  • The effect of Phellinus linteus methanol extract on the lipid metabolism in the liver of rat was investigated in this study. Rats were randomly divided into 6 groups including the control, $CCl_4$and high fat group plus sub-groups with Phellinus linteus methanol extract administration. Methanol extracts of Phellinus linteus were fed 50mg/kg B.W daily via drinking water. A 1.2mL of $CCl_4/kg$ body weight was administered by oral intubation twice a week for total six times. The administration of $CCl_4$ increased total cholesterol, TG, LDL and LDL-phospholipid. However, the level of liver cholesterol and triglycerides were significantly decreased while HDL-cholesterol was increased by the extract feeding. The activities of GOT, GPT, AP and LDH were greatly enhanced by the extract feeding. Electronmicrograph showed that $CCl_4$ treatment deteriorated the structure of cytoplasmic matrix with its uneven distribution. However, the extract treatment reconstituted the damaged cytoplasm and stimulated mitochondriagenesis. From these results, it was suggested that Phellinus linteus can help to recover the damaged liver function and further may help to prevent senescence diseases such as fatty liver, hypertension and hyperlipidemia.

  • This study was conducted to examined the effect of dietary supplementation of yellow loess on the growth performance and blood component profiles in pigs. A total of one hundred fifty three pigs (60 one weeks old piglets and 93 adult pigs). Piglets were randomly divided into 3 groups which were control, control + 0.5% yellow loess, control + 1% yellow loess. We measured body weight and weight gain among treatment group. Indeed, we obtained hematological data with WBC, RBC, Hb, Hct, MCV, MCH, MCHC, RDW, and PLT in all loess supplemented group compared to the control. Adults were divided into 2 group (control and control + 1% yellow loess) and serum albumin levels in 1% yellow loess supplemented group was significantly higher than the control group (p<0.01). Amount of crude fat in feces was significantly reduced in yellow loess supplemented group (p<0.001), but no differences were observed at crude protein and crude ash in both groups. In carcass weight and back fat thickness, no significant differences were observed between control and yellow loess supplemented groups. The carcass grade was improved by the dietary supplementation of yellow loess compared to the pig fed control. As a results, dietary yellow loess improves nutrient absorption and carcass grade.

  • Botulinum toxin type A is widely used for anti-wrinkling therapy, and correction of the square face. The toxin ultimately prevent the release of membrane-bound acetylcholine at the neuromuscular junction of striated muscles and thus produce chemical denervation and paralysis of the muscles. Our purpose of study is to know if application of botulinum toxin type A on calf reduction is effective, how much dosage is effective, and what are the possible complications. We reviewed data of 30 consecutive patients subjected to calf reduction in Dong-A University Hospital from February 2003 to April 2003. We injected normal saline 2cc on both calves region in 15 control group patients, and the other patients was divided 3 group. Group 1, Group 2, Group 3 was injected 50U, 100U, 150U botulinum toxin A on each calf region and followed up for 6 month. Maximal circumference of calf was not changed in the control group but an average of 0.7 cm reduction was noted in group 1, average 1.34 cm(right calf) and 1.26cm(left calf) in group 2, average 1.44cm(right calf) and 1.58cm(left calf) in group 3. Maximal area of calf was not changed in the control group but average reduction of 12.5%(right calf) and 12.7%(left calf) was obtained in group 1, average 19.4% (right calf) and 19.9%(left calf) in group 2, average 24.8%(right calf) and 21.07%(left calf) in group 3, as measured on CAT scan. Total fat amount and fat amount in the lower extremity was no change in all the groups, but lean body mass was decreased average 1.27%(right calf) and 1.15%(left calf) in group 1, average 3.47%(right calf) and 2.98%(left calf) in group 2, average 3.58%(right calf) and 3.95%(left calf) in group 3. Photography of the preoperative and postoperative 6 month state revealed higher satisfaction in Group 2, 3 compared to Group 1. Use of botulinum toxin type A in calf reduction is a very simple, safe, non-invasive method and effective in terms of calf contouring rather than reduction of calf circumference.

  • In the present study, the effects of feeding different forage sources on the growth performance, meat production and meat quality of Hanwoo steers were evaluated using meta-analysis. In total 5 studies that were performed and published in the domestic journals in Korea were employed for the analysis. The results from nutritionally better quality roughage-based steers and rice straw-based steers in each study were assigned as a treatment and a control, respectively, and the mean difference between the treatment and the control was used for the evaluation of effect size. The summary effect was calculated using random effect model. As results, in growth performance, positive effects were found in feed intake, daily weight gain, final body weight and feed efficiency. The significant effect was found only in daily weight gain (p<0.05). In meat production, carcass weight, Longissimus dorsi area, yield index showed positive effect and negative effect was detected in back fat thickness. The significant effect in meat production was found in carcass weight and Longissimus dorsi area (p<0.05). In meat quality, positive effects were represented in marbling score and fat color. Meat color showed little effect. The significance for effects was not observed in the analysis of meat quality. In conclusion, feeding good quality forages to ruminants plays an important role in Korean beef cattle industry and hence further researches are necessary to improve the efficiency of forage utilization in Hanwoo cattle.

