영양플러스 대상자의 만족도와 식생활 평가에 대한 연구 - 서울 서대문구 지역 대상자를 중심으로 - (A Study on Satisfaction and Healthy Eating Index in Subjects of Nutrition-Plus Program focusing Seodaemun-gu in Seoul)

  • This study evaluated the satisfaction and healthy eating index of nutrition-plus program providing nutritional supplements to pregnancy, lactating women, infant and children. This program was carried out at Public Healthcare Center, Seodaemun-gu in Seoul from February 2014 to June 2014. The subject selected among applicants for low income family financing of the government included 159 subjects. There was no statistically significant difference for degree of satisfaction with supplementary food by age, but the degree tends to get higher at lower age. Degree of satisfaction with supplementary food by the duration for participation was shown higher as the duration gets longer. For questions of 'Do you check nutrition label?' and 'Do you preserve food as described at food label?' in healthy eating index evaluation, the scores appeared higher at younger age group as they check the nutrition label more. Also as the duration for participation gets longer, the scores appeared higher which can be interpreted as effect of nutrition education from Nutrition-Plus. Frequency of having breakfast gets lower at higher age of subjects. And it gets higher as the duration for participation gets longer even though that there's no difference between '3 to 4 months' and '5 to 8 months' of the duration of participation. For evaluation of food security in recent 1 year, 86.8% of subjects responded 'Food sufficiency' and 'Enough but not always the kinds of food we want', and there is no difference by age and the duration of participation. As a result of this research, it is shown that the subjects of nutrition support project are relatively satisfied with the support. And healthy eating index gets improved as the duration of participation gets longer which can be considered as effect of nutrition education. It seems to be necessary to keep nutrition education as well as food support so to perform food life education on appropriate purchase and consumption of food.

A Comparison of Food Frequency, Food Attitude, and Eating Habits between Korean -American and Korean Children

  • Food frequency, food attitude, eating habits and physical activities of Korean-American children and Korean children were compared. Two hundred and sixty two Korean-American children living in New Jersey and New York in the United States of America(KcUS group) and three hundred and thirty one Korean children living in Seoul, Korea (KcK group) between the ages of 9 and 12 were included. There were significant differences in food frequency between these groups. The KcUS group ate more western food, more food at meal time and more snack than the KcK group. In addition, KcUS group slept longer hours and exercised less than KcK group. In this study, we learned that higher rate of obesity in Korean-American children could be partially explained by the difference in food intake, food attitude, eating habit, and physical activities between the two groups. It is suggested that a different approach will be useful in developing nutrition education programs against childhood obesity for the Korean-American children and Korean children.

경남지역 일부 초등학교 비만아동의 식습관 분석 및 영양교육을 위한 교수학습과정안 개발 (A Survey on Dietary Habits in Gyeongnam and the Development of the Nutrition Education Curriculum with Teacher's Guide for Obese Elementary School Children)

  • 본 연구는 경남 일부 초등학교 비만아동을 대상으로 식습관, 영양교육에 대한 인식, 영양지식을 조사하여 분석한 자료를 바탕으로 비만아동의 영양교육을 위한 수업지도안을 개발하였다. 그 결과를 요약하면 다음과 같다. 1. 아동의 신체적 특징으로 신장은 남학생과 여학생 간에 유의적인 차이는 없으며 체중은 남학생(55.0${\pm}$9.0 kg)이 여학생(52.0${\pm}$9.4 kg)보다 유의적으로 높았다(p<0.05). 2. 전체 아동의 83.5%가 영양교육을 받아본 경험이 없다고 답하였으며 80.3%가 영양교육의 필요하다고 답하여 영양교육에 대한 관심도가 크다는 것을 알 수 있었다. 3. 희망하는 영양교육 내용에는 '체중 감소를 위한 식사조절법(64.7%)', '올바른 간식(12.2%)'으로 조사되었다. 희망하는 영양교육 방법으로 남학생은 '게임(35.4%)', '강의(18.8%)', '조리실습(16.7)', '개인상담(16.7%)' 순으로, 여학생은 '조리실습(25.6%)', '개인상담(25.6%)', '강의(11.6%)', '그림그리기(11.6%)'로 나타나 유의적인 차이를 보였다(p<0.01). 4. 아동의 식사속도는 남학생이 여학생보다 식사속도가 유의적으로 빠른 결과를 나타내었다(p<0.05). 5. 운동종목에서 남학생이 '가벼운 레포츠활동(27.0%)'과 '구기종목(25.4%)'을 여학생은 '가벼운 레포츠 활동(47.9%)'과 '걷기(25.4%)'를 선호하여 유의적인 차이를 보였다(p<0.001). 운동장소로 남학생이 여학생에 비해 운동장 등 활발한 장소를 선택하여 유의적인 차이를 보였다(p<0.001). 6. 영양교육 수업지도안 개발은 비만 개선을 위한 올바른 식습관과 영양지식을 교육하기 위해 13차시 분량의 수업지도안을 개발하였다. 개발된 초등학교 고학년용 영양교육 교수 학습지도안은 비만 정의 알기, 자신의 모습 사랑하기, 식사와 관련된 감각 익히기, 식품군 알기, 아침결식개선, 편식개선, 올바른 간식선택, 외식의 8개 대주제와 13개의 소주제로 구성된 13차시였다. 본 연구의 수업지도안을 활용하여 실제로 수업하여 그 효과판정을 하지 못했으므로 그에 대한 후속 연구가 이루어져야 하며 비만인구는 점점 증가하고 세계적으로 문제시되고 있지만 이에 대한 교육방법 개발과 실제 교육은 학교에서 거의 이루어지고 있지 않은 실정이다. 앞으로 비만문제를 단순히 가정에 맡기거나 의학적인 문제로 방치하기 보다는 그 예방차원이 우선시되어 아이들의 교육을 담당하고 있는 학교에서 식습관 관련 수업이 영양교사에 의해서 이루어지는 것이 필요하리라 생각된다.

