전통 수산발효식품의 향기성분에 관한 연구 (Studies on the Flavor Compounds in Traditional Salt-Fermented Fishes)

  • Nowadays, two types, Yumhae and Sikhae methods, remained as traditional seafood fermentation methods in Korea. In this study, flavor compounds in two types of salt-fermented fishes made by Yumhae method such as anchovy Engraulidae sp., shrimp Caridea sp., squid Decapodiformes sp., big eyed herring Clupea sp., gizzard shad Dorosoma sp. and hairtail Trichiurus sp., and made by Sikhae method such as Alaska pollack Gadus Chalcogrammus and squid. Volatile compounds detected in all salt-fermented fishes were composed mainly of aldehydes (45), ketones (39), alcohols (45), acids (12), esters (47), N-containing compounds (43), aromatic hydrocarbons (37), S-containing compounds (26), furans (10), and miscellaneous compounds (40) in salt-fermented fishes made by Yumhae method. Meanwhile, alcohols (47), terpenes (38), S-containing compounds (22), carbonyl compounds (19 aldehydes, 18 ketones), esters (13), and acids (14). Aroma-active compounds were identified by Gas chromatography/mass spectrometry/olfactometry and aroma extract dilution analysis in salt-fermented anchovy, shrimp and tuna (Thunnini sp.) sauce. Ethyl 2-methylbutanoate (candy/sweet) and 2-ethyl-3,5-dimethylpyrazine (nutty/baked potato-like) were predominant odorants in salt-fermented anchovy, whereas dimethyl trisulfide (cooked cabbage/soy sauce-like), 2-ethyl-3,5-dimethylpyrazine, and (E,E)-2,4-heptadienal (fatty/grainy) in salt-fermented shrimp, and dimethyl trisulfide, 3-methylbutanal (dark chocolate-like), and 3-methylthiopropanal (baked potato-like) in tuna sauce.

복약순응도 증진을 위한 환자 대상 약물 색채선호도에 관한 기초연구 (A Basic Study on Color Preference of Medicine in Patient for Improving Compliance)

  • Everyone has own color preference and the color preference can affect human psychology in various good or bad ways. Especially patients with chronic diseases often have depressed mood to take pills for their disease treatment. Therefore we evaluate the possibility of their color preference to pharmacotherapy in good way which increases the compliance of pharmacotherapy. We performed this study by a Questionnaire survey for total 150 agreed patients at K University hospital from Aug 7 to Sep 30, 2014. Questionnaire survey was performed to choose color of providing color kit (11 different color range kit) depend on each 16 questions which asked the patient characteristics, health condition, general color preference, color preference for medicine and expectation for drug compliance. In results, most preferred color was blue (20%), whereas disliked color was black (30%) in general life. However, most preferred color for pill was white (32%), for syrup was also white (31%) or orange (28%), and for vitamin was yellow (47%). When we asked the possibility of increasing compliance, if the current taking pill color will be changed for your preference color like a candy bar, 50.4% of respondents marked 4 or 5 of like-scale expressing positive opinion on it. In conclusion, compliance is very important to succeed the treating disease and may apply the psychologic application such as each patient color preference for drug compliance in the future.

국내 식품중 이산화티타늄의 분석법 개발 (Development of Titanium Dioxide Analytical Method on Commercial Foods in Korea)

