Consumers and industry experts frequently have negative perceptions of most chemical preservatives. Although most people concede that they cannot resolve global food waste issues without preservatives, they prefer products without chemical preservatives. Numerous emerging technologies is now surpassing conventional methods for mitigating microbial food deterioration in response to consumer demand and fundamental health and safety considerations, including biological antimicrobial systems such as using food-grade microorganisms and their metabolites primarily originating from microorganisms, plants, and animals. Microbial compounds, including bacteriocins, bacteriophages, and anti-fungal agents, plant extracts such as flavonoids and essential oils; and animal-originated compounds, such as lysozyme, chitosan, and lactoferrin, are considered some of the major bio-preservatives. These natural compounds can be used alone or with other preservatives to improve food safety. Hence, the use of microbes or their metabolic byproducts to extend the shelf life of foods while maintaining safety standards is known as bio-preservation. To manufacture and consume foods in a safe condition, this review primarily aims to broaden knowledge amongst industry professionals and consumers regarding bio-preservation techniques, bio-preservatives, their classifications, and distinctive mechanisms to enhance food safety.

Among more than a hundred colonies of fungi isolated from soil samples, DY-52 has been screened as an extracellular chitin deacetylase (CDA) producer. The isolate was further identified as Mortierella sp., based on the morphological properties and the nucleotide sequence of its 18S rRNA gene. The fungus exhibited maximal growth in yeast peptone glucose (YPD) liquid medium containing 2% of glucose at pH 5.0 and $28^{\circ}C$ with 150 rpm. The CDA activity of DY-52 was maximal (20 U/mg) on the 3rd day of culture in the same medium. The CDA was inducible by addition of glucose and chitin. The enzyme contained two isoforms of molecular mass 50 kDa and 59 kDa. This enzyme showed a maximal activity at pH 5.5 and $60^{\circ}C$. In addition, it had a pH stability range of 4.5-8.0 and a temperature stability range of $4-40^{\circ}C$. The enzyme was enhanced in the presence of $Co^{2+}$ and $Ca^{2+}$. Among various substrates tested, WSCT-50 (water-soluble chitin, degree of deacetylation 50%), glycol chitin, and crab chitosan (DD 71-88%) were deacetylated. Moreover, the CDA can handle N-acetylglucosamine oligomers $(GlcNAc)_{2-7}$.
The natural dyeing of hanji cotton fabrics with guava leaf extract was investigated. The temperature and time of dyeing were $40^{\circ}C$ and $90^{\circ}C$ for eighty minutes, respectively. In addition, the dyebath has been set at pH 5. Sn pre-mordanted fabrics showed the highest K/S value. Regardless of dyeing temperature, K/S values were high when Al, Cu, Fe-mordanted fabrics were dyed in post-mordanting and Sn-mordanted fabrics in pre-mordanting. The dyeing equilibrium was shown at the fourth time of repeated dyeing. In the processing of hanji cotton fabrics, K/S value was high when hanji cotton fabric was treated with soybean milk at $90^{\circ}C$. Similar K/S value of dyeing was shown when fabrics were processed with chitosan, regardless of dyeing temperature. High K/S value of dyeing was seen when fabrics processed with gallnut tannin at 40. Fabrics dyed with acidic water extract showed yellowish color. Fabrics dyed with alkaline water extract showed reddish color, and fabrics dyed with ethanol extract showed greenish yellow color. In case of Sn-mordanted fabrics, the washing fastness level was between 3 to 4, and other dyed fabrics showed low fastness. The dry cleaning fastness also showed very excellent result with level 4-5. The rubbing fastness of the fabrics was better in dry rubbing than in wet rubbing. For the light fastness, all dyed fabrics showed low fastness. For antibacterial activity, the dyed fabrics with guava leaf extract showed 99.9% of high antibacterial activity. Hanji cotton fabric maintained certain deodorization in the state of raw fabric. All dyed fabrics showed higher UV protection rate than control fabric.
A new nano-composite carbon ink for the development of disposable dopamine (DA) biosensors based on screen-printed carbon electrodes (SPCEs) is introduced. The method developed uses SPCEs coupled with a tyrosinase modified nano-composite carbon ink. The ink was prepared by an “in-house” procedure with reduced graphene oxide (rGO), Pt nanoparticles (PtNP), and carbon materials such as carbon black and graphite. The rGO-PtNP carbon composite ink was used to print the working electrodes of the SPCEs and the reference counter electrodes were printed by using a commercial Ag/AgCl ink. After the construction of nano-composite SPCEs, tyrosinase was immobilized onto the working electrodes by using a biocompatible matrix, chitosan. The composite of nano-materials was characterized by X-ray photoelectron spectroscopy (XPS) and the performance characteristics of the sensors were evaluated by using voltammetric and amperometric techniques. The cyclic voltammetry results indicated that the sensors prepared with the rGO-PtNP-carbon composite ink revealed a significant improvement in electro-catalytic activity to DA compared with the results obtained from bare or only PtNP embedded carbon inks. Optimum experimental parameters such as pH and operating potential were evaluated and calibration curves for dopamine were constructed with the results obtained from a series of amperometric detections at −0.1 V vs. Ag/AgCl. The limit of detection was found to be 14 nM in a linear range of 10 nM to 100 µM of DA, and the sensor’s sensitivity was calculated to be 0.4 µAµM−1cm−2.
