This study aimed to enhance the quality of broiler breast meat by adding pig skin collagen to feed. A total of 50 Ross 308 broilers were classified according to the following feeding regime for two weeks: basal diet (NC), basal diet+0.1% fish collagen (PC), basal diet+0.1% pig skin collagen (T1), basal diet+0.5% pig skin collagen (T2), and basal diet+1.0% pig skin collagen (T3). The moisture content was the highest in the PC group, and the protein content was the lowest in the T1 group (p<0.05). The fat content was higher in the T1 and PC groups, whereas the ash content was higher in the T3 group (p<0.05). Drip loss was the highest in the NC group and the lowest in the T2 group (p<0.05). Lightness was low in groups T2 and T3, redness was low in groups T2 and PC, and yellowness was low in groups T1, T2, and PC (p<0.05). The collagen content of the chicken breast was the highest in the T3 group, and that of the skin was the highest in the T1 group (p<0.05). The texture characteristics of springiness, cohesiveness, chewiness, and hardness were the highest in the T3 group (p<0.05). In conclusion, the supplementation of a broiler diet with pig skin collagen was found to increase the collagen content of the breast meat, indicating the improved quality of the broiler breast meat.
Objective: The objective of this study was to determine the appropriate amount of eri silkworm pupae meal (Samia ricini) to add to the broiler diet. Methods: Two hundred 1-day-old male chicks with initial weight at 50.03±0.56 g/chick were divided into four groups (five replicates per group and ten chicks per replicate): a control group fed a corn-soybean diet and experimental groups supplemented with 5%, 10%, or 15% eri silkworm pupae meal. All experimental diets were isocaloric and isonitrogenous and formulated respecting nutrient requirements. Growth performances were collected during the experimental period and other parameters were collected at the end of experiment when broilers reached thirty-eight days old. Results: A higher cold carcass weight and skin yellowness in the broilers fed 10% eri silkworm pupae meal compared with the other groups (p<0.05). Therefore, supplementation with 10% eri silkworm pupae meal is suggested for the broiler diet formulation because it did not cause any serious negative consequences on growth performance, health status, carcass characteristics and meat quality. However, the usage of eri silkworm pupae meal at 15% is not recommend because it led to negative outcomes Conclusion: The addition of eri silkworm pupae at 10% can be used as an alternative protein sources for broiler chickens which provided benefits on cold carcass weight and skin yellowness without adverse effects.
This study was conducted to investigate tiamulin (TML) residues in the edible tissues of orally dosed broiler chickens and to re-establish the withdrawal time (WT). Thirty-six healthy Ross broiler chickens were administered 0.5 (TML-1) and 2.5 kg (TML-2) per ton feed, respectively, of the drug containing TML 78 g/kg for 10 days. Twenty-four tissue samples were collected from 6 chickens in each of the TML-1 and TML-2 groups on 0, 1, 3, and 5 days after drug administration, respectively. The residual concentrations of TML were measured using liquid chromatography-tandem mass spectrometry (LC-MS/MS). The correlation coefficient of the calibration curves was 0.9978 to 0.9998, and the limits of detection and the limits of quantification (LOQ) were in the range of 0.03 to 0.06, and 0.1 to 0.2 ㎍/kg, respectively. Recoveries ranged between 89.0% to 116.7%, and the coefficients of variation were less than 13.9%. After the drug administration, TML in the TML-1 and TML-2 groups was detected above the LOQ in 1 and 6 samples of liver, respectively, at day 0, and in 1 liver sample from both groups on day one. At 3 days after administration, TML was detected below the LOQ in all samples of TML-1 and TML-2. The calculated WT of TML in both TML-1 and TML-2 using the WT calculation program WT 1.4 was 0 days. In conclusion, the developed analytical method is suitable for detection, and the calculated WT of TML in poultry edible tissues is shorter than the current recommended WT of 7 days for TML in broiler chickens.