  • 국내에서 착색료의 사용은 식품산업의 발달과 제품의 다양화에 따라 사용량도 점차 증가 추세에 있다. 그러나 소비자들은 색소의 안전성에 많은 의구심을 갖고 있으므로, 이에 대한 효율적인 품질관리 및 안전성확보를 위한 기초단계로서 분석방법을 확립하고 사용실태를 파악하고자 시중 유통되고 있는 과자류 등 34종 248품목을 대상으로 이산화티타늄 함량을 UV/VIS spectrophotometer로 분석하였다. 회수율을 검토한 결과 차류는 88.46%, 과자류, 사탕류, 아이스크림류와 김치류 등의 90.56∼104.75%이였다. 검출되어진 식품의 경우 이산화티타늄 사용량의 범위가 넓었으며, 초콜릿의 경우 1.54∼7.74 g/kg의 이산화티타늄이 검출되어 조사대상식품 중 이산화티타늄 함량이 가장 높았고 껌 0.48∼2.99 g/kg, 사탕 0.34∼2.34 g/kg과 건강보조식품은 0.27∼1.74 g/kg이 검출되었다. 이러한 연구결과로 미루어볼 때 판매되어지고 있는 식품 중에서 이산화티타늄의 사용 함량을 측정하여 사용실태를 조사함으로서 사용의 효율적인 품질관리 및 안전성확보를 할 수 있을 것으로 기대된다.

Roles of Kermanshahi Oil, Animal Fat, Dietary and Non-Dietary Vitamin D and other Nutrients in Increased Risk of Premenopausal Breast Cancer: A Case Control Study in Kermanshah, Iran

  • Background: Kermanshahi oil is one the most favorable oils in Iran especially in Kermanshah province. We aimed to evaluate the role of usual intake of Kermanshahi oil and other kinds of dietary fats as well as different meats, vegetables and fruits, carbohydrates, cereals, grains, sweets, candy and lifestyle habits in risk of breast cancer. Materials and Methods: A case-control study with 47 consecutive, newly diagnosed premenopausal breast-cancer patients and 105 age and socioeconomic matched healthy women was conducted from 2013-2014 in Imam Reza hospital of Kermanshah using a standardized, validated questionnaire assessing various anthropometric, socio-demographic, lifestyle and dietary characteristics. Results: Kermanshahi oil intake was associated with a 2.1-fold (OR=2.123, 95% CI 1.332-3.38) (p=0.002) higher likelihood of having breast cancer, while daily intake of other solid animal fats also increased the likelihood by 2.8-fold (OR = 2.754, 95% CI 1.43-5.273) (p < 0.001), after various adjustments made. Lack of fish oil, white meat, vegetables, soy products, nuts and dairy products (especially during adolescence) in daily regimens and lack of sun exposure were significantly associated with premenopausal breast cancer risk in this region. Conclusions: This study suggested that animal fat increases the risk of premenopausal breast cancer but many other dietary and non-dietary factors including calcium and vitamin D deficiency are consistently associated with increased odds of breast cancer in this region.

Underreporting of dietary intake by body mass index in premenopausal women participating in the Healthy Women Study

  • Underreporting patterns by the level of obesity have not been fully assessed yet. The purpose of this study was to examine the differential underreporting patterns on cardiovascular risk factor, macronutrient, and food group intakes by the level of Body Mass Index (BMI). We analyzed cross-sectional baseline nutritional survey data from the population-based longitudinal study, the Healthy Women Study (HWS) cohort. Study subjects included 538 healthy premenopausal women participating in the HWS. Nutrient and food group intakes were assessed by the one-day 24-hour dietary recall and a semi-quantitative food frequency questionnaire, respectively. The ratio of reported energy intake (EI) to estimated basal metabolic rate (BMR) was used as a measure of relative energy reporting status and categorized into tertiles. Overweight group ($BMI{\geq}25kg/m^2$) had a higher ratio of EI to BMR (EI/BMR) than normal weight group ($BMI<25kg/m^2$). Normal weight and overweight groups showed similar patterns in cardiovascular risk factors, nutrient intake, and food group intake by the EI/BMR. Fat and saturated fat intakes as a nutrient density were positively associated with the EI/BMR. Proportion of women who reported higher consumption (${\geq}4\;times/wk$) of sugar/candy, cream and red meat groups was greater in higher tertiles of the EI/BMR in both BMI groups. Our findings suggest similar patterns of underreporting of cardiovascular risk factors, and macronutrient and food group intakes in both normal and overweight women.

