Chicken Breeding with Local Breeds in China - A Review

  • This paper reviews the meat-type chicken breeding with local breeds in China. The quality chickens are defined as purebred final products of local breeds, and semi-quality chickens as crossbreds of local breeds with specialized broiler (sire or dam) lines from western breeding organizations. The present status of the chicken production and the market in China, in comparison with the western countries, is reviewed, indicating that there is large market demand for (semi-) quality chickens in the present and future China. Breeding for (semi-) quality chickens emphasizes the sensory quality of chicken meat. The present status of breeding for (semi-) quality chickens with the local breeds is illustrated, including breeding goals and the existing breeding programs. The potential role of local breeds in breeding programs in China is discussed in relation to both providing higher quality (than commercial hybrid broilers) of chicken meat for the local market and meeting the objectives of genetic resource conservation. Besides, further research topics on breeding for (semi-) quality chickens are suggested.

Carcass and retail meat cuts quality properties of broiler chicken meat based on the slaughter age

  • This study aimed to determine the carcass and meat quality of broiler chickens based on the slaughter age (28, 30, 32, and 34 days). The carcass characteristics included live and carcass weights, carcass rate, dressing rate, and retail cut weight. The meat quality properties were determined through proximate composition, pH, color, water holding capacity (WHC), cooking yield, and shear-force. The broiler chicken live, carcass, breast, thigh, and wing weights significantly increased with the slaughter age (p < 0.05); the tenderloin weight also exhibited a similarly increasing trend. However, the carcass rate of the day 28 sample was significantly lower than the other samples (p < 0.05). The protein and ash contents of the breast exhibited an increasing trend with increasing slaughter age. The protein content of the thigh of the day 28 sample was significantly lower than that of the other samples (p < 0.05), while the ash contents of the day 28 and 30 samples were significantly lower. The redness of the breast showed an increasing trend, and the pH and lightness of the thigh exhibited a decreasing trend with slaughter age. The WHC and cooking yields of the day 30 and 32 breast and thigh samples were significantly higher than those of the day 28 and 34 samples (p < 0.05). The breast and thigh shear-force of the day 30-34 samples were significantly higher than those of the day 28 sample (p < 0.05). The present study showed that even with a twoday difference in slaughter age, the broiler chicken meat quality showed a significant difference in several characteristics.

Comparison of Quality Traits of Meat from Korean Native Chickens and Broilers Used in Two Different Traditional Korean Cuisines

  • With the aim of investigating the differences in the quality traits between Korean native chicken (Hanhyup, KNC) and broilers commonly used in two different traditional Korean cuisines, the chemical composition and sensory properties of breast and thigh meat from the two chicken strains were assessed. KNC for baeksuk (chicken meat braised in soup with various Oriental medicinal plants; KNL), KNC for samgyetang (similar to baeksuk but young chickens and ginseng are used; KNS), broiler for baeksuk (BL), and broiler for samgyetang (BS) were used as treatments in this study. KNL and KNS contained higher protein but lower fat content than BL and BS. The $L^*$ values of breast and thigh meat, but not the $a^*$ values, were significantly different between KNS and BS, whereas significant differences in both values were observed between KNL and BL. Compared to the other three types of chickens, KNS contained the highest total and insoluble collagen content, and KNL and BL showed higher inosine-5'-monophosphate content in their meat. Overall, KNL and KNS contributed darker, less tender meat with higher protein and less fat content together with more n-3 fatty acids, as opposed to their counterparts used for the same cuisines. Based on the results of the sensory analysis, even though there are some differences in physiochemical traits, different chicken sources do not differ in overall sensory quality. This information can help consumers to understand better the meat available for their preferred traditional cuisines.

  • 본 연구는 닭 품종(18일령 브로일러, 49일령 산란종 병아리, 35일령 백세미)별 원료육으로 제조한 춘천 닭갈비의 품질을 비교하고자 실시하였다. 품종간 향기 패턴의 차이는 없었지만, 백세미육 닭갈비가 색깔이 진하고 붉었으며, 저장 기간 중에 지방산화 안전성이 높고, 관능검사에 의한 기호성이 높았다. 그러므로 세 품종 중에서 백세미육으로 제조한 춘천 닭갈비의 품질이 가장 우수하였다.

