황기 추출액이 함유된 된장의 품질 특성 (Quality Characteristics of Doenjang containing Astragalus membranaceus water extracts)

  • The quality characteristics of doenjang which contained Astragalus membranaceus water extracts were investigated in this study. The contents of moisture, crude protein, and crude fat were not significantly different in the doenjang which contained Astragalus membranaceus water extracts. The crude ash content was significantly higher in the doenjang which contained Astragalus membranaceus water extracts. The doenjang which contained Astragalus membranaceus water extracts showed higher a-value. Antioxidative activity was evaluated by using the thiobarbituric acid reaction products assay and peroxide value. Antioxidative activity and hydrogen donating activity were increased in doenjang which contained Astragalus membranaceus water extracts. Doenjang which contained Astragalus membranaceus water extracts showed no differences with traditional doenjang in sensory profiles of taste, color, flavor, and overall quality. These result showed the applicability and higher quality of doenjang which contained Astragalus membranaceus water extracts.

국내 시판 먹는샘물의 물성에 따른 이온성분의 변화 및 침전물 생성 (Study on precipitate formation and the change of cations and anions in domestic bottled water)

  • We analyzed contents of cations and anions for the domestic bottled drinking water. Results showed that total cation content was 45.81 mg/L and contained 40% of Ca. The content of cations were decreased in the order of Ca>Si>Na>Mg>K. Total anion content was 12.20 mg/L and contained 90% of ${SO_4}^{2-}$ and $Cl^-$. $F^-$ and $NO_{3-}N$ were a little contained. While Si content was reduced 2.3~75.7%(mean value:38.5%) after freezing, Ca content was reduced 45.2% after boiling. It showed that water containing higher Ca content was significantly decreased after boiling. Precipitates formed by freezing and boiling is composed of minerals such as Si and Ca. Compared to minerals from food intake, concentrations of minerals from water intake are expected to be less influenced. It is recommended Bottled Water that contains more than 20 mg/L of Ca(exceeding water-quality standard for turbidity) is safe to drink without thawing and boiling.

  • A novel oxidant generation and ion precipitation cell with slits on parallel plate electrodes system has been proposed and an effect of the number and size of slits on ion precipitation and oxidant generation characteristics. As a result, with the electrodes with 48 slits($S=200{\times}60[mm^2]$. d = 1.5, 5.0 [mm]), it is found that the oxidant contained waters of 17.0 [ppmm] and 23.5 [ppmm] in acid water were obtained with 0.1 [wt%] NaCl dissolved tap water fed. And oxidant contained waters of 0.5 [ppmm] and 1.5 [ppmm] in alkali water were obtained with 0.1 [wt%] NaCl dissolved tap water fed. And the oxidant contained waters of 7.0 [ppmm] and 11.5 [ppmm] in mixed water were obtained with tap water and 0.1 [wt%] NaCl dissolved tap water fed. Consequently, very high ion precipitation and dense oxidant generation characteristics can be realized by having slits on the electrodes of conventional cells as these slits increase the electric fields and decrease the space charge limiting actions in interelectrode space.

Optimal Extraction Conditions of Anti-obesity Lipase Inhibitor from Phellinus linteus and Nutritional Characteristics of the Extracts

  • In an effort to develop novel mushroom-derived anti-obesity nutraceuticals, water and ethanol extracts containing the lipaseinhibitory compound from Phellinus linteus were prepared, and their nutritional components were determined. The optimal conditions for the extraction of P. linteus lipase inhibitor involved the treatment of the fruiting bodies with distilled water at $80^{\circ}C$ for 72 hr and 80% ethanol at $100^{\circ}C$ for 60 hr, respectively. The distilled water extract and ethanol extract contained 10.9% and 6.11% of crude protein, and 0.96% and 15.86% of crude fat, respectively. Additionally, the distilled water extract contained a large quantity of minerals, including 239.5 mg of K, 39.3 mg of Mg, and 39.3 mg of Na. The free amino acid content of the distilled water extracts was also higher than that of the ethanol extracts, and in particular, the distilled water extracts contained 5,139 mg of asparagine, 3,891 mg of tryptophan, 2,598 mg of alanine, and 2,066 mg of serine in 100 g of the distilled water extracts. 100 g of the distilled water and ethanol extracts were found to contain 12.31 g and 8.16 g of malic acid, respectively.