영상저작물의 저작권 침해에 관한 연구 (A Study of Copyright Infringement in Video Works)

  • 본 논문은 국내 영상저작물의 저작권 침해 판단을 사례로 들어 저작권 침해에 대한 법원의 판단기준을 고찰하였다. 국내 영상저작물 관련한 기존의 판례를 검토해보면, 의거관계의 추정에 의심이 가는 경우에는 양 저작물간에 상당한 유사성이 인정된다 하더라도, 실질적 유사성 부분에 대한 심사를 약하게 적용하여 저작권 침해를 구성하지 않는 경우가 대부분이다. 의거관계가 인정되더라도 실질적 유사성에 대해 심사하여, 비록 아이디어를 차용하였다고 하더라도, 독창적인 표현의 부분에 대해서는 실질적 유사성을 부인하고 있다. 영상저작물의 저작권 침해와 관련한 판례에서 법원은 '까레이스키' 사건에서는 지적재산권의 침해에 관하여 주관적 요건으로서 "의거관계"와 객관적 요건으로서 "실질적 유사성"에 기초하여 사실관계를 정리하고 판단함으로써 판단기준을 제시하였고, '여우와 솜사탕'사건에서는 종래의 판례에서와 같이 "의거관계"와 "실질적 유사성" 판단을 하였을 뿐만 아니라,더 나아가 "실질적 유사성" 판단에 있어 요건을 세분화하여 사실관계를 적용하였다. 이러한 판례는 향후 유사한 사건의 해결에 유력한 참고자료가 될 것이 분명하다.

한국 거주 북한이탈 어린이와 남한 어린이의 식품 및 영양소 섭취 현황 비교 (Comparison of Food and Nutrient Consumption Status between Displaced North Korean Children in South Korea and South Korean Children)

  • Many displaced North Koreans (NK) are living in South Korea (SK); however nutrition research with the displaced NK is limited. This study examined food and nutrient consumption status of displaced NK children (6-18 year-old) currently living in SK. A total of 154 children were recruited, and a pre-tested dietary behavior questionnaire, food frequency questionnaire, 24-hr recall method were used. Sex- and age-matched SK children (n = 462) randomly selected from 2009-2010 Korea National Health and Nutrition Examination Survey were used as the comparison group. This study found that more NK children skipped breakfast (37%) and dinner (11%), and ate breakfast (38.8%) and dinner (18.2%) without family members than SK children. Many NK children reported that they rarely ate bread, rice cake, hamburger, pizza, fried food, candy. NK children consumed significantly less energy and nutrients (except calcium) and obtained more energy from fat and protein than SK children. Overall index of nutrient quality in NK children, however, was generally good. Length of stay in SK and breakfast skipping rates were significantly associated with lower diet quality. Therefore, nutrition education with displaced NK children should target those who recently came to SK. How to incorporate "new" foods, generally high in energy, sugar, or fat, in healthy ways and importance of breakfast should be emphasized. The growth patterns of the displaced NK children who were born and raised in food-deprived environments and will grow in food-affluent environments of SK should be monitored for health promotion of the NK children and for nutrition policy of the future united Korea.

사회인지이론을 적용한 초등학생 대상 영양교육의 효과 -당 섭취에 관한 영양교육 중심으로- (Effects of Nutrition Education through Social Cognitive Theory in Elementary School Students -Focusing on the Nutrition Education of Sugar Intake-)

