Effect of Stored Rice on Quality Characteristics of Instant Rice Noodles (저장쌀이 즉석 쌀국수의 품질 특성에 미치는 영향)

  • The purpose of this study was to investigate the quality characteristics of instant rice noodles made from rice flour with different harvest times rice processed products. The physicochemical characteristics of three different types of rice flour were investigated, including common rice flour (CRF, harvested in 2012), stored rice flour (SRF, harvested in 2008) and CSRF (CRF mixed with SRF). Instant rice noodles were manufactured with the three types of rice flour, and their quality and sensory characteristics were investigated. The water-binding capacity of rice flour was highest in CSRF. Regarding setback on RVA pasting viscosity, SRF and CSRF showed higher values than CRF. Water absorption after cooking of instant rice noodles was highest in common rice noodles (CON). The volume after cooking of instant rice noodles increased in rice noodles with stored rice flour (SRN). Turbidity of rice noodles using CSRF (CSRN) was higher value than that of CON. In texture properties, CON displayed the highest hardness, adhesiveness, springiness, and chewiness. In the sensory evaluation, overall acceptability values of CON were significantly higher than those of other rice noodles (SRN and CSRN). It was concluded that rice noodles with stored rice flour have increased turbidity with reduced texture and overall preference. This study suggests that addition of CRF may result in significantly increased overall quality of instant rice noodles prepared by SRF.

Cooking Properties of Rice with Pigmented Rice Bran Extract (유색미 미강 추출물 첨가가 밥의 취반 특성에 미치는 영향)

  • This study was perform to examine the feasibility of cooking processing using the rice added the 70% ethanol extract of pigmented rice bran layer. Four rice samples, including normal rice, glutinous rice, pigmented-normal rice, and pigmented-glutinous rice were compared the properties of physico-chemical, texture, and sensory evaluation. Pigmented rice varieties had a higher amylose content, but shorter length in glucose chains than non-pigmented rice varieties. The enthalpy for gelatinization was found to increase in pigmented rice, which need more energy for gelatinization of starch in cooking. The hydrolysis rate by glucoamylase in rice added pigmented bran extract was higher than pigmented rice. Rice with pigmented bran extract had higher glutamine content, but lower asparagine content and no difference in fatty acid composition, which affect palatability. Cooked rice added pigmented bran extract was less retrograded than pigmented rice during the storage period. Moreover, cooked rice added pigmented bran extract was more acceptable in sensory evaluation. Based on the results, the use of rice added pigmented bran extract instead of pigmented rice in grain processed food have advantageous effects in palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.

Improving Solubility through Carboxymethylation of Different-sized Endosperm, Bran, and Husk Rice Powders

  • The surfaces of different-sized endosperm, bran, and husk rice powders were modified using carboxymethylation. Carboxymethylation was carried out using aqueous alkalization and neutralization. After the carboxymethylation process, the centrifuged products were milled and classified by size: particles passed through sieves of 45, 106, and $300-{\mu}m$ width. The effect of carboxymethylation on physical properties such as solubility and dispersibility of endosperm, bran, and husk particles were studied. Overall, carboxymethylation increased solubility of the particles, while size reduction increased dispersibility. In particular, carboxymethylation created good aqueous suspensions by minimizing interparticle agglomeration. Our results show that the combination of size reduction and carboxymethylation improves solubility and dispersibility, resulting in better stability of the suspension. This study may be helpful for expanding the use of rice and its byproducts as ingredients in a variety of food and beverage applications.

Effect of Polyphosphates on the Growth of Penicillium griseofulvum and the Production of Patulin (Penicillium griseofulvum 성장과 Patulin 생성에 미치는 인산염의 효과)

  • To extend the shelf lives of rice and corn products, the effects of the polyphosphates[$Na(PO_3)n$, n=11] on the growth of Penicillium griseofulvum and patulin production were investigated. The growth was completely inhibited in the potatoes dextrose agar medium treated with 2% polyphosphate. Moisture content had a considerable influence on the production of patulin. At 30% moisture content, the amounts of patulin produced in rice and corn were $61.40 \mu g/ml$ and $40.74 \mu g/ml$, respectively, but the level of the toxin was significantly decreased to 93~95% by addition of 1% polyphosphates. No patulin was detected in both rice and corn medium added 2% polyphosphate when the incubation time prolonged. The result of scanning electron microscopy was supposed that the biocidal action of polyphosphate on fungi was related to the collapse of cell wall structure.