닭고기의 품질 및 맛에 관한 계피 급여효과 (Effect of Dietary Cinnamon Powder on Savor and Quality of Chicken Meat in Broiler Chickens)

  • 브로일러에서 계피의 첨가급여가 브로일러의 성장능력, 혈액지질, 도체특성, 닭고기의 품질특성 및 계피맛, 향과 관련한 닭고기의 맛에 미치는 영향을 연구하였다. 병아리는 CNP를 함유하지 않은 대조구, CNP 2.0%, CNP 3.0%, CNP 4.0% 및 CNP 5.0% 첨가구로 구분하였다. 브로일러의 사료섭취량, 사료효율은 대조구와 비교할 때 처리구간 차이가 없었으나 체중은 CNP 3% 이상으로 첨가수준이 증가함에 따라서 유의적인 개선을 나타냈다(p<0.05). 혈액의 중성지방, HDL-C는 대조구에 비해서 CNP 첨가수준이 높아질수록 증가하는 경향을 나타냈으나, 총 콜레스테롤, LDL-C는 뚜렷하게 감소하였으며 각 처리구간 통계적 유의차가 있었다(p<0.05). 도체율은 CNP 첨가구가 대조구에 비해서 높았고, 닭 다리살은 CNP 3.0% 이상에서 증가하였으며, 닭 가슴살은 CNP 2.0%와 4.0% 첨가구가 높은 경향이었다(p<0.05). 닭 가슴살의 pH는 대조구와 비교하여 유의차가 없었으나, 보수력은 CNP 4% 이상 첨가수준이 높아질수록 증가하였고, TBARS는 CNP 3% 이상 첨가수준이 높아질수록 유의적으로 낮아졌다(p<0.05). 닭 가슴살의 육색은 CNP 첨가수준이 3% 이상 증가할수록 대조구에 비해서 더욱 밝은 색을 나타냈다(p<0.05). 닭 다리살 튀김과 삶은 닭 가슴살에서 계피와 관련한 맛, 향에 대한 관능평가 성적은 대조구와 비교할 때 CNP 첨가수준이 높아질수록 유의적으로 높게 나타났다(p<0.05). 본 실험에서 나타난 중요한 점은 브로일러 사료에 계피를 첨가 급여해줌으로써 닭고기의 도체특성과 맛을 개선할 수 있다는 사실이었다.

활성탄의 첨가가 계육의 지방산, 육색 및 무기물에 미치는 영향 (Effect of Additions of Supplemental Activated Carbon on the Fatty Acid, Meat Color and Minerals of Chicken Meat)

  • 본 연구는 활성탄을 사료에 첨가하여 그 첨가수준(0, 0.6, 0.9, 1.2%)에 따라 계육의 지방산 조성, 육색, 무김루의 변화를 검토하고자 broiler 48수를 공시하여 6주간 실험하였으며 특히 지방산과 무기물의 함량에 어떤 영향을 미치는가에 대하여 연구의 초점을 맞추었다. 대조구에 비해서 활성탄 0.6, 0.9%의 첨가구에서 oleic acid, arachidonic acid의 함량이 유의적으로 많았으며(p<0.05), 또한 활성탄 첨가수준에 따라 L*, a*, b* 값의 변화는 없었고, a* 값은 부위에 따라 유의성에 인정되었다(p<0.05). 활성탄 첨가수준에 따른 무기물 변화는 대조구에 비해 활성탄 첨가수준에 따른 무기물 변화는 대조구에 비해 활성탄 첨가구에서 Ca, Mg, P 함량이 많았으며(p<0.05) 총 무기물 함량은 활성탄 첨가구에서 많은 경향이었다. 따라서 본 연구의 결과 활성탄을 첨가하면 지방산은 oleic acid와 arachidonic acid 그리고 총무기물함량이 많아지는 경향이라고 결론 지을 수 있겠다.

사료에 Conjugated Linoleic Acid 첨가수준이 계육의 품질에 미치는 영향 (Effects of Various Levels of Conjugated Linoleic Acid Supplementation on the Quality of Chicken Meat)

