This study investigated the frequency, amount and consumption patterns of 50 potentially hazardous foods (PHF) along with consumers' risk perceptions towards PHF in Korea. A quantitative survey was performed from May through August by trained interviewers, surveying 1,000 adults aged over 18 who were randomly selected from six major provinces in Korea. Consumers perceived seafood, including shellfish, mussel, sashimi and sushi, as the top foods with the highest risk, followed by raw sliced beef. The food with the highest frequency intake per month was leafy vegetables, which is used to wrap other foods, followed by blanched vegetables, fried chicken, etc. The group of middle aged individuals with economic stability had the highest frequency intake of sashimi and sushi. Respondents living in small regions consume greater PHF portions at once. Food safety education with regard to the risk of PHF is essential for consumers, with high frequent intake of PHF.

In this study, the detection method was developed using real-time PCR to distinguish 4 species (bovine, porcine, horse, and chicken) of raw meats. The genes for distinction of species about meats targeted at 12S rRNA and 16S rRNA parts in mitochondrial DNA. Probes were designed to have a 5' FAM and a TAMRA at the 3' end. This study is to develop 4 species-specific primer and probes about raw materials and real-time PCR on 10 strains to observe the products of non-specific signal for similar species. As a result, any non-specific signal were not detected among each other. Real-time PCR method was developed for quantitation and identification of intentional and unintentional mixture in ground mixed meat (The difference of $C_T$ value between intentional mixture and 100% meat: $${\leq_-}$$ cycles, The difference of $C_T$ value between unintentional mixture and 100% meat: $${\geq_-}$$ cycles). The detection and differentiation of intentional and unintentional mixture in this study would be applied to food safety management for eradication of adulterated food distribution and protection of consumer's right.
This study was done to provide basic data for the operation of a safer cook-chill system by comparing and evaluating the quality of foods which were prepared using the sous vide cook-chill system and the conventional cook-chill system, according to the preparation methods and storage temperature. Simmered chickens in soy sauce were prepared using the sous vide cook-chill system and the conventional cook-chill system and their quality was evaluated at the time of preparation and storage. Firstly, foods were prepared using the sous vide cook-chill (SVCC) system and the conventional cook-chill (CC) system and the redquired time and temperature during each preparation stage were measured and physicochemical (pH, Aw, and moisture content) and microbial qualities were evaluated. Secondly, in order to evaluate the quality and safety, the moisture content and microbial (standard plate count, coliform count, psychrotrophic bacteria count, and anaerobic bacteria count) qualities were evaluated according to the preparation methods and temperatures after the foods were stored at 3$^{\circ}C$ and 10$^{\circ}C$ for 10 days and reheated.
The purpose of this study was to investigate food services and plate waste of the elementary school children in the urban, rural and suburban areas of Taegu and Kyoungpook province. Statistical data analysis was performed using the SPSS programs for Crosstabs analysis T-test, One-way Anova and Pearson's correlation. The results were as follows: The serving size of rice was greater in suburban area than in rural and urban area by the physical estimation. The amount of soup given was the greatest in rural area. The rate of waste in soup was higher than that of rice. Among side dishes, plate waste rate of braised potato was the highest in rural, then suburban and urban area. There were significant differences (p < .001) among the schools in the three areas. Especially, plate waste rate of cucumber and cabbage salad was the highest in all three areas. Then finally the serving size and plate waste rate of Kimchies were the greatest in rural, then suburban and urban schools. There were significant differences in 'spice pickled cabbage'(p < .001) and 'spice pickled radish'(p < .01) among the three areas. Plate waste amounts of egg soup and pine mushroom soup in urban area were greatest. In rural area, side dishes except egg soup, cabbage salad and Kimchies had a greater amount of plate waste. In suburban areas, there were smaller plate waste amount in rice, but plate waste amounts of pine mushroom soup and beef soup were great. Plate waste rate of rice and 'Kimchies' by children's rating estimation were significantly higher in rural than suburban and urban areas. There were no significant differences in plate waste rate of the given food except braised chicken (p < .001), soup (p < .001) and 'Kimchies' (p < .05) between the physical estimation and the children's rating estimation. Increased satisfaction on food service in most menus resulted decreased plate waste rate. There was a significant degree of satisfaction on the amounts of food served.

