어머니가 인지한 유아의 식품기호도 형성 요인, 식사 섭취 개선 노력과 식품선택 신념에 관한 연구 (Mothers' Perceptions on Preschool Children's Food Preference, Efforts in Improving Food Intake and Their Beliefs in Food Selection)

  • In an attempt to investigate mothers' perceptions of factors affecting preschool children's food preferences, their policy improving food intake and belief in food selection, in-depth interviews with 30 mothers who had preschool children were conducted in Daegu and Busan. The interviews were tape-recorded and the contents of interviews were analysed by researchers. Most mothers and children liked meats. It was found that children usually disliked vegetables such as onions, carrots, and green onions. Mothers perceived that many factors affected their children's food preferences: mothers' and fathers' food preferences, food offering at meals. mothers' food intake during pregnancy, children's food intake during weaning period, heredity peer pressure, and advertisements on television. Mothers made efforts to improve childrens food intakes in many ways: change of cooking method, emphasizing function of nutrients and food for health, conciliation and enforcement, and comparison to other children. The most affecting belief for mothers in food selection was family members' food preference. Health, balance in nutrient intake degree of food processes food additives, chemicals, convenience, diversity, and economy were also important beliefs to select food. Convenience was especially the primary belief in choosing and preparing children's snacks. Mothers offered frozen dumplings and meat, instant noodles, tuna, and ham for snacks for convenience. These results showed that mothers understood many aspects affecting children's food preference tried to improve children s food intakes and had several beliefs in food selection. We concluded that it is necessary to give information for mothers to make healthy snacks in a short time and chance to learn cooking skills.

Relationship between Fat-Free Mass and Muscle Strength, Nutrient Intakes, Exercise Habits in Male Aged

  • This study was performed fir the purpose of finding the relationship between fat-free mass (FFM) which mainly represents muscle mass change, and muscle strength. The correlation between diet and exercise behaviors and FFM in healthy elderly men over age 55 was also investigated. FFM and corresponding hand grip strength declined significantly with increasing age. However the concentration of serum albumin, the indicator of protein nutritional status, showed no change with increases in age. The subjects were categorized into three groups according to FFM textiles. Anthropometry such as height, BMI, circumferences of waist and hips, body fat mass percent and hand grip strength decreased significantly in the lowest FFM group. But albumin level showed no change relative to FFM level. FFM showed a significant relationship to nutrient intake such as energy and fat. However, no association was found with exercise behavior probably because there were no instances of resistance exercise habits among the subjects studied. The variance in FFM could be attributed 86.2% to height and age. The variance of height-adjusted FFM could be attributed only 40.6% to age and fat intake. In conclusion decreases in FFM may cause reductions in muscle strength in elderly men. Increasing energy and fat intake were associated with increased FFM and may protect elderly men from the risk of sarcopenia. FFM had no association with endurance exercise habits.

농촌 장수마을 여자 노인의 식행동 변화단계 모형에 따른 식품 및 영양소 섭취상태 비교 (A Comparison of Food and Nutrient Intake Status of Aged Females in A Rural Long Life Community by the Stage Model of Dietary Behavior Change)

  • For the correct dietary habit and balanced dietary intake of aged people, the nutrition management that fits to the dietary behavior change stage has to be accomplished. In order to do so, in this paper, we chose 175 women that are aged more than 65 years old who are rural long life community residents and surveyed the dietary intake for 2 days including a twice depth interview and the 24 hour recall method. Also, for the sake of our aim, using the transtheoretical model, the dietary behavior change stage group was divided into the contemplation stage group, the preparation stage group, the action stage group and the maintenance stage group. The results are as follows: In the intake amount of protein (p < 0.01), vitamin $B_1$ (p < 0.05) and vitamin $B_6$ (p < 0.05), the intake amount of these nutrients in the action stage group and the maintenance stage group were significantly larger than the intake amount in the contemplation stage group and the preparation stage group. The nutrition evaluation according to the dietary behavior change stage, the ratio of subjects who took insufficient amount of energy, protein, vitamin A, and vitamin C were low as the dietary behavior change stage was upgraded. The subjects of maintenance stage group were most likely to consume vegetables more than once a day, and consume fruits and milk and milk products more than 5 times/week. MAR [13], MAR [10] and MAR [4] of subjects in the action stage group and the maintenance stage group were significantly higher than MAR [13], MAR [10] and MAR [4] of subjects in the contemplation stage group and the preparation stage group (p < 0.001). From the above results, there were differences of nutrient intakes according to the dietary behavior change stage. Therefore, it is considered that the intervention for the dietary behavior motivation induction has to be advanced before accomplishing the individually fitting intervention at the time of nutrient management intervention.