  • 본 연구는 CLA를 육계사료에 첨가하여 그 급여수준(0, 0.5, 1.0, 1.5 및 2.0%)에 따라 CLA를 급여한 계육의 일반성분, 관능평가, pH, TBARS, 가열감량, 보수력, 전단력 및 육색의 변화를 검토하고자 육계 200수(Arbor Acre Broiler, male)를 공시하여 사양한 후 대퇴부위 근육을 이용하여 분석하였다. 계육의 일반성분 중에 조단백질 함량은 1.5%와 2.0% 급여구에서 유의적으로 높은 함량을 보였고(p<0.05), 수분, 조지방 및 조회분은 CLA 급여에 의한 영향은 없었다. 관능평가 결과 연도, 다즙성, 육향의 유의적인 차이는 관능검사요원에 의해 감지되지 못하였다. pH는 대조구보다 CLA 급여구에서 높게 나타났다(p<0.05). TBARS는 CLA 급여구에서 유의적으로 낮은 결과를 보였고, CLA급여량이 증가할수록 낮은 TBARS값을 나타내어(p<0.05), CLA는 계육의 저장성의 향상 가능성이 보였다. 보수성과 전단력 및 육색은 처리구간에 유의성이 없었다. 결론적으로 CLA를 급여함으로서 육질 변화 없이 2%까지 CLA 급여 가능성이 있는 것으로 판단되어 차후 CLA 급여에 의한 계육의 CLA축적에 관한 추가 실험이 필요하다고 생각된다.

Comparison of Growth Performance, Carcass Characteristics and Meat Quality of Korean Local Chickens and Silky Fowl

  • This study was conducted to compare growth performance, carcass characteristics and meat quality of 4 breeds of local chicken. A total of 480 1-d-old chicks were distributed to 16 pens, with 4 treatments of breed, 4 replicates and 30 chicks per pen. Three Korean local breeds of white-mini broiler, Hanhyup-3-ho, and Woorimatdag, and a breed of silky fowl were raised under identical rearing and feeding conditions for 31-d, 37-d, 36-d, and 59-d, respectively. The BW and feed consumption on a pen basis were weekly measured for all pens, and ADFI, ADG and gain:feed were calculated for each pen. The ADFI and ADG of 3 breeds of Korean local chicken were greater than those of silky fowl (p<0.05). Within the Korean local breeds, ADFI of white-mini broiler was the highest (p<0.05), and ADG of Hanhyup-3-ho and white-mini broiler was the highest (p<0.05). Gain:feed of silky fowl was less than that of the 3 breeds of Korean local chicken. The carcass and breast yield of white-mini broiler were the greater than those of other breeds (p<0.05). The breast meat color (CIE $L^*$, $a^*$, and $b^*$) of 3 breeds of Korean local chicken were higher than that of silky fowl (p<0.05). The breast meat of Hanhyup-3-ho had greater cooking loss (p<0.05), whereas water holding capacity and pH were less than those of other breeds (p<0.05). The color score of 3 breeds of Korean local chicken was higher than that of silky fowl (p<0.05). Woorimatdag had a higher score on tenderness (p<0.05), whereas flavor score was less than that of other breeds (p<0.05). In conclusion, 4 local breeds of chicken have some unique features and seem to have more advantages, and this information can help consumers who prefer healthy and premium chicken meat.

브로일러에 대한 감마리놀렌산의 급원으로써 달맞이꽃종자유와 삼씨유;닭 껍질, 다리살 및 가슴살 지질의 지방산 조성에 미치는 영향 (Evening primrose oil and hemp seed oil as an ${\gamma}-linolenic$ acid source for broiler;Influence of fatty acid composition of chicken skin, thigh and breast muscle)

  • The objective of this study was to determine the effect of dietary oils on the levels of the ${\gamma}-linolenic$ acid in chicken meat lipids. Three hundred ten five, 1-d old, male, Ross strain, broiler chicks were fed for 35 d to compare diets containing evening primrose oil(EPO) and hemp seed oil(HO) to a control diet. Fatty acid composition of lipid from chicken skin, thigh and breast muscle were determined at the end of the trial. The level of ${\gamma}-linolenic$ acid of lipids from chicken meat fed diets containing EPO or HO was significantly higher than that of the control group(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken skin was highest in the group, which had been fed the EPO 0.85%, followed in order by EPO 0.7%, 0.5%, EPO mixed oil, HO and HO mixed oil. There was a significant difference in the level of ${\gamma}-linolenic$ acid of chicken skin between the control and treatment groups(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken thigh muscle was also similar to skin, and significantly higher than that of the control group(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken breast muscle was highest in the group, which had been fed the EPO 0.5%, followed in order by EPO 0.7%, 0.85%, HO 0.5% and HO mixed oil. There was a significant difference in the level of ${\gamma}-linolenic$ acid of chicken breast muscle between the control and treatment groups(p<0.05).

Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

  • Objective: An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens. Methods: Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42. Results: Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05). Conclusion: The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.