The purpose of this study was to evaluate the current dietary habits, health related behaviors, nutrition knowledge and body indices, and to investigate the changes in nutrition knowledge for designing and monitoring nutrition education program among preschool children. The subjects were 1,200 preschool children, aged $4{\sim}6$ years. A measurement of the height and weight was conducted. The general home environment, the dietary habit of children and nutrition knowledge were collected using a questionnaire that included information about family income, parent's education and occupations. Using the PIBW, 14.6% of the preschool children were under weight, 54.4% were normal, and 31.0% were overweight or obese. We regarded to food habit score, the highest score was in the regularity of breakfast, while the lowest score was in consumption of yellow-green vegetables such as spinach and carrots. Result in food behavior showed that 69.1% of preschool children had a unbalanced diet, and their favorite snack was fast food like pizza and hamburger then followed soft drink and fried foods (chicken of potato). After nutrition education, there was somewhat improvement in the nutrition knowledge score of preschool children from $7.7{\pm}1.7$ point to $8.9{\pm}1.5$ point. These results suggest that nutrition education help preschool children change their nutrition knowledge. Therefore, it would be needed that new appropriate nutrition education to improve dietary habits and health status.
This experiment was designated to investigate the effects of dietary supplementation with various concentrations of oriental herbal natural extract, Galla Rhois (GR), on growth performance and meat quality on broiler chickens. A total of 80 two-day-old broiler chicks were randomly designated to four groups, GR 0% diet (control), GR 0.10%, 0.25%, and 0.50%-treated diet, composed 20 chicks and fed a standard diet supplemented with GR and monitored the growth performance every 5 days during 30 days. Body weight gain (BWG) in all treated groups was increased compared to control group during overall period, showing significant (P<0.05) increase in GR 0.25% and 0.50% independent on concentration, though all group represented a similar level of feed intake (FI) and feed conversion rate (FCR). In analysis of the crude proteins and fatty acid composition in leg and breast meats in control, GR 0.10% and GR 0.50%, there was no significant difference for crude proteins and fatty acid composition in leg meats among 3 groups. Whereas the crude proteins and fatty acid composition in breast meat in GR 0.50% showed significantly higher than those of control (P<0.05). Furthermore, the composition of a-linoleic acid (C18:3n-3) and conjugated linoleic acid, which are known as anticancer and antioxidative fatty acids, are higher than those of control. These results demonstrate that Galla Rhois appears to improve growth performance, feed efficiency and meat quality on broiler chickens, focusing on potential use as a dietary supplement.
We focused on the condition of washed, fresh ginseng in the market and analyzed consumer attitudes to the product to improve the consumption of fresh ginseng. A preference for fresh ginseng was high among every age class, and was particularly notable in older individuals. Fresh ginseng was usually eaten as ginseng chicken soup, mostly in summer and winter, and as a valuable health food, rather than because of desirable qualities of taste or smell. A total of 66.5% of those surveyed reported that they had purchased fresh ginseng, mostly from big discount stores. Such stores were preferred as outlets owing to a reputation for quality and shopper convenience (the stores were located near interviewees' homes). More than 70% of purchasers emphasized that they chose to purchase in department stores and traditional markets owing to the reputation for quality of such sources. Most consumers considered quality to be a prime element in purchase decisions. A total of 32.9% of those surveyed had bought washed fresh ginseng to give as a gift to a friend. Of those surveyed, 67.1% had never bought washed fresh ginseng. The following reasons were proposed to explain the preference for purchase of ginseng with attached soil. Most consumers (40.2%) thought the soil was a reflection of quality. Those who preferred washed fresh ginseng considered that the material was hygienic and convenient to store. When questioned about their intention to buy washed fresh ginseng, 55.0% of consumers replied in the affirmative and 17.1% in the negative. When consumers were asked whether they would be willing to pay an additional charge for the washing and packing of fresh ginseng, 58.8% answered in the affirmative.
