Rabbits (48) of Soviet chinchilla (24) and White giant (24) were fed from 6 weeks to 12 weeks of age intensively on either of four isonitrogenous - isocaloric diets containing 0 ($D_1$), 5($D_2$), 10($D_3$) and 20($D_4$) percent raw neem seed kernel cake (NSKC), respectively as per NRC (1977) requirements in a Randomized block design and slaughtered at the end to find out differences in their carcass traits due to NSKC feeding. Dietary treatment had no significant effect on weight of edibles and inedibles and their percentages and dressing percentage in terms of carcass, carcass with pluck and carcass with pluck and head. Similarly, the meat-bone ratio of various primal cuts and overall carcass, yield of edibles per unit of inedibles and eye muscle area were not influenced due to the dietary variations. Chemical composition of fresh meat, and organoleptic evaluation of cooked meat with and without salt did not vary significantly due to incorporation of NSKC in the diets. The rabbits fed 20% NSKC ($D_4$) though consumed more (p<0.05) DM and DE per kg meat production, the intake of crude protein and total digestible nutrients was similar with other dietary treatments. Feed cost per unit meat production was, however, lower on 5 and 10% NSKC containing diets by 7.75 and 12.56%, respectively, as compared to deoiled ground nut cake containing control diet. It appears that NSKC could be used as a wholesome vegetable protein supplement upto 10% in diet of rabbits without any adverse effect on commercial carcass traits.
Objective: This study aimed to estimate the genetic parameters and genetic correlations for related feed efficiency, growth, and carcass traits in Hanwoo cattle. Methods: Phenotypic data from 15,279 animals born between 1989 and 2015 were considered. The related feed efficiency traits considered were Kleiber ratio (KR) and relative growth rate (RGR). Carcass traits analyzed were backfat thickness (BT), carcass weight, eye muscle area, and marbling score. Growth traits were assessed by the average daily gain (ADG), metabolic body weight (MBW) at mid-test age from 6 to 24 months, and yearling weight (YW). Variance and covariance components were estimated using restricted maximum likelihood using nine multi-trait animal models. Results: The heritability estimates for related feed efficiency (0.28±0.04 for KR and RGR) and growth traits (0.26±0.02 to 0.33±0.04) were moderate, but the carcass traits tended to be higher (0.38±0.04 to 0.61±0.06). The related feed efficiency traits were positively genetically correlated with all the carcass traits (0.37±0.09 to 0.47±0.07 for KR, and 0.14±0.09 to 0.37±0.09 for RGR), except for BT, which showed null to weak correlation. Conversely, the genetic correlations of RGR with MBW (-0.36±0.08) and YW (-0.30±0.08) were negative, and those of KR with MBW and YW were close to zero, whereas the genetic correlations of ADG with RGR (0.40±0.08) and KR (0.70±0.05) were positive and relatively moderate to high. The genetic (0.92±0.02) correlations between KR and RGR were very high. Conclusion: Sufficient genetic variability and heritability were observed for traits of interest. Moreover, the inclusion of KR and/or RGR in Hanwoo cattle breeding programs could improve the feed efficiency without producing any unfavorable effects on the carcass traits.
Two separate trials were conducted to determine effects of dietary level of whole flaxseed (WFS; 0, 10 and 15%) on feed intake, weight gain, and carcass yield and quality of Korean Hanwoo cattle. The daily gains of bulls (Trial 1) were not different among treatment groups, but those of cows (Trial 2) fed WFS 15% were higher (p<0.01) than others. Feed intake of both bulls and cows tended to decrease as dietary level of WFS increased. However, feed conversion ratio (feed/gain) of bulls tended to be improved by dietary inclusion of WFS and was significantly improved (p<0.01) in cows by increasing level of WFS. Neither carcass weight nor dressing percentage were affected by WFS level. Back fat thickness of bulls was decreased (p<0.01) by dietary inclusion of WFS and the same trend was observed in cows without statistical significance. Loin-eye area of bulls was not different among treatment groups but was significantly higher (p<0.01) in cows fed WFS. Carcass yield and quality were not improved by WFS addition. The results indicate that WFS is an acceptable fat source in diets of finishing beef cattle to increase energy density without any adverse effects.