Evaluation of the health status of preschool children stratified based on the weight-length index (WLI)

  • This study was conducted to prepare basic materials and offer advice regarding dietary habits to prevent and cure childhood obesity by comparing and analyzing dietary habit, nutritional status, blood factors, and mineral contents of hair. All subjects were stratified by their weight-length index (WLI). According to the standard WLI values, 64.9% of children were within the normal value, 13.5% of children were underweight, and 21.6% of children were overweight and obese (WLI ${\geq}$ 110%). Overall, the score assessed dietary habit for all children was $21.32{\pm}2.55$ point (921 subjects), with 5.1% of children having excellent dietary habits and 3.1% having poor dietary habits. Additionally, 37.9% of underweight children, 37.6% of normal weight children, and 43.2% of overweight and obese children consumed higher amounts of protein than underweight children did (meat, fish, eggs, and soy products) (P < 0.05). Overweight and obese children consumed more fried foods than underweight or normal weight children (P < 0.05). Moreover, 38.0% of the children had hemoglobin levels of 12 g/dl, while 7.6% were anemic (11.1 g/dl). When a hematocrit level of 33% was taken as the standard, 11.0% of children were anemic. The plasma transferrin content was $263.76{\pm}54.52$ mg/dl in overweight and obese children. The mean values of Fe, Cu, Ca, Cr, Mn, Se, Na, K, Li, V, Co, and Mo were within the reference values, but the Zn concentrations of underweight, normal weight, and overweight and obese children were $67.97{\pm}28.51$ ppm, $70.09{\pm}30.81$ ppm, and $73.99{\pm}30.36$ ppm, respectively. The Zn concentration of overweight and obese children ($73.99{\pm}30.36$ ppm) was lower than that of the standard value (180~220 ppm). Therefore, a nutritional education program and new guidance for dietary pattern should be developed to reduce the number of underweight and overweight and obese children.

학령 전 아동 어머니의 자신과 아동에 대한 체형인식 (Personal Maternal Body Image Perceptions Their Preschool Children)

  • This study was performed to investigate body image perceptions of women about themselves and their preschool children and also to investigate the relationship between these perceptions. Subjects were 545 women and their children (279 boys and 268 girls) residing in Daejeon city. $67.7\%$ of women were classified as normal group, $18.6\%$ as overweight group, and $13.8\%$ as underweight group by BMI. $68.5\%\;and\;78.7\%$ of their boys and girls, respectively, were classified as normal group, $22.4\%\;and\;16.4\%$ as overweight group, $9.1\%\;and\;4.9\%$ as underweight group by WLI. Women made relatively accurate judgments on their current body sizes and selected their body images as the most desirable one. But they preferred plumper figures for their children and failed to perceive their overweight children as overweight. While $74.7\%$ of women wished to be thinner, $81.1\%$ of them wished their children to be fatter. Women spending less then 100 thousand won and more than 500 thousand won as monthly food expenses and having only one child perceived their children's current body sizes the lowest and the highest, respectively. Women wished boys to be fatter than girls. Their current body sizes were correlated positively with the children's current body size (p < .01), and their healthiest, attractive, and 'wish' figures were correlated positively with children's current, healthiest, attractive, and 'wish' figures (p < .05- p < .01). Body size dissatisfaction (wish to be thinner) and BMI of women were correlated negatively with children's healthiest and attractive figures (p < .01). These findings suggest that in order to correct the women's body image misperceptions and to prevent childhood obesity, mother's perception about healthy body images for themselves and their children need to be included in nutrition education. Also, it is necessary to assist mothers to understand the relationship of body size and weight status with the risk of chronic disease which might appear later in their children's life. 청국장에 대한 성남지역 일부 초등학생의 인지도와 선호도 조사 (Survey on Elementary School Student's Perception and Preference of Chungkukjang in Seongnam Area)

