A Study on Relationship between Health Behaviors Practice and Physical$\cdot$Social and Psychological States Radiological Technologists (방사선사의 건강행위 실천과 육체적$\cdot$사회 심리적 상태와의 관련성 연구)

  • This study is aimed at examining the relationship between health behaviors practices and physical and psychological stresses of radiological technologists who are working at general hospitals across the country. For this purpose, a survey was conducted to 890 subjects by means of questionnaires from the middle of July to the end of August 2003, which resulted in the following outcomes: 1. From the technical and statistical analysis into the physical and psychological states, the item 'I feel miserable and dejected' scored the highest points of (3.91), implying that most subjects got heavily stressed, while the item 'Life is worth living' recorded (2.59), representing that only a few of them got less stressed. 2. With regard to an analysis of variance depending on their regular exercise, a significant difference appeared in 7 items(Pl, P2, P5, P6, P12, P17, and Pl8)(P<0.05). 3. Out of analysis into such variance as smoking, significant results were found in the items 'I become uncomfortable or disturbed at night' and 'I can solve my own problems'(P<0.05), while no significant difference was confirmed in other items regardless smoking. 4. From the T-test conducted to the independent sample depending on the drive under the influence, a significant difference was shown only in the item 'I feel very exhausted, even eating is a labo'( P<0.05). 5. The T-test with the independent sample of drinking coffee, the item 'I am satisfied with the method and the procedure of things I do' turned out to be significant( P<0.05) while no particular difference was confirmed in other items. In conclusion, it was revealed from the study that the physical and psychological states and health-related practices of radiological technologists seemed to be more affected by regular exercise than by smoking or drinking wine or coffee, a result confirming that the health-related acts are closely associated with the socio-psychological stresses. It is, therefore, strongly suggested that the practice of health-related acts to properly control stress will contribute to promoting health and pre venting disease of radiological technologists.

Measuring the Causal Relationships of Restaurant Service Quality and Perceived Sacrifice, Value, Satisfaction and Intention to Revisit in Tourist Area (관광지에서의 음식점 서비스 질, 지각된 희생, 가치, 만족과 재방문 의도의 인과 관계 평가)

  • The purpose of this study was to measure the effects of the perceived sacrifice, service quality, value and satisfaction on the intention to revisit restaurants. A total of 273 questionnaires were completed. The equation model was used to measure the causal effects. The results demonstrated that the confirmatory factor analysis model provided an excellent model fit. The modified model yielded a significantly better fit to the data than the service quality model, and accounted for a greater share of the variance in intention to revisit than the service quality model. The effects of value and service quality on intention to revisit were statistically significant in both the service quality model and modified model. The effects of perceived sacrifice and service quality on value were statistically significant in the service quality model and modified model. As expected, service quality had a significant effect on satisfaction in the modified model. Satisfaction had a significant effect on intention to revisit in the modified model. Satisfaction also had a significant effect on service quality in the service quality model. Moreover, service quality had an indirect influence on intention to revisit through value and satisfaction in the modified model. Service quality had an indirect influence on the intention to revisit through value in the service quality model. The overall findings offer strong empirical support for the intuitive notion that improving service quality can increase favorable intention to revisit, and decrease unfavorable intention to revisit.

Effect of Ge(Germanium) Treatment on Rice Quality (게르마늄 처리가 쌀 품질에 미치는 영향)

  • This study was conducted to investigate the effects of Ge(germanium) treatment on rice quality. Rice samples were divided into the following treatment groups: control(CON: cultivated without Ge), Ge-1(cultivated with 200 kg of rough stone powder containing 1.6 mg/kg germanium per 10 ha), and Ge-2(cultivated with 500 kg of rough stone powder containing 1.6 mg/kg germanium per 10 ha). The mean total Ge level in the Ge-2 sample was 20.47 ppb. The levels of Ca and Na in the Ge-2 rice increased by 65.12 and 110.28%, respectively, when compared to the control, whereas the Zn, Mn, Fe, Mg and K content decreased by 11.44~30.50%. No significant difference in the percentage weight of C and O was observed among samples. The order of the percentage weight of P, S, and Cl was Ge-2>Ge-1>CON. The free amino acids were higher in samples from the Ge-1 and Ge-2 groups than in samples from the control. The GABA($\gamma$-aminobutyric acid) amount in the Ge-2 products was significantly high compared to other groups. The micro structure of Ge-2 showed a firmer network than the control and had a macroporous structure. Conversely, the Ge-2 products had higher scores for stickiness, hardness and overall taste when compared to the other groups. These results suggest that rice treated with rough stone powder containing germanium can be used in the production of commercially-desired functional rice.

