An experiment was conducted with 240 broiler chickens (ROSS 308) to evaluate the influence of supplementation of a probiotic feed mixture (PFM) including Bacillus subtillus, Streptomyces galilaeus, and Sphingobacteriaceae on growth performance and quality of chicken meats. Broiler chickens were randomly allocated to one of four treatment groups: 1) CON (no PFM as control), 2) CP3 (0.3% commercial probiotics), 3) PFM3 (0.3% PFM), and 4) PFM5 (0.5% PFM 0.5). They were then reared for 35 days. Body weight was significantly increased in CP3, PFM3, and PFM5 compared to that in CON (p<0.05). In addition, PFM3 and PFM5 had higher body weights then CP3 (p<0.05). Weights of F-sac, thymus, and spleen and IgG levels were significantly higher in CP3, PFM3, and PFM5 than those in CON (p<0.05). In addition, they were higher in PFM3 and PFM5 than those in CP3 (p<0.05). Broiler chickens fed diet with PFM3, PFM5, and CP3 also had higher numbers of Lactobacillus in cecum than broiler chickens fed CON diet (p<0.05). However, their numbers of E. coli, Salmonella, coliforms, and total aerobic bacteria were significantly reduced (p<0.05). Water holding capacity of breast meat was significantly improved in PFM3 and PFM5 compared to that in CON and CP3 (p<0.05). These results suggest that dietary 0.3% probiotic feed mixture including Bacillus subtillus, Streptomyces galilaeus, and Sphingobacteriaceae may improve growth performance and meat quality of broiler chickens.

The objective of this study was to compare the quality characteristics of chicken breast and thigh meat from North Korean native chickens (NKNC), South Korean native chickens (SKNC, woorimotdak), and commercial broilers (CB). NKNC thigh meat had a higher crude protein content than CB. In addition, the breasts of NKNC and CB had higher pH values than that of SKNC, but the cooking loss was higher in NKNC. The surface color of the breast and thigh meat of NKNC was darker and redder than that of SKNC and CB. The total collagen content of the breast and thigh muscles was the highest in NKNC, followed by SKNC and CB. A similar trend occurred with breast meat hardness. The content of arachidonic and docosahexaenoic acids was higher in both the breast and thigh muscles of NKNC than in those of the other groups, while the concentrations of linoleic and linolenic acids were higher only in thigh meat. Sensory evaluation did not show any differences among the three different strains of chicken except for the meat color. Sensory panelists preferred thigh meat from SKNC and CB to that of NKNC due to the strong dark color of the NKNC. Based on these results, NKNC had harder breasts based on texture, as well as a darker surface color and higher composition of long chain polyunsaturated fatty acids than CB. The quality characteristics of SKNC tested in this study were intermediate between NKNC and CB; however, SKNC may have a better chance of acceptance by Korean consumers due to the undesirable color of NKNC.

The aim of this study was to investigate the effect of adding curcumin-steviol glycoside complex (CSG) on the growth performance and meat quality of white semi broilers. A total of 60 one-day-old white semi broilers with an initial body weight (BW) 40.0 ± 0.2 g were used in a 5-week experiment. The three treatments were as follows: 1) CON; basal diet, 2) T1; CON + 0.5% CSG and 3) T2; CON + 1.0% CSG. Each treatment consisted of 5 replicate cages with 4 broilers per cage. In 0 - 2 weeks, the supplementation of 1.0% CSG in the diets significantly increased (p < 0.05) the BW and decreased the feed intake (FI), thereby improving the feed conversion ratio (FCR) compared to the CON group. For meat quality, the T2 group showed a higher water holding capacity (WHC) and lower drip loss (DL) and cooking loss (CL) compared to the CON group (p < 0.05). For meat color, the T2 group showed a significantly lower lightness (L*) and yellowness (b*) than that of the other treatment groups (p < 0.05). In the sensory evaluation, the meat color and texture in the T2 group were significantly improved (p < 0.05) compared with those of the other treatment groups. As a result, the acceptability of consumers was ameliorated. In conclusion, this study shows that the supplementation of CSG improved the growth performance and meat quality in white semi broilers. This study suggests that 1.0% CSG is the optimal level in the diet.
