Objective: This experiment was conducted to investigate the effects of dietary crude protein (CP) level and exogenous protease supplementation on growth performance, serum metabolites, carcass traits, small intestinal morphology and endogenous protease activity in broiler chickens reared under a tropical climate. Methods: A total of 480 day-old male broiler chicks were randomly assigned to eight dietary treatments in a $4{\times}2$ factorial arrangement. The main effects were CP level (21.0%, 19.7%, 18.5%, or 17.2% from 1 to 21 days and 19.0%, 17.9%, 16.7%, or 15.6% from 22 to 35 days) and protease enzyme supplementation (0 ppm or 500 ppm). All experimental diets were fortified with synthetic feed-grade lysine, methionine, threonine and tryptophan to provide the minimum amino acid recommended levels for Cobb 500. Results: Reducing dietary CP linearly reduced (p<0.05) growth performance, serum albumin, total protein, and carcass traits and increased (p<0.05) serum triglycerides and abdominal fat. There was no consistent effect of reducing dietary CP on morphological parameters of the intestine and on the pancreatic and intestinal endogenous protease activity (p>0.05). Protease supplementation improved (p<0.05) feed conversion ratio, body weight gain, carcass yield and intestinal absorptive surface area. Conclusion: Protease supplementation, as measured by growth performance, intestinal morphology and carcass yield, may alleviate the detrimental effects of low protein diets in broiler chickens.
This study was conducted to determine the rumen fermentation dynamics of lupin flakes and elucidate the effects of lupin flake supplementation on the growth performance, blood metabolites, and carcass characteristics of Hanwoo steers. In vitro and in situ trials of lupin grains and lupin flakes were conducted using three Hanwoo cows with rumen fistulas. The feeding trial included 40 early-fattening Hanwoo steers randomly divided into four groups: control, T1, T2, and T3. Their formula feed contained 0%, 3%, 6%, and 9% lupin flakes, respectively. In vitro rumen pH and ammonia concentrations were lower in the lupin flake group than in the lupin grain group after 6 and 24 h of incubation, respectively (p < 0.05). Concentrations of propionate, butyrate, and total volatile fatty acids were higher in the lupin flake group than in the lupin grain group after 12 h of incubation (p < 0.05), as was the crude protein disappearance rate at 9 and 12 h of rumen fermentation (p < 0.05). Supplementation with lupin flakes did not affect the average daily gain. Compared to that in the control group, dry matter intake was lower in the lupin flake-supplemented groups (p < 0.05); the feed conversion ratio was lower in T2 and T3 (p < 0.05); and plasma total protein concentration in 29-month-old steers was lower in T1 and T3 (p < 0.05). Plasma triglyceride concentration was lower in the lupin flake-supplemented groups than in the control group (p < 0.05). The incidence rate of yield grade A was higher in T1 and T2 than in the control group; the incidence rate of meat quality 1+ grade or higher was highest in T2. The carcass auction price was higher in T2 than in the other groups. Overall, compared to whole lupin grains, lupin flakes seem to more substantially affect rumen ammonia concentrations and crude protein disappearance rate. Additionally, we suggest that supplementation with 6% lupin flake formula feed exerts positive effects on the feed conversion ratio, yield grade, and quality grade of Hanwoo steers.

An experiment was conducted with broiler (Cobb 400) male chicks (n = 480) to determine the effect of betaine (Bet) supplementation (0 and 800 mg/kg) to diets containing five concentrations (15, 18, 20, 22 and 24 g/kg crude protein, CP) of methionine (Met) in a $2{\times}5$ factorial study for performance, carcass traits, immune responses, and serum parameters. Each diet was fed ad libitum from 1 to 42 d of age to 8 replicates of 6 chicks. Birds were housed in battery brooders placed in an open-sided poultry shed. Body weight gain, feed intake, feed conversion efficiency and slaughter variables were recorded at 21 and 42 d of age. Serum biochemical profile, antibody production against Newcastle disease (ND) and lymphocyte proliferation ratio (LPR) were analysed at 42 d of age. Supplementing Bet to diets containing sub-optimal concentrations of Met (15 g/kg) improved weight gain and breast yield at 21 d of age (p<0.01), and feed conversion efficiency at 42 d of age (p<0.05). Feed efficiency at 21 d of age, body weight gain at 42 d of age, slaughter variables except breast yield at 21 d of age and ND antibody titres were not affected (p>0.05) by the interaction. LPR increased (p<0.05) with Bet supplementation at 20 g Met/kg CP equal to those broilers fed 24 g Met without Bet. Bet supplementation enhanced the concentrations of protein, globulin and cholesterol in serum of broilers fed sub-optimal concentrations of Met. Results suggested that Bet supplementation (800 mg/kg diet) enhanced growth (21 d), feed conversion efficiency (42 d), breast yield and lymphocyte proliferation in broilers fed a diet containing 15 g Met/kg CP.
