도정도에 따른 찹쌀발효주의 이화학적 특성 및 휘발성 향기성분 (Physicochemical Characteristics and Volatile Compounds of Glutinous Rice Wines Depending on the Milling Degrees)

  • 원료 찹쌀의 도정도가 발효주에 미치는 영향을 조사하기 위해 0% 도정찹쌀을 대조군으로 수율 기준으로 10, 20, 30% 도정한 찹쌀을 이용하여 발효주를 제조하여 이화학적 특성 및 휘발성 향기성분을 비교하였다. 원료 찹쌀의 도정도에 따른 조지방 함량은 도정도가 증가할수록 감소하게 나타났고 17일 발효 후 최종 알코올 함량과 아미노산은 0% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났고 도정도가 증가함에 따라 감소하였다. pH는 0% 도정찹쌀을 원료로 한 발효주가, 총산은 10% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났으며 고형분 함량, 착색도, 자외부 흡수 및 환원당 함량은 30% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났고 도정도가 증가할수록 높아지는 경향을 보였다. 유기산 중 malic acid와 acetic acid는 30% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났으며 succinic acid와 lactic acid는 0% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났고 도정도가 증가할수록 감소하는 경향을 보였다. 유리당에서 maltose와 glucose는 30% 도정찹쌀을 원료로 한 발효주가 가장 높게 나타났고 도정도와 함께 증가하는 경향을 보였으며 fructose는 도정도가 증가할수록 감소하는 경향을 보였다. 따라서 원료 찹쌀의 도정도를 달리한 발효주는 도정도가 증가할수록 알코올 함량과 아미노산은 감소하였고 고형분 함량, 착색도, 자외부 흡수, 환원당은 증가하였으며 이러한 결과는 맛 성분 중 입안의 중량감과 단맛을 나타내는 유리당 함량은 증가하고 상큼하고 신맛을 나타내는 유기산 함량은 감소하는 결과를 보여주었다. GC와 GC-MSD를 사용한 휘발성 향기성분 분석 결과, alcohol 7종, ester 39종, acid 6종, aldehyde 1종, alkane 4종, alkene 1종, 기타 2종으로 60종이 검출되었다. 술의 주성분인 ethyl alcohol을 제외하고 hexadecanoic acid ethyl ester의 면적비율이 가장 높게 나타났고 달콤하면서 견과류향 특성을 나타내는 decanoic acid ethyl ester의 면적비율이 그 다음을 나타냈다. 도정도가 증가할수록 과일, 와인 향 특성을 나타내는 hexanoic acid ethyl ester, 2-octenoic acid ethyl ester의 면적비율은 증가하는 경향을 보였고 향은 거의 없고 부드럽고 달콤한 oil 특성을 나타내는 ethyl oleat, ethyl linoleate와 succinic acid diethyl ester, isoamyl laurate의 면적비율은 감소하는 경향을 나타냈다. Ester류 외에 도정도가 증가할수록 acid류 중 propanoic acid의 면적비율은 증가하였고 n-caprylic acid의 면적비율은 감소하였으며 alcohol류 중 1-hexanol과 2,3-butanediol의 면적비율은 증가하게 나타났다.

원료백미의 분쇄정도가 무증자 당화 탁주의 발효에 미치는 영향 (Effect of Ground Rice Particle Size on the Brewing of Uncooked Rice Tsckju)

  • Uncooked rice Tackju was prepared from the groud rice with different particle size such as 12, 20, 35 and 50 mesh, and its characteristics were analysed during the brewing. Reducing sugar and ethanol contents as well as yeast cell counts were the highest in main mash and Tackju prepared from 20 mesh fraction. Especially, reducing sugar content was about. 1.5-2.5 times as much as that obtained from 35 or 50 mesh fraction. The final concentration of ethanol in main mash prepared from 20 mesh fraction was 14.8%(v/v). It was about 1.5%(v/v) higher than the lowest one [13.35%(v/v)] which was prepared from 12 mesh fraction. No significant difference In total acidity was observed. Sensory evaluation revealed 20 or 35 mesh Tackju to be the best in overall preference, especially in sweet and refreshing tastes.