This experiment was conducted to evaluate the effects of feldspar on growth performance and body composition in broiler chicks. A total of 120 one-day old 'Ross' broilers were assigned to 5 treatments in a completely randomized design. The five dietary treatments were control, antibiotic(0.05% chlortetracycline), feldspar 0.5, 1.0, 1.5% diets. The weight gain of broilers fed a diet containing 1.5% feldspar (2,088 g) was significantly (P<0.05) higher than control (1,888 g). The feed intake was significantly increased in feldspar treatments compared to that of the control (P<0.05). However, feed conversion ratio was significantly increased in 1.0% feldspar treatment compared to that of the control (P<0.05). The moisture and protein contents of meat were significantly increased in 1.0% feldspar treatment (75.69 and 15.22%) compared to that of the control (73.38 and 9.80%). However, the crude fat content of meat was reduced in feldspar treatments compared to control and antibiotics treatments (P<0.05). The TBA value of meat in feldspar treatments was significantly reduced compared to that of the control (P<0.05). The plasma cholesterol content was 129 mg/dL in 0.5% feldspar and 134 mg/dL in 1.0% feldspar treatments, which were significantly higher (P<0.05) than that of the control (103 mg/dL).
A total of 225 day-old broiler chicks (43.08 g initial body weight) were allotted to three dietary treatments for a 6-week feeding trial. The treatments were 1) Control (defatted rice bran; DFRB), 2) fresh rice bran (FRB) and 3) rancid rice bran (RRB). Rice brans were intentionally spoiled by two degrees of rancidity by the values of free fatty acids (FFA): 7.6% (FRB) and 16.3% (RRB). Diets were prepared on an isonutrient basis, and defatted or rancid rice brans were included 5 and 10% for starter (0-3 week) and finisher (3-6 week), respectively. At the end of the feeding trial, six chicks per treatment were sacrificed, and thigh meats were ground and stored at $1^{\circ}C$ for thiobarbituric acid reactive substances (TBARS) and peroxide value (POV) analyses. For a digestibility, 48 growing chicks (4 weeks old) were employed in cages (3 replicates/treatment, 2 birds/cage) according to the experimental design: FRB, RRB, pelleted and extruded rice bran. Some of the FRB were pelleted ($70^{\circ}C$) or extruded ($110^{\circ}C$). There was no significant difference in growth performance during the starter period, but chicks fed a diet containing DFRB grew faster (p<0.05) with increased feed intake (p<0.05) than those fed diets containing rice brans, FRB or RRB, during the finisher period. Feed conversion ratio in the RRB was inferior (p<0.05) to the DFRB. Between rice bran groups, weight gain was higher (pco.os) in FRB than in RRB during finisher period. There was a similar trend in growth performance of chicks for the overall period (0-6 week) as the finisher period. Dry matter and energy digestibilities were higher (p<0.05) in extruded than in RRB group. Protein digestibility was improved (p<0.05) when rice bran was extruded, but not pelleted. The chicken meats from RRB showed higher (p<0.05) TBARS than those from FRB during storage for 4 weeks at $1^{\circ}C$. In conclusion, it would appear that feeding rancid rice bran gave negative effects on growth performance and lipid stability of meat in broiler chicks.
