Use and recognition of nutrition labelings in processed foods among middle school students and their parents (가공식품의 영양표시에 대한 중학생과 학부모의 이용 및 인지도 실태)

  • In order to investigate the use and recognition of nutrition labelings of processed foods which adolescents frequently purchase, 277(boys 125, girls 152) middle school students and their parents were conveniently selected from the west Chonan City, and were surveyed by self-recording questionnaire on June, 2000. Nutrition labels were indicated only in 14.9% of 222 processed snack foods. At purchasing foods the students considered taste most importantly and in turn price, quantity, and nutrition. Of the subjects 79.4% of students and 89.2% of parents had experiences of reading nutrition labels, and the reasons were mainly to just know contained nutrients(76.8%, 72.1%, respectively) and for their health care(35.9%, 47.8%, respectively). The main reason not to confirm nutrition labels was that they were not interested in nutrition labels. But too small size and rudeness or hardness of understanding was also pointed out as a reason of not reading nutrition labels. The students ranked mineral, protein, and carbohydrate as the most important three nutrients at labelings, while the parents ranked protein, mineral, and calorie. Cholesterol, dietary fibers, and sodium were shown the lowest rank in both students and parents. Significant nutrients for specific processed foods did not well recognised in the students. Conclusively, nutrition labelings should be applied to all processed foods which students frequently buy, particularly in clear and large size. Also it is necessary to prepare education programs for both students and parents about accurate recognition of nutrition knowledge about processed foods and how to use nutrition labels.

  • Recently, IT technology such as internet, mobile, and IOT has rapidly developed, making it easy to collect data necessary for business, and the collected data is analyzed as a new method of big data analysis and used appropriately for business. In this way, data collection and analysis becomes easy. In such data, personal information including an identifier such as a sensor id, a device number, IP address, or the like may be collected. However, if systematic management is not accompanied by collecting and disposing of large-scale data, violation of relevant laws such as "Personal Data Protection Act". Furthermore, data quality problems can also occur and make incorrect decisions. In this paper, we propose a new data governance maturity model(DGMM) that can identify the personal data contained in the data collected by companies, use it appropriately for the business, protect it, and secure quality. And we also propose a over all implementation process for DG Program.

Cations of Soil Minerals and Carbon Stabilization of Three Land Use Types in Gambari Forest Reserve, Nigeria

  • Predicting carbon distribution of soil aggregates is difficult due to complexity in organo-mineral formation. This limits global warming mitigation through soil carbon sequestration. Therefore, knowledge of land use effect on carbon stabilization requires quantification of soil mineral cations. The study was conducted to quantify carbon and base cations on soil mineral fractions in Natural Forest, Plantation Forest and Farm Land. Five 0.09 ha were demarcated alternately along 500 m long transect with an interval of 50 m in Natural Forest (NF), Plantation Forest (PF) and Farm Land (FL). Soil samples were collected with soil cores at 0-15, 15-30 and 30-45 cm depths in each plot. Soil core samples were oven-dried at 105℃ and soil bulk densities were computed. Sample (100 g) of each soil core was separated into >2.0, 2.0-1.0, 1.0-0.5, 0.5-0.05 and <0.05 mm aggregates using dry sieve procedure and proportion determined. Carbon concentration of soil aggregates was determined using Loss-on-ignition method. Mineral fractions of soil depths were obtained using dispersion, sequential extraction and sedimentation methods of composite soil samples and sieved into <0.05 and >0.05 mm fractions. Cation exchange capacity of two mineral fractions was measured using spectrophotometry method. Data collected were analysed using descriptive and ANOVA at α0.05. Silt and sand particle size decreased while clay increased with increase in soil depth in NF and PF. Subsoil depth contained highest carbon stock in the PF. Carbon concentration increased with decrease in aggregate size in soil depths of NF and FL. Micro- (1-0.5, 0.5-0.05 and <0.05 mm) and macro-aggregates (>2.0 and 2-1.0 mm) were saturated with soil carbon in NF and FL, respectively. Cation exchange capacity of <0.05 mm was higher than >0.05 mm in soil depths of PF and FL. Fine silt (<0.05 mm) determine the cation exchange capacity in soil depths. Land use and mineral size influence the carbon and cation exchange capacity of Gambari Forest Reserve.