The present investigation was carried out to study the affect of feeding urea ammoniated neem kernel meal on carcass characteristics and organoleptic properties of the meat in goats. Eight local weaned kids of 3-4 months age with mean body weight of $7.85{\pm}0.42kg$ were assigned to two groups of four each in a completely randomised design and were offered diets containing isonitrogenous concentrate mixtures containing either peanut meal or urea ammoniated neem (Azadirachta indica) seed kernel meal (UANSKM) along with ad libitium oat hay or green sorghum as roughage for 13 fortnights. The animals were slaughtered at the end of the experimental period and the carcass characteristics and organoleptic evaluation of the meat was carried out. The carcass characteristics in terms of dressing percentage, meat bone ratio, percent edible and inedible did not differ between the treatments. Similarly the organoleptic characteristics and cooking loss were comparable between the treatments implying that UANSKM can be substituted for peanut meal in goat diets to alleviate the shortage and high cost of peanut meal without affecting meat quality.
Additive and dominance genetic variances were estimated for purebred Landrace selected with line breeding from 1989 to 1995 at Miyazaki Livestock Experiment Station, Kawaminami Branch. Ten body measurements, two reproductive traits and fifteen carcass traits were analyzed with single-trait mixed model analysis. The estimates of narrow-sense heritabilities by additive model were in the range of 0.07 to 0.46 for body measurements, 0.05 to 0.14 for reproductive traits, and 0.05 to 0.68 for carcass traits. The additive model tended to slightly overestimate the narrow-sense heritabilities as compared to the additive and dominance model. The proportion of the dominance variance to total genetic variance ranged from 0.11 to 0.91 for body measurements, 0.00 to 0.65 for reproductive traits, and 0.00 to 0.86 for carcass traits. Large differences among traits were found in the ratio of dominance to total genetic variance. These results suggested that dominance effect would affect the expression of all ten body measurements, one reproductive trait, and nine carcass traits. It is justified to consider the dominance effects in genetic evaluation of the selected lines for those traits.
Arbor Acres broiler chickens (N=288) with an average initial weight of 59.4 g were fed diets varying in protein and lysine (80, 100, 120% of NRC; 100, 120% of NRC, 1984) in order to investigate the effects of supplemental chromium picolinate on growth performance, nutrient utilizability, carcass composition, serum traits and in vitro protein synthesis. Six replicates of eight chicks were grouped into one treatment Six chicks were sacrificed from each treatment for carcass analysis, and six additional chicks were chosen and dissected for in vitro culture of liver tissue. Body weight gain, feed intake, feed conversion, mortality, carcass composition and serum glucose, HDL/cholesterol ratio, serum triglyceride and serum nonesterified fatty acid appeared to be affected by either the level of dietary crude protein or lysine when supplemented with 200 ppb chromium picolinate (p < 0.05). Retained and secreted proteins in liver acinar cell cultured in vitro were not affected by dietary lysine level but affected by dietary protein level when added with 200 ppb chromium picolinate.
To develop processed meat products of pheasant, cut-up parts of pheasant carcass was analyzed, and eight different pheasant meat products were prepared and evaluated for sensory qualities. The average live weight of pheasant was 1,089.2g, and the ratio of carcass to live weight was 75.6%. The cut-up part ratios of breast, leg, neck, back and wings to carcass weight were 33.4%, 22.5%, 5.0%, 4% and 9.5%, respectively. The chemical compositions of breast and leg meat were shown to be moisture of 73.72% and 75.58%, protein of 25.31% and 22.69%, fat of 0.28% and 0.83%, and ash of 0.84% and 0.90%, respectively. Sensory evaluation of eight different meat products of pheasant revealed that all products of pheasant meat, except frankfurt sausage, received equal or better taste score compared with products of chicken or pork, and flavor score except pressed ham and salad. Color, binding ability and particle perception scores of pheasant meat products were equal or superior to those of respective meat products of chicken or pork. The present results suggest that pheasant meat has a potential to be utilized for various value-added products and that the meat bun is the most promising product of pheasant meat. A reinforcement of color, binding ability and particle perception of meat products of other species could also be expected by addition of pheasant meat to them.