이상적인 음료수 공급을 위한 수질관리에 관한 연구 (Study on the Water Management to get High Quality of Drinking Water)

  • Until now, pure drinking water grnerally menas the water without taste, odor, general bacteria, coliform, and other exotic substance. Such a definition has been changing recently due to the finding of numerous other inorganic and organic substances unknown to us. 10 years ago, major causes of death were infectious agents and parasites contained in water, but recently, it has become apparent that some substances contained in drinking water cause cancer and heart diseases. We must drink about 2L of water everyday in order to maintain healthy condition. Waters used for drinking include tap water, well water, spring water, filtered water, etc., but the quality of drinking water has more polluted due to the industrial development and population increase. For example, industrial waste waters from industrial plants pollute the water supply sources ; toxic substances contained in the waste waters pollute the ground water sources by penetrating the geological strata, and municipal, livestock, public building waste waters also pollute the water supply sources. Sometimes, the polluted surface waters were announced to be polluted by various kinds of orgainc substance, and it is reported that the pollution of ground water by orga nic substances has few in number but high in its concectration comparing with those of surface water. As the water quality pollution level increases, so the amount of disinfectant also increase. For example, chlorine solution, one of widely used disinfectants, creates trihalomethane(THM), a carcinogen, and halogen compounds. According to Oliver, through chlorine disinfection process, humine substance and chlorine create bolatile organic halide and nonvolatile organic halide by chemical reaction. There are tens or hundreds filtering devices, but filtering principles and maintenance metjhods are different, so their efficiency tests are needed. According to Smith, the effeciency tests aginst over 30 Ameican filtering devices show that 10 devices can remove 85% of volatile organics and further studies on filtered waters are underway. In consideration of important impacts of polluted drinking water on national health, authors studied the state of water quality pollution against tap water used as drinking water, filtration device passed water, ground water, and conserved drinking water ; tested the efficiency of filtration devices for tap water ; tried to sep up the detection method by using ion chromatography based on negative ion and positive ion by using single column, and attemped the simple filtration method for general households.

  • In the manufacturing process of ready-mixed concrete, quantity management directly affects the workability and strength of concrete. Therefore, water quantity is the most important management factor for water quality control of ready-mixed concrete. It can be said that the number of unit water in the mix design, the water quantity due to the surface water contained in the aggregate used, and the water quantity taking into account the concentration of sludge contained in the recycling water when using the recycling water are factors that affect the quantity management of ready-mixed concrete. In this study, as a stable quality control method of ready-mixed concrete, a quantity management method by aggregate surface water and a sludge concentration management method according to the use of recycling water were proposed. Thus, we tried to suggest an efficient quantity management method for stabilizing the quality of ready-mixed concrete.

양모직물의 내구성 발수 및 발유가공(I) (Durable Water and Oil Repellent Finish of Wool Fabric(I))

  • It is rather important in the water and oil repellent finishing for wool fabric what kind of water-repellent agents will be used. In many cases, Fluorocarbon-based water-repellent agents(eg.Oleophobol-S), the surface tensions of which very low, were recom-mended on account of good water and oil repellencies. In repellent finishing, fabrics were padded in a bath which contained aqueous solution of water-repellent agents, and wetting agents, followed by drying and curing. The most suitable treating condition for excellent repellency was as follows Fabrics were padded at liquor pick-up ratio of 50%, with aqueous solution which contained $30g/\ell$ of water-repellent agents, and $40g/\ell$ of wetting agents. And the padded fabrics were dried at $110^\circ{C}$ for 1 minute, and cured at $160^\circ{C}$ for 2 minutes. For the fabrics, water and oil repellencies and durability to repeated dry-cleanings are observed.

