In order to improve the shelf life of Tofu, the effect of calcium chloride or acetic acid as coagulants were investigated for microbial and physicochemical changes during the storage in different kinds of soaking solution. The soaking water of Tofu prepared from calcium chloride was found to be spoiled after 15-17 hours of storage at $30^{\circ}C$, by reaching the bacteria count to 10million per ml. The shelf life of the Tofu prepared from acetic acid was better than those prepared by calcium chloride. For the effect of soaking solution on storage life, soaking Tofu in 0.1% acetic acid was found to be more effective than soaking in other solutions of 3% NaCl or 0.1% K-sorbate. The optical density of soaking solution of Tofu increased in proportion to spoilage, and in case of soaked Tofu in 3% sodium chloride and 0.1% K-sorbate solution, it greatly increased. Titratable acidity, and amino nitrogen contents in soaking solution increased as spoilage of Tofu progressed, but pH decreased the early period, one or two days, of stored Tofu and then increased.

Traditional Jeju tofu with a hard texture was manufactured by traditional method with a compounded coagulant. The processing condition for industrial production was optimized by determining soaking of soybean, extraction and heat treatment of soymilk as well as concentration and composition of coagulant. Maximum yield of soymilk was obtained by grinding one part of soaked soybean with eight parts of water, and the soluble solid of soymilk was about 8$^{\circ}$Brix. The free thiol group in soymilk was maximally exposed by heating at 10$0^{\circ}C$ for 2 min. A vacuum cooker for heating soymilk was effective for the improvement of yield and texture properties of tofu. The hardness of traditional Jeju tofu was obtained by increasing pressing time and drying by a fan instead of soaking in cold water. Optimization of a traditional tofu production resulted in the increase of total yield and improvement of quality control. Texture of traditional Jeju tofu prepared in industrial production scale was analyzed by instrumental analysis and sensory evaluation. Traditional Jeju tofu showed higher score in the hardness, roasting taste and overall preference compared with a commercial tofu, showing significant difference in 5% significant level..

During the past few years, titanium salts were investigated as alternative coagulants for the removal of organic matter of different molecular sizes in contaminated water. The flocculation efficiency of Ti-salt was comparable to those of $FeCl_3$ and $Al_2(SO_4)_3$ salts, commonly used coagulants. Incinerated sludge-$TiO_2$ showed higher surface area and photocatalytic activity than commercially available $TiO_2$. Metal-doped forms were produced by adding coagulant aids such as iron (Fe-), aluminium (Al-) and (Ca-) calcium salts during Ti-salt flocculation to increase pH. Ca- and Al- doped $TiO_2$ showed very high photocatalytic activity compared to Fe-doped $TiO_2$. When tested in a pilot scale plant for treatment of dye wastewater to check practical feasibility of the novel process, the removal ratio of the chemical oxygen demand was comparable to those of commonly used coagulants but the settling of sludge was faster. The $TiO_2$ generated after sludge incineration showed a high photocatalytic activity for degradation of volatile organic compounds and increased the rate of hydrogen production by water photosplitting. $TiCl_4$ coagulant and $TiO_2$ produced from different water sources with different concentrations had low acute toxicity compared to heavy metals and commercial $TiO_2$ when examined based on D. Magna mortality. This paper presents the production, characterisation and the photoactivity of $TiO_2$ produced from Ti-salt flocculated sludge. Different case studies are discussed to highlighted recent advances in this field.
Changes in the physical properties of soybean curd upon the processing conditions such as coagulant concentration, heating temperature and molding pressure were determined by using a failure stress and residual delay time of ultrasonic wave(5 MHz). Maximum failure stress of Tofu was obtained at the 0.3% $CaCl_2$ coagulant concentration, $95^{\circ}C$ heating temperature and greater molding pressure, respectively, whereas the delay time is inverse proportion to the failure stress value. The results of the multiple regression analysis with factorial design showed that the model equation consisted with delay time and processing conditions gave the good prediction of the Tofu failure stress.
This study was conducted to compare the quality characteristics of firm tofu (coagulant calcium chloride, CaCl2 used) made from eight imported and four domestic soybeans selling in Korean markets. The 100-seed weight of soybeans imported from China and Seonpung cultivated in Korea was the highest at 33.23 g and 32.51 g, respectively. Soybeans imported from the USA (bulk type) showed the lowest at 16.12 g, followed by Ukraine at 16.94 g, and Brazil at 18.51 g. The range of protein and fat in the 12 soybeans was 37.08~41.36% and 18.35~22.17%, respectively. The isoflavone contents were the highest in Daepung2 cultivated in Korea at 3,764.10 ㎍/g and the lowest in soybeans imported from Brazil at 1,439.85 ㎍/g. Tofu yield among the samples was in the following order: Seonpung (235.2%), China (232.0%) Daepung2 (228.7%), Daechan (225.7%), and Brazil (208%). Tofu made with soybeans cultivated in Korea (including from China) showed a higher yield compared to that made from soybeans from seven other countries. In the analysis of the correlation of quality factors of tofu, the hardness of the tofu was correlated with 100-seed weight (r=0.676⁎) and protein content of the soybeans (r=0.837⁎⁎). Tofu yield was correlated with 100-seed weight (r=0.748⁎⁎) and protein content of the soybeans (r=0.583⁎).
Several coagulants was investigated for their effects on shelf-life of packed Tofu. The titratable acidity, amino nitrogen content in Tofu and the optical density of Tofu suspension were increased as the spoilage developed during storage. The number of microorganisms was increased to 13 million cells per gram after 1 day of storage at $30^{\circ}C$ in the Tofu prepared with $MgSO_{4}\;and\;CaCl_{2}$. But, the Tofu prepared from acetic acid was found to be more stable for storage. The quality of Tofu was maintained up to 12 days or 18 days at $30^{\circ}C\;or\;15^{\circ}C$, respectively. These results suggested that acetic acid was desirable as a coagulant of packed Tofu to extend its shelf life.