The objective of this study was to compare the physicochemical and nutritional properties of breast and thigh meat from commercial Chinese crossbred chickens (817 Crossbred chicken, 817C), imported commercial broilers (Arbor Acres broiler, AAB), and commercial spent hens (Hyline Brown, HLB). The crossbred chickens, commercial broilers and spent hens were slaughtered at their typical market ages of 45 d, 40 d, and 560 d, respectively. The results revealed that several different characteristic features for the three breeds. The meat of the 817C was darker than that of the other two genotypes. The 817C were also characterized by higher protein, lower intramuscular fat, and better texture attributes (cooking loss, pressing loss and Warner-Bratzler shear force [WBSF]) compared with AAB and HLB. The meat of the spent hens (i.e. HLB) was higher in WBSF and total collagen content than meat of the crossbred chickens and imported broilers. Furthermore, correlation analysis and principal component analysis revealed that there was a clear relationship among physicochemical properties of chicken meats. With regard to nutritional properties, it was found that 817C and HLB exhibited higher contents of essential amino acids and essential/non-essential amino acid ratios. In addition, 817C were noted to have highest content of microelements whereas AAB have highest content of potassium. Besides, 817C birds had particularly higher proportions of desirable fatty acids, essential fatty acids, polyunsaturated/saturated and (18:0+18:1)/16:0 ratios. The present study also revealed that there were significant differences on breast meat and thigh meat for the physicochemical and nutritional properties, regardless of chicken breeds. In conclusion, meat of crossbred chickens has some unique features and exhibited more advantages over commercial broilers and spent hens. Therefore, the current investigation would provide valuable information for the chicken meat product processing, and influence the consumption of different chicken meat.
본 논문은 지렁이를 이용한 계분처리 그리고 지렁이를 이용한 계육 및 계란의 생산과 안전성에 관한 연구에 대해서 정리하였다. 1. 대구교육대학교 내 지렁이가 계분을 양질의 물질로 전환시키는 친환경 계사가 만들어졌다. 2. 높은 단백질 함량과 균형 잡힌 아미노산 및 양질의 지방산을 포함하는 지렁이 분말은 단위동물의 사료원으로 최상이다. 3. 육계의 사료 중 $0.2{\sim}0.4%$의 지렁이 분말의 첨가는 사료 중 단백질 소화율을 개선시켜서 생산성을 증가시켰다. 4. 산란계에서의 지렁이 분말 $0.2{\sim}0.6%$ 첨가는 산란성적을 개선시켰으며, 계란의 질 특히 난황중의 n-6/n-3의 균형을 개선시켰다. 5. 지렁이 분말 중에 As, Cd, Cr, Hg 및 Pb 등의 중금속이 소량 검출되었으나 이 지렁이 분말을 사료첨가제로 먹고 생산된 계육과 계란에서는 상기에 제시한 중금속이 검출되지 않았다. 그러므로 지렁이 분말을 첨가제로 생산된 계육과 계란은 중금속의 축적에서 안전하다고 할 수 있다. 5. 본 연구에서는 지렁이는 친환경 축산에도 매우 중요한 소재로 활용가능하다는 것을 시사하였다.
Protozoan parasite, the genus Eimeria, causes an intestinal disease, coccidiosis, in young broilers. Coccidiosis induces significant economic loss in poultry production. This study was designed to identify the prevalence of Eimeria spp. in broilers in Gyeonggi province, Korea. Fecal samples from broilers at 94 farms were collected in two chicken slaughterhouses between March and June 2015. Eimeria infection was determined by microscopic examination and PCR using ITS-1 region. The prevalence of Eimeria was 58.5% (55 of 94). E. acervulina was identified in 96.4% of samples, E. tenella in 81.8%, E. maxima in 12.7%, E. praecox in 12.7%, E. brunetti in 5.5%, E. necatrix in 1.8%, and E. mitis in 1.8%. Body weight (BW) of broilers infected with both E. tenella and E. acervulina ($mean=1.53{\pm}0.19^Bkg$) was significantly lower than broilers with E. acervulina positive/E. tenalla negative ($mean=1.74{\pm}0.07^Akg$) or Eimeria negative ($mean=1.65{\pm}0.15^Akg$) (Duncan's multiple range test, P<0.01). High prevalence of Eimeria tenella and the impact on the broiler body weight shows the importance of this protozoa in broiler industry. Development of the periodic monitoring strategy and systemic management for the purpose of the prevention/eradication of Eimeria infection among broilers is required.