  • The purpose of this study was to identify the effectiveness of a nutrition education program of reducing children's sugar intake based on social cognitive theory. This education program composed of 6 units was conducted in discretional activity class of the $3^{rd}$ and $4^{th}$ grade elementary school students. The results are as follows: First, the rate of correct answers and score of nutrition knowledge significantly increased after nutrition education. The scores of nutrition education in male students, students whose mothers have no job, and students with skinny physiques were much improved after nutrition education(p<0.05, p<0.01, p<0.001, respectively). Second, the dietary attitudes toward reducing sugar intake and checking nutrition labels significantly improved(p<0.05). And also, it tended to decrease in preference and intake of sweet foods. Third, the consumption of candy caramel jelly(p<0.05), yogurt(p<0.05), jam honey(p<0.05), and ice cream(p<0.001) were reduced after nutrition education. Besides, obese students' consumption of isotonic beverages, carbonated beverages, and fruit juice was reduced. Therefore, a positive change in dietary behavior appeared. Based on the above results, we confirmed that the nutrition education program focusing on reducing sugar intake applied with social cognitive theory was effective for improving the nutrition knowledge, dietary attitude and dietary behavior in sugar intake in elementary school students. Especially, this program showed the improvement in nutrition knowledge as well as dietary attitude and behavior in sugar intake among obese children. Since nutrition education during childhood significantly influences lifetime-health and disease prevention, it is necessary to develop theory-based nutrition education program and practice systematic and constant nutrition education in elementary schools.

  • 보건소 '금연클리닉사업'은 흡연자들에게 6개월 동안 9회 이상의 금연상담서비스와 CO측정, 니코틴 패치, 니코틴 껌, 니코틴 사탕 등의 니코틴보조제를 제공한다. 또한 행동 강화 물품과 금연 성공 기념품을 제공하는 등, 금연 실천을 유도하고 흡연율을 감소시켜 지역주민의 건강증진을 도모한다. 흡연과 과음 등의 생활습관은 고지혈증 및 비만 등 만성질환을 유발시키는 주요인자이며, 경제적인 손실, 나아가 건전한 문화교양인으로서의 삶을 파괴하는 한 요인이 된다. 흡연, 과음 등의 생활습관이 건전한 삶이라는 문화적 가치와 더불어 의료비라는 경제적 가치와도 밀접한 관계가 있음을 고려해 볼 때, 흡연 예방 및 금연과 절주 등의 보건교육에 동참하는 사업장과 기관에 대한 제도적 지원이 병행되어야 할 것으로 사료된다.

한국 농촌 성인의 당뇨 신환군과 비당뇨군의 식품섭취빈도 조사법에 의한 식품섭취 비교 연구 (Comparison of Food Intakes between Newly Diagnosed Diabetics and Nondiabetics by Food Frequency Questionnaire in Adults Living in Rural Area of Korea)

  • This study was conducted to compare food intakes between newly diagnosed diabetics and non-diabetics by food frequency questionnarie in adults in rural area. Food frequency questionnaire containing 65 food items was executed to 2,406 subjects over 30 years of age living inYeonchon-gun, Kyungki province. Frequency of consumption of each food items were divided into 9 categories ranging from 'over 3 tiemes a day' to 'never'. Fasting blood glucose levels were measured and 2-hour glucose tolerance test was administered for each subject. Newly diagnosed diabetics were identified as those with fasting blood glucose level ≥ 140mg/dl or 2-hour postprandial glucose level ≥200mg/dl and without previous diagnosis of diabetes. Intake frequencies of food items were compared between newly diagnosed diabetics and nondiabetics. For each food item examined, odds ratios for developing diabetes were calculated for people consuming more frequently, after adjusting for age, BMI and sex. Food intake frequencies were compared according to the occurrence of diabetes. Twenty four items were more frequently consumed by nonidabetics and 12 items were more frequently consumed by newly diagnosed diabetics. Odds ratios for diabetes were significantly lower for breads, biscuit, beef loin, beef tender loin, pork belly, fish paste, coffee, cola/cider, candy, beer, chongak kimchi, carrot, mushrooms and other white vegetables, banana, melon and juice. On the other hand, odds ratios for diabetes were higher for zucchini and garlic. Although this was a cross over prevalence study, the results indicate that consumption frequencies of several food items were related with the occurrence of diabetes in the study subjects.
