Analysis of Information Structure and Contents on the Web Sites for Catering Services (출장요리서비스 웹 사이트의 구성 및 내용 분석)

  • This study examined the structure and contents of the information provided by the web sites, in terms of clarity, business goal, authority, sustainment of operation and responsibility of customer care, as well as menus. The findings from the analysis of 217 web sites selected from 5 major portal sites, are 1) most of catering business over internet are located around Seoul area, 2) almost 80% of the selected sites are administered by professional agents or firms while the remnants by individuals, 3) except menu and price, any additional information is hardly shown, 4) about three quarter of the sites opened after 2001, that is coherent with the trend of the growth of internet users and eating-out, 5) it is strongly required to create healthful cyber space for the customers, 6) a small number of the sites(12.4%) try to manage access from customers, 7) many sites(73.7%) open the channels for feedback from the customers 8) among the types of catering services offered by the sites, home party is the most popular and the kinds of cuisine, Korean, Japanese, and Chinese, are divided into almost same proportion of the sites, 9) the average number of dishes is 33.5, 10) they offer 7 to 8 different dishes of grain, 4 to 6 of meat, 4 to 10 of fishes, 5 to 13 of vegetables, 1 of fruits, and 1 to 3 of dairy products, 11) The majority of price level is ₩15,001 - ₩20,000.

Evaluation of Working Postures of Catering Workers in a Restaurant (식당 조리직 작업자의 작업자세 평가)

  • The goal of this study was to determine whether food industry workers are exposed to musculoskeletal loads due to the work time, frequency, awkward postures and inappropriate workspace design. Three catering workers were evaluated based on job analysis and posture analysis. The results showed that the four most time-consuming tasks were arranging(17%), cooking(16%), handling before cooking(15%) and cutting(15%), and the four most frequent tasks were arranging(21%), cooking(18%), handling after cooking(16%) and handling before cooking(13%). The most common posture was a standing posture(73%) with neutral back(73%), and bent head(50%), left lower arm(71%), right lower arm(78%) and right hand(60%). The comparative analysis of subtasks for the risk levels of musculoskeletal disorders was conducted using the work time, frequency and cumulative time of the postures. The 'displaying' and 'handling after cooking' showed higher risk levels than other subtasks. In addition, the height and length of the tables were evaluated to be inadequate for the workers. It can be concluded that the working environments for catering workers of restaurants should be improved due to the high cumulative time of awkward postures of upper extremities.

  • This study aimed to segment Chinese fisheries consumer market by means of cluster analysis based on Shanghai region consumers. The survey is conducted to 350 shanghai people on March 17-21 in 2014 and investigate demographic characteristics and consumer's behaviors unique to each segmented market by preference, labelling, quality, price, safety. The result of cluster analysis identified four market segments such as Catering type market, Worth pursuing type market, Substance pursuing type market, Trend pursuing type market. Catering type market is a passive fisheries consumption market and is not high attractive for Korea fisheries export market. Value pursuing type market consider importance to labelling, origin, brand and require high-quality and differentiation strategies. This market's main target species are high price fisheries such as tuna, salmon, crocker. Substance pursuing type market consider fisheries's safety and quality and purchases more popular fisheries such as crocker, hairtail, promfret, mackerel, squid. Trend pursuing type market's consumers prefer to purchase brands and trendy seafood rather than taste.

An Investigation into the Effects of the Work Environment / Occupation on Hiv Related Stigma: A Case of Service Staff in Grahamstown: Eastern Cape, South Africa

  • Purpose - This paper investigates whether one's occupation influences one's attitude toward people with HIV/AIDS and suggests ways to counter HIV-related stigma in different work settings. Two samples comprising workers in different environments and occupations with contrasting personalities were chosen. Thus, security guards (authoritarian types) and catering workers (social types) were included. Research design, data, and methodology - The sample comprised246 service staff from the Rhodes University Catering Division and the Hi-Tec Security company, both in Grahamstown, South Africa, a small Eastern Cape province town. All employees at these organizations during the survey were eligible to participate. Results -The security sample displays significantly higher personal stigma scores than the catering sample, according to the Visser personal stigma scale (mean scores of 4.01 and 1.37, respectively; t=10.30, df=244, p=0.00). Similar results were found using Visser subscales. Conclusions - This study shows that occupation is a strong predictor of HIV-related stigma in the workplace, suggesting that workplace settings, by attracting particular personalities and influencing workers, may shape attitudes towards those who are HIV positive.