The experiment was designed as a 3 × 3 × 2 factorial arrangement of treatments, including (i) pomegranate peel (zero, 4%, and 8 percent), (ii) oxidized soybean oil (zero, 2%, and 4 percent), and (iii) alpha-tocopherol (zero and 200 mg/kg). Supplementation of 8% pomegranate peel in diets significantly decreased the growth performance of broiler chickens. The supplementation of 4% oxidized oil in diets significantly reduced body weight gain and Feed intake whole experimental period (p < 0.05). The results showed that supplementation of 4% pomegranate peel in the diet was associated with low aspartate transaminase (AST), alanine transaminase, and malondialdehyde (MDA). However, 4% pomegranate peel increased the total antioxidant capacity (TAC) and superoxide dismutase (SOD) and glutathione peroxidase (GPx) activities. The supplemental 4% oxidized oil increased the serum AST, alanine aminotransferase (ALT), and MDA concentrations. TAC, SOD, and Catalase (CAT) activities were affected by 4% oxidized oil and alpha-tocopherol. The use of oxidized oil and vitamin E decreased MDA concentration. The serum glucose and globulin concentrations were significantly lower in the 8% pomegranate peel. The results showed that supplementation with 4% pomegranate peel in diets reduced serum low-density lipoprotein (LDL). The inclusion of 4% oxidized oil in diets reduced serum glucose and increased the blood lipid concentration such as triglyceride, cholesterol and LDL. Vitamin E supplementation reduced the serum cholesterol and LDL concentrations. The use of 8% pomegranate peel reduced red blood cell (RBC), hemoglobin, and packed cell value (PCV). The results indicated that supplementation with 8% pomegranate peel and 4% oxidized oil in diets decreased the immunoglobulin concentration in broilers. In addition, it was found that the inclusion of 4% pomegranate peel in diets resulted in higher IgG, IgM and total immunoglobulin. Pomegranate peel supplementation significantly decreased meat MDA concentration. Supplementation of 4% oxidized oil increased MDA of meat (p < 0.05). Vitamin E supplementation (200 mg/kg) significantly decreased MDA of meat (p < 0.05). Consequently, the results of this experiment showed that supplementation with 4% pomegranate peel had beneficial effects on broiler chickens. It was also found that feeding 2% oxidized oil in diets had no adverse effect on broilers.

This study was conducted to investigate the detection rate and serotypes of Salmonella spp. in conventional and welfare poultry farms. Ten welfare (five layer and five broiler) and 15 conventional farms (five layer and ten broiler farms) were visited to collect environmental samples for identification and serotyping of Salmonella spp. The detection rate of Salmonella spp. was higher in the welfare farms than in conventional farms in both layer and broiler farms. In layer farms, Salmonella spp. was detected in 0.76% (1 out of 130) of samples from one of five welfare layer farms, but was not detected in the five in conventional layer farms. No significan ifference (P>0.05) was observed between the welfare and conventional layer farms. In broiler farms, Salmonella spp. was detected in 10.5% (21 out of 200) of samples from four of five welfare broiler farms and 3.5% (7 out of 200) of samples from five of ten conventional broiler farms, and a significant difference (p <0.05) was observed between the welfare and conventional broiler farms. Among 29 Salmonella spp. isolates, five isolates were serotyped to Salmonella enterica subsp. Enteritidis (n=2), Salmonella enterica subsp. Grampian (n=1), Salmonella enterica subsp. Virchow (n=1), and Salmonella enterica subsp. Senftenberg (n=1). These results suggest that microbial risks could be higher in welfare farms than in conventional farms due to easy access to open-air areas, environmental enrichment, and reduced use of antibiotics. Therefore, continuous monitoring and surveillance for Salmonella spp. is necessary to improve the microbiological safety of poultry meat.