A Study on the Effects of Turmeric Intake after Weight Training on Blood Alcohol Concentration

  • The purpose of this study was to investigate the effects of turmeric intake and weight training on blood alcohol concentration, liver enzyme levels of and their effects on health promotion in adult males. There was no significant difference of taking turmeric powder combined with weight training exercise on blood alcohol levels in adult men who consumed alcohol on a regular basis. There was also no change on the change of body composition. The results were collected from elite athletes that had spent more than 10 years in their respective sports so it is difficult to observe any significant results from 8 weeks, short-term exercises of 1RM 70~80%, 3 times per week. In the next study, it is necessary to divide the subjects into more diverse groups and subject them by varying amounts of turmeric intake, exercise, etc., in order to fully study and understand the effects on blood alcohol level, change, and health promotion. Consequently, this study demonstrated there were no significant differences in the effects of continuous drinking habits of adult men's turmeric powder intake and weight training exercise on changes in GOT, GPT, γ-GTP, and blood alcohol concentrations. Moreover, health improvements themselves didn't affect changes in body composition.

여대생의 비만도에 따른 월경전증후군 증상, 영양섭취 실태 및 심리지수 연구 (A Study on Premenstrual Syndrome (PMS), Nutrient Intake, Psychological Index according to the Obesity Degree of College Women)

  • This study was designed to compare the incidence and severity of premenstrual syndrome (PMS) between normal (N = 85) and overweight or obese (N = 28) college female students and investigated correlation between PMS, nutrient intake, hematological index and psychological index (depression, anxiety, stress). Each subject was asked a Menstrual Discomfort Questionnaire (MDQ) for PMS by 5 Likert scale. The PMS scores of women in the normal weight subjects ranked in order of severity were water retention (2.71), followed by behavioral change (2.58), negative affect (2.46), pain (2.31), autonomic reaction (2.27), decreased concentration (2.16). The symptoms of 'pain' and 'behavioral change' of overweight or obese subject were significantly higher than those of normal subject (p < 0.05). And total cholesterol concentration of overweight or obese subjects was significantly higher than in normal subject (p < 0.05). There was a significant positive correlation (p < 0.05) between the symptoms of 'negative effect' and BMI. And the triglyceride concentration was positively related with 'water retention (p < 0.01)'. The symptoms of 'decreased concentration' were negatively correlated with calcium (p < 0.01) and vitamin B6 intake (p < 0.05). The depression score were positively related with symptoms of 'behavioral change (p < 0.05)', 'negative affect' (p < 0.01), and the anxiety score was positively correlated with 'behavioral change (p < 0.05)' and 'decreased concentration (p < 0.05)'. The stress score was positively correlated with 'decreased concentration (p < 0.01)', 'behavioral change (p < 0.05)' and 'negative affect (p < 0.05)'. This suggests that PMS represents the clinical manifestation of a calcium, vitamin $B_6$ deficiency and psychological disorder. Therefore we concluded that nutrient supplementation, depression and stress management may help to relieve PMS symptoms.

Early effect of Botox-A injection into the masseter muscle of rats: functional and histological evaluation

  • Background: The purpose of this study was to evaluate the change of food intake after different dosages of botulinum toxin A (BTX) injection in the animal model. Additionally, the dimensional and histological change at 14 days after BTX injection was also evaluated. Methods: The comparative study was performed using the BTX injection model in rats (n = 5 for each group). Group 1 was the saline-injected group. Group 2 was the 5-unit BTX-injection group to each masseter muscle. Group 3 was the 10-unit BTX-injection group to each masseter muscle. Food intake rates and body weight were checked daily before and after BTX injection until 10 days. All animals were sacrificed at 14 days after BTX injection, and the specimens underwent hematoxylin and eosin stain and immunohistochemical staining for myosin type II (MYH2). Results: The recovery of food intake in groups 2 and 3 decreased significantly compared with group 1 from day 2 to day 7 and day 9 after injection (p < 0.05). The BTX-treated masseter muscles were significantly smaller than those in group 1 (p = 0.015). The immunohistochemical findings demonstrated that the expression of MYH2 was significantly higher in group 3 compared to groups 1 and 2 (p < 0.001). Conclusions: BTX injection to the masseter muscle in rats demonstrated short food-intake-rate reduction with recovery until 10 days after injection. The thickness of the masseter muscle and MYH2 expression were significantly changed according to the injected dose of BTX.

