(GSH) contents of liver were decreased in DM group compared with those of control, but increased 2.3, 1.7-fold in ZDM and EDM groups, respectively, compared with those of DM group. Oxidized glutathione(GSSG) was increased in DM group compared with control and GSSG in ZDM and EDM group were lower than that of DM group. GSH/GSSG ratio had similar tendency compared with results of GSH. The activities of free radical scavenging enzymes such as superoxide dismutase, glutathione peroxidase and glutathione S-transferase were significantly decreased in DM group compared to those of control, but higher in ZDM and EDM groups than those of DM group. The metallothionein contents in liver and kidney were increased in DM and EDM groups were remarkably increased 20, 5.3-fold in ZDM group, compared with those of control.

Effects of Water Extracts of Camelia sinensis L on Blood Alcohol Concentration and Activities of Acute Alcohol Metabolic Enzymes in ICR Mouse (보이차(Camelia sinensis L) 추출물이 ICR Mouse의 급성 알코올 대사에 미치는 효과)

  • An eight-week-old male ICR mouse, which was induced with acute alcohol and sub-acute alcohol poisoning condition, was administered with bohee tea(Camelia sinensis L) extract. After oral administration of bohee tea and inducement of acute alcohol poisoning condition, the mouses blood alcohol concentration became as low as that of the normal control group. Its decrease rate was 87.26%, in comparison with that of the positive control group. Moreover, its blood GOT activity decreased with a rate of 93.1 % until it reached the normal level, as opposed to that of the positive control group. In addition, the GOT activity, despite rising after the alcohol intake, decreased(p<0.05) significantly after administration of each sample and reached the normal level. The bohee tea group experienced a significant decrease in the GOT activity, compared with the A1codex group and the Drink group. The GPT activity of the Alcodex group decreased by 11 % compared with that of the positive control group. The CTP activity of the bohee tea group decreased by 8.2%, while that of the Drink group decreased by 6.5%(P<0.05). However, there were no significant differences between the results in the control group and those of the test group. The bohee tea group's hepatic ADH activity increased by 22.7% compared with that of the positive control group. On the other hand, the hepatic ADH activity of the Drink group increased by 33.6% while that of the A1codex group increased by 20.4%. On the contrary, the bohee tea extract, the hepatic ALDH did not manifest any significant difference as compared with the normal control group. However, its decrease rate was about 16.67% as compared with that of the positive control group. The Drink group, meanwhile, obtained a decrease rate of about 21.59%.

Effect of Ethanol Intake on Blood Component in Broiler Chicks (알콜섭취가 성장기 닭의 혈액성분에 미치는 영향)

  • This study was performed to investigate the influence of mixtures of 0(control), 1, 2 and 3% ethanol and water respectively on growth and various blood parameters of growing broiler chicks. At the end of the 7 weeks' experiment, body weight gain in 1% ethanol group and liver weight in 3% ethanol group were significantly higher than those of control group. It was found that the levels of red blood cell, hemoglobin, hematocrit, and serum protein were within normal ranges. Serum GOT and r-GTP activities were significantly increased in 2 and 3% ethanol groups compared with those in control group. But serum CPT activity was slightily decreased in all ethanol groups. Serum LDH activity was increased in all ethanol groups compared with that In control group. Serum alkaline phosphatase was not affected by the ethanol. Serum glucose concentration in 3% ethanol group was significantly lower than that in control group.

Effect of Soy Isoflavone Supplementation and Exercise on Serum Lipids in Postmenopausal Women (이소플라본 보충과 운동이 폐경 후 여성의 혈중 지질 수준에 미치는 영향)

  • To elucidate the effect of soy isoflavone supplementation and exercise on serum lipids in normolipidemic and mildly hyperlipidemic postmenopausal period, 54 women residing in Seoul area were recruited. The subjects were divided into 4 groups: control group (n=13), isoflavone group (n=14), exercise group (n=14), isoflavone + exercise group (n=13). The control group was given placebo capsules, isoflavone group was given soy isoflavone supplements (90 mg/day), exercise group was given placebo capsules and exercised 3 times/week, over 30 min/time, and isoflavone + exercise group took soy isoflavone supplement and exercised. The duration of study were 8 weeks. The average age of the subjects was 57.0 years, 56.0 years, 54.4 years, and 55.2 years, respectively. There were no significant differences among the four groups in terms of height, weight, and body mass index. There were no significant differences among the four groups in terms of serum, total cholesterol, HDL-cholesterol. But the subjects indicated a significant difference in serum LDL-cholesterol (110.5 mg/day in before versus 74.6 mg/day in after) in the isoflavone + exercise group at the levels of p<0.05. In conclusion, the isoflavone supplementation and exercise may be helpful to decrease serum lipids of normolipidemic and mildly hyperlipidemic postmenopausal women.

The Effects of a Raw Diet on Plasma Fasting Glucose Concentration and Immune Function in Streptozotocin-induced Diabetic Rats

  • This study was performed to investigate the effect of a raw diet (RD) on blood glucose and immune function in non-diabetic (normal) and streptozotocin (STZ)-induced diabetic rats. Male Sprague-Dawley rats were assigned to four groups (normal control, normal RD, diabetic control and diabetic RD). The control groups and the RD groups were fed an AIN-diet and RD for four weeks, respectively. Weight gain was statistically lower in the RD groups than in the controls. Fasting plasma glucose was significantly lower in the diabetic RD group than in the diabetic control group. The $CD4^+$ T-cell population was higher along with the $CD4^+/CD8^+$ ratio of the mesenteric lymph nodes in the normal RD group compared to the other groups. It can be concluded that RD may reduce the plasma fasting glucose concentration in diabetic rats and improve mesenteric lymph node immune function in normal rats.