Quality Characteristics and Optimization of Rice Cookies Prepared by Substituting Salt with Spergularia Marina L. Griseb (소금대용 세발나물 첨가 쌀쿠키의 품질특성 및 최적화)

  • Purpose: This study was to determine the optimal composite recipe of rice cookie with 3 concentrations of Spergularia Marina L. Griseb, sugar and grape seed oil, using central composite design (CCD). Methods: The mixing condition of rice cookie was optimized by subjecting it to sensory evaluation and mechanical and physicochemical analysis using response surface methodology (RSM). Results: The results of mechanical and physicochemical analysis showed significant values for lightness, redness, yellowness, hardness, spread factor, loss rate, leavening rate, density, pH, moisture, sweetness and saltiness (p<0.05), and the results of sensory evaluation showed significant values for color, flavor, taste, texture, appearance and overall quality (p<0.05). As a result, the optimal sensory ratio was found to be 6.40 g of Spergularia Marina L. Griseb, 63.49 g of sugar and 106.19 g of grape seed oil. Conclusion: In conclusion, Spergularia Marina L. Griseb is a good source in natural antioxidant aimed at replacing salt, and it is possible to use in cookie or other food products to substitute salt.

Antimicrobial Properties of Paper Treated with Acidic Liquid from Carbonized Rice Hull (왕겨초액 처리지의 항균 특성)

  • Antimicrobial activities of the Acidic Liquid originated from Carbonized Rice Hull(ALCRH) and the paper treated with ALCRH were investigated to apply ALCRH to functional paper products as a natural antimicrobial agent. ALCRH showed antimicrobial activity for bacteria and yeast, with higher performance for bacteria than for yeast. Antimicrobial activity was not developed on paper coated with ALCRH by bar coater probably due to the evaporation of antimicrobial compounds of ALCRH from the paper surface with time. Saturation of paper with ALCRH was essential to develop antimicrobial activity on the paper. Dipping paper in ALCRH solution was recommended as one of the effective ways to make antimicrobial paper.

Correlations of Irrigation Water Quality to Yield and Quality of Rice Grain (관개용수 수질과 벼 수확량, 미질과의 상관관계 규명)

  • This study was carried out to investigate the effects of irrigation water pollution on the yield and grain quality of rice. It acquires fundamental data to set up water quality standards for irrigation and produce agricultural safety products. The correlations of BOD, T-N, T-P, pH, ECw of the irrigation water with yield, grain appearance quality, and the protein content were evaluated. The field and pot experiments were conducted by using Japonica of Oryza sativa L. during 2 years. BOD concentration in irrigation water effects strongly on grain appearance quality and yield of rice. T-N in irrigation water has strong effect on the yield, appearance, and quality of rice. T-P concentration in irrigation water have not any correlation with yield and quality of rice. pH showed strongly negative correlation with maturity ratio(MTR), 1000 grain weight(TGW), and yield of rice(YLD) as r=-0.803~-0.828(p<0.001) and have no effect on the appearance quality of rice. $EC_w$ indicating salt content showed strongly negative correlation with MTR, TGW, number of grains per panicles(NGP), and number of panicles per unit area(NPM) as r=-0.759~-0.798, and with YLD as -0.753.

A Study on the Improvement of Dietary Protein-efficiency by Supplement of the Panax Ginseng-by-products. (인삼의 부산물을 이용한 식의성 단백질의 효율 향상을 위한 연구)

