The effect of 16 different dietary rations, computed by the combinations of 13, 16, 19 or 22% CP and 2600, 2800, 3000 or 3100 kcal ME/kg, on growth performances and carcass yield of Starcross layers were assessed in two similar experiments. In both experiments, the body weight, eviscerated carcass yield, edible carcass yield, length of digestive tract and shank length increased but the feed intake decreased linearly with the increase of dietary CP and ME levels. The liver and gizzard weights as percentages of live weight tended to be increased with the increase of dietary CP and ME levels. The carcass dry matter, crude protein, fat, ash and energy content were not influenced by the dietary CP and ME levels. Dietary CP levels had positive correlations with all the parameters (except feed and energy intake and carcass dry matter). However, the dietary ME levels were positively correlated with all the parameters (except feed and energy intake; carcass dry matter and ash) in both experiments. The higher values were noted for all the parameters (except gizzard and carcass fat percentages) studied in Experiment 1 compared to those observed in Experiment 2.

This study was conducted to determine the effects of three different fat sources and their combination on growth performance, carcass traits and intestinal measurements of broiler chickens reared to 42 d of age. Two hundred day-old male broiler chicks (Ross 308) were randomly assigned to one of five treatments with four replicates of 10 chicks based on a completely randomized design. The dietary treatments consisted of 4% added fat from three different sources and their combination as follows: T, diet containing 4% tallow; CO, diet containing 4% canola oil; SFO, diet containing 4% sunflower oil; TCO, diet containing 2% tallow+2% canola oil; TSFO, diet containing 2% tallow+2% sunflower oil. Dietary fat type affected significantly BW and gain as well as feed efficiency in birds fed the TCO diets compared with those fed the other diets. Dietary fat type also modified meat yield, resulting in a higher breast and drumstick yields in the birds fed TCO and TSFO diets, respectively. Most of internal organ relative weights and small intestine measurements were not influenced by dietary treatments, except for the abdominal fat pad weight that was lower in birds fed SFO and for small intestinal length that was influenced by fat source. Results from the current study suggested that the supplementation with a combination of vegetable and animal fat sources in broiler diet supported positively growth performance and carcass parameters.
Currently, in pork auctions in Korea, only carcass weight and backfat thickness provide information on meat quantity, while the production volume of primal cuts and fat contents remains largely unknown. This study aims to predict the production of primal cuts in pigs and investigate how these carcass traits affect pricing. Using the VCS2000, the production of shoulder blade, loin, belly, shoulder picnic, and ham was measured for gilts (17,257 pigs) and barrows (16,365 pigs) of LYD (Landrace × Yorkshire × Duroc) pigs. Single and multiple regression analysis were conducted to analyze the relationship between the primal cuts and carcass weight. The study also examined the correlation between each primal cut, backfat thickness (1st thoracic vertebra backfat thickness, grading backfat thickness, and Multi-brached muscle middle backfat thickness), pork belly fat percentage, total fat yield, and auction price. A multiple regression analysis was conducted between the carcass traits that showed a high correlation and the auction price. After conducting a single regression analysis on the primal cuts of gilt and barrow, all coefficients of determination (R2) were 0.77 or higher. In the multiple regression analysis, the R2 value was 0.98 or higher. The correlation coefficient between the carcass weights and the auction price exceeded 0.70, while the correlation coefficients between the primal cuts and the auction prices were above 0.65. In terms of fat content, the backfat thickness of gilt exhibited a correlation coefficient of 0.70, and all other items had a correlation coefficient of 0.47 or higher. The correlation coefficients between the Forequarter, Middle, and Hindquarter and the auction price were 0.62 or higher. The R2 values of the multiple regression analysis between carcass traits and auction price were 0.5 or higher for gilts and 0.4 or higher for barrows. The regression equations between carcass weight and primal cuts derived in this study exhibited high determination coefficients, suggesting that they could serve as reliable means to predict primal cut production from pig carcasses. Elucidating the correlation between primal cuts, fat contents and auction prices can provide economic indicators for pork and assist in guiding the direction of pig farming.

