As a part of basic investigation for utilizing cultured eel and by-products as a food source, a mineral contents and fatty acid composition of bone and flesh were investigated. Flesh of cultured eel was higher in moisture and crude protein content, and lower in crude ash and lipid content than those of the bone. Mineral of bone were measured 220.72 mg/100 g of Ca, 169.87 mg/100 g of P, 117.05 mg/100 g of Na,92.75 mg/100g of K, 6.18 mg/100g of Cu,5.02 mg/100 g of Zn,2.56 mg/100 g of Fe, and flesh were measured 120.23 mg/100g of CL 150.36 mg/100 g of P, 136.36 mg/100 g of Na, 89.36 mg/100 g of K, 4.02 mg/100 g of Cu, 1.71 mg/100 g of Zn,2.03 mg/100 g of Fe. The major fatty acid in bone and flesh of cultured eel were generally oleic acid $(44.40\%, 43.76\%)$, palmitic acid $(24.19\%,\;21.30\%)$, palmitoleic acid $(8.18\%,\;7.72\%)$, eicosapentaenoic acid $(5.72\%,\;6.65\%)$, myristic acid $(3.96\%,4.34\%)$ in order. The fstty acid composition of total lipid was no significant difference among bone and flesh of cultured eel, However, bone of cultured eel revealed higher content in saturated and monounsaturated fatty acid, while lower in polyunsaturated fatty acid than those of the flesh. It is shown that cultured eel contains various nutrients such as protein, minerals, unsaturated fatty acid, so cultured eel can be regarded as a highly nutritious food.

This study examined the effects of maternal calcium intake levels on mineral metabolism during pregnancy and lactation. Five week-old female Sprague-Dawley rats were fed normal Ca (NCa, 0.5%) and low Ca (LCa, 0.15%) diets for 5 weeks during preconception. The low Ca intake group was divided into three groups and fed low Ca (0.15%), normal Ca (0.5%) and high Ca (1.5%) diets for 6 weeks during pregnancy and lactation. All of the rats were mated with normal male rats. The control group was consistently fed a normal Ca diet for 11 weeks. Pups were adjusted to 10 per dam. After weaning, dams and their weaned rats were sacrificed. We measured total protein, albumin, alkaline phosphatase and mineral content in serum and weight, length, breaking force, ash and mineral content in bone and kidney. There was no significant difference in weight gain and food intake among the groups. Serum total protein and albumin were in the normal range but slightly decreased with a low Ca diet during preconception. Calcium supplementation above normal level increased bone weight, Ca content and breaking force in femur of maternal and their weaned rats. However, high maternal Ca intake significantly decreased Mg and Fe contents in maternal serum and bone and Mg and Zn contents in serum of weaned rats. Also, it induced Ca, P and Mg deposit in maternal kidney. Our experimental results suggest that Ca deficiency during preconception may deteriorate bone status of mother and their offsprings. Moreover, high Ca supplementation during pregnancy and lactation may lead to disturb mineral metabolism in bone and other tissues.
Thig study was conducted to get a knowledge on chemical components of the cooked tuna bones (skipjack tuna bone and yellowfin tuna bone) as a food resource. The crude protein of tuna bone was around $29{\%}$ on the dry basis. The imino acid content (193 imino acid residues /1,000 amino acid residues) of collagen extracted from yellowfin tuna bone was higher than that (173 imino acid residues /1,000 amino acid residues) of collagen extracted from skipjack tuna bone, however, it was lower than that of collagen extracted from animal bone. The content and the ratio of unsatuated fatty acids in lipid extracted from yellowfin tuna bone were higher than those of lipid extracted from skipjack tuna bone, but they were lower than those of squid viscera oil. The contents of calcium and phosphorus as the major components of the tuna tone were 36.5 g and 17.2 g in 100 g ash in the skipjack, respectively, and 38.0 g and 18.7 g in 100 g ash in the yellowfin, respectively. It was concluded from these results that tuna bones could be effectively utilized as a mineral source.
