Investigation on Natural Radioactivity of Environmental Samples Near the Phosphate Rock Processing Facility (인광석 사용업체 주변 환경시료의 자연방사능 조사)

  • Some industrial minerals used in domestic industries such as monazite, apatite, bauxite, and ilmenite belong to NORM (Naturally Occurring Radioactive Materials) because they show a high radioactivity. Products, semi-products, wastes, and by-products which show higher radioactivity than NORM belong to TENORM (Technologically Enhanced Naturally Occurring Radioactive Materials). Apatite used for manufacturing phosphate fertilizer in Namhae Chemical company belongs to NORM, and its by-product, phospo-gypsum, belongs to TENORM. A geological investigation is needed for the future environmental impact assessment of the Namhae Chemical company's site. According to survey results of the Namhae Chemical company's site, soil mineral composition indicated the mixture of minerals derived from the country rock (quartz, feldspar, mica, $l4{\AA}$ mineral, kaolin and amphibole) and minerals from the gypsum open-air storage yard (gypsum and apatite). Soil samples showed average content of U 4.6 ppm and Th 10 ppm, which are similar to average crustal abundances. They also show average contents of $^{40}K$ 191-1,166 Bq/kg, $^{226}Ra$ 15.6-710 Bq/kg, and $^{232}Th$ 17.4-72.7 Bq/kg, which indicate moderate levels of radio nuclide. But $^{226}Ra$ anomaly in the gypsum open storage yard is clearly confirmed and $^{232}Th$ anomaly is also confirmed in the east road side of the factory and nearby mountain areas. Soil external hazard indices ranged 0.24-2.01 with the average 0.54. Although most external hazard indices were lower than 1, which means radiation hazard index to be negligible, 5 samples out of total 40 samples showed higher values than 1, and further detailed investigation is needed.

  • The lipids of milk provide energy and many essential nutrients for the newborn animal. They also have distinctive physical properties that affect the processing of dairy products. Milk fat globules mainly consist of neutral lipids like triacylglycerols, whereas the globule membranes contain the complex lipids mostly, Phospholipids are a small but important fraction of the milk lipids and are found mainly in the milk fat globule membrane and other membranous material in the skim-milk phase. The milk fats of ruminant animals are characterized by the presence of relatively high concentrations of short-chain fatty acids, especially butyric and hexanoic acids, which are rarely found in milks of non-ruminants. The fatty acids of milk lipids arise from de novo synthesis in the mammary gland and uptake from the circulating blood. The fatty acid compositions of milks are usually complex and distinctive, depending on the nature of the fatty acids synthesized de novo in the mammary gland and those received from the diet in each species. The content and composition of milks from different species vary widely; presumably, these are evolutionary adaptations to differing environments. The actual process by which these globules are formed is unkonwn, but there are indications that triglyceride-containing vesicles which bleb from endoplasmic reticulum may serve as nucleation sites for globules. Recent studies on milk have centred on the manipulation of milk lipids to increase specific fatty acids, i.e. 20-carbon omega-3 fatty acids (eicosapentaenoic acid 20:5n3, decosahexaenoic acid 22:6n3) from marine sources because the fatty acids are closely associated with a decreased risk of coronary heart disease.

Effect of Antimicrobial Microperforated Film Packaging on Extending Shelf Life of Cluster-type Tomato (Lycopersicon esculentum Mill.) (천연 항균물질 미세천공필름 포장이 송이토마토의 품질에 미치는 영향)

  • To investigate the effects of the improvement of postharvest quality on fresh tomato, antimicrobial microperforated (AMP) films were prepared and their antimicrobial abilities were observed. AMP films were made by coating different types of natural antimicrobial agents such as cinnamon, clove, and clary sage essential oils into microperforated (MP) films. Cinnamon essential oil of 10% (v/v) has proven to be very effective as inhibitor of the mold growth on tomato, compared to the clove and clary sage essential oils. Quality changes of fresh tomatoes packed using the natural AMP films (AMP10 and AMP30) and MP films (MP10 and MP30) during storage were evaluated. Total microbial growth, weight loss, firmness, lycopene content, and decay rate as the major quality parameters were monitored over 9 days at $15^{\circ}C$. The oxygen transmission rates and mechanical properties between the natural AMP and MP films were also compared. There was no significant difference in change of oxygen transmission rate, tensile strength and elongation between the AMP and MP films. For storage studies, the freshness of tomato packaged in AMP30 film was higher than that in OPP film (the control), MP10, MP30, and AMP10 films. Especially, AMP30 film exhibited high efficiency compared to the control for tomato decay during storage periods. Based on the results, the microperforation and antimicrobial properties of the packaged films may significantly affect the maintenance of an optimum gas composition within the package atmosphere for increasing the storage life and quality of produce. They were also effective on the inhibition of microbial growth by controlled release of antimicrobial agent at an appropriate rate from the package into the tomato. Natural antimicrobial agent coating microperforated films could use potential functional package as a method of extending the freshness of postharvest tomato for storage.