This study was conducted to observe the effects of crossbreeding and gender on the carcass traits and meat quality of Korean Native Black Pig (KNP) and $KNP{\times}Duroc$ crossbred ($KNP{\times}D$). A total of 50 pigs comprising seven KNP barrows, eight KNP gilts, twenty $KNP{\times}D$ barrows and fifteen $KNP{\times}D$ gilts were used in this study. Animals were reared in the same housing condition with same feed diet for six months prior to slaughter. After an overnight chilling, the carcasses were graded, and samples of Musculus longissimus dorsi were obtained for meat quality analysis. The slaughter and carcass weights and dressing percentage of $KNP{\times}D$ were higher (p<0.001) than those of KNP. The slaughter and carcass weights and backfat thickness of barrows were higher (p<0.01) than those of gilts. There were no significant difference in carcass conformation and quality grade between KNP and $KNP{\times}D$ as well as barrow and gilt. Fat content of $KNP{\times}D$ was higher (p<0.001) than that of KNP. Fat content of barrow was higher (p<0.001) than that of gilt. There was interaction between crossbreeding and gender on the fat content. KNP gilt showed higher fat content than KNP barrow whereas $KNP{\times}D$ barrow showed higher fat content than $KNP{\times}D$ gilt. Lightness, redness, yellowness, chroma and hue angle values and color preference of meat of $KNP{\times}D$ were lower (p<0.001) than those of KNP. Redness, yellowness and chroma values of meat of barrow were lower (p<0.05) than those of gilt. It is concluded that crossbreeding KNP with Duroc increases carcass productivity and meat fat but decreases meat color values and preference. Crossbreeding of KNP with Duroc produces a better fat deposition in meat of barrows than in gilts.
Two separate trials were conducted to determine effects of dietary level of whole flaxseed (WFS; 0, 10 and 15%) on feed intake, weight gain, and carcass yield and quality of Korean Hanwoo cattle. The daily gains of bulls (Trial 1) were not different among treatment groups, but those of cows (Trial 2) fed WFS 15% were higher (p<0.01) than others. Feed intake of both bulls and cows tended to decrease as dietary level of WFS increased. However, feed conversion ratio (feed/gain) of bulls tended to be improved by dietary inclusion of WFS and was significantly improved (p<0.01) in cows by increasing level of WFS. Neither carcass weight nor dressing percentage were affected by WFS level. Back fat thickness of bulls was decreased (p<0.01) by dietary inclusion of WFS and the same trend was observed in cows without statistical significance. Loin-eye area of bulls was not different among treatment groups but was significantly higher (p<0.01) in cows fed WFS. Carcass yield and quality were not improved by WFS addition. The results indicate that WFS is an acceptable fat source in diets of finishing beef cattle to increase energy density without any adverse effects.
This study deals with the characterization of porcine PIK3C3 and association tests with quantitative traits. PIK3C3 belongs to the class 3 PI3Ks that participate in the regulation of hepatic glucose output, glycogen synthase, and antilipolysis in typical insulin target cells such as those in the such as liver, muscle system, and fat. On the analysis of full-length mRNA sequence, the length of the PIK3C3 CDS was recorded as 2,664 bps. As well, nucleotide and amino acid identities between human and pig subjects were 92% and 99%, respectively. Five SNPs were detected over 5 exons. We performed genotyping by using a SNP C2604T on exon24 for 145 F$_2$ animals (from a cross between Korean native boars and Landrace sows) by PCR-RFLP analysis with Hpy8I used to investigate the relationship between growth and fat depot traits. In the total association analysis, which doesn' consider transmission disequilibrium, the SNP showed a significant effect (p<0.05) on body weight and carcass fat at 30 weeks of age as well as a highly significant effect (p<0.01) on back fat. In an additional sib-pair analysis, C allele still showed positive and significant effects (p<0.05) on back fat thickness and carcass fat. Moreover, the effects of C allele on the means of within-family components for carcass fat and back fat were estimated as 2.76 kg and 5.07 mm, respectively. As a result, the SNP of porcine PIK3C3 discovered in this study could be utilized as a possible genetic marker for the selection of pigs that possess low levels of back fat and carcass fat at the slaughter weight.