This study is to develop the double capsulation technology in order to increase the conservativeness and stability of unstable materials such as vitamins, polyphenols, natural active ingredients. And also, best way of triple matrix capsulation using natural polymers were detail described. As the first capsulation with w/o/w (water-in-oil-in-water) emulsifying system, our study group was especially made to soft and moisture cream using 5wt% of sucrose ester emulsifier as first capsulation. Nutrient agents are squalane, camellia oil. Triple matrix capsulation was formed with the best stabilized bead type capsules when it blended of chitosan, algin, sodium-potassium alginate. The bead diameter size was about 2.0~4.5mm (mean diameter: 3.2mm). Activity of lactobacillus containing cream for depending on various pH variations showed that alkalinity ($pH=10.8{\pm}0.5$) condition was higher than acidity ($pH=4.2{\pm}0.2$) and neutrality ($pH=7.1{\pm}0.3$) conditions. After a month, it also was certified to the activity of lactobacillus in incubated at $37{\pm}1^{\circ}C$ in culture medium. As application of food industry, we developed the containing lactobacillus capsule and 7 colored kinds of double and triple matrix capsulation in yogurt cream and active ingredients. As for above mentioned those results, one of tool to stabilize the living lactobacillus, doubled matrix capsulation greatly be expected to contribute to food industry. Furthermore, it can be expected to apply the drug delivery system (DDS) to active ingredients of stabilizing technologies at drug, pharmaceutical division and cosmetic industry, etc.
The Physicochemical, sensory and cooking properties of functionally fortified rice with dietary fiber and chitosan were compared with regular rice when the rices were cooked with pressure and electric cookers. Moisture content of functional rice before cooking was 11.11%, which was lower than 13.72% in regular rice. Accordingly, moisture contents of functional rice samples cooked both with pressure and electric cookers were lower than those of regular rice. L value showing the degree of lightness of cooked rice was significantly higher in rice samples cooked with pressure cookers. The ${\alpha}$ value, the degree of redness and the b value, the degree of yellowness, were the highest in the functional rice cooked with an electric rice cookers. Textural measurement of hardness using a rheometer showed the highest value in functional rice cooked with a pressure cooker. The degree of gelatinization measured using differential scanning calorimetry (DSC) before cooking showed higher onset gelatinization temperature ($T_0$) and peak gelatinization temperature ($T_p$) in functional rice compared with those in regular rice. The gelatinization enthalpy (${\Delta}H$) of functional rice was lower than that of regular rice, showing that functional foe had lower gelatinization energy compared with regular rice. When the samples were stored in a refrigerator for one week, the DSC showed faster retrogradation degrees in samples cooked with electric rice cooker, having significantly higher enthalpies of regular and functional rice cooked with electric cooked compared to those cooked with pressure cookers. The functional rice samples cooked with pressure cooker had higher consumer acceptance test values compared to those cooked with electric cookers.
This study conducted a survey to find out atopic dermatitis patients' required performance and preference in design factors to develop spring/summer(S/S) knitwears preferred by atopic patients. On the platform of achieved information from statistical analysis, S/S knitwear samples for atopic patients were designed and constructed with cotton/Seacell(R) blended yarn, And subjective wearing sensation were evaluated comparing the samples and the commercial products made with cotton/chitosan blended yarn, trying to help producing more comfortable S/S knitwears for atopic patients. SPSS 12.0 program was used for frequency analysis, Chi-square analysis, ANOVA, and Duncan test. The result was as follows; For comfort of S/S knitwears, atopic patients most considered skin care property. Atopic patients preferred simple and basic knitwear in light color with thin and soft fabric such as plain knit. The preferred style was that 'appropriately fit with suitable ease'. They also preferred 'closed front'; 'boat neckline' and 'V neckline'; 'raglan sleeve' and 'set-in sleeve'. For hem trim, they preferred 'rib' structure. Male preferred simple and plain style with 'round collar' and 'tubular or rib trim", while female preferred sophisticated and characteristic style with 'set-in sleeve' with 'rib trim'. Under the circumstances with insufficient functional knitwears developed, this study tried to develop comfort S/S knitwears for atopic dermatitis patients and the developed knitwears showed as good as or better performance in wearing feeling, fitting, and appearance than the previously developed functional goods.