The International Maritime Organization (IMO) in accordance with the regulations with respect to the combustion gases, such as NOx, SOx generated by the marine engine. The combustion gases must be equipped with a device to reduce emissions from all ships passing through the Baltic SECAs. In Korea, the International Maritime Organization (IMO) and the development of a device for NOx, SOx reduction. Scrubber is used in the ammonia water and the Urea solution in the waste water. The waste water containing ammonium nitrate and ammonium sulfate, react of the NOx and SOx gas. In this study, the recovery of by-product, which contains the waste water was used as an organic solvent extraction method of salting out. Ammonium nitrate and ammonium sulfate, the recovery process. The effects of pH (5, 7 and 9) and ionic strength of different salts on the flocculation characteristics of humic acid by inorganic (alum, polyaluminum chloride (PAC) with degree of neutralization, r=(OH/Al) of 1.7) and organic (cationic polyelectrolyte) coagulants, have been examined using a simple continuous optical technique, coupled with measurements of zeta potential. The results are compared mainly by the mechanisms of its destabilization and subsequent removal. The destabilization and subsequent removal of humic acid by PAC and cationic polyelectrolyte occur by a simple charge neutralization, regardless of pH of the solution. However, the mechanism of those by alum is greatly dependent on pH and coagulant dosage, i.e., both mechanisms of charge neutralization at lower dosages and sweep flocculation at higher dosages at pH 5, by sweep flocculation mechanism at pH 7, and little flocculation because of electrostatic repulsion between negatively charged humic acid and aluminum species at pH 9. The ionic strength also affects those greatly, mainly based on the charge of salts, and so is more evident for the salts of highly charged cationic species, such as $CaCl_2$ and $MgCI_2.$ However, it is found that the salts have no effect on those at the optimum dosage for alum acting by the mechanism of sweep flocculation at pH 7, regardless of their charge.
An investigation was carried out to elucidate the effects of type of ginseng, concentration of ginseng, and type of coagulants on the physical and sensory properties of soybean curd. The textural properties of soybean curd were not influenced by the type of ginseng. Soybean curd coagulated with glucono-delta-lactone (GDL) showed a greater hardness than that coagulated with other coagulants, whereas the former produced a lesser springiness than the latter. The L-value was proportionally reduced by the increase of ginseng level and soybean curd coagulated with $CaCl_2$ showed the lowest L value. All the curd products prepared with ginseng had a pale yellow color. In the sensory properties, springiness and beany taste of soybean curd linearly decreased as the concentration of ginseng was increased. The concentration of ginseng to improve the acceptability of ginseng soybean curd as determined by the physical and sensory evaluation, was less than 0.25%. The most acceptable ginseng soybean curd was the one coagulated with $MgCl_2$. Soybean curd prepared with GDL had the lowest acceptability because of its sour taste and textural properties.
To determine the optimum coagulants concentrations for preparing soybean-curds, the transmittance of soybean-curd whey using spectrophotometer has been measured. The textural properties of soybean-curds were examined by texture analyzer and sensory evaluations. The general components, oligosaccharides and amino acids in soybean-curd wheys were analyzed. Protein patterns of soybean-curd wheys comparing with soyflour and soymilk were investigated. By texture analyzer, hardness, cohesiveness, springiness, and gumminess of Cacl$_2$ soybean-curd, MgCl$_2$ soybean-curd were higher than those of CaSO$_4$ soybean-curd and GDL soybean-curd. In the sensory evaluations, CaSO$_4$ soybean-curds and GDL soybean-curds were smoother and moister than others. Glutamic acid and aspartic acid were the first two abundant amino acids in three kinds of soybean-curd wheys, but arginine was the most abundant amino acid in GDL soybean-curd whey. Total sugar content of soybean-curd wheys were about 12-13 g/l, and the main sugars among 5 kinds of sugars were sucrose and raffinose. Electrophoresis using SDS-PAGE showed that glycinin and P-conglycinin, the main proteins of soybean appeared in soy flour and soymilk, and only low molecular weight subunits appeared in soybean-curd wheys.
