Major Microbial Composition and Its Correlation to the Taste of Sunchang Traditional Kochujang (순창 전통 고추장의 주요 미생물 조성 및 맛과의 상관성)

  • Traditional kochujang samples were collected from the folk village in Sunchang to find the major microbial composition and correlation between the taste and the microbial properties. Among the 29 samples, 17 samples showed Bacillus licheniformis as dominant strain with 11 samples Bacillus subtilis and 1 sample Staphylococcus pasteuri. Subdominant strain of 17 samples was Bacillus licheniformis with 12 samples Bacillus subtilis. Dominant strain numbers varied in rage of $6.60{\sim}8.38$ logCFU/g with subdominant strain number $5.90{\sim}7.86$ logCFU/g and total microbial number $6.64{\sim}8.56$ logCFU/g respectively. Bacterial type number varied in range of $6{\sim}18$ with the average 10.5 types. Fungi were found only in 2 samples and identified all to be Aspergillus oryzae. Yeasts were found in 25 samples. The dominant yeast strain of 23 samples was identified to be Zygosaccharomyces pseudorouxii and that of 2 samples Zygosaccharomyces rouxii. Yeast type variety showed that only single type was found in 15 samples, 2 types in 8 samples, 3 types in 1 sample and 4 types in 1 sample. Fungal number was 3.90 and 4.08 logCFU/g and yeast numbers varied in range of $3.90{\sim}6.43$ logCFU/g. The sensory scores of kochujang showed positive correlation with type numbers, but no significant correlation with the other microbial properties like total bacterial number, dominant bacterial number, subdominant bacterial number and dominant yeast number.

A Comparison of Preschoolers' Peer Interaction Type and Level : According to Partner's Age (동일연령쌍과 혼합연령쌍 유아의 또래 상호작용 유형 및 수준 비교)

  • The purpose of this study was to investigate whether preschoolers' peer interaction type and level differ depending on pair compositon and task type. Preschoolers' peer interaction type and level were compared among three kinds of pair compositions(with a Younger peer, with a same-age peer, and with an older peer) as well as between two types of tasks(tasks involving real objects, and tasks involving pictures). Subjects were seventy-eight four-year-old children recruited from six child-care centers in Seoul and Gyeonggi Province. The preschoolers were randomly assigned to one of the three kinds of pair compositions. Interaction processes of the pairs were recorded by a video camera, and the scenes were transcribed for content analyses. The traniscribed peer interactions were coded according to the categories that the researcher had generated. Statistical methods used for the data analysis were frequencies, percentiles, means, standard deviations, repeated measures ANOVA, paired t-tests, one-way ANOVA. Major findings of this study were as follows: There were significant differences preschoolers' in interaction type depending on the pair compositions and the types of tasks. The preschoolers paired with the older peer used abstract collaborative explanations more frequently than in two other types of pair composition. The preschoolers paired with the younger peer used explanations without collaboration and parallel behaviors more frequently than in two other types of pair composition.

Analysis of Verbal Interaction Types and Stability according to Gender-Grouping in Elementary School Students' Small Group Activities (초등학생 소집단 활동에서 성별 구성에 따른 언어적 상호작용 유형과 안정성 분석)

  • To achieve effective learning, knowledge must be shared and developed through interaction with peer learners. Therefore, science education emphasizes small group inquiry activities that solves tasks through the interaction of members. The effect of small group inquiry activities depends on how to compose small groups. The way in which a group is composed is a very important factor for improving interaction. In particular, it has been reported that the gender of peer is a very important factor in the interaction between students in the composition of small groups. Meanwhile, studies are being conducted on the types and stability of verbal interactions in small group inquiry activities using social network analysis. The purpose of this study is to analyze the types and stability of verbal interaction types and stability according to gender-grouping in elementary school students' small group activities using social network analysis. To this end, 60 5th graders in elementary school were conducted with different gender in the composition of the group of male, female and mixed-gender students. The study found that the composition of a group by gender had little impact on the type or stability of verbal interaction. However, the frequency of verbal interactions was higher in mixed-gender groups than in other groups. Through this process, the gender-grouping in elementary school students' small group activities suggests a mixed-gender group.