Nitrogen and phosphorus are major nutrients in animal feeds which partially remain in the environment as pollution. In addition, nitrogen and phosphorus along with energy are the main nutrients which determine the feed cost. Any decreases in the levels of these three nutrients can contribute to reducing the pollution problem as well as the cost of feed. The nutrient requirements for chickens in the work here reported should allow for the addition of mixed enzymes (phytases, proteases, glucanases, xylanases and others). Such minimal levels of crude protein in the research results which are here reported are 16% for 0-6 weeks of age, 13.5% for 7-12 weeks of age, 11.5% for 13-18 weeks of age for layer type chicks, 13% for layer, 18% for 0-3 weeks of age broiler and 16.5% for 4-7 weeks of age broiler. These research projects have been done without adding enzyme supplements to their experimental diets. The minimal values of phosphorus, shown as available phosphorus, are 0.25% for pullets, 0.09% for layers and 0.25% for broilers with the addition of phytase. The minimum energy requirement (metabolizable energy) for reducing the feed cost could be summarized as 2,750 kcal per kg feed for pullets, 2,800 kcal for layers and 2,700 kcal for broilers.
A study was conducted to develop a new analytical method to quantitate chicken dietary fiber (CDF). Four types of grain diets and 2 types of forages were used. Three broiler chicks at eight weeks of age were used in the Latin square design to estirnate the in vivo digestibility. Six quantitative analytical methods (Southgate method, total dietary fiber or TDF, acid detergent fiber or ADF, neutral detergent fiber or NDF, crude fiber or CF) including CDF were compared in this study. ADF, NDF and CF contained the lowest amount of the unavailable carbohydrate(UC). The value of TDF was higher than the values of ADF, NDF and CF and lower than CDF and the Southgate method. The value of NDF showed the lower values than the CDF, Southgate fiber and TDF. The recovery rate of the fiber in the feces was high in the TDF, ADF, NDF and CF, while CDF and Southgate fiber showed lower recovery rates. TDF, NDF, ADF, or CF can replace chromium in the digestibility test, while the CDF and Southgate fiber can not replace chrorniurn. The digestibility of TDF, NDF, ADF and CF in the chicken showed negative values or values close to zero depending on the types of feed but the digestibility of CDF and Southgate fiber showed relatively high positive values.
Effects of addition of a mycotoxin detoxifier in poultry feed were studied in broilers. Aflatoxins were present in the poultry feed as 28 ppb (normal feed), 78 ppb (contaminated feed) and 170 ppb (highly contaminated feed). The mycotoxin detoxifier was used in 3 concentrations i.e. 1, 3 and 5 kg/ton of feed. Aflatoxins reduced the body weight in broiler chicken and treatment of contaminated feed with low level of detoxifier improved the body weight equivalent to that of normal feed. Higher level of detoxifier proved better than lower level addition in alleviating the effects of highly contaminated feed. Addition of detoxifier also resulted in improvement of FCR to the level of normal feed. Antibody levels against Newcastle disease virus on day 28 of age were significantly lower in chicken fed on contaminated feed. Addition of detoxifier in feed improved the antibody levels in chicken. Mortality was highest in groups given contaminated feed throughout the study period of 7 weeks. Significant mortality was also observed in groups given highly contaminated feed for 2 weeks. Mortality in chicken given detoxifier added contaminated feed was lowest and similar to the group given normal feed. The study shows that mycotoxin detoxifier containing oxyquinol, dichloro-thymol and micronized yeast can effectively neutralize the ill-effects of aflatoxins in poultry feed.
Genetic and pharmacological studies in mice have demonstrated a complementary role for the melanocortin 4 receptor (MC4R) in the control of food intake, energy balance and body weight. This study was designed to investigate the associations of a MC4R gene polymorphism on chicken growth and body composition traits in broiler lines divergently selected for abdominal fat. A SNP (G54C) was found in CDS region of chicken MC4R gene. The analysis of the least squares and variance revealed a significant association between the G54C SNP and BW, CW and SL at 7 wk of age, and there were significant differences in different genotypes (p<0.05). The results from protein secondary structure prediction and tertiary structure prediction showed that it appeared a helix in $13^{th}$ amino acid and two strands at $14^{th}$ and $15^{th}$ amino acid in mutant protein, respectively. It maybe induce the change of the activity or function of MC4R gene in poultry.