  • The principal objective of this study was to assess perceptions and preferences of chungkukjang in elementary school children who used a school foodservice. In this investigation, 583 elementary school students(300 boys, 283 girls) in the Seongnam area were surveyed via questionnaire, and the collected data were analyzed using the SAS package. The results demonstrated that 82.0% of students responded that they were aware of chungkukjang. Female students were more aware of chungkulgang than were male students, and children of the nuclear families were more aware of those of the extended family. With regard to the origins of their interest in chungkulgang, 51.8% of the subjects answered 'through home education' and 35.5% learned about chungkukjang 'through mass media'. Most students recognized chungkulgang as a 'healthy food' and a 'Korean traditional food'. Approximately 44% of the students ate chungkukjang in the school foodservice once per month, and 41.7% preferred this menu. Therefore, in order to increase elementary school students' knowledge and intake of chungkulgang, the school should attempt to foster the quality of chungkulgang in nutrition education, to serve chungkukjang frequently in school foodservices, and to develop recipes for tastier chungkukjang foods for children.

한국의 패스트푸드 및 탄산음료에 관한 영양정책 방안제시 (A Suggestion to Develop a Nutrition Policy on Food and Nutrition Labeling and Education Systems for Fast Food and Carbonated Soft Drinks in Korea)

  • The objective of this study is to develop a nutrition policy on food and nutrition labeling and education systems for fast food and carbonated soft drinks in Korea by identifying the fast food and soft drink use and by examining nutrition policies and labeling in Korea and other countries. Fast food is defined as food dispensed quickly at a restaurant generally offering a limited menu of inexpensive items, which may be mostly not nutritious. It is a growing component of the Korean diet, especially on children and adolescent population. Low nutrient dense beverages such as carbonated drinks are also increasing in the children and adolescent's diet in Korea and concern has been raised that these beverages may replace more nutritious beverage and provide empty calories. According to 2001 Korean national health and nutrition survey, fast food and carbonated soft drinks were most popular among 13 - 19 years old adolescents. Thirty six and 72 percent of adolescents consumed hamburger and carbonated beverage equal to or more than once a week, respectively. In United States, all processed food including soft drinks should disclose full nutrition information by nutrition labeling requirement.. Restaurant foods are not required to provide nutrition information currently, but legislation on mandatory nutrition labeling of fast foods with other restaurant foods has been proposed currently in US. The sales of foods of minimal nutritional value, such as soft drinks, in the nation's schools is regulated by the United States Department of Agriculture. Nutrition information about fast food in US has been provided by fast food companies, non-profit organizations, hospitals and government through internet, booklet and brochure, etc, but the information is available from only a few resources in Korea. This study suggests a nutrition policy on fast food and soft drink use which includes establishing mandatory nutrition labeling and developing nutrition education materials and programs by web-site, booklet and government and school programs in Korea.

제 1형 당뇨병 소아청소년의 영양지식, 식태도, 식행동에 대한 실태조사 (Nutrition Knowledge, Dietary Attitude, and Dietary Behavior among Children and Adolescents with Type 1 Diabetes)

  • Type 1 diabetes is on the rise worldwide. Although nutrition education for patients with diabetes has become a routine practice, specifics and impacts of such educations need to be more researched. This study examined the status of nutrition knowledge, dietary attitude, and dietary behavior among children and adolescents with type 1 diabetes (9-19 year-old) and explored factors influencing dietary behaviors related to diabetes by applying the Theory of Planned Behavior. Face-to-face interviews, using a pre-tested structured questionnaire, were conducted with 32 participants (11 boys and 21 girls) with type 1 diabetes followed by a diabetes clinic in a university hospital. This study found that the level of nutrition knowledge related to diabetes was generally low at 4 points out of a possible 10, however, the dietary attitude related to diabetes was found to be generally good at 26 points out of a possible 30. Participants were motivated to follow medical staff recommendations the most; however, their family was also important. Perceived behavioral control was low especially for eating-out and portion control. The dietary behavior related to blood glucose control showed low at 13 points out of a possible 20. Regression analysis showed that perceived behavioral control (p < 0.001) was significantly related to the dietary behavior related to blood glucose control. This rare study with children and adolescents with type 1 diabetes showed that nutrition education should include a component to improve perceived behavioral control through high-risk situation management.