기능성 강화를 목적으로 키토산 0.2%, 송이버섯 1.0%, 석류분말 1.2%, 산사추출분말 1.0%, 실크분말 1.2%, 은행잎추출분말 0.01%, 동아분말 1.2%, 마늘유 0.2%, 홍국분말 1.2%를 각각 첨가하여 고추장을 제조하였다. 각각의 소재가 고추장의 숙성에 미치는 영향을 조사한 결과 45일간의 숙성 기간별 pH, 산도, 포르몰태 질소함량, 색도의 변화는 소재 첨가구와 control 간에 큰 차이가 없었다. 항산화활성은 0.2%의 마늘유 첨가구가 control에 비해 약 2배 증가하였고 ACE저해활성은 1.2%의 실크분말 또는 0.01%의 은행추출분말 첨가 시 control에 비해 약 2배의 효과가 있었다.
셀룰로오스 아밀로오스 키토산, 키틴, 알긴산, 풀루란 또는 아밀로펙틴을 6- [4- (4'- (니트로페닐아조)펜옥시)]펜타노일 클로라이드(NA6C)와 반응시켜 전치환 또는 거의 전치환 6- [4- (4'- (니트로페닐아조)펜옥시카보닐)] 펜타노화 다당류 유도체들을 합성함과 동시에 이들의 열방성 액정의 거동들을 검토하였다. NA6C의 경우와 같이, 모든 다당류 유도체들은 단방성 네마틱 상들을 형성하였다. 이러한 사실은 다당류 유도체들의 액정 구조는 다당류 골격에 의해 결정되는 것이 아니고 mesogenic 곁사슬 그룹들에 의해 결정됨을 시사한다. 이것이 셀룰로오스 유도체들을 제외한 다당류 유도체들이 열방성 네마틱 상을 형성한다고 하는 최초의 보고이다. 다당류 유도체들에 있어서 관찰되는 네마틱 상들의 열적 안정성과 질서도는 아조벤젠 그룹들을 유연한 스페이서를 통하여 유연한 혹은 강직한 골격들에 도입시켜 얻은 고분자들에 대해 보고된 결과들과 현저히 다르다. 이들의 결과를 주사슬과 곁사슬의 배열 그리고 주사슬의 유연성의 차이와 관련하에서 검토하였다.
최근 환경과 건강에 대한 관심이 증대되면서, 천연 섬유를 소재로 사용한 최종 제품 역시 고급화 및 고기능화되고 있는 추세이며 섬유항균가공분야에 있어서도 천연 추출물을 이용한 항균가공이 주목을 받고 있다. 현재 항균가공에 사용되고 있는 항균제는 일반적으로 합성항균제를 사용하고 있고 이는 거의 대부분 자극성 화합물로써 인체에 잠재적 유해요인이 될 수 있고 제조 및 가공과정에서 환경오염을 유발시키는 문제점도 발생되고 있다. 반면 천연추출물을 사용할 경우 합성물질에 비해 포름알데히드 검출 등의 인체 안정성의 불안이 적어 건강차원에서 그 인식이 점차 증대되고 있는 추세이다. 천연항균물질에는 chitosan이나 식물에서 추출된 천연항균물질 등이 있는데 특히 식물에서 추출된 천연항균물질은 피톤치드(phytoncide)라고 표현되고 있으며 이는 수목들이 해충이나 미생물 등으로부터 자기방어를 위해 공기 중으로 발산하는 방향성의 항생물질을 뜻하는 말이다. 본 연구에서는 식물 중에서 피톤치드 정유의 함량이 많다고 알려진 측백나무과의 편백나무 정유를 이용하였으며 편백나무 정유가 식물성 천연 오일형태이므로 가공 처리 시 물과 계면이 발생되기 때문에 HLB(Hydrophilic Lipophlic Balance) 조건에 따른 최적 유화조건을 선정하였으며 편백나무 정유를 이용한 면직물의 항균 기능 부여를 위한 시험으로 편백나무 정유 처리 농도에 따른 항균성을 평가해 보고자 하였다. 실험 결과 편백나무 정유는 HLB 15이상 계면활성제 사용 시 물에 용해성이 좋고 안정된 에멀젼 상태를 보였으며 제조된 편백나무 정유 가공액 5%이상 처리 시 Staphylococcus aureus과 Klebsiella pneumoniae의 99.9% 정균감소율을 나타내었다.
