Recently, Bacillus has been identified as one of food poisoning bacteria especially in products of cereal foods in foreign countries. Therefore, the quantitative distribution of Bacillus cereus in market foods, its physiological characteristics, growth rate by temperature and heat resistance of its spore were examined. Thirty two samples of cooked rice, 20 samples of kimbab(cooked rice rolled with laver), 23 samples of rice cake, 13 samples of rice ana 13 samples of barley were collected from restaurents and food stores in Busan, Korea during the period from May to November in 1980. Forty samples of 101 samples submitted to the test appeared positive for Bacillus cereus showing abut $40\%$ in detection ratio. Detection ratio of Bacillus cereus was higher than $50\%$ in barley and rice, and about $30\%$ in rice products. Average Bacillus cereus content of in the samples was $2.6\times10^6/g$ in cooked rice, $2.3\times10^6/g$in kimbab, $4.9\times10^4/g$ in rice cake while that in rice and barley was about $10^3/g$. The result of biochemical tests of the bacterium was $100\%$ positive in catalase, egg yolk reaction, gelatin hydrolysis and glucose fermentation, $100\%$ negative in xylose, arabinose and mannitol oxidation, about $90\%$ positive in acetoin production, $80.0\%$ positive in nitrate reduction and citrate utilization and $55.0\%$ positive in starch hydrolysis test. Isolation ratio of Bacillus ceresus which showed haemolysis positive and starch hydrolysis negative results, was about $38\%$ in 40 strains examined. It is known that those strains has a close relation to food poisoning accident. Growth rate and generation time of Bacillus cereus isolated from the cooked rice were $0.34hr^{-1},\;2.02hr\;at\;20^{\circ}C,\;0.73hr^{-1},\;0.95hr\;at\;30^{\circ}C\;and\;0.49hr^{-1},\;1.44\;hr\;at\;40^{\circ}C$ respectively. Heat resistance value of Bacillus cereus spores suspended in phosphate buffer solution was $D_{90}=29.0min,\;D_{95}=8.7min,\;D_{98}=3.7\;min\;and\;D_{101}=2.3\;min(z=10.5)$.
This study examined the physicochemical properties of rice embryo in order to investigate the antioxidative effect of black rice bran pigment fraction on rice embryo lipid oxidation. Color stability of rice bran pigment fraction and acid value of added rice embryo were determined at various conditions of pH, temperature, and storage time. Rice embryo contained more crude protein (22.1%) compared to the rice bran (9.4%). However, rice embryo had a higher lipid content than rice bran, causing lipid oxidation during storage. Pigment fraction were relatively stable in acidic pH of 3.0 stored at $4^{\circ}C$ for 9 days. Rice embryo showed increased acid value with increased storage time and temperature. Furthermore, rice embryo with pigment fraction resulted in lower acid value compared to the control group. Therefore, addition of black rice bran pigment fractions to rice embryo improved storage capacity.
This study was conducted to estimate effects of by-products of medical herbs replacing rice straw on in vitro fermentation characteristics. Each trial was composed of five treatments including medical herbs : rice straw (%) = 20 : 80 (T1), 40 : 60 (T2), 50 : 50 (T3), 100 : 0 (T4) and the control. Each treatment had eight fermentation times (3, 6, 9, 12, 24, 36, 48 and 72 hours) with three replications. The gas production and DM degradation were significantly (P<0.05) increased by supplementation, especially T4, during the whole fermentation periods. Methane production increased along with addition of by-products similar to the gas production and DM degradation. The pH values ranged from 5.39 to 6.80 and were significantly (P<0.05) decreased by supplementation of by-products of medical herbs. Microbial growth rates reached the peak at between 36 and 48h, thereafter tended to decrease. Although there were no significant differences in the enzyme activities, there was a tendency of increase in T4 treatment. From above results, the replacement levels, particularly 100% replacement of rice straw by by-products of medical herbs, resulted in improving the in vitro fermentation characteristics such as increasing gas production, microbial growth and DM degradation. Also it may help digestion by increasing enzyme activities.