An experiment was conducted to evaluate feeding values of food and other organic wastes, and to determine their dietary effects on performance and carcass yield in ducks. A total of 156 meat type ducklings at the age of 25 days were housed in 12 pens and assigned to 4 treatments, in which the birds were fed for 21 days. One of 4 diets, commercial duck feed, raw food waste (RFW), fermented food waste(FFW) and mixture of 50% RFW and 50% FFW (R+FFW). Feed consumption was significantly higher (p<0.05) in the RFW groups. Body weight gain showed no significant differences between the control and other treatments. The feed consumption ratio was significantly higher in the RFW groups (p<0.05) than that of the other groups. Carcass yield was significantly higher in the R+FFW groups (p<0.05) than the other groups. The weight of liver per live body weight showed significant differences among the treatment groups (p<0.05). The length of intestine was significantly different from those of the treated groups(p<0.05).
The objective of this study was to determine the effect of genotype (slower-growing vs. fast-growing) and production system (access to outdoors vs. indoor) on the growth performance, carcass yield and meat quality (chemical composition, physicochemical and sensory properties) of chickens. The experiment was performed on 1,040 day-old hybrid male chickens of two genotypes. Slower-growing chickens (Hubbard JA957, certified) and fast-growing chickens (Hubbard F15) were fed identical diets until 65 days of age. Both genotypes (each represented by 520 birds) were divided into two subgroups and were raised in pens on litter with outdoor access or in indoor confinement without outdoor access (four replications per subgroup, each of 65 birds). Until day 21, the birds stayed in the indoor facility, in deep-litter pens. The birds could forage on pasture 12 h daily, commencing at three weeks of age. Stocking density was 0.13 $m^2$ floor space per bird in pens on litter, and 0.8 $m^2$ per bird in grassy yards. Compared with fast-growing, slower-growing chickens were significantly lighter (by 17%), had a lower breast and thigh muscle yield and a higher abdominal fat content, but they were characterized by higher survival rates at 65 days, a higher protein content and a lower fat content of breast meat. Outdoor access had no negative effects on the growth performance, muscle yield, the fatty acid profile and oxidative status of meat lipids. The meat of free-range chickens was darker in color, it had a higher protein content and a better water-holding capacity, but it was less juicy than the meat of birds raised indoors.

An experiment was conducted to investigate the effect of phytase, organic acids and their interaction on body weight gain, feed consumption, feed conversion ratio, carcass yield and tibia ash. A total of 680 three-day old Japanese quail chicks (Coturnix coturnix japonica) were assigned to 20 battery brooders, 34 chicks in each. The experimental period lasted 35 days. The treatment groups employed were: 1) a positive control which included 3.5 g available phosphorus (AP)/kg diet and 10 g Ca/kg diet; 2) a negative control which included 2 g AP/kg diet and 8 g Ca/kg diet, 3) negative control diet supplemented with either 300 FTU phytase/kg diet (phytase) or 4) 2.5 g organic acid (lactic acid+formic acid)/kg diet (organic acid); or 5) 300 FTU phytase/kg diet+2.5 g organic acid/kg diet (phytase+organic acid). All birds were fed with the positive control diet for a week and then transferred to the dietary treatments. At the end of the study, there were no differences (p>0.005) among the groups in body weight, weight gain, feed consumption, feed conversion ratio and carcass yield. Tibia ash, however, was reduced (p<0.001) for quails fed the negative control diet containing a low-level of AP compared to the positive control diet containing adequate AP. The addition of phytase, organic acid or phytase+organic acid to the diets containing the low-level of AP improved (p<0.001) tibia ash. On the other hand, an extra synergistic effect of phytase and organic acid on tibia ash was not determined. This study demonstrated that it may be possible to reduce supplemental level of inorganic P with phytase and/or organic acid supplementation for quail diets without adverse effect on performance and tibia ash.

Objective: This study was to evaluate the sunflower cake and enzymatic complex fed to broilers from 22 to 42 d of age. Methods: In a completely randomized design, a total of 850 birds were allotted in a $2{\times}5$ factorial scheme (with and without enzymatic complex) and five inclusion levels (0%, 5%, 10%, 15%, 20%) of sunflower cake. There were 5 replications and 17 birds in each experimental unit. Data from performance, carcass yield and intestinal morphology were evaluated. Results: Feed intake, weight gain, final weight and feed:gain ratio linearly worsened as sunflower cake increased. For weight gain, final weight and feed:gain ratio, the birds whose diets contained levels of 15% and 20% of sunflower cake showed worse values (p<0.05) than the birds fed the control diet. When fed the enzymatic complex, birds improved (p<0.05) crypt depth and villus:crypt ratio in the jejunum. As inclusion levels of sunflower cake increased, villus depth and villus:crypt ratio in duodenum, jejunum and ileum linearly reduced and the crypt depth linearly increased. Carcass yield linearly reduced as sunflower cake increased. Conclusion: Based on performance, sunflower cake can be used up to 10% in broilers feeding from 21 to 42 days of age.

