Although lignans of sesame seed, sesamolin and sesamin have been known as possessing an antioxidant activity, it is less known about their contents of the sesame cultivated in Korea. Collections of sesame cultivated in Korea were used for studies on their lignans content of the seed and fatty acids composition of the oil. The sesamin content of sesame seed with white-coat were 370.29 mg/100g seed, while that of sesame seed with black-coat were 246.58mg/100g seed. Also, the sesamolin contents of sesame seed were 202.22 mg/100g seed in white-coat cultivars and 132.68 mg/100g seed in black-coat sesames. Hence, the lignan content of white-coat sesame cultivars was significantly hi임or than that of black-coat ones. Korean sesame cultivars also showed considerably higher sesamin content than sesamolin content in seeds. The correlation between sesamin and sesamolin contents was not recognized in Korean sesame cultivars. The stearic acid of white-coat sesame was significantly higher than that of black-coat one (p<0.05).
Production of biodiesel from microalgae is dependent on the microalgal lipid content and free fatty acid composition. Both lipid and free fatty acid are regulated by nutrient sources. In this study, newly developed mutant Chlamydomonas reinhardtii with higher lipid content was investigated for the effect of nutrient limitation. Nitrogen $NO_3{^{-}}$ and phosphate $PO_4{^{3-}}$ were limited for nutrient starvation during the cultivation. Under nutrient starvation, total lipid content level was increased to 27~33% and C16:0 fatty acid content constituted over 31~43% of total fatty acid. Interestingly, we also found that the expression of fatty acid desaturase (FAD7) was decreased when nutrients were starved.
For a studyon the production of ${\gamma}$-linolenic acid(GLA) by fungi 3 fungal strains were isolated from soil. Their cell growth lipid content and fatty acid composition were compared in shake flask culture. Among these fungi the fungus designated as FA-007 has high lipid content(21.1%) and GLA content(15.6% of total fatty acids) The fungal strain FA-007 was tentatively identified as Mucor sp. on the basis of morphological characteristics, Fungal oil produced by this fungus was composed of 75.2% neutral lipid 5.3% glycolipid and 19.5% phospholipid. Although the GLA content in phospholipid was higher than it in neutral lipid the GLA content in neurtal lipid was high as 15.5%.
Lotus seed(Nelumbo nucifera Gaertner), known as traditional medicine as an antifebrile, antipsychotic, and cantihypertensive agent, was analyzed the chemical composition of lipid and protein. The seed com posed of 12.2% moisture, 2.3% crude lipid, 19.5% crude protein, 61.3% carbohydrate, 2.1% crude fibre, and 4.1% ash. The lipid showed iodine value of 97.9 that is lower than that of soybean oil and sesame oil, and similar to peanut oil and cotton seed oil. The fatty acid composition of the oil were the highest in content of linoleic acid which occupied 58.3% and saturated vs unsaturated fatty acid was 20.9:79.1. Especially behenic acid content, 6.9%, was higher than other plant oils. Sixteen amino acids were detected in the protein from the seed and glutamic acid content was the highest as 4.5% in dehulled kernel. The portion of essential amino acid was 31.1%.
Objective: The study explored the dynamics of shearing force and its correlation with chemical compositions and in vitro dry matter digestibility (IVDMD) of stylo. Methods: The shearing force, diameter, linear density, chemical composition, and IVDMD of different height stylo stem were investigated. Linear regression analysis was done to determine the relationships between the shearing force and cut height, diameter, chemical composition, or IVDMD. Results: The results showed that shearing force of stylo stem increased with plant height increasing and the crude protein (CP) content and IVDMD decreased but fiber content increased over time, resulting in decreased forage value. In addition, tall stem had greater shearing force than short stem. Moreover, shearing force is positively correlated with stem diameter, linear density and fiber fraction, but negatively correlated with CP content and IVDMD. Conclusion: Overall, shearing force is an indicator more direct, easier and faster to measure than chemical composition and digestibility for evaluation of forage nutritive value related to animal performance. Therefore, it can be used to evaluate the nutritive value of stylo.
Korean and Chinese sesames were subjected to microscopic observation and instrumental determination of fatty acid composition and sesamolin/sesamin ratio to obtain basic data for discriminating each other. The overall appearance of both samples was differently observed by stereo microscope (X8). Fatty acid composition of sesame oils, extracted from both samples with different roasting degrees, showed a similar pattern although Chinese samples cointained about 6% higher content of stearic acid and 47% lower content of linolenic acid then Korean ones. The sesamolin/sesamin ratio was remarkably lower(.039) in Chinese samples than Korean (0.67∼0.72). showing a variation depending on producing districts. Roasting degrees of raw sesames little influenced their composition of fatty acid and sesamolin/sesamin ratio. Based on the above results, it is considered that the comparison between domestic and Chinese sesames in view of their stearic and linolenic acid contents and sesamolin/sesamin ratio might be one of the potential criteria in discriminating their production origins.