The Potential Substitution of Oyster Shell Powder for Phosphate in Pork Patties Cured with Chinese Cabbage and Radish Powder

  • The use of natural ingredients in meat processing has recently gained considerable interest, as consumers are increasingly attracted to clean-label meat products. However, limited research has been conducted on the use of natural substitutes for synthetic phosphates in the production of clean-label meat products. Therefore, this study aimed to explore the potential of oyster shell powder as a substitute for synthetic phosphates in pork patties cured with Chinese cabbage or radish powders. Four different groups of patties were prepared using a combination of 0.3% or 0.6% oyster shell powder and 0.4% Chinese cabbage or radish powder, respectively. These were compared with a positive control group that contained added nitrite, phosphate, and ascorbate and a negative control group without these synthetic ingredients. The results showed that patties treated with oyster shell powder had lower (p<0.05) cooking loss, thickness and diameter shrinkage, and lipid oxidation than the negative control but had lower (p<0.05) residual nitrite content and curing efficiency than the positive control. However, the use of 0.6% oyster shell powder adversely affected the curing process, resulting in a decreased curing efficiency. The impact of the vegetable powder types tested in this study on the quality attributes of the cured pork patties was negligible. Consequently, this study suggests that 0.3% oyster shell powder could serve as a suitable replacement for synthetic phosphate in pork patties cured with Chinese cabbage or radish powders. Further research on the microbiological safety and sensory evaluation of clean-label patties during storage is required for practical applications.

A Study on a Morphological Identification of Acanthopanacis Cortex (오가피(五加皮)의 형태(形態)에 관한 연구(硏究))

  • Objectives : In order to distinguish morphological characteristics of trunk bark and root bark of Ulmus davidiana var. japonica (Rehder) Nakai and the trunk bark and root bark of Hemiptelea davidii Planchon were sampled and compared in terms of their external and internal features with flour states according to their medical use, through microscopic examination. Methods : The slice of the tested material made by paraffin section technique was colored with Safranine Malachite Green contrast methods, and the flour of it was mounted by the liquid made by the same ratio of each of glycerin, acetic acid, and water, and then observed and photographed by olympus-BHT. Results : 1. Internal Features 1) A large parenchymatous cell was observed in the phloem of the slice of both trunk bark and root bark of Ulmi Cortex. However, both of the trunk bark and root bark of Hemipteleae Cortex did not have parenchymatous cell in the phloem; instead, stone cells including much square crystal of calcium oxalate were distributed around fiber bundle, and the parenchymatous cell included much druse crystal of calcium oxalate. 2) In both the Ulmi Cortex and Hemipteleae Cortex, rhytidome was observed in trunk bark, but not in root bark, but in the parenchymatous cell of the root bark of the Ulmi Cortex contained starch grain. 2. Flour States 1) In the flour of root bark of the Ulmi Cortex, a large parenchymatous cell was observed. However, in the flour of trunk bark and root bark of Hemipteleae Cortex, no parenchymatous eel was found; instead, stone cell including square crystal of calcium oxalate and druse crystal of calcium oxalate were observed. 2) There was no remarkable difference between the trunk bark and root bark of Hemipteleae Cortex. However, starch grain was contained in the parenchymatous cell of the root bark of Ulmi Cortex but not in the trunk bark of it. Conclusions : There were some morphological differences in external, internal, and flour parts of Ulmi Cortex and Hemipteleae Cortex. In particular, there was a morphological difference in flour states between the trunk bark and root bark of Ulmi Cortex, it is possible to use microscope to distinguish their flour states.

Interchange with Art Contained in the Works of Yves Saint Laurent (이브 생 로랑(Yves Saint Laurent) 작품에 수용된 예술과의 교류)