Chemical Properties of Lignans, Their Effects on Human Health, and the Enhancement of Milk Function of Lignans (리그난의 화학적 특성, 인체 건강에 미치는 영향 및 리그난의 우유 기능 강화에 관한 연구 고찰)

  • This review discusses the characteristics of major lignans and related studies and provides a basis for future studies. Lignans are present in various food products consumed daily, such as flaxseed and other seeds, vegetables, fruits, and beverages including coffee, tea, and wine. Lignans are natural phytoestrogens with a structure similar to that of secoisolariciresinol (Seco), mataireinol (Mat), pinoresinol (Pin), medioresinol (Med), lariciresinol (Lari), and syringaresinol, which is then converted to enterodiol (END) and enterolactone (ENL), which are mammalian lignans and the primary biologically active enterolignans, by the intestinal microflora. The associations between lignans and a decreased risk of cardiovascular disease are promising; however, they are not yet well-established, probably owing to low lignan intake in habitual Western diets. Nonetheless, these associations were more prominent at the higher doses in interventional studies. Many studies on humans and animals have reported the benefits of lignan consumption in protecting against CVD and metabolic syndrome by reducing lipid and glucose concentrations. END and ENL reportedly exert protective effects including phytoestrogenic, antioxidant, anti-inflammatory, and anticancer effects through various mechanisms. Moreover, lignans reportedly exert beneficial effects in breast, colon, and prostate cancer and osteoporosis have reported that. However, future studies are required to confirm the association between lignan and disease.

Available Components of Chajogi (Perilla sikokiana B.) at Different Harvest Periods (차조기(紫蘇葉) 채취시기별 유효성분 함량의 변화)

  • The propose of this study was to investigate the changes of available components in Chajogi (Perilla sikokiana B.) by different harvest periods. The Chajogi samples were divided into four groups by harvest period. The four groups were divided into I (harvesting sample at 14, July, 2005), II (harvesting sample at 25, July, 2005), III (harvesting sample at 15, Aug, 2005) and IV sample (harvesting sample at 2, Sept, 2005), and then analysed with regard to the content of proximate compositions, minerals, amino acids, perillaldehyde and anthocyanin. The contents of reducing sugar increased with increasing harvesting periods, while those of crude protein, crude lipid and total amino acids decreased for IV sample as compared to the other samples. The levels of heavy metals in all samples were not detected. The Zn, Fe and Mg contents of IV sample decreased sharply. The perilladehyde contents were 0.36%, 0.42% 0.45%, and 0.35% for I, II, III, and IV products, respectively. III sample as contented to the other samples was shown to have the highest anthocyanine content (1.21% in dry basis). In conclusion, the date of harvesting Chajogi affects the contents of available components.

Effects of Medicinal Herb Extracts and Heat and Coating Treatments on the Browning Degree of Fresh-Cut Apples (한약재 추출물, 가열 및 코팅 처리가 신선절단 사과의 갈변도에 미치는 영향)

  • The effects of dip treatments of chemicals (ascorbic acid, cystein, sodium chloride, magnesium chloride, calcium chloride, histidine: 1% solution) and medicinal herbs (Pueraria thunbergiana, Angelica gigas, Dioscorea japonica, Lindera strychifolia, Cnidium officinale, Astragalus membranaceus: 1% extracts), heat shock ($40-60^{\circ}C$ water), and edible coating (albumin, dextrin, sucrose poly ester, whole soy flour: 0.5-4% solution) on the browning degree of fresh-cut 'Fuji' apples were studied. Among the each treatment methods, the surface browning of fresh-cut apples was best retarded by calcium chloride dip, Astragalus membranaceus dip, $45-50^{\circ}C$ heat shock, coating with 3% dextrin or 1% whole soy flour. The results suggest that the treatments of medicinal herbs extracts, heat shock, and edible coating can be used as alternative for the use of chemical agents for the antibrowning of fresh-cut apples.

COLOR STABILITY OF NEW SILORANE-BASED COMPOSITE RESIN: AN IN VITRO SPECTROPHOTOMETRIC STUDY (Silorane-based 복합레진의 색안정성에 관한 연구)

  • The objective of this study was to evaluate the color stability of new silorane-based composite resin compared with methacrylate-based composite resins after immersion in 3 staining solutions. One silorane-based composite(Filtek P90) and 3 methacrylate -based composites(Filtek Z250, Filtek Z350, Tetric Ceram) were evaluated. Twenty disk-shaped specimens($10{\times}2mm$) of each of 4 composite resins were prepared. The specimens were then divided into 4 groups of 5 specimens each and immersed in 3 staining solutions( coffee, red wine, curry solution) or distilled water(control) for 28-day test period. Color of the specimens was measured with a spectrophotometer(Color Eye 7000A) using CIE $L^*a^*b^*$ color space relative to CIE standard illuminant D65 at baseline, 1day, 3days, 7days, 14days, 21days and 28days after staining. The color differences( ${\Delta}{E^*}_{ab}$) were calculated. The results were obtained as follows ; 1. The mean color changes(${\Delta}{E^*}_{ab}$) of the composites were greatest in curry solution, then red wine, coffee and distilled water, in decreasing order. 2. The mean color changes(${\Delta}{E^*}_{ab}$) of the composites were greatest in Z350, Z250, Tetric Ceram and P90, in decreasing order.