Steers (n=335) of known genetic backgrounds from four fundamentally different growth types were subjected to two production systems to study differences in carcass traits. Growth types were animals with genetic potential for large mature weight-late maturing, intermediate mature weight-late maturing, intermediate mature weight-early maturing and small mature weight-early maturing. Each year, in a nine-year study, calves of each growth type were weaned and five steers of each growth type were developed on pasture or feedlot and slaughtered at approximately 20 and 14 months of age, respectively. Data collected were pre-slaughter shrunk body weight (SBW); hot carcass weight (HCW); dressing percentage (DRESS); fat thickness at the $12^{th}$ and $13^{th}$ rib interface (FAT); percentage kidney, pelvic, and heart fat (KPH); longissimus muscle area (LMA); marbling score (MARB); quality grade (QG); and yield grade (YG). Year and growth type were significant for all carcass traits. The growth type${\times}$production system interaction was an important source of variation in SBW, HCW; FAT, YG and MARB. The same interaction was non-significant for DRESS, KPH, LMA and QG. Carcass differences in measures of fatness were greater in the feedlot system than in the pasture system. These data could aid producers in matching beef growth type to the production system most suitable for efficient use of resources.
Regarding the fattening of younger cattle that the Ministry of Agriculture Forestry and Fisheries (MAFF) recommends in Japan, this study looked at vitamin A control in feed and blood and its effect on performance of production and carcass composition of Wagyu steers. Five sets from 10 Wagyu artificial identical twins were divided to into 2 groups, a restricted group (Test) and a supplied group (Control). The body weight at the finishing time of the Test was significantly lower than that of the Control (p<0.05). The daily gain from 13 to 21 months old, as the animals in the Test were fed the concentrated feed without Vitamin A, was significantly different (p<0.05) between the Test and the Control. The total daily gains for the Test and the Control for the fattening period were 0.82 kg/day and 0.93 kg/day, respectively, which showed a significant difference (p<0.01). Regarding the rib thickness, the Test was thinner than the Control. The Beef Marbling Scores of the Test and Control were 3.60 and 2.80, respectively. The muscle weight of the Test was significantly smaller than that of the Control (p<0.01). However, regarding the ratio to the carcass, the Test was significantly higher than the Control (p<0.05). For the fat weight, the Test was smaller by about 15 kg than the Control (p<0.01). Furthermore, for the fat ratio to the carcass, the Test was significantly lower than the Control (p<0.05). The bone weights of the two groups were approximately the same. Regarding the ratio of bone to carcass, the Test was higher than the Control (p<0.01). For the younger fattening method, the low level vitamin A in the serum had the effect that the muscle ratio to the carcass weight was greater and the fat was less, but the carcass and muscle weight were less.
Objective: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. Methods: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. Results: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). Conclusion: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.
The Melanocortin-4 Receptor (MC4R) and Insulin-like Growth Factor 2 (IGF2) are two important candidate genes related to fat deposition and carcass traits. MC4R was found on study on human obesity and then was studied as candidate gene affecting food intake and fat deposition traits in mice and pigs. Insulin-like Growth Factor 2 (IGF2) gene plays an important role on tumor cell proliferation and muscle growth. It also affects fat traits and live weight in pigs. In this paper, MC4R and IGF2 were studied as two candidate genes associated with important economic traits such as fat deposition and carcass traits in five different pig populations. Taq I-PCR-RFLP and Bcn I-PCR-RFLP were respectively used to detect the polymorphism of genotypes of MC4R and IGF2 genes. Different MC4R genotype frequencies were observed in four populations. IGF2 genotype frequencies were also different in two populations. The results of association analysis show both MC4R and IGF2 genes were significantly associated with fat deposition and carcass traits in about 300 pigs. This work will add new evidence of MC4R and IGF2 affecting fat deposition and carcass traits in pigs and show that two genes can be used as important candidate genes for marker assistant selection (MAS) of growth and lean meat percentage in pigs.