막장의 아미노酸 組成에 關한 硏究 (Studies on the Amino Acids Composition of Makjang)

  • Amino acid composition of Makjang was determined by combined usage of ion exchanged resin and paper chormatography in the following states. a. A fraction soluble in water b. Hydrolysate of the whole Makjang c. Same as a. (p.p.t. formed by tungstic acid or trichloroacetic acid being removed) d. Hydrolysate of c. (T and TCA) By comparing amino acid composition of Makjang with that of its raw material, we found that decomposition of essential amino acids during brewing is slight. From the amino acid composition of a,b,c,d, we discussed the ratio of amino acid liberation during brewing and assumed that Makjang contains peptide-like substances composing of glutamic acid and aspartic acid.

한국산 효모의 분류학적 연구 (Taxonomical studies of yeasts in Korea)

  • The author attempted the taxonomical studies on yeasts in Takju mash. The samples used for the isolation of yeasts were collected from Takju breweries in Seoul. The yeasts obtained from Takju were identified as follows using the methods of Lodder et al. ; Saccaromyces cerevisiae group II, Saccharmyces cerevisiae group III, other group of Saccharomyces cerevisiae, Hansenula anomala and Pichia polymorpha. Saccharomyces cerevisiae II & III and other group Saccharomyces cerevisiae which were considered as wild yeasts have shown their major role in the fermentation process of Takju brewing. It seems that Hansenula anomala has much connection with the flavour of Takju. Other strains which are poor in their acoholic fermentation and lower in activity of acid production are not considered to be important in Takju brewing.

곰팡이 균종을 달리한 밀가루 누룩의 탁주양조 적성 (Aptitudes for Takju Brewing of Wheat Flour-Nuluks Made with Different Mold Species)

  • The purpose of this study was to examine the aptitude of wheat flour-Nuluks, for Takju brewing, which were made with Aspergillus oryzae, Rhizopus japonicus or Aspergillus usamii mut. Shirousamii, and to know the way of effective use the Aspergillus oryzae-Nuluk showed high saccharogenic activity, and Rhizopus japonicus-Nuluk high proteolytic activity. When these two Nuluks were combined, the activities of saccharogenic amylase and protease were more balanced. The Takju mash of Aspergillus oryzae-Nuluk was high in acidity and in amino acidity, and that of Rhizopus japonicus-Nuluk high in the content of free sugar, but, that of Aspergillus usamii mut. Shirousamii-Nuluk was low in amino acidity, free sugar and ethanol content. The Takju of Rhizopus japonicus-Nuluk was high in the content of suspended solid and slow in its sedimenting rate, but that of Aspergillus usamii mut. Shirousamii-Nuluk was not. The Takju which was made with combined use of Aspergillus oryzae-Nuluk and Rhizopus japonicus-Nuluk was more balanced in the composition of flavoring ingredients, and was slow in sedimenting rate of suspended solid. Moreover, it gained good result in sunsory evaluation test.

식품산업 발전사 - 국내 맥주 양조사 (History of Korean brewing industry)

  • During the Japanese colonial period, Japanese brewing companies established 2 breweries in Korea, and brought in malting barley seeds, began trial cultivation in near Daejeon area and Jeju Island, and cultivated hops in Hyesan, Hamgyeong-do. In 1933, Chosun Brewery Co. Ltd. and Showa-Kirin Brewery Co. were established in Yeongdeungpo by Japan and these 2 breweries became the birthplace of today's Hite Brewery and Oriental Brewery. Oriental Brewery tried to cultivate hops and malting barley in Korea, and once self-sufficient but now hops depend on imports, and production of domestic malting barley is about 5% of demand. Beer was only about 5% of domestic alcohol consumption in the early 1970s, but now occupies more than 50% and became the most popular alcoholic drink in Korea. Recently various beers are imported from the world, and many craft breweries serving variety of beers to consumers, thus Korean enjoy heyday of the beer culture.