  • 식품 및 배합사료 첨가제로서 치아민 모노유도체인 치아민 모노로단염이외, 치아민 모노요오드염 치아민 모노브름염 등의 3종류의 용해도를 $40,{\;}50,{\;}60^{\circ}C$에서 구하였고 그 온도에서 4수준(0.5, 1.0, 2.5, 5.0 w/w%)의 물을 첨가한 다음 경시적으로 겉보기 착색속도정수(ka)를 산출하였다. 그리고 산제이외 제제에 대하여는 착색도 가능성을 검토할 목적으로 비교적 조성이 간단한 과립, 정제를 만들어 이것에 3수준(0.5, 1.0, 2.5 w/w%)의 물을 첨가한 후 산제와 동일한 온도에서 경시적으로 착색시험으로부터 ka를 산출하였고, 구배 ka인 직선에 대하여는 회귀분산을 이용하여 직선성의 검정을 행하였다. 실험 범위 내에서는 위험률 5%수준에서 모두 유의한 결과를 얻었다. 과립 및 정제의 착색변화로부터 얻은 ka와 1/T간에 직선적인 관계가 성립하여 Arrhenius식을 만족시켰다.

동위원소를 이용한 제주지역 수질원에 관한 연구 (Environmental Isotope-Aided Studies on Water REsources in the Region of Cheju)

  • This investagation was carried out by analyzing water types and measuring the environmetal isotopes (tritium and deuterium) for development of water resources and protection of ground waters from sea water intrusion. The water sample were taken monthly from April to June, 1983 from sixteen sites in the Cheju metropolitan area; three sea, three spring, and ten ground waters. The ground water in the midwest area of the city contained 20 TU of tritium and-46 per mille of deuterium, classified as the $NaHCO_3$ type of ground water, generally deep seated. The spring water and ground water in the southern part of the city contained 15 to of tritium and-39 per mile of deuterium, and appeared to the $CaHCO_3$ type of shallow ground water, easily affected 표 precipitation. The results of tritium and deuterium analyses showed that the ground water in the coastal area were not affected by sea water intrusion, although they changed from $NaHCO_3$ or $CaHCO_3$ type to NaCl type in May and June. It is concluded that the high Na and Cl content in those ground waters might come from municipal sewage. The sea water in the Yong-duam area was influenced by sping water.

VALUE OF BARLEY GRAIN AND COTTONSEED CAKE AS SUPPLEMENTS TO FOURWING SALTBUSH, AND THE LIVE WEIGHT GAINS AND WATER CONSUMPTION OF SHEEP FED THE DIETS

  • Fifteen sheep were used in a trial which compared the feeding value of whole barley gain and cottonseed cake as supplements to a basal diet of leaves of fourwing saltbush (Atriplex canescens). Diet SB contained 700 g (air-dry matter) of saltbush alone, diet SB + BG contained 700 g SB with 400 g whole barley grain and diet SB + CS contained 700 g SB with 400 g cottonseed cake. The digestibility of the dry matter of diets SB (69%) and SB + CS (70%) were lower (p < 0.001) than of diet SB + BG (76%). Sheep offered SB alone daily lost 80g whereas those fed the other diets gained 11 g (SB + CS) or 17 g (SB + BG) per day. Daily water consumption of the sheep offered the three diets was similar (p > 0.05), but their water consumption was higher (p < 0.001) than that of sheep offered daily 700 g wheat straw and 200 g barley grain. The results indicate that, at the levels of feeding used, barley grain and cottonseed cake had similar value as supplements to fourwing saltbush harvested in summer. The addition of the supplement allowed the sheep to gain some live weight. However, the presence of saltbush leaves in the diet resulted in higher water intakes by the sheep.