Research Trends Related to the Spatial Composition of Nursing Homes (노인요양시설의 공간구성 관련 연구동향)

  • This study was intended to grasp the research trends related to the spatial composition of nursing homes. The 43 research papers were collected and analyzed. They were analyzed to focus on the research methodology and research contents related to the spatial composition of nursing home. The researches on spatial composition of nursing home were categorized into 5 types ; 1) the researches on the overall spatial composition of nursing homes, 2) the ones on space planning of each room in nursing homes, 3) the ones on the space size of nursing home, 4) the ones on the spatial composition of nursing homes in foreign countries, 5) the ones on the usage conversion of small-sized hospital and closed school into nursing home. The size and layout of a bedroom and common space were the main issue. These studies have been consistently carried out since late 1990 and many researches used the method of the analysis of floor plan and the field study. However, the number of the subject nursing homes and the categorized space areas were different depending on studies. Therefore, it was difficult to synthesize these various results. In order to compare and synthesizing the various results of these many studies, the same criteria for dividing the spaces of nursing home needs to be applied. However, many results from these researches related to the space composition of nursing home would be the useful data for planning the nursing home.

Change of Science Teachers' Perceptions About the Atmosphere Composition of Molecules with Different Masses (서로 다른 질량을 가진 분자들로 이루어진 대기의 조성에 대한 과학교사들의 인식 변화)

  • In this study, we surveyed pre- and post-perceptions of fourteen science teachers related to the atmosphere composition of molecules with different masses by the developed test. As a result of the test, the teachers were classified into two types of thoughts; One of them is considered the atmosphere to be a homogeneous solution, and the other is a thought that the composition ratio of the atmosphere was not homogeneous considering the different weights of particles. The two types were reclassified into three categories; one of them is considering large gravity effect, another is considering small gravity effect, and the other is considering medium scale gravity effect. Total six types of thoughts were found from the pre-test. After introducing crosscutting concepts which are related to the composition of atmosphere. The teachers discussed the phenomena with the molecular motion by weights of atoms and temperature, the homogeneity of the solution of air in chemistry domain. They also discussed with the relationship between mass and gravity and distance in physics domain. And the discussion included distribution of the atmosphere, convection phenomena, etc. After the discussion, the teachers changed their pre-conceptions to post-concoctions considering combined perspectives of gravity, mass, temperature, altitude etc. Through these changes, we are able to confirm the importance of crosscutting concepts covered in various disciplines. In the integrated science, we should help teachers to provide students with these types of thinking in order to form a coherent world-view and to carry out inquiry thinking as an intellectual tool.

Comparative study of nutritional composition and color traits of meats obtained from the horses and Korean native black pigs raised in Jeju Island

  • Objective: The present study aimed at comparing the nutritional composition and color traits between two meat types: Horse meat and pork from Korean native black pigs raised in Jeju Island. Methods: After slaughter 24 h, the longissimus dorsi samples were taken from left side carcasses of the 32-mo-old Jeju female breed horses and the 6-mo-old Korean native black pigs (n = 10 each). The samples were then placed into cool boxes containing ice packs and transported to the Laboratory of Meat Science where all visual fats and connective tissues were trimmed off and then the samples were ground. All the samples were analyzed for nutritional composition (proximate composition, minerals, vitamins, fatty acids, and amino acids) and color traits. Results: The horse meat contained significantly higher collagen, moisture and protein than the pork (p<0.05). The Jeju horse meat showed more desirable fatty acid profiles such as containing significantly lower saturated fatty acids (SFA), higher polyunsaturated fatty acids (PUFA) contents and PUFA/SFA ratios than the pork (p<0.05). Differences in concentrations of ten amino acids existed between the two meat types in which the horse meat had higher values for all these amino acids, total amino acids (20.33 g/100 g) and essential amino acids (10.06 g/100 g) than the pork (p<0.05). Also, the horse meat showed significantly higher concentrations of Fe (34.21 mg/100 g) and Cu (2.47 mg/100 g) than the pork (Fe, 17.42 mg/100 g and Cu, 1.51 mg/100 g) (p<0.05). All the vitamins detected showed statistical differences between the two meat types in which the horse meat had higher concentrations of vitamin B1 (25.19 mg/100 g), B2 (92.32 mg/100 g), B3 (2,115.51 mg/100 g), and B5 (67.13 mg/100 g) than the pork (p<0.05). Conclusion: Based on the results obtained in the study, it is concluded that the two meat types studied are rich in nutrients and the animal species strongly affected the nutritional values and color traits of the muscle tissues.