  • This study deals with the interchange with art that is contained in the works of Yves Saint Laurent, and it is disclosed through his works that modern fashion is part of expressive art while pursuing creative function as a work of art. The study has been performed on the basis of the references, the pictures of his works and interviews posted in domestic and overseas fashion magazines such as Vogue, Fashion News, Mode & Mode, Gap, Collections, etc. Regarding the scope of this study, it specifically deals with works he created from 1958 until 2002, when he announced his last collection. The results of the study show that with respect to Post-Impressionism, his works were greatly affected by van Gogh(who had used colors as active media in depicting his internal mental state) which gave birth to gorgeous and handicraft-like 'Couture-style clothes'. With respects to Fauvism, the works of Matisse also had an impact on Yves Saint Laurent, who added a sense of fauvism in his works through the use of colors, motif, or full reproduction of images from paintings. We see the influence of cubism upon Laurent when we examine his works of 'clothes with artistic value,' which utilized applique, beaded decoration, patchwork, embroidered patterns, relief-like ornaments, etc. using motif or objet much as we see in the works of Picasso and Braque, artists who expressed a new dimension of the formative arts. Laurent's use of neoplasticism, or plainness of painting, demonstrates a new formative art on the three-dimensional human body by using the works of Mondrian, which consist of black lines and primary colors, although generally Laurent's 'neoplastic'works differed from the works of Mondrian by more actively utilizing the lines and colors when designing dress and its ornament. In addition, the paintings and poems of surrealism artists and poets were directly used in the clothes or their images were sometimes borrowed. In order to express respect toward the spirit of surrealism and its artists, the human body motifs such as lips and eyes(which were frequently used by the surrealism artists) were applied to embroidery, printing and beaded decoration. Finally, being inspired by such Pop artists as Andy Warhol, Roy Lichtenstein and Tom Wesselman, Laurent further emphasized the aesthetic value of the popular consumer image in his own work, resulting in the wide recognition of the designs of Yves Saint Laurent as representing the new wave of the Pop Art school.

Determination of Antigenicity and Characterization of Proteinase from Tissue Invading Nematode Larvae (조직기생 선충류 유충에서 분리한 단백 분해 효소의 특성 및 항원성 검토)

  • In case of tissue invading nematode, proteolytic enzyme was required at their parasitic life. Proteinases obtained from these parasites(Toxocara canis, Ansakis spp. and Trichinella spiralis) were extracted, isolated and further purified. And then the analysis for activity and inhibitory effect of proteinases were performed by appropriate substrate. Determination of protein as a circulating antigen was done in use of infected animal serum with above parasites, respectively. For above experimental objects, following procedures were performed. First, enzymatic activity was measured in use of azocasein and inhibitory effect of porteinase were studied by various inhibitors. Second, partially purified proteins containing enzymatic activity were obtained by ion exchange chromatography, ultrafiltration and electrophoretic elution. Third, role of the partially purified protein as a circulating antigen. The results obtained were as follows : 1. Enzymatic activity of each nematode proteinase was varied according to pH. Optimal pH of Toxocara canis, Ansakis spp. and Trichinella spiralis were pH 6.0, pH 5.5 and pH 6.5, respectively. The optimal molarity of buffer was 0.1M phosphate buffer. Although little difference between these proteinases was observed, temperature stability was at least maintained at $4^{\circ}C$ until 5 days. 2. In case of Ansakis spp. and Toxocara canis, enzymatic activity of these proteinases was considerably inhibited by Leupeptin and EDTA. For maximum enzymatic activity of above proteinases, it was required that cysteine residue of enzyme should be protected. And it was suggested that metallo type was contained in enzyme active site. Proteinase of Trichinella spiralis contained metallo type also. 3. Although partial purification was performed in Ansakis spp. and Toxocara canis, proteins maintaining enzymatic activity were identified as a circulating antigen. From SDS-PAGE and immunoblot, 25 kDa was presented in Ansakis spp.. Specific antigen of Toxocara cains was 110 kDa protein fraction. 55 and 42 kDa proteins were reacted with normal serum. Trichinella spiralis 60 kDa protein fraction was successfully purified from excretory materials in culture. As a result of immune-reaction with Trichinella spiralis infected serum, highly purified 60 kDa protein was maintained antigenicity until final purification step.

A Research on Analysis of Eating Habits and Textbook Contents for Efficient Nutrition Education of Elementary School Students in Gangneung City (초등학생의 효율적인 영양교육을 위한 교과서분석 및 식습관 조사연구 -강릉시내 초등학생 대상으로-)