The effect of sodium and sodium salts on carcass and body organ characteristics of broilers under a four phase feeding program were investigated. A basal diet (0.08% dNa with NaCl) was formulated and one of two sources of dNa ($NaHCO_3$ and $Na_2SO_4$) were supplemented to obtain four different percentages of dNa (0.17, 0.26, 0.35, and 0.44%) for each treatment. There was a linear decrease in dressing percentage (DP) with source ${\times}$ level interaction ($p{\leq}0.001$), while there was a linear increase in breast yield and thigh yield with increasing dNa supplementation ($p{\leq}0.001$). Chicks fed 0.35% $NaHCO_3$ and 0.44% dNa $Na_2SO_4$ supplemental salts had lower abdominal fat ($p{\leq}0.04$). Chicks that received increasing levels of dNa (from 0.17 to 0.44%) showed increasing gizzard weight ($p{\leq}0.02$) and decreasing spleen weight ($p{\leq}0.02$). When both salts were supplemented at 0.26% dNa, the chicks showed their lowest bursa weight ($p{\leq}0.001$). Consequently, chicks at higher dNa showed an increase in breast and thigh meat yield, and increasing capacity of their digestive organ. The higher levels of dNa should be tested with other cations and anions to fully understand acid base homoeostasis.
This study analyzed optimal slaughter ages and carcass traits to investigate factors that affect farm incomes. Carcass characteristics and economical analysis of 81 Hanwoo steers previously tested (Expt. 1) and 5,826 steers from Gangwon-Do, area A (Expt. 2) were used. In Expt. 1, the strongest relationship was between the slaughter age and the carcass weight based on the $R^2$ value, and the weakest relationship was between the slaughter age and the marbling score based on the $R^2$. The slaughter age, marbling score, and rib-eye area of steers slaughtered from 26 to 31 months of age had a positive effect on income, but back fat thickness had a negative effect. In the economical analysis of Expt. 1, the optimal time for slaughter was 31 months of age. In Expt. 2, composed of steers slaughtered from 26 to 35 months of age in farms site of area A, the income was highest from steers slaughtered at 28 months of age, after which the income decreased. From the results of Expt. 1 and 2, it is evident that the optimal slaughter age of Hanwoo steers is affected by the genetic differences of calves, the feeding program and management, fattening skills, or carcass price. In order to improve the income of individual farms, the slaughter age must be precisely decided by understanding the exact relationship between the feeding cost of Hanwoo steers and slaughter results, such as carcass weight, yield grade and quality grade.
Meat production and quality traits in beef cattle are largely affected by genetic factors. Acetyl-Coenzyme A carboxylase-${\alpha}$ (ACACA) plays a key role in the regulation and metabolism of fatty acid biosynthesis in mammalian animals. The gene encoding ACACA enzyme was chosen as a candidate gene for carcass and meat traits. In this study, we investigated effects of single nucleotide polymorphisms (SNPs) in the ACACA gene on beef carcass and meat traits in Hanwoo (Korean cattle) populations. We have sequenced a fragment of intron I region of the Hanwoo ACACA gene and identified two SNPs. Genotyping of the two SNP markers (g.2344T>C and g.2447C>A) was carried out using PCR-SSCP analysis in 309 Hanwoo steers to evaluate their association with carcass and meat production traits. The g.2344C SNP marker showed a significant increasing effect on LW (p = 0.009) and CW (p = 0.017). Animals with the CC genotype had higher CW and LW compared with TT and TC genotypes (p<0.05). The g.2447A SNP marker was associated with higher MC (p = 0.019). Animals with the AA genotype had higher MC than animals with CC and CA genotypes (p<0.05). Although the degree of linkage disequilibrium (LD) was not strong between g.2344T>C and g.2447C>A in the LD analysis, four major haplotype classes were formed with two SNP information within the ACACA gene. We constructed haplotypes using the HaploView software package program and analyzed association between haplotypes and carcass traits. The haplotype of ACACA gene significantly affected the LW (p = 0.027), CW (p = 0.041) and MC (p = 0.036). The effect of h1 haplotype on LW and CW was larger than that of h3 haplotype. Animals with the h1 haplotype also had greater MC than did animals with h2 haplotype. Consequently, the ACACA gene could be useful as a DNA marker for meat production traits such as carcass yield and meat contents in Hanwoo.
