Effects of Reheating Conditions and Sodium Chloride/Phosphate Levels on Color Characteristics of Precooked Pork Patties

  • The objective of this study was to determine the effect of reheating methods on the color characteristics of precooked pork patties with various NaCl and phosphate levels. NaCl/phosphate levels for each formulation were as follows; N1 (1% NaCl), N1+P (1% NaCl+0.3% phosphate), N2 (2% NaCl), and N2+P (2% NaCl+0.3% phosphate). The reheating methods used were by electric grill and microwave oven. The surface color of the patties reheated by microwave showed more brown and less-intense red, and the phosphate-treated patties reheated by microwave were more reddish and less brownish. With increased amounts of added NaCl and phosphate, the internal color of patties was more reddish, and the phosphate-treated patties reheated by microwave had more brown than those reheated by electric grill. Among all of the treatments, there were no significant differences in surface color, internal color, and overall appearance. Thus, the color changes in reheated patties were influenced by reheating methods and phosphate.

Investigation of Color Difference in ACQ and CBHDO Treated Wood During Two-year Outdoor Exposure

  • In general, when wood products are used outdoors for a certain period of time the surface color of wood changes due to light, water, heat and so on. This color change can be considered importantly for the product's market value. In this study, the color change of ACQ (Alkaline Copper Quaternary) and CBHDO (CuO $H_3BO_3$ N-cyclohexyldiazenium-anion) treated wood and untreated wood was investigated during 2-year weathering test. From this experimental study, it was found that the colors of the treated wood changed more reddish and yellowish from green. Meanwhile, the untreated wood turned to grey color rapidly. Also, the color of the treated wood in short-term exposure changed closer to the inherent color of the fresh natural wood than that of the untreated woods.

  • The purpose of this study was to investigate the antimicrobial activity, antimutagenic and anticancer effects and dyeing properties of the fermented indigo extract. The methanol extract of fermented indigo showed a strong inhibition effect on Trich. mentagrophytes and antimutagenic activities against aflatoxin B$_1$(AFB$_1$) in the Ames test using Salmonella typhimurium TA 100. We also found in vitro anticancer effects of the methanol extract of fermented indigo and it was evaluated by using Clone M-3 mouse melanoma cells and A431 human epidermoid carcinoma cells and exerted little cytotoxity against 3T3-L1 embryo fibroblast cell. In the relationship between the K/S values of cotton and silk fabrics dyed with fermented indigo and dyeing repeating times, the K/S values became higher as the repeating times were increased. The K/S values were high when the fabrics were dyed at low temperture. The K/S values of cotton fabrics were higher than those of silk fabrics. Changes of surface color of silk fabrics were higher than those of cotton fabrics after water fastness test, laundering, irradiation and treatment of acidic and alkaline perspiration.

  • The biogas holder is composed of an outer membrane and an inner membrane which are subject to outdoor exposure and gas exposure respectively. The influence of weathering conditions on the photo-degradation of a biogas holder was investigated. Tests were performed under three different methods - outdoor exposure tests (Seosan, Arizona), accelerated tests (Xenon-are lamp) with the outer-membrane of biogas. Moreover, the changes in the aging process were monitored using color difference, gloss, the contact angle and an optical microscope. Changes in physical properties, such as decrease reduction in gloss, decrease in the contact angle, increase in color difference were observed in the aging process. The comparison between membrane 3B, 4B and membrane 5B under xenon-arc were discussed. Membrane 5B was very sensitive to ultraviolet (UV) ray. There were many difficulties in the outdoor exposure test due to acid rain, dust, and stain resistance.

A Study on the Changes in the Property of Nylon Fabrics Dyed with Safflower Under Ultraviolet-Light(UV) - Focused on the Changes in Color, Strength, and Surface - (홍화 염색 나일론 직물의 자외선에 의한 특성 변화 - 색상, 강도 및 표면 특성 변화를 중심으로 -)

  • The purpose of this study was to investigate the changes in the property of nylon fabrics dyed with safflower red and yellow colorants under Ultraviolet(UV)-light. For this purpose, nylon fabrics dyed with safflower red and yellow colorants were compared with each other after uv-light exposure in terms of K/S value, color changes(${\Delta}E$), morphology, and strength retention. K/S value rapidly decreased with increasing exposure time, but K/S value of the samples dyed with safflower red colorants decreased less than that of samples dyed with safflower yellow colorants. In color changes, as increasing exposure time, $L^*$ increased, $a^*$ decreased, $b^*$ increased, and so ${\Delta}E$ increased in samples dyed with safflower red colorants. In color changes, as increasing exposure time, $L^*$ increased, $a^*$ and $b^*$ decreased, and thereby ${\Delta}E$ increased in the samples dyed with safflower yellow colorants, indicating fading away by uv-light and changes of hue, value and chroma value. But the color change of samples dyed with safflower yellow colorants was less than that of samples dyed with safflower red colorants. SEM pictures showed a severe degradation by uv exposure, regardless of colorants type. Tensile strength slowly decreased until 14 days, and rapidly decreased until 28 days. Strength retention of the samples dyed with safflower yellow colorants was higher than that of the samples dyed with safflower red colorants.