  • This study empirically examined the actual level of elementary school children's knowledge of nutrition and the extent of current nutrition education for the children through the use of textbooks. Two or three classes were sampled from each of six schools, respectively, in Gangneung; of the 562 questionnaires that were distributed, 537 were returned and used for analysis. Respondents were all sixth-graders, on average boys and girls were 153.02$\pm$8.19㎝ and 152.79$\pm$7.15㎝ in height and 45.27$\pm$10.32㎏ and 43.33$\pm$7.46㎏ in weight, respectively, which was consistent with others' research. Most children had two siblings and a working mother, considered that they were well off, and their mother prepared meals. Children regularly had breakfast and dinner, although more children had dinner than breakfast. As a whole, their knowledge of the main nutrients contained in foods was lower than their general knowledge of nutrition. There were significant differences in knowledge of the main nutrients contained in foods, with girls showing more knowledge than boys (p<0.01). Most of them learned about nutrition at school, followed by home. At school, Practical Technology classes taught them the most about nutrition. Although Physical Education classes were expected to teach about nutrition in a quantitative way, they accounted for just 4.7% of the overall knowledge. As for the children's understanding of nutrition education through use of a textbook at school, just 19% of the students gained a very good understanding. As for interest in nutrition education at school, 22.2% of the students had no interest, while girls were more likely to have their interest in nutrition education at school affected by knowledge of nutrition than boys. For both boys and girls, the most desired method of education was cooking practice. More research across subjects is necessary so that nutrition education concentrated on the curriculum for fifth-graders can be provided by stages from the lower grades. Since cooking practice or games were preferred, it is necessary to develop nutrition education methods to incite active interest rather than passive education.

Nutrient Composition and Content of Vitamin and Mineral Supplements and Their Appropriateness for Pregnant and Lactating Women in Korea (국내에서 판매되는 임산부용 비타민·무기질 보충제에 함유된 영양소의 종류와 함량 및 적절성 평가)

  • Objectives: Use of dietary supplements containing vitamins and minerals is growing in Korean adults, especially in pregnant and lactating women. Vitamin and mineral supplements are available in different composition and in a wide range of contents. The purposes of the study were to examine nutrient composition and content of vitamin and mineral supplements for pregnant and lactating women and assess their appropriateness as dietary supplements. Methods: Information on the name, manufacturer, nutrient composition, and usage of vitamin and mineral supplements for pregnant and lactating women were obtained from the homepage of the Food Safety Information Portal managed by the Ministry of Food and Drug Safety, and Korean Index of Medical Specialties. A total of 264 products were identified. Results: Among 264 products, 26.1% were single nutrient products, and 73.9% were multinutrient products. The most commonly included nutrient was iron (70.1%), folic acid (66.3%), vitamin $B_{12}$ (45.8%), vitamin C (38.6%), and vitamin $B_6$ (38.6%). Although more than 50% of products contained nutrients less than 150% of Recommended Nutrient Intakes or Adequate Intakes for daily use, some products contained inappropriately high amounts of nutrients. When a maximum daily dose of supplements was taken as described on the label, iron in 73 products (39.5%), folic acid in 14 products (8.0%) were likely to be consumed in amounts greater than Tolerable Upper Intake Levels. Most products were assessed as inappropriate for pregnant women due to the possibility of excessive intake of vitamins or minerals when compared with Dietary Reference Intakes. Conclusions: Pregnant and lactating women need to carefully select dietary supplements containing adequate amounts of vitamins and minerals. Nutritionists should provide guidelines regarding selection of appropriate vitamin and mineral supplements for pregnant and lactating women.

A Study on the Methods of Education for Court Music Utilizing Uigue(儀軌) (국악교육 자료로서의 의궤(儀軌) 활용 방안 모색)

  • Uigue(儀軌) is the report of court events, and its contents are very detailed and crucial as it is even called as the flower of written culture. Thus, many research theses about Uigue have been accumulated in academic circles so far, and easy books about Uigue targeting ordinary people have also been published. However, Uigue has not been used actively in educational circles yet. From now on, we should develop and induce ways to use Uigue actively in educational spots in order to let students who will lead our future have pride in our culture and know about the superiority of our court music culture. Especially when court music culture is taught in the sector of Korean traditional music education, it is beneficial to use Uigue. Since most of the court music repertory is slow and magnificent, if court music itself is exposed beforehand, it might give them an impression that it is "unexciting and boring". Therefore, this study gropes for teaching methods to 'show' court music culture first through various visual aids contained in Uigue. In other words, it examines how the instrument images, band images, dance images, or concert stages contained in Uigue can be used as teaching materials. Except for the materials selected in this article, there are plenty of teaching materials for court music culture in Uigue. Furthermore, it would be even better if not just Uigue but Oryeseo (五禮書), Akseo(樂書), Dobyeong(圖屛), and Gwanchan Akbo(樂譜) can be added to widen its range for more multilateral court music culture education. And if at the educational spots, showing classic court music culture is accompanied with listening to court music through various materials of court music and dance, we can expect even better educational effects from it.