It is controversial whether low calcium intake, commonly associated with osteoporosis, results in calcium accumulation in soft tissues. This study was conducted to investigate the effects of low calcium (Ca) and oxalate (ox) intake on soft-tissue Ca deposits and bone metabolism in ovariectomized (ovx) rats. Eight week old female Sprague-Dawley rats were ovariectomized and divided into four groups. The rats were fed experimental diets containing low (0.1%, w/w) or normal (0.5%, w/w) Ca with or without sodium oxalate (1%, w/w); Sham/NCa, Ovx/NCa, Ovx/LCa, Ovx/NCa-ox, Ovx/LCa-ox for 6 weeks. All ovx rats showed a remarkable increase in body and tissue weight, glutamic oxaloacetic transaminase, glutamic pyruvic transaminase, blood urea nitrogen, alkaline phosphatase, and decreases in weight, ash, and Ca contents, as well as bone breaking force compared to those in sham rats. Serum Ca concentration was not significantly affected by dietary Ca levels or ox intake. Kidney Ca, ox acid content, and microscopic Ca deposition increased remarkably in the Ovx/LCa-ox group compared to those in the other groups. Ca content in the spleen and aorta also increased significantly, but the weight contents, Ca, bone breaking force, and Ca and oxalic acid in feces decreased significantly in the Ovx/LCa-ox group. Serum parathyroid hormone levels were not significantly different among the groups. These results indicate that low Ca intake decreased bone mineral content and increased Ca deposits in soft tissues, which was aggravated by ox intake in ovx rats. Thus, high ox intake may result in a kidney disorder in patients with osteoporosis who eat a low Ca diet.

The effects of slaughter age (28, 32, or 38 mon) on the proximate composition, collagen content, fatty acid composition, amino acid content, and mineral contents of horse leg bone (femur and tibia) extracts (HLBE) obtained from Jeju crossbred horses (n=14) in Korea. HLBE was extracted for 24 h with boiling water. At those ages, the respective proximate compositions of the HLBE were found as follows: 5.20-6.42% crude protein; fat 0.61-1.65% crude; and 0.10-0.22% crude ash. At 32 and 38 mon, the HLBE showed higher levels of both crude protein and collagen than at 28 mon. The major fatty acids of the horse leg bone extract powder (HLBP) were palmitic acid and oleic acid. Palmitoleic acid and the essential fatty acids were higher in the HLBP at 38 mon compared to that at 28 mon. Nearly all the amino acids were found at higher levels in the HLBP at 38 mon than at 28 mon, except histidine. The P, K, Zn, Se and Fe contents in the HLBP increased significantly with age. These results suggest that some nutrients in the HLBE increase with age, and that extracts from horses older than 32 mon would be more nutritious for human consumers.