Evaluation of Slurry, Urine and Fermented Liquid Manure at Pig Farms in the Jeju Area Regarding Chemical Composition and Pollution Level (제주지역 양돈장에서 생산된 액비의 비료성분 및 오염도 평가)

  • Pig slurry, urine and fermented liquid manure were evaluated measuring electrical conductivity (EC), dry matter (DM) contents and other components. Samples were collected during a period from February to April, 2001: slurry samples from 70 storage tanks, urine samples from 19 and 20 fermented liquid manure samples from 109 pig farms in Jeju. Samples were analyzed for pH, EC, DM, $NH_4$-N, K, P, Ca, Mg, Na, BOD, S-S, Cd, Cr, Cu, Fe, Mn, Ni, Pb, Zn and OM. Relationships between EC or DM and various mineral and $NH_4$-N contents were examined using linear regression. EC, DM, all mineral contents and $NH_4$-N were higher in slurry samples than in urine or fermented liquid manure. EC, $NH_4$-N, Ca, Mg and Na concentration was similar in urine and fermented liquid manure, but K and DM values in liquid manure were twice as much as in urine. P concentration was higher in urine than in liquid manure. $NH_4$-N and Na in slurry, $NH_4$-N in urine and $NH_4$-N, P and Ca in fermented liquid manure were highly correlated with EC, while $NH_4$-N, P, Ca and Mg in slurry, $NH_4$-N and Ca in urine, and K, P, Ca, Mg, and Na in fermented liquid manure with DM (P<0.05). BOO in slurry (22,520 mg/mL) was higher than that in urine (4,763) and fermented liquid manure (2,701). Results indicated that slurry is a better fertilizer source than urine or fermented liquid manure. However, slurry may pollute soil more than urine or fermented liquid manure when applied to land, although the levels are not above the permit.

Environmental and Physiological Factors on Milk Yields and Compositions of Holstein Cows in Korea (Holstein 젖소에 있어서 유량 및 유성분에 미치는 환경 및 생리적 요인)

  • Factors associated with milk urea nitrogen on milk yield and milk composition were investigated in this study regarding feeding management and Physiological status of lactating cows. The data for 3 years between 1999 and 2002 for this study were collected from 129,645 cows by Korean Agricultural Cooperatives Federation. The objectives of this study were to describe the relationships between milk urea concentrations and seasonal factors, cow factors and production of milk, milk fat, protein and somatic cell score(SCS). Milk urea was highest in summer and it also showed a nonlinear association with milk yield. Milk yield was higher at milk urea concentrations of 21 ${\sim}$ 24mg/dl, however it decreased at higher level of milk urea concentrations than 24mg/dl. Milk urea was higher with increased parities of cows and in particular, at 3 to 4 parities. There was a negative association between milk urea and SCS in milk. SCS in milk was lowest at milk urea concentrations of 2l${\sim}$24mg/dl. Milk fat and milk protein were greatly affected by days in milk(DIM), year of birth, season and milk urea concentrations, respectively. While milk urea increased in summer, milk fat and protein were decreased. Milk protein decreased according to longer days in milk. With regard to the influences of parity, milk protein in overall was negatively correlated to milk urea in all lactations, however the extent of decrease of milk protein at high concentrations of milk urea was bigger at third lactation. The balanced supply of energy and protein to the animals might have greatly affected the urea concentrations and protein content of milk.