The Classification of Forest Types by Factor Analysis in Natural Forests of Dutasan (두타산 일대 천연림에서 요인분석에 의한 산림유형 분류)

  • The objective of this study was to comprehend inter-species association and factors affecting species composition by factor analysis and to classify forest types of natural forests in Dootasan. We examined the correlation (positive or negative) of the major species by correlation analysis, the selection of three factors affecting the species composition by factor analysis, cluster analysis on the basis of factor scores, and the evaluation of the results of forest type classification by ANOVA. The outputs of correlation analysis were closely associated with those of factor analysis. The first factor affecting species composition was found to be the decline phenomenon of Pinus densiflora during forest succession process. The second and third factors were growth environments in valley and slope, respectively. The cluster analysis was carried out based on three factors affecting the species composition. The results indicated that the study area was classified into four forest types as follows: Quercus mogolica-Acer mono-Fraxinus rhynchophylla community, Q. mongolica community, Q. mongolica-Tilia amunrensis community and Pinus densiflora community. The dominant species of each community in the four classified forest types were significantly different (p<0.05).

Body composition of Ancient Roofing Tiles Excavated from Chonnam Province (전남 지방에서 출토된 고대 기와의 태토 조성)

  • The body composition of an ancient roofing tiles excavated from Chonnam province has been investigated by X-ray diffraction, and inductively coupled plasma spectroscopy. Ancient roofing tiles were excavated at ancient mountain fortress and kiln sites. The body composition of roofing tiles was different according to the excavated sites. The mineral component of roofing tiles were grouped in the five types and chemical composition was different according to the excavated areas. It is presumed that the body of roofing tiles used low-grade raw materials containing $Fe_2O_3$ 4-10%. The trace element composition of the roofing tiles were different, and it might be all ret1ection of different geological characteristics. The characteristic element of rooting tiles was vanadium element of the analyzed 20 trace elements. By $SiO_2-V$ distribution diagram types, roofing tiles excavated from the Geomdan mountain fortress at Sunchon, kiln site in Yeochon, Gorak and Cheoksan mountain fortress at Yeosu were grouped into the same excavated site.

Geochemical Water Quality and Contamination of Shallow and Deep Groundwaters in Myunggok-ri, Kongju (공주시 유구읍 명곡리지역 천부 및 심부지하수의 지화학적 수질특성과 오염)

  • The water-rock interaction and anthropogenic contamination affecting to geochemical composition of shallow and deep groundwaters were investigated in the agricultural area of Myunggok-ri, Kongju. The shallow groundwater is classified into the chemical types of $Ca-HCO_3$ and $Ca-Cl(SO_4)$ and shows weak acid having an average pH 6.2. Deep groundwater shows the uncontaminated composition of the chemical types of $Na-HCO_3$ and Na $(Ca)-HCO_3$ with pH of 8.4~8.8. The grouping approach of chemical data of waters shows the distinguished trend between water composition influenced anthrophogenic input and water composition mainly determined by natural process such as water-rock interaction. The main anthropogenic inputs affecting chemical composition of shallow groundwater are the contaminants such as $K^+$, $NO_3{^-}$, $Cl^-$ having average values of 4.4 mg/l, 22 mg/l, 13.7 mg/l, respectively. The contaminants were probably derived from fertilizer, sweage, septic tank, and stable, etc. The hydrogen and oxygen isotopic compositions indicate that five deep groundwaters were recharged from different altitudes, and that shallow and deep groundwaters were originated from meteoric water. Tritium contents of waters suggest that deep groundwater was recharged before or just after 1950s, and that shallow groundwater is much younger than deep groundwater. The results of this study may serve as a basic data for the future study of shallow groundwater as a drinking water in agricultural area, in Korea.

  • The purpose of this study is to understand the trends of urban housing in the age of modernization in Western cities since 1970's, and to provide the useful data for diversifying urban housing types in Korea. Although the housing types can be categorized in many ways according to the points of view, this study classifies 11 types by a criterion of urban composition elements. Among 11 urban housing types, one type, free-standing slab structure, has been mainly applied to Korean situation. The reason might be that the free-standing structure type is the most efficient one in terms of land use and block organization, but it results in a monotonic condition of urban housing blocks. Therefore, taking local characteristics and urban contexts in Korea into consideration, the future urban housing design should be developed in different ways of making local life styles possible in them, by adopting various types of Western urban housing precedents.