Objective: This study aims to evaluate the influence of dietary flavonoids on the growth performance, blood and intestinal profiles, and carcass characteristics of broilers by employing a meta-analysis method. Methods: A database was built from published studies which have reported on the addition of various levels of flavonoids from herbs into broiler diets and then monitored growth performance, blood constituents, carcass proportion and small intestinal morphology. A total of 42 articles were integrated into the database. Several forms of flavonoids in herbs were applied in the form of unextracted and crude extracts. The database compiled was statistically analyzed using mixed model methodology. Different studies were considered as random effects, and the doses of flavonoids were treated as fixed effects. The model statistics used were the p-values and the Akaike information criterion. The significance of an effect was stated when its p-value was <0.05. Results: Dietary flavonoids increased (quadratic pattern; p<0.05) the average daily gain of broilers in the finisher phase. There was a reduction (p<0.01) in the feed conversion ratio of the broilers both in the starter (linear pattern) and finisher phases (quadratic pattern). The mortality rate tended to decrease linearly (p<0.1) with the addition of flavonoids, while the carcass parameter was generally not influenced. A reduction (p<0.001) in cholesterol and malondialdehyde concentrations (both linearly) was observed, while super oxide dismutase activity increased linearly (p<0.001). Increasing the dose of flavonoids increased (p<0.01) the villus height (VH) and villus height and crypt depth (VH:CD) ratio (p<0.05) in the duodenum. Similarly, the VH:CD ratio was elevated (p<0.001) in the jejunum following flavonoid supplementation. Conclusion: Increasing levels of flavonoids in broilers diet leads to an improvement in growth performance, blood constituents, carcass composition and small intestinal morphology.

An experiment was conducted to examine the effects of sex and market weight on performance, carcass characteristics and pork quality. A total of 224 crossbred pigs (initially 26.64 kg BW) were allotted in a $2{\times}4$ factorial arrangement in a randomized complete block (RCB) design. The variables were sex (gilts and barrows) and different market weights (100, 110, 120 and 130 kg). Average daily gain (ADG) and average daily feed intake (ADFI) were significantly higher (p<0.01) in barrows than gilts, ADFI and feed conversion ratio (FCR) increased as body weight increased (p<0.05). Gender differences were observed in carcass characteristics. Backfat thickness and drip loss were greater in barrows (p<0.01), while loin eye area (p<0.01), flavor score (p<0.05) and lean content (p<0.001) were higher in gilts. Carcass grade and water holding capacity were the highest in 110 kg market weight pigs. The 100 kg arket weight pigs showed lower juiciness, tenderness, shear forces and total palatability than the other market weights (p<0.01). Hunter values (L*, a* and b*) were increased as market weight increased (p<0.05). Hunter a* value was greater in gilts (p<0.01) but L* value and b* value were not affected by sex of pigs. Net profit [(carcass weight${\times}$price by carcass grade)-(total feed cost+cost of purchased pig)] was higher in gilts than barrows (p<0.01), and was higher (p<0.05) in the pigs marketed at 110 and 120 kg market weight compared with 100 kg market weight. These results demonstrated that gilts showed higher carcass characteristics, pork quality, feed cost per kg body weight gain and net profit compared with barrows. Moreover, 110 or 120 kg body weight would be the recommended market weight based on pork quality and net profit for swine producers.
In this study, we examined the effects of formic acid administration to the drinking water on performance, intestinal microflora and carcass contamination in male broilers. A total of 312 day-old male broiler chicks were allocated to two groups with three replicates. The first group (control) received normal drinking water (pH 7.4) during the experiment. The second group consumed acidified drinking water (pH 4.5) after 5 d of age. At 43 d of age, twelve birds were randomly selected from the control group to determine the effect of acidified drinking water on carcass contamination. These birds were only given normal or acidified (pH 3) drinking water for 8 h prior to slaughter. The reduction of water pH from 7.4 to 4.5 significantly decreased body weights of male broilers at 21 and 42 d of age. However, no differences were observed between male broilers given normal and acidified drinking water in terms of feed intake, feed conversion ratio and mortality. The pH value of the gizzard contents was not significantly affected by acid water treatment. There were no significant differences in the intestinal population of E. coli, total organism and Salmonella between the groups. The total organism and E. coli counts of the carcass slightly decreased in the acidified group. No Salmonella was identified in carcass samples of any of the treatment groups. The results showed that drinking water acidification did not provide beneficial effects on performance, intestinal microflora and carcass contamination in male broilers.