There is a growing need to understand how local, farm household, and elementary units are responding to changes in agricultural conditions due to increased internal and external agrarian conditions and increased uncertainty in agricultural management due to increasing FTA and climate change. Therefore, we analyze dynamics of changes through more detailed and precise gathering of information related to agricultural products and DB, and by analyzing the satisfaction level of the first year panel survey by constructing a producer panel for utilization in agricultural research and policy. A total of 500 farmers in the producer panel who mainly grow rice, garlic, onion, strawberry, apple were collected through questionnaires. The actual analysis used data from a total of 393 farm households, including 82 farms of rice, 51 farms of apple, 100 farms of garlic, 88 farms of onion and 72 farmhouses of strawberry. The distribution by age was similar to the distribution of rural ages in Korea, with 2.8% under 30s, 17.6% in 40s, 32.4% in 50s, 37.5% in 60s and 9.7% in 70s. Panel happiness and rural life satisfaction were examined using the 7 - point Likert scale and the analysis method was one - way ANOVA. The results showed that the happiness of garlic and strawberry cultivator was significantly higher than that of rice and onion cultivator. However, the satisfaction of rural life did not show any difference among the cultivars. As a result of difference verification about Agricultural Outlook and Crop-specific Outlook after 5 years, there was no difference between the crops in terms of prospects for Korean agriculture after five years, but a survey of industrial prospects for crops after five years showed that the rice growers have a significantly negative outlook compared to garlic, onion and strawberry growers, and garlic and onion growers have a more positive outlook than rice and apple growers As a result of verifying whether there is a difference in ages between the agricultural prospects and the industrial prospects by crops after 5 years, there was no difference between the ages of prospects for Korean agriculture after 5 years, However, in the survey on industrial prospects by crops after 5 years, 40s were more positive than 60s.
Near infrared reflectance spectroscopy (NIRS) is a rapid and accurate analytical method for determining the composition of agricultural products and feeds. This study was conducted to determine tocopherol and tocotrienol contents in rice bran by using NIRS system. Total 80 rice bran samples previously analyzed by HPLC were scanned by NIRS and over 60 samples were selected for calibration and validation equation. A calibration equation calculated by MPLS(modified partial least squares) regression technique was developed and coefficient of determination for tocopheyol and tocotyienol content were 0.975 and 0.984, respectively, in calibration sets. Each calibration equation was fitted to validation set that was performed with the remaining samples not included is the calibration set, which showed high positive correlation both in tocopherol and tocotrienol content file. This results demonstrate that the developed NIRS equation can be practically used as a rapid screening method for quantification of tocopherol and tocotrienol contents in rice bran.

This paper presents the mechanical and microstructural properties of the geopolymer paste which was developed by utilizing the industrial by-products, rice husk ash (RHA) and ultra-fine slag. Ultra-fine slag particles with average particle size in the range of 4 to 5 microns. RHA is partially replaced with ultra-fine slag at different levels of 0 to 50%. Sodium silicate to sodium hydroxide ratio of 1.0 and alkaline liquid to binder (AL/B) ratio of 0.60 is taken. Setting time, compressive, flexural strengths were studied up to the age of 90 days with different concentrations of NaOH. The microstructure of the hybrid geopolymer paste was studied by performing the SEM, EDS, and XRD on the broken samples. RHA based geopolymer paste blended with ultrafine slag resulted in high compressive and flexural strengths and increased setting times of the paste. Strength increased with the increase in NaOH concentration at all ages. The ultra-small particles of the slag acted as a micro-filler into the paste and enhanced the properties by improving the CASH, NASH, and CSH. The maximum compressive strength of 70MPa was achieved at 30% slag content with 16M NaOH. The results of XRD, SEM, and EDS at 30% replacement of RHA with ultra-fine slag densified the paste microstructure.