The current work was carried out to investigate the effect of crossbred Korean native chickens (KNC) on performance and meat quality. A total of 720 chicks (1d of age) was used in this work and were divided into groups by crossbreds (A, B, C and D) and sex (male and female). Crossbreds were A) (KNC egg-meat type C strains ${\times}$ KNC meat type S strains) ${\times}$ Ross broiler, B) (KNC egg-meat type C strains ${\times}$ KNC meat type H strains) ${\times}$ KNC meat type S strains, C) (KNC native R strains${\times}$KNC meat type S strains)${\times}$KNC meat type H strains and D(White Semibroiler Chickens). Experimental diets consisted of 3 phases such as starter (0~5 weeks; CP 20.0%, ME 3,050 kcal/kg), earlier (5~8 weeks; CP 18.0%, ME 3,100 kcal/kg) and finisher (8~12 weeks; CP 16.0%, ME 3,150 kcal/kg). They were fed the broiler diets for 12 weeks at the flat house and thirty six chickens were slaughtered at week 5 and 10. There was no significant difference on the fertility of crossbred KNCs, and the hatchability of B crossbred was low compared to other crossbreds. On body weight (BW), D crossbred resulted in a higher BW after 5 weeks (P<0.05). Body weight gain (BWG) and feed intake (FI) of A crossbred were also significant higher compared to the other crossbreds for all periods. On carcass ratio (CR), A crossbred showed higher CR at 5 weeks, there was no significant among crossbreds at 10 weeks. The partial meat ratio(ala, breast, neck, leg) of C crossbred was the lowest among other crossbreds (P<0.05), but the back meat ratio was not difference among treatments at 5 and 10 weeks. pH of meats have no difference among crossbreds at 5 week, and A crossbred was high compared to other crossbreds at 10 week (P<0.05). The moisture content of D crossbred meat and the protein content of B crossbred meat were high compared to other crossbreds at 5 week. Chemical compositions of meats have no difference among crossbreds at 10 week. Lightness and redness have not significance among crossbreds at 5 week, and redness of A crossbred was the highest among all crossbreds (P<0.05). Shear force and cooking loss of A crossbred were high at 5 week, and cooking loss of A crossbred was low compared with other crossbreds at 10 week. These results suggested the basic data that needed to develope the new strains.
This study were carried to investigate to the effects of diet supplemented with pine needle powder on pH, total phenol contents, DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), shear force, sensory evaluation, meat color, and fatty acid composition of chicken meat. Broiler chicks were fed the corresponding diets containing 0% pine needle powder (Control), 0.3% pine needle powder (T1), 0.6% pine needle powder (T2), or 0.9% pine needle powder (T3) for five weeks. The pH and TBARS was significantly decreased by the supplementation of pine needle powder compared to the control (P<0.05). The total phenol contents and DPPH radical scavenging activity were significantly increased by the supplementation of pine needle powder compared to the control (P<0.05), and T3 showed the most effective (P<0.05) more effective in improving self-life compared to the other treatment groups. The CIE $a^*$ value of treatment groups showed significantly higher value compare to the control, however, CIE $L^*$ values was decreased. In fatty acid composition, the level of oleic acid in chicken meat was significantly (P<0.05) increased by the supplementation of pine needle powder compared with the control group. In conclusion, dietary supplementation of pine needle powder was effective in decreasing pH and TBARS, and increasing total phenol contents and DPPH radical scavenging activity in broiler meats.
This study were investigated the effects of dietary supplementation of yacon by-products and mugwort powder on performance, carcass characteristics, pH, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), shear force and meat color of broiler thigh meat. Broiler chicks were fed diets for five weeks containing 0% yacon by-products and mugwort powder (Control), 0.5% yacon by-products powder (T1), 1.0% yacon by-products powder (T2), 0.5% mugwort powder (T3), and 1.0% mugwort powder (T4). There were no significant difference in performance among treatments, but mortality was decreased in diets by the supplementation of yacon by-products and mugwort powder than that of control. The total cholesterol, LDL-cholesterol and triglyceride of control were higher than treatment groups and HDL-cholesterol of control was lower than treatment. The TBARS was significantly decreased by the supplementation of yacon by-products and mugwort powder compared to the control (P<0.05), especially, mugwort powder treatment group was significantly (P<0.05) more effective in improving freshness compared to other treatment groups. The WHC and shear force were not significantly different. CIE $L^*$ and $a^*$ value of treatment groups showed significantly higher value compared to the control, however, no difference in the CIE $b^*$ values was observed among treatment groups. In conclusion, a supplementation of yacon by-products and mugwort powder were effective in decreasing TBARS, total cholesterol and LDL-cholesterol and increasing HDL-cholesterol concentration. Mugwort powder supplementation was most effective.

② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