  • The difference between Kimchi, Japanese pickles, Korean Salted and fermented fish intestines and Japanese Salted and fermented fish intestines was investigated by comparising composition of inorganic cation in them. A high-performance liqid chromatography was used for the determination of Na, K, Ca and Mg in Kimchi, Japanese pickles and Salted and fermented fish intestines. The Kimchi samples analyzed were produced in the home, in the restaurant, in the nunnery and by food manufactures in Korea, and the pickles used were produced by food manufactures in Japan, and Salted and fermented fish intestines used were produced by food manufactures in Korea or Japan. The results obtained were summarized as following: (1) Sodium chloride in Kimchi was $1.8{\pm}0.37%$, $2.8{\pm}0.60%$ in Asazuke, Japanese picles which the fresh vegitables was seasoned with sodium chloride and seasoning, $1.8{\pm}0.32%$ in Japanese Kimchi, Japanese pickles which the fresh vegitables was seasoned with the mixture of sodium chloride, garlic powder, red peper's powder and seasoning, $5.3{\pm}0.66%$ in Shoyu Zuke, Japanese pickles which the salted vegetables was seasoned with sodium chloride and seasoning after desalting. (2) Na/K value in Kimchi was $1.7{\pm}0.17$ and $4.6{\pm}1.44$ in Asazuke, $2.6{\pm}0.85$ in Japanese Kimchi and $27.3{\pm}6.79$ in Shoyu zuke respectively. (3) Kimchi contained more K and Ca than Japanese pickles. (4) Kimchi remarkably contained the Ca originating to salted and fermented fish intestines. As the results of this study, it was presumed that while Kimchi and Japanese pickles is well known as a food that contributed to high blood pressure, Kimchi and Japanese Kimchi might not cause the high blood pressure because they have an excellent balance of Na/K value and low Na content. And also it was considered that these differences might be caused by the difference of th food taste between and Korean and Japanese people.

Proximate Compositions Changed Before and After Fermentation of Rice Spent Water (발효 전후 쌀뜨물의 일반성분 변화)

  • Rice spent water (RSW) is generated when rice is rinsed before cooking. RSW has been discarded into sewerages due to its low usage in our daily life and become a major domestic wastewater for many years. But RSW can be used as a value-added resource because it contains various beneficial bioactive components. Therefore, fermented rice spent water (FRSW) has been already produced in our previous value-added fermentation process. In this study, proximate compositions and contents of other typical fermentation products were compared between RSW and FRSW. Both RSW and FRSW contain approximately 99.3% moisture and 0.7% total solids. Compared to those of RSW on a dry basis, carbohydrate content of FRSW was decreased by 44.8% and crude protein, lipid, and ash contents of FRSW were increased by 16.4%, 18.8%, and 36.6%, respectively. In addition, starch granules of RSW were intact as those of rice flour were, but those of FRSW were not. RSW did not have lactic acid, but FRSW had 212.13 and 181.25 g/kg D- and L-lactic acid, respectively. Free amino and ammoniacal nitrogen contents of FRSW were 12 and 7 times higher than those of RSW, respectively. Lactic acid, free amino, and ammonical nitrogen contents were considered to be increased in FRSW because carbohydrates could be disintegrated into lactic acids and proteins into free amino or ammoniacal nitrogens during the fermentation process.

Extractive Nitrogenous Constituents in Commercial Tohajeot, a Salted and Fermented Freshwater Shrimp (Caridina denticulata denticulata), and their Quality Index (시판(市販) 토하(土蝦)젓의 함질소(含窒素) 엑스성분(成分) 조성(組成) 및 품질지표(品質指標)에 관(關)한 연구(硏究))

  • In order to investigate the composition and the actual condition of extractive nitrogenous constituents in Tohajeot (a salted and fermented freshwater shrimp, Caridina denticulata denticulata) and in seasoned Tohajeot which were sold in the markets, the extract was analyzed separately into extractive nitrogen, free amino acids, oligopeptides, nucleotides and related compounds, quaternary ammonium bases, and guanidino compounds, using specimens collected at the fish markets of Yosu and Naju cities in 1994 and 1995. The salinity of Tohajeot was very high $(23.6{\sim}25.1)%$, but seasoned Tohajeot was relatively low $(8.4{\sim}11.4%)$. The extractive nitrogen in the extracts of Tohajeot and seasoned Tohajeot was $311{\sim}531\;mg\;and\;256{\sim}429\;mg$, and the total of free amino acids in them were $1,159{\sim}2,584\;mg\;and\;1,012{\sim}1,672\;mg$ respectively. Glutamic acid, leucine, lysine, histidine, alanine, ornithine, and tyrosine were the major amino acids in Tohajeot extract, and glutamic acid, lysine, arginine, aspartic acid, histidine, leucine and alanine were the main amino acids in seasoned Tohajeot. As for nucleotides and related compounds in them were $2.64{\sim}4.82\;{\mu}mol\;and\;1.08{\sim}1.93\;{\mu}mol$ respectively. Homarine, trigonelline, glycinebetaine and ${\beta}-alaninebetaine$ were detected in them. Homarine was the most abundant, ranging from 18 mg to 86 mg, but the others were very low. The content of major nitrogenous constituents in Tohajeot extract, such as extractive nitrogen, free amino acids, oligopeptides, nucleotides and related compounds, and betaines, was more abundant than that in seasoned Tohajeot extract. But the nitrogenous constituents of Tohajeot extract were poorer than those of anchovy sauce which was sold in the markets. Possibly, the extractive nitrogenous components, which consisted of total betains, total free amino acids, and phenylalanine might be recommended as the quality indices of standardizing Tohajeot and seasoned Tohajeot.