The endeavors enhancing the grain quality of high-yielding japonica rice were steadily continued during 1980s-1990s along with the self-sufficiency of rice production and the increasing demands of high-quality rices. During this time, considerably great progress and success was obtained in development of high-quality japonica cultivars and quality evaluation techniques including the elucidation of interrelationship between the physicochemical properties of rice grain and the physical or palatability components of cooked rice. In 1990s, some high-quality japonica rice cultivars and special rices adaptable for food processing such as large kernel, chalky endosperm, aromatic and colored rices were developed and its objective preference and utility was also examined by a palatability meter, rapid-visco analyzer and texture analyzer, Recently, new special rices such as extremely low-amylose dull or opaque non-glutinous endosperm mutants were developed. Also, a high-lysine rice variety was developed for higher nutritional utility. The water uptake rate and the maximum water absorption ratio showed significantly negative correlations with the K/Mg ratio and alkali digestion value(ADV) of milled rice. The rice materials showing the higher amount of hot water absorption exhibited the larger volume expansion of cooked rice. The harder rices with lower moisture content revealed the higher rate of water uptake at twenty minutes after soaking and the higher ratio of maximum water uptake under the room temperature condition. These water uptake characteristics were not associated with the protein and amylose contents of milled rice and the palatability of cooked rice. The water/rice ratio (in w/w basis) for optimum cooking was averaged to 1.52 in dry milled rices (12% wet basis) with varietal range from 1.45 to 1.61 and the expansion ratio of milled rice after proper boiling was average to 2.63(in v/v basis). The major physicochemical components of rice grain associated with the palatability of cooked rice were examined using japonica rice materials showing narrow varietal variation in grain size and shape, alkali digestibility, gel consistency, amylose and protein contents, but considerable difference in appearance and texture of cooked rice. The glossiness or gross palatability score of cooked rice were closely associated with the peak, hot paste and consistency viscosities of viscosities with year difference. The high-quality rice variety "IIpumbyeo" showed less portion of amylose on the outer layer of milled rice grain and less and slower change in iodine blue value of extracted paste during twenty minutes of boiling. This highly palatable rice also exhibited very fine net structure in outer layer and fine-spongy and well-swollen shape of gelatinized starch granules in inner layer and core of cooked rice kernel compared with the poor palatable rice through image of scanning electronic microscope. Gross sensory score of cooked rice could be estimated by multiple linear regression formula, deduced from relationship between rice quality components mentioned above and eating quality of cooked rice, with high probability of determination. The $\alpha$-amylose-iodine method was adopted for checking the varietal difference in retrogradation of cooked rice. The rice cultivars revealing the relatively slow retrogradation in aged cooked rice were IIpumbyeo, Chucheongyeo, Sasanishiki, Jinbubyeo and Koshihikari. A Tonsil-type rice, Taebaegbyeo, and a japonica cultivar, Seomjinbyeo, showed the relatively fast deterioration of cooked rice. Generally, the better rice cultivars in eating quality of cooked rice showed less retrogradation and much sponginess in cooled cooked rice. Also, the rice varieties exhibiting less retrogradation in cooled cooked rice revealed higher hot viscosity and lower cool viscosity of rice flour in amylogram. The sponginess of cooled cooked rice was closely associated with magnesium content and volume expansion of cooked rice. The hardness-changed ratio of cooked rice by cooling was negatively correlated with solids amount extracted during boiling and volume expansion of cooked rice. The major physicochemical properties of rice grain closely related to the palatability of cooked rice may be directly or indirectly associated with the retrogradation characteristics of cooked rice. The softer gel consistency and lower amylose content in milled rice revealed the higher ratio of popped rice and larger bulk density of popping. The stronger hardness of rice grain showed relatively higher ratio of popping and the more chalky or less translucent rice exhibited the lower ratio of intact popped brown rice. The potassium and magnesium contents of milled rice were negatively associated with gross score of noodle making mixed with wheat flour in half and the better rice for noodle making revealed relatively less amount of solid extraction during boiling. The more volume expansion of batters for making brown rice bread resulted the better loaf formation and more springiness in rice breed. The higher protein rices produced relatively the more moist white rice bread. The springiness of rice bread was also significantly correlated with high amylose content and hard gel consistency. The completely chalky and large grain rices showed better suitability far fermentation and brewing. The glutinous rice were classified into nine different varietal groups based on various physicochemical and structural characteristics of endosperm. There was some close associations among these grain properties and large varietal difference in suitability to various traditional food processing. Our breeding efforts on improvement of rice quality for high palatability and processing utility or value-adding products in the future should focus on not only continuous enhancement of marketing and eating qualities but also the diversification in morphological, physicochemical and nutritional characteristics of rice grain suitable for processing various value-added rice foods.ice foods.