Quality and Nutrition Labeling Study of Domestic Fruit (Plum) (국내산 청과물 (자두)의 품질 영양표시에 관한 연구)

  • In order to develop a model on the quality and nutrition label of Korean fruit plum, we first examined the quality and nutritional characteristics of Korean Plum, ChooHee. The contents of moisture, crude protein, crude fat, crude fiber, crude ash and N-free extinct were 92% 0.74% 0.64% 1.65%, 0.32% 4.29% respectively. Thus the total calorie of the sample was 32 kcal/100 g. The content of sugar, acidity and Vitamin C were $33{\pm}0.85 Bx^{\circ}$, $1.08{\pm}0.12%$ and $7.037{\pm}0.317mg%$ respectively. The principle minerals were S, K, Ca, Na, and Mg. Major free sugars were fructose, glucose and sucrose and major organic acid were succinic acid, malic acid and citric acid. The difference of contents of total phenols between peel and flesh pare were considerable. The total phenolic contents of whole fruit were $75.55{\pm}0.73mg%$. On the above results, the quality and nutrition label of Korean plum were developed in the first time. We expect that this study on labeling could play an important role to the quality control and marketing of Korean agricultural products.

Effects of Chajogi (Perilla frutescens) Extracts on the Quality of Vinaigrette Dressing during Storage (차조기 추출액이 vinaigrette dressing의 저장 중 품질에 미치는 영향)

  • This study investigates the effects of chajogi (perilla frutescens) extracts on quality of vinaigrette dressing during storage. Vinaigrette dressing(VD) samples prepared with chajogi(perilla frutescens) extracts were divided into control(0% chajogi extracts) and the groups added chajogi extracts. VD samples prepared with chajogi extracts were divided into $T_1$(VD with 0.4% chajogi extracts), $T_2$(VD with 0.8% chajogi extracts) and $T_1$(VD with 1.2% chajogi extracts). The pH values during storage at 25 and $50^{\circ}C$ for 120 days in all samples ranged from 2.38 to 2.83 and form 3.21 to 3.36, respectively. As for total acidity, it decreased in all samples during storage while there wasn't significant difference in the samples of different storage temperature(25 and $50^{\circ}C$). L(lightness) value scores of all samples added with chajogi extracts during storage went higher and a(redness) and b(yellowness) value scores became lower. Escerichia coli forms were not detected in all samples. Antioxidant capacity by peroxide value of T1, T2 and T3 sample showed higher than that of the control sample. Crude Fat contents of the control sample during storage at $25^{\circ}C$ were the highest as compared to those of the other samples.

The Roles of Dietary Polyphenols in Brain Neuromodulation (뇌 신경조절에서의 식이 폴리페놀 화합물의 역할)

  • Over recent years, it has become evident that the central nervous system bidirectionally interacts with the gastrointestinal tract along the gut-brain axis. A series of preclinical studies indicate that the gut microbiota can modulate central nervous system function through a multitude of physiological functions. Polyphenols are ubiquitous plant chemicals included in foods such as fruits, vegetables, tea, coffee and wine, and their consumption is directly responsible for beneficial health effects due to antioxidant, anti-inflammatory, antimicrobial, immunomodulatory, anticancer, vasodilating, and prebiotic-like effects. There is increasing evidence that dietary polyphenol can contribute to beneficial effects in neuronal protection acting against oxidative stress and inflammatory injury as well as in cognitive functions. In this paper, we overview the neuroprotective role of dietary polyphenols especially focusing on the neuroinflammation and neurovascular function by interaction with the gut microbiome. Polyphenol metabolites could directly act as neurotransmitters crossing the blood-brain barrier and modulating the cerebrovascular system or indirectly modulating gut microbiota. In addition, evidence suggests that dietary polyphenols are effective in preventing and managing neurological disorders, such as age-related cognitive decline and neurodegeneration, through a multitude of physiological functions. Dietary polyphenols are increasingly envisaged as a potential nutraceuticals in the prevention and treatment of neurological disorders, because they possess the ability to reduce neuroinflammation, to improve memory and cognitive function and to modulate the gut microbiota.