The low Ca intake group was then divided into three groups and fed low Ca (0.15%), normal Ca (0.5%) and high Ca (1.5%) diets for 3 weeks (pregnancy). All of the rats were mated with normal male rats. The control group was fed a consistently normal Ca (0.5%) diet during pre-pregnancy and pregnancy. On the day after delivery, dams and their pups were sacrificed. We measured total protein, albumin, alkaline phosphatase and mineral content in serum and weight, length, breaking force, ash and mineral content in the femur and lumbar (L2-L4) of the dams. Whole body mineral content was measured in the pups. There was no difference in weight gain and food intake among the groups. Serum total protein and albumin were in the normal range but a little lower during pregnancy. High Ca supplementation decreased serum Mg and Fe during pregnancy. Weight, ash and Ca of the femur and lumbar significantly decreased in rats fed a chronically low Ca diet during pre-pregnancy and pregnancy. Calcium supplementation levels were above normal during pregnancy and increased the bone weight and breaking force of rats fed the low Ca diet during pre-pregnancy. However, Ca supplementation did not increase the ash and Ca contents in the bones. High Ca supplementation during pregnancy significantly decreased Mg in the bones and increased Ca and P in the kidneys. Ash content of pups from dams fed the chronically low Ca diet decreased but there was no difference in whole body Ca among the groups. Mg and Fe in the whole body decreased in pups from dams fed the high Ca diet. Pregnancy performance was reduced in dams fed the low Ca diet. These results suggest that above normal Ca supplementation levels during pregnancy restored maternal bone status to some extent in rats fed the chronically low Ca diet. The same could not be said for mineral content. Also, high Ca supplementation during pregnancy may deteriorate mineral composition in bones and other tissues. Therefore, more detailed research is needed to facilitate sound recommendations on appropriate calcium intake during pregnancy. (Korean J Nutrition 36(5): 459∼469, 2003)

The study surveyed 653 people who have been blood pressure measuring and body feature in postmenopausal women received BMD test. The statistical analysis was done using the SPSS 12.0 for windows and the study using comparison analyzed at ANOVA, X 2. linear regression analysis, the following conclusions were made. As a result of analyzing the relationship between BMD and Cardiovascular Risk Factor were found to be a positive significant component(p<0.001) height, weight, BMI. After the analyses of the age, systolic blood pressure, diastolic blood pressure, total cholesterol, high density lipoprotein cholesterol, triglyceride and glucose were shown to be a negative significant component(p<0.001). Weight was the one that was mostly affected BMD(18.7%). As a result of analyzing the relationship between BMD and Cardiovascular Risk Factor had a significant component at all. According to the problem with osteoporosis in women is becoming a major issue in society. The study is considered to be tried to make phased and, better organized to establish preventive strategies and warranted causes of osteoporosis.
The purpose of this study was to determine whether there are relationships between radiologic parameters for osteoporosis by the proximal femur radiograhps and bone mineral density, as assessed by Dual Energy X-ray Absorptiometry(DEXA). Proximal femur anterior-posterior projection were taken from 112 individuals who undergoing DEXA. Radiographic parameters including canal-to-calcar ratio(CCR) and cortical thickness indices(CTI) were measured and compared with bone mineral density($g/cm^2$), T-score. The intramedullary femoral canal width(FW) and calcar width(CW) at osteoporosis group was significantly larger than that of control group. The CCR were correlated negatively with bone mineral density($g/cm^2$)(r=-0.340, p<0.01), and the CTI were correlated positively(r=0.624). The diagnostic accuracy of CCR for osteoporosis was 63.4%, and kappa value was 0.271. And the accuracy of CTI was 67.0%, and kappa value was the level of fair agreement(${\kappa}$=0.258). The proximal femur with large CCR and small CTI had lower T-scores. When evaluating proximal femur anterior-posterior radiographs, those patients with the thinnest femur diaphyseal cortices should be referred for further osteoporosis investigation.
This study was carried out to investigate the effects of diverse dietary Ca levels and to determine whether bone mineral metabolism is influenced by the arnount of dietary Ca when given a choice of diets containing various levels of Ca. Forty Hy-line brown laying hens housed in separate cages were fed self-selected Ca diets. Birds were allowed a 7-day adaptation period followed by an 8-day collection period. Feed and water were available for ad libitum consumption. Eggs and excreta were collected at 6-h intervals during the day for mineral analysis. The Ca contents in excreta and retained Ca in the body on egg forming day were proportional to the amount of daily Ca intake. The retained Ca in the body were 0.97 g in control and 1.24~1.74 g in self-selected groups, respectively. Daily Ca contents (%) in tibial cortex were not consistent with feeding time intervals. The Ca content in tibial medulla in control group was lower than those of self-selected feeding groups(P<.05). The medullary Ca content in all treatment groups increased from 10:00 to 16:00 in a day. Ca content in plasma was low between 10:00 and 16:00 and was high between 22:00 and 04:00 in the following day.