Ten rice varieties were planted at two locations (lowland and highland), during the wet and dry seasons of different years. In vivo digestibility and voluntary intake of the straw, were determined in groups of fat-tail sheep, supplemented with $18g{\cdot}kg^{-0.75}$ concentrate DM, containing ~20% crude protein. Voluntary intake of digestible straw organic matter (DOMI) consistently varied from 15.2 to $20.9g{\cdot}kg^{-0.75}$ between straw varieties, averaged over locations, years and seasons, despite considerable variation between individual batches. This variation in the nutritive value of the straw was independent of straw and grain yield, so it would seem that there is scope for selection of rice varieties with straw of higher nutritive value. The variation in DOMI of straw among location of growth, year and season, was of a magnitude similar to the improvement brought about by urea-ammoniation. The in sacco degradation characteristics and digestibility of rice straw residues were superior to those of the offered straw. This can be attributed to a preference for rice straw leaves relative to stems. Averaged over location of growth, year and season, characteristics of in sacco degradation, i.e. the rate of fermentative degradation and the truly undegradable fraction, emerged as accurate predictors of the nutritive value of rice straw.
Concerns on use of excess amount of chemical fertilizier and pesticide in current farming system turns both of the producer and consumer of agricultural products to an organic farming which use a less chemicals and more natural manure. Rice-duck farming system is one of the strategy to meet the purpose and this experiment was carried out to find the effect of the rice-duck farming system on the quality and yields of rice. 20day-old rice seedling were mechanically transplanted in sandy-loam paddy field and 21 day-old ducks were raised from 3 weeks after transplanting with population of 30 heads per 10a. The plots were consists of reduce fertilizer(70%) with and without duck-raising. The conventional fertilizer treatment without duck-raising was used as check. The results obtained are summarized as follows. The weeds population of test plots which were raised with duck for 3 consecutive years was less than that of test plots without duck-raising, though a speciffic population of Echinochola crusgallis were increased. The weed control effect was higer in duck-raising than in check at the maximum tillering stage but, not at later stages of rice plant. It was found that the small animals and insects inhibiting in the rice field were reduced by duck-treatment, however, there were also damages of grass leaf roller at booting stage in the plots of duck-raising. In rice-duck plot, dark green leaf color were found: 41.8 of SPAD value than 38.6 of SPAD in check plot. Higher root activity and surface soil oxidation were also observed in rice-duck plot than check plot. 3% of the increase in yield was observed by duck-treatment. However, the expected increase of the palatability wsa not observed. This may be due to the unfavorable weather conditions during the rice growing in this expriment.

The water footprint of product and service is the total volume of freshwater consumed, directly and indirectly, in the life cycle of a product and service. Up to date, water consumption data for industries and products were not well quantified and developed. Especially it is important to construct for agriculture industry which consumes lots of water. In this study, by using Cropwat 8.0 model, we tried to evaluate regionalized water consumption related with rice production in agriculture industry in eight regions (Gangwon, Gyeongi, Gyeongbuk, Gyeongnam, Jeonnam, Jeonbuk, Chungnam, Chungbuk). As a result, Gyeongbuk region has the lowest water consumption in rice production, which is $1,356.68m^3/ton$, on the other hand, Jeonnam region has the highest water consumption ($1,669.54m^3/ton$). By using the average indirect water consumption ($1,487.87m^3/ton$) of eight regions and direct water consumption, the total water footprint for the rice amount of rice bowl size (130 g), which is 193.6 L was calculated. Based on this research approach, we should develop water footprint database of all agriculture products and expand to other industrial sectors.