A study on Hue and Surface Texture with the addition ratio of Pigment and Straw in Clay Plaster (안료와 볏짚의 첨가량에 따른 흙미장의 색상과 표면질감에 관한 연구)

  • In this experiment, we used different addition ratio of the pigment and straw, to improve the decorative effect of the finishing touch while finding the kinds of clay colors taking on many sophisticated images, through the comparison between the various colors and textures of the surface. (1) To test the plaster material, added were the pigment of Red, Yellow, Black, and Green by the percentages of 0.5, 1, 1.5, 2, and 2.5, respectively, followed by the analysis of the color changes of the plaster material using the Photoshop (RGB). The results showed the bigger the addition ratio of the red color is, the higher the numeral values of RGB after it dried. However the brightness after drying didn't showed a big difference depending on the addition ratio. With the addition of the yellow pigment, the color difference between after and before drying was bigger in the order of Blue, Green and Red; the brightness increasingly rose while the saturation changed little. (2) When we scratched the plaster surface with U and V shape carving knives, the U knife didn't make a clean shape digging around the clay plaster material but with smooth textures, while the V knife made a clean cut, which represents its readily use in terms of the decorative function of the clay plaster. (3) In an experiment the surface texture was tested with different lengths and additions ratio of the straw, addition of 2cm straw by 1, 2, and 3% presented the most appropriate surface of the plaster.

  • Denims were treated with neutral cellulase, acid cellulase, stone, and stone-neutral cellulase respectively at different cellulase concentrations varying treatment times in rotary washer. The effect of washing on denim was estimated by the changes in weight, color, back staining, tear strength, flex stiffness, and surface characteristics. Also the comparison of neutral cellulase, acid cellulase, stone, and stone-neutral cellulase washings was studied. Washing removes surface fibers and provides weight loss, color difference, back staining, and a decrease in tear strength and in flex stiffness. Stone-neutral cellulase washing and acid cellulase washing have a larger washing effect than neutral cellulase washing and stone washing.

Stability Assessment on Materials of Cultural Property by Fumigants Containing Ethylene Oxide (Ethylene oxide계 훈증 약제에 의한 문화재 재질의 안정성 연구)

  • This study was conducted focusing on the stability on materials of cultural property when the fumigant containing ethylene oxide was applied among some kinds of fumigant. Four kinds of specimens from paper, textile, metal and pigment were prepared to compare color difference, weight, surface condition before and after treatment and FT-IR analysis was carried out on specimens of paper and textile. In the case of fumigation treatment, it was conducted by two groups : one is made up of specimens with the non-fumigation as control groups, the other is made up of specimens treated with ethylene oxide + $HFC_{134a}$ and ethylene oxide + $CO_2$ as experimental groups. The result of color difference showed that there were color differences on the specimens of Hanji(Korean traditional paper), silver, cotton, ramie and yellow pigment. Especially, it was found out there was color change more than 6.0 on average from the silver specimen. However, in the silver specimen's case, color change in the non-fumigated specimen was relatively higher than those of fumigant-treated specimens, therefore, it is judged that fumigant doesn't have a decisive effect on color change in specimens, but required caution while fumigating. The result of weight measurement, there were totally 0~2% weight changes and the slightest change was found in the metal specimen, the biggest change in the papers. The result of microscopic observation on the surface of specimens showed color changes and especially, the biggest change on the silver specimen was observed. But no change in components was identified from FT-IR analysis of papers and textiles.

Composition of Leaf Surface Lipid in Flue-cured Tobacco and Their Changes during Flue-curing (황색종 잎담배의 엽면지질 성분 조성 및 건조중 변화)

  • The composition of leaf surface lipid in Flue-cured tobacco and their changes during curing was investigated. The flue-cured variety, Nicotiana tabacum cv. NC 82 was cultivated at Eumsung experiment station in 1996. The samples of riced leaves with different stalk Position(Lugs, Cutter, Leaf and Tips) and different curing stage at half yellowing(24hr), yellowing(48 hr) , color axing(72 hr), midrib drying(96 hr) and cured(120 hr) were collected for analysis of leaf surface lipid. $\alpha$ - and $\beta$ - 4, 8, 13-Duvatriene-1, 3-diol($\alpha$, $\beta$-DVT) were major components in leaf surface lipid extracted with methylene chloride and sugar ester was detected slightly DVT content was increased with ascending stalk position, but increasing trend of total hydrocarbon was not observed. While DVT was decreased throughout curing of tobacco leaves, hydrocarbon content did not show significant change during curing process. Twenty-two duvane compounds were detected by capillary GC in duvane fraction isolated from leaf surface lipid and of which 11 compounds were identified by GC-MS. These compounds were decreased with curing in all stalk position.

Natural Dyeing of Fabrics with Corydalis Tuber Extract - Dyeability and Functionality of Wool Fabrics - (현호색 추출액을 이용한 직물의 천연염색 - 모직물의 염색성과 기능성 -)

  • In this study, the dyeing conditions(temperature, time, concentration) are changed from various conditions on wool fabrics by using corydalis tuber extract in order to develop new natural dyes. The purpose of this study is to improve the dyeability, color fastness, and functionality and to derive optimal dyeing conditions by comparing and analyzing the changes of K/S values and surface color by dyeing pH changes, mordant method, and mordant type. As a result of the experiment, the optimum dyeing condition of the wool fabrics is shown dyeing temperature:$80^{\circ}C$, dyeing time:90min, dyeing concentration:100%. The dyeability by pH variants of corydalis tuber extract indicates that K/S values is higher alkaline than acidic. The mordant method of corydalis tuber extract showed pre-mordant has high K/S values. In terms of color fastness, marked improvement has not been shown despite of mordant treatment on wool fabrics. In particular, color change of color fastness to washing, color fastness to light indicates the low fastness. In addition, the functionality such as antibacterial activities and deodorization can be given at dyeing with corydalis tuber extract thus it is expected to be applied to underwear or apparel products for the elderly and infirm and children with weak skin that required high functionality.