Evaluation of Microbiological Hazards of Cooking Utensils and Environment of Mass Catering Establishments (급식장의 조리기구.용기 및 작업환경에 대한 미생물학적 위해분석)

  • Serious consequences can arise from lack of hygiene in mass catering. Microbiological testing is of value in determining hazards for developing a HACCP plan, and in demonstrating to food handlers the reality of the microbial risk. This studies was performed to describe the overall hygiene of cooking utensils and equipments, employees, and environment in mass catering establishments. Generally, hygienic conditions of cutting board and sanitized dish cloth were better than those of other cooking utensils such as knife, sieve, and peeler. It was found that the cross-contamination of knife might be caused by the use of contaminated sanitizing solution. It was observed that there was considerable variation (10$^1$~10$^{5}$ CFU) of the number of general bacteria for employee's hands. The number of general bacteria were influenced from establishment, employee, and the period of analysis. The number of Coliform group for employee's hands was in the range of 10$^2$~10$^4$CFU only at the first analysis. Total aerial bacteria in working area of mass catering establishments was below 7 CFU/Plate and aerial Staphylococcus sp. was not detected at all except one spot.

Study to Improve School Catering Service Quality Through Cooking Hardware Upgrade (학교급식의 효율적 개선방안 - 조리설비를 중심으로 -)

  • The school catering service has gained national attentions and has been expanding unto high schools after offering meals at elementary schools over years. This study is to identify problems and solutions in kitchen hardware areas to provide nutritiously balanced meals to schoolchildren through establishing standard menu planning. The survey analysis shows that 59.2% of dishes except for rice, Kimchi and soup are prepared by oil deep-fired or oil pan broiled. This indicates that school meals are so limited to serve baked or steamed dishes. Main reasons on the limited menu selection is that schools don't have equipment to prepare baking and steaming dishes mainly due to budget issues. All the dietitians who answered the surveys have been requesting to purchase Convotherm Ovens. Improvement solutions to the problems are: Publish the Revised Standard Equipment Layout that may allow to serve baked and steamed dishes. Establish Budget Support Program from the Government.

  • 현대인의 식생활에서 편리성, 기능성, 다양성을 부여할 수 있는 신제품 개발로 기능성 소재를 첨가한 새우젓 분말 seasoning/mix를 제조하였다. 일반성분 중 조단백과 조지방 함량은 새우젓분말이 높게 나타났고, 탄수화물은 SFM-3이 높은 것으로 나타났다. 무기질 중 칼슘, 철분, 인의 함량은 다른 첨가군에 비해 새우젓분말이 높은 것으로 분석되었으며, 나트륨 함량은 새우젓 분말이 낮은 것으로 분석되었다. 색도에 있어서 L값은 표고버섯 첨가군이 어두워지는 경향을 보였으며, a값은 뽕잎분말 첨가군이 높게 나타났다. b값은 백년초가루 첨가군이 높은 값으로 나타났으며 대장균은 음성으로 검출되지 않았다.

The Effect of Seniors' Transformational Leadership on the Empowerment and Commitment of Employees in the Hospitality Industry (조리직에서 상사의 변혁적 리더십이 종사자의 임파워먼트와 조직 몰입에 미치는 영향)

  • The aim of this study was to examine the influence of the transformational leadership of seniors on the empowerment and commitment of kitchen employees. To achieve this goal, 149 copies of valid questionnaire collected from kitchen employees in hotels, restaurants and catering service companies were used to analyse the data. In findings, catering service field was found to have significant influence on the relationship between transformational leadership and empowerment. Family restaurants and quick service restaurants, on the other hand, showed strong influence on the relationship between empowerment and commitment.

Quality Characteristics of Sulgidduk Added with Black Ginseng Extracts (흑삼 추출물을 첨가한 설기떡의 품질특성)

  • Sulgidduk samples containing control, 0.5, 1, 1.5 and 2% black ginseng extracts and a control were examined for moisture content, color, textural characteristics, and sensory qualities to determine the optimal ratio of black ginseng extracts in the formulation. The moisture content of sulgidduk added with black ginseng extracts was 37~40%. Additionally, the lightness decreased and the redness and the yellowness increased as the black ginseng extracts content increased. Hardness, springiness, gumminess and chewiness increase with the addition of black ginseng extracts. however, adhesiveness did not differ significantly among the groups. Sulgidduk containing 1% black ginseng extracts received the highest scores for color, flavor, texture and overall preference. Based on the above results of sensory and texture analyses, sulgidduk containing 1% black ginseng extracts had the highest quality for commercialization.