Livestock manure compost (LC) generally contains high content of phosphorus, therefore can be a substitute for phosphorus fertilizers. In this experiment of the cultivation of lettuce in green house, the possibility of LC as a subsitute for phosphorus fertilizer was investigated and the fertilizer efficiency of nitrogen and potassium in LC as compared with chemical N fertilizer (urea) and K fertilizer (potassium chloride) was examined. In proportion to the increase in the application rate of nitrogen fertilizer, soil pH declined, whereas EC and $NO_3$-N content became higher. The application of LC appeared to increase the soil content of organic matter, available phosphate, exchangeable calcium, magnesium and sodium more than that of chemical fertilizer. Supplementation of the K fertilizer by the lack amount from the application of LC resulted in the same exchangeable potassium content in soil with NPK plot in which N, P and K fertilizers were applied by the amount of soil test recommendation. The relationship between soil $NO_3$-N content and nitrogen application rate from fertilizer and compost showed as y=0.57717a+0.19760b+74.65 ($R^2$=0.6347) in which y is the soil $NO_3$-N content (mg $kg^{-1}$), a is nitrogen application rate from fertilizer and b is nitrogen application rate from compost (kg $ha^{-1}$), respectively. From this equation, the supply ability of $NO_3$-N into soil of LC exhibited about 34% (pig manure compost 37.0, chicken manure compost 34.7, cattle manure compost 23.3) of nitrogen fertilizer (urea).

In this study, we performed a cross-combination test using offspring from two paternal and five maternal parent stock lines to produce a new synthetic breed of Korean native commercial chickens. The survival rate, body weight, feed intake, and feed efficiency were measured for 10 crosses, with 837 Hanhyup-3 chickens used as a control. Most chickens had brown-based feathers, and there was little difference in color phenotypes among combinations. The average survival rate of the combinations was 94.9%, which was significantly different from that of Hanhyup-3 at 75.3% (P<0.01). There was significant differences in body weight among the combinations at all weeks of age (P<0.01). At 10 weeks of age, the FHHY combination was the heaviest with 2,300 g, while the weight of Hanhyup-3 was 1,922 g. In addition, the weight difference between the male and female chickens was 458 g. As a result of regression analysis, the duration needed to reach 1.9 kg was about 61 days for the FHFY, FHHY, and HFFY combinations, and 70 days for Hanhyup-3, exhibiting a 9-day difference. The average feed conversion ratio of the combinations until 10 weeks was 2.42, which was significantly different from that of Hanhyup-3 at 2.97 (P<0.01). In conclusion, FHHY, FHFY, and HFFY were determined to be the best new breed combinations based on production capacity. When these combinations are used as new commercial breeds, they are expected to increase the average weight by 18% and improve feed efficiency by 19%, as compared to the existing Hanhyup-3 breed.

In this study, we investigated the effect of separate-sex and straight-run rearing system on the productivity of Korean native chickens. A total of 1,140 GSP-Hanhyup® Korean native chickens were divided into male, female, and straight-run rearing groups, and the survival rate, body weight, feed intake, and feed conversion ratio were investigated from birth to 12 weeks of age. The average survival rate was 97.9%, and there were no significant differences among the groups. Body weight was significantly different among the groups at all weeks of age (P<0.01). After 4 weeks of age, the male group had the highest weight, followed by the straight-run group, and finally the female group. At 10 weeks, the most uniform body weight was shown in the female group (78%), while the lowest was in straight-run group (44%). Comparing the separate-sex and straight-run groups, male chickens were found to have higher body weights in the separate rearing group than in the straight-run group; however, there was little difference in those of female chickens. Feed intake was the highest in the male group, followed by the straight-run group, and lastly, the female group, while the feed conversion ratio had an opposite trend. Although there is little difference in the production performance of chickens between separate-sex rearing and straight-run rearing system, we concluded that the separate-sex rearing system is much more advantageous than the straight-run rearing system in terms of productivity due to group uniformity.