  • Our nation is confronted with the situation that the rice, a principal food, short of some essential amino acids, leads to imbalanced meals insufficient in the nutrient of Protein, to bring many difficulties in the elevation of nutritional state in our nation. While. our country has been produced much amounts of Panax Ginseng roots which has a stimulating effects on the metabolism of protein, lipid and nucleic acids in the body. And the leaf and trunk of Panax Ginseng were also produced a considerable amounts as the by-products. Author believe that these by-products (leaf and trunk) of Panax Ginseng might have some components possessing simillar activity with Panax Ginseng root although the quantity and qualify of the functional components may more or less be different. Therefore, this study was demised to observe the supplemental effect of the Panax Ginseng-by-Products on the dietary protein efficiency and nutritional state of rats. The feeds used for this experiment were rice containing 30% barely, fish four, and the leaf, trunk and small root of the Panax Ginseng, and the contents of the general nutrients including protein, lipid and carbohydrate etc. in each feed were analyzed for the combination of each feed. And, being based on analytical values of Protein in food. fish Pour as Protein source was added were rice containing 30% barely to be include 8.6 to 8.7%, 12%, 15% and 18% of protein. Then 2% of the leaf, trunk or small reef of Panax Ginseng was supplemented into each of above protein diet group, ton 16 kinds of diets were Prepared. The male albino rats from a Pure strain, weighing 70g to 80g. were used for experimental animals. They were maintained with coresponding fist for f and 8 weeks, and the growth rate, consumption of diets and protein, efficiency of feed and Protein in animals were determined. The lipids, proteins and cholesterols in serum and liver were also determined quantitatively after they were sacrificed in coresponding term. The results obtained are summarized as follows: 1. Body weigh of diet group containing 8.6 to 8.7%,12%, and 15% of protein are increased remarkably by supplement of 2% of the leaf or small root of Panax Ginseng in comparison with each of controls. But this tendency could not observed in diet group containing 18eA Proteins. 2. Feed efficiency showed same tendency in comparison with changes of gained body weight. Specially, in each of diets containing 8.7%, 12%, 15% and 18% of Proteins, supplement of the leaf of Panax Ginseng showed the better feed efficiency than supplement of the trunk or small root. 3. In feeding group for 8 weeks, protein efficiency showed worst efficiency in diet containing 18% proteins and showed the best efficiency was the diet group containing 12% Proteins. And the efficiency was improved according to supplement of the leaf of Panax Ginseng. 4. Nitrogen contents in serum and liver did not show large differences each other in all diet groups. But contexts of total cholesterol and 1ipid were decreased markedly in diet groups containing 12%, 15% and 18% of proteins in comparison with diet group containing 8.6% to 8.8% of proteins.

Characteristics of Soil Nutrients by the Application of Rice Straw Ash (볏짚 회분의 토양적용에 따른 양분 특성 변화)

  • In this study physical and chemical characteristics of rice straw ash (RSA) were analyzed in agricultural by-products such as the characteristics of soil pH, electric conductivity (EC), total phosphorus (T-P), available phosphate (Avail-P), and cation exchange capacity (CEC). The results showed that RSA is of mainly C in 95.74% and followed by Si > Al > P > Mg > K > Ca. The pH of RSA was high near 11 and the T-P concentration was $2,322.38{\pm}10.35mg/kg$. The specific surface area of RSA was $123.50m^2/g$, which was much lower than that of biochar. The X-ray diffraction (XRD) analysis indicated that RSA were C and Si based crystalline. TCLP and KSLT test results implied that the heavy metal concentrations were below the environmental standards and would not impose the risks. T-P concentration increased from $225.59{\pm}12.69mg/kg$ to $593.39{\pm}17.36mg/kg$ along with RSA mixing ratio to soil from 0% to 15%. Both pH and EC values were increased with the increase of RSA ratio. The changes in Avail-P and CEC were not when RSA mixing ratio was 1%. whereas the Avail-P concentration was slightly increase when the mixing ratio was more than 5%. Additional investigation considering receiving soil characteristics based on the results of this study would help effective application of RSA to soil.

Effects of Moisture and Barrel Temperature of Extrusion Process on Physicochemical and Functional Properties of Specialty Rice Cultivars

  • Mutant rice cv. Goami2 (G2) and Baegjinjoo (BJJ) derived from a high-quality japonica rice cv. Ilpumbyeo (IP) were extruded under different feed moisture (20 and 30%) and barrel temperature (90, 110, and $130^{\circ}C$). Increasing feed moisture at fixed barrel temperature increased extrudate density (ED) in IP and BJJ. Whereas, G2 showed a varied ED depending on extrusion conditions; increasing barrel temperature decreased the ED of G2 extrudate with low feed moisture, but increased with high moisture. Results indicated a positive barrcl temperature effect on volume expansion in IP and G2, but a negative effect on 811, probably due to shrinkage of expanded products containing low-amylose contents. A significant increase of water absorption was found in G2 and BJJ extruded flour, while an increase of water solubility in those from IP. Non-digestible carbohydrates measured by total dietary fiber (TDF) indicated that extrusion increased slightly TDF in IP and BJJ extrudates, but decreased in G2 products, which might be variety-dependent.