  • In an attempt to develop composite flours based on raw materials available in Korea, six domestic resources were investigated with respect to their physical and chemical properties, nutritive value and economy. The results are summarized as follows: 1) Flours from naked barley, sweet potato, potato, corn, defatted rice bran and defatted soybean were compared in respect of their proximate composition, thiamine content and protein score. 2) In color comparison, naked barley and defatted soy flours were comparable to wheat flour whereas corn and sweet potato flours were a little inferior. In raising power, naked barley and defatted soy flours were similar to wheat flour and others were inferior. 3) In maximum viscosity of flours by amylograph, naked barley, corn and potato flours were higher than wheat flour and others were lower. In viscosity in cooling, corn flour was similar to wheat flour and naked barley and potato flours were lower. Addition of $10{\sim}20%$ defatted soy flour into other flours generally caused the lowering of viscosity. Addition of emulsifiers such as glyceryl monostearate, calcium stearyl lactylate, Methocel and Emulthin into the flours manifested different effects on the amylogram. 4) In nutritional test by rat, diets consisting of naked barley, sweet potato, potato or corn flours, each containing defatted soy flour (at 10% level with exception of 20% for sweet potato flour) and naked barley flour fortified with lysine were similar to wheat flour in digestibility, but were superior in NPU and biological value. 5) In price estimation, sweet potato and corn flours were competitive with wheat flour, but naked barley flour was a little expensive. On the other hand, barley and sweet potato are promising in terms of domestic production.

A Comparative Study on the Intake, Digestibility, Nitrogen and Energy Utilization of Some Hay by Dairy Goats (Saanen) (유 산양에 의한 몇 가지 건초의 섭취량, 소화율과 질소 및 에너지이용성 비교 연구)

  • This study was conducted to compare the chemical composition, dry matter digestibility (DMD), dry matter intake, and utilization of nitrogen and energy of dairy goats (Saanen), when fed on imported timothy hay (IT), mixture grass hay (MG) and native grass hay (NG), respectively. The experimental trials were conducted from April, 2008 to December, 2008 at the environmental controlled barn of Chungnam National University. Twelve dairy goats (Saanen) were selected which had nearly the same body weight (24.2kg, male). The content of crude protein (CP) of MG hay was higher than that of other diets (p<0.05), but the contents of NDF, ADF, cellulose and lignin of IT and NG diet were higher than those of MG diet (p<0.05). The voluntary DM intake of dairy goats fed with herbage from MG diet (30.7/$BW_{kg}$/day) was higher than that of other diets, but no significant difference was observed between that of IT diet and NG diet (p>0.05). The DMD of MG diet (69.8%) was higher than that of NG diet (62.2%) and IT diet (60.8%) (p<0.05), but no significant difference was observed between that of IT diet and NG diet (p>0.05). In nitrogen utilization, the apparently digested N %, retained % and biological value of dairy goats fed with herbage from MG diet were higher and TG diet was lower (p<0.05). In energy utilization, digestible energy and the energy of apparently digested minus urinary losses of MG diet were higher than those of IT diet and NG diet (p<0.05), but no significant difference was found between IT diet and NG diet (p>0.05). Based on the results, the dry matter intake, DMD and utilization of nitrogen and energy of dairy goats of MG were higher than those of IT diet and NG diet (p<0.05), the DMD and biological value (%) of NG diet was higher than that of IT diet (p<0.05).