The catalyst layer of a proton exchange membrane (PEM) fuel cell is a mixture of polymer, carbon, and platinum. The characteristics of the catalyst layer play critical role in determining the performance of the PEM fuel cell. This research investigates the role of catalyst layer composition using a Central Composite Design (CCD) experiment with two factors which are Nafion content and carbon loading while the platinum catalyst surface area is held constant. For each catalyst layer composition, polarization curves are measured to evaluate cell performance at common operating conditions, Electrochemical Impedance Spectroscopy (EIS), and Cyclic Voltammetry (CV) are then applied to investigate the cause of the observed variations in performance. The results show that both Nafion and carbon content significantly affect MEA performance. The ohmic resistance and active catalyst area of the cell do not correlate with catalyst layer composition, and observed variations in the cell resistance and active catalyst area produced changes in performance that were not significant relative to compositions of catalyst layers.
Chemical composition, free amino acid and fatty acid composition of wild and cultured cockle clam were studied. 1. The content of crude protein was higher in Anadara suberenata thanthat ini Anadara granosa. The contents of crude protein and ash increased after boiling. 2 Free amino acid composition of Anadara granosa was similar to that of Anadara suberenata. Both glutamic acid and aspartic acid among free amino acid were the most abundant in cockle clam. Next, leucine, arginine and lysine were abundant in order. They all composed of approximately 50%^ of total amino acid content. Whereas the contents of cystine and methionine were poor. 3. In cockle clam the major fatty acids consisted of C16 :0, C18: 0, C18 ;1 and C18:3 in order. The level of C16 :0 was the highest in lipids. The levels of C18 : 0 and C14 :0 were higher in Anadara granosa than those in Anadara suberenata, while the levels of C16 :0, C18 :3 and C16 : 1 were higher in Amadara suberenata than those in Anadara granosa.
For the effective utilization of apricot seed resources of food protein and lipid, the general composition, amino acid composition and chemical characteristics were analysed. The skinned and non-skinned apricot seed contained 53.9% and 48.0% of crude lipid, 24.7% and 26.8% of crude protein, respectively. There were no significant difference in the amino acid composition among skinned and non-skinned apricot seed, The major amino acids were glutamic acid, aspartic acid, alanine, tyrosine and threonine, holding 14.6 to 16.9%, 12.4 to 13.7%, 9.2 to 12.1%, 7.2 to 7.5% and 7.0 to 7.2% of total amino acid content, respectively. The sum of these ammo acids occupied about 50% to total amino acids. While the quantities of methionine, histidine, and Lysine were poor content. The essential amino acids occupied about 30% to total amino acids. The acid, iodine and saponification value of apricot seed oil were 0.7 to 7.1, 80.8 to 107.5 and 182.7 to 208.4, respectively. These values were significant difference in skinned and non-skinned apricot seed.
나트륨의 과잉섭취가 고혈압의 주요한 위험요인으로 알려져 있는데, 한국인의 성인 하루 평균 소금 섭취량은 영양 섭취기준보다 3배 이상 높다. 본 연구에서는 식품교환표를 이용하여 14일간의 식단을 작성하고 조리된 음식의 나트륨 함량을 실제로 측정한 후 식품교환표와 식품성분표에서 계산된 나트륨 추정치와 비교하여, 각각 방법의 정확성 및 문제점을 파악하고자 하였다. 그 결과를 요약하면 아래와 같다. 하루 식단의 나트륨 함량에서 식품교환표로 계산한 추정치는 실측치와 유의한 차이가 났으나, 식품성분표는 실측치와 유사하였다. 음식별 절대값의 비교에서는 식품교환표로 계산한 나트륨 추정치와 식품성분표로 계산한 나트륨 추정치가 모두 실측치와 유의한 차이가 났다. 음식군별 절대값 비교에서는 양념류의 나트륨 함량이 많은 주요리, 부식, 국물요리에서 상당히 유의한 차이가 났으며, 식품교환표로 계산한 추정치, 식품성분표로 계산한 추정치, 실측치간의 차이가 큰 음식들이 모두 주요리, 부식, 국물요리였다. 이상의 결과에 따르면, 단순히 하루 식단의 나트륨 함량 비교에서 식품교환표에 비해 식품성분표의 나트륨 함량이 더 정확하다고 생각할 수 있지만, 음식별 또는 음식군별로 추정치와 실측치간의 차이를 절대값으로 비교한 결과, 식품교환표와 식품성분표의 나트륨 함량 모두 실측치와 차이가 컸다. 특히 나트륨 과잉 섭취의 주요 원인으로 보고되는 양념류의 차이로 장류, 김치 등의 사용이 많은 한국음식에서 식품교환표와 식품성분표를 이용한 추정치와 실측치의 차이가 컸다. 따라서 고혈압 및 신장질환 환자를 위한 저염식단작성시 식품교환표나 식품성분표를 사용할 때 실제 소금량과의 차이를 고려해야한다.