일부 군인들의 식행동 및 식습관과 군대급식에 대한 만족도와 기호도 조사 (A Survey of Satisfaction and Preference for Military Meal Service and Food Behaviors and Food Habits of Some Military Personnel)

  • The purpose of this study was to investigate satisfaction and preference for current military meal service and food behaviors and food habits of some military personnel in Chunchen and Wonju of the Kwangwon area. The results are as follows. In the anthropometric survey, average height of the subjects was 175.03 $\pm$ 5.30 cm, average weight was 69.15 $\pm$ 7.74 kg. As a result of surveying satisfaction in the current food service, an item high in satisfaction was adequacy of serving hours, whereas an item of low satisfaction was diversity of menu. The item of food service improvement needs of the subjects were in order more variety of menu, nutrition, preference, sanitation, cooking method. As a result of surveying eating behavior of the subjects, most items were high medium response. They preferred soju and relish and also they liked the bokkum cooking method. As a result of surveying food habits of the subjects, items of good habits were regularity of meals, marginal meals, diversity of food intake, dairy and dairy products, avoiding too exciting meals and natural food diet; whereas, items of bad habits were fast food intake, alcohol, smoking, carbonated and caffeine beverages, skipping breakfast. snacks, fatty food intake, yellow or green vegetable intake and fruit and seaweed intake. Following is the result of a survey on the preference of meals by cooking method serving the current military meal service. They liked one-dish meals such as Bokkeumbap, Bibimbap, Tteokguk, whereas, they disliked curryrice, Jajangbap. In case of soup, they liked soup made from meat better than vegetable soup or soup made with fish. Also they liked pot stem better than soup. Generally they liked meals containing meat in most cooking methods. These results suggest that continuous and practical nutrition education to change food habits in military life are necessary to Prevent chronic disease with increasing age.

Early adulthood: an overlooked age group in national sodium reduction initiatives in South Korea

  • BACKGROUND/OBJECTIVES: South Korean's sodium consumption level is more than twice the upper limit level suggested by the WHO. Steep increases in the prevalence of hypertension and cardiovascular disease in Korea necessitate more effective sodium reduction programs. This study was conducted in order to compare sodium intake-related eating behaviors and key psychosocial factors according to age group and gender. SUBJECTS/METHODS: Using an online survey, a total of 1,564 adults (20-59 years old) considered to be geographically representative of South Korea were recruited and surveyed. The major outcomes were perceived behaviors, knowledge, intentions, and self-efficacy related to sodium intake. RESULTS: The results show that perceived behavior and level of self-efficacy related to low sodium consumption differed by age and gender. Female participants showed better behavior and intention towards low sodium intake than male counterparts. Young participants in their 20s showed the lowest intention to change their current sodium intake as well as lowest self-efficacy measures. CONCLUSIONS: Future sodium reduction interventions should be developed with tailored messages targeting different age and gender groups. Specifically, interventions can be planned and implemented at the college level or for workers in their early career to increase their intention and self-efficacy as a means of preventing future health complications associated with high sodium intake.

영양교육프로그램이 초등학교 학생의 영양지식 및 식품섭취의 다양성에 미치는 효과 (Effect of Nutrition Education Program on Nutrition Knowledge, Dietary Diversity of Elementary School Children)

  • The purpose of this study was to promote health for elementary school children. It was conducted with a 7 week program focused on the teaching of the food tower and evaluation of its educational effects. Subjects consisted of 75 boys and girls (control group : 37, treatment group : 38) in the 4th grade of elementary school. The results showed as follows. The proportion of boys was a little higher than that of girls. Of their mothers age, the thirties and forties were 66.7% and 33.3%, respectively. 61.3% of mothers had jobs and 86.7% of mothers prepared meals. The average of the anthropometric data of the 2 groups show were all in the normal range. The degree of nutritional knowledge in treatment group after education was significantly increased in all concepts, however, the degree of the control group appeared to show significant increase in only two concepts, such as "snack" and "one-sided diet". The diversity of dietary intake was investigated to evaluate the educational effect using food picture cards. The treatment group showed significant increase in all food groups except "cooked rice", "potatoes" and "fruits", but the control group showed no significant change. The level of nutrition knowledge has a significant correlation with the dversity of the food intake in the treatment group. The preferred lesson for children were "games", "doll playing" and "role playing". The impressive lesson contents were "diverse food intake without one-sided diet", "eating breakfast everyday", "choosing good snacks for health" and "eating less procesed food". These findings indicate that a well-designed program for nutrition education can help to change food habits, and that childrens education helps them to grow and to live as healthy adults. The performance of an educational program for preventive nutrition is more beneficial for children than for the adults based on the cost reduction and effect of this education. nutrition is more beneficial for children than for the adults based on the cost reduction and effect of this education.

대구지역 주민들의 식행동과 일부 건강상태 지표와의 관련성(I) - 주부들의 식행동과 비만정도를 중심으로 - (Dietary Behavior in Relation to Health Indicators of Residents in Daegu(I) - Focused on Dietary Behaviors and Obesity of Housewives -)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.