  • The purpose of this study was to explore the effect of fermented persimmon diet on the meat quality of fattening pigs. Pigs (75 kg) were grouped and housed as 15 animals per pen and 3 replications per treatment. The basal diet (C) was substituted with 3% (T1), 5% (T2) and 10% (T3) of fermented diet. The 180 pigs were fed experimental diet for 42 d and 10 longissimus dorsi (LD) per treatment were collected when each swine reached 105.6 kg of body weight. The crude fat concentration of LD was lower (p<0.05) in treatments, but the pH value of T3 and the shear force values of T2 and T3 were higher (p<0.05) than those of C. The CIE $L^*$ value (lightness) was significantly (p<0.05) higher in T2 and T3 than C, but the CIE $b^*$ (yellowness) of T2 and T3 was significantly (p<0.05) lower than C. The composition of myristic acid and oleic acid was significantly (p<0.05) higher in treatments than in C, while the composition of palmitic acid and stearic acid of treatments were significantly (p<0.05) lower than C in LD. Sensory evaluation of cooked meat as scores of aroma, taste, juiciness and overall acceptability showed higher (p<0.05) in treatments than in C. In conclusion, the dietary of fermented persimmon diet decreased the crude fat concentration, improved the fatty acids composition (increased composition of unsaturated fatty acid and decreased composition of saturated fatty acid) and improved the sensory evaluation of pork meat from fattening pigs.

  • We investigated the effects feeding illite on growth performance and meat quality characteristics in finishing pigs. Forty-eight pigs ($Landrace{\times}Yorkshire{\times}Duroc$; $68.3{\pm}1.6 kg$ average initial body weight) were used in a 50 day experiment. Pigs were randomly placed into one of four experimented diet groups (0, 0.2, 0.5 and 1% illite) and were slaughtered at approximately 110 kg live weight. Although there were no significantly differences in daily weight gain, feed intake and feed conversion between controls and groups fed illite, those values were increased as increasing of illite concentration in feed. Carcass weight, carcass ratio and backfat thickness were not affected by dietary illite supplementation. However, the percentage of A grade carcasses were significantly increased by dietary supplement of 1.0% illite. There were no significantly differences in moisture, crude protein and crude ash between controls and groups fed illite, but the crude fat of 1.0% illite supplemented groups was significantly lower than other groups (p<0.05). All muscles from control and treatment groups had normal pH 5.55-5.68. However, lightness ($L^*$) values of pork decreased as increasing illite supplement. Whereas red-ness ($a^*$) and yellowness ($b^*$) values were not significantly changed. In fatty acid composition, palmitoleic acid and linoleic acid were significantly higher in 1.0% illite dietary group, saturated fatty acid was decreased and unsaturated fatty acid was increased by 0.5-1.0% illite supplementation.

  • The purpose of this study was to investigate nutrient intake and food behavior according to the nutrition knowledge of middle school students residing in Seoul and Kyunggi-do, Korea. Anthropometric measurements and questionnaires, including 24-hr recall of dietary intake, were collected from 543 male and female middle school students. They were assigned to one of five groups according to their nutrition knowledge : very high group (VHG ; 90 - 100 score), high group (HG ; 80 - 90 score), normal group (NG ; 70 - 80 score), low group (LG ; 60 - 70 score) and very low group (VLG ; < 60 score), and comparisons were made. The mean age of the subjects was 13.7 years old. The mean height, weight, and BMI of male and female students were 161.9 cm, 52.6 kg and 20.2 kg/$m^2$, 157.0 cm, 50.4 kg, and 20.4 kg/$m^2$ respectively. Female students skip breakfast and dinner more frequently than male students do. Male students skipp lunch and eat fast foods more frequently than females do. Protein, calcium, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, fat, and animal protein intakes in females are shown to be related to their nutrition knowledge. Calcium, protein, animal protein, vitamin B$_2$and niacin intakes are significantly lower in the VLG than in the others. However, vitamin B$_1$and vitamin C intakes are significantly lower both in VHG and VLG. Fat intake in VHG is lowest. Nutrition knowledge of male students is correlated with mothers knowledge, nutrition attitude and nutritional status. On the other hand, in female students, nutrient consumption was lowest in subjects whose nutrition knowledge was highest and lowest. Therefore, nutrient consumption is affected by nutrition knowledge. However, in female students, possibly due to wrong information on diet or prejudice and outlook, nutrient consumption was low even when they scored high in nutrition knowledge. In conclusion, nutrition knowledge of male students is affected by the mothers nutritional knowledge and attitude. Therefore, nutrition education for mothers is very important. In male students, as their nutrition knowledge is low, their nutrient consumption is affect. These results indicate nutrition education and correct information for body image, balanced diet, regularity of meals and food selection for middle school students are required at both school and home.

  • In order to determine the residue levels of organochlorine insecticides in various meats consumed by Korean population, 80 samples of beef, pork and chicken were collected throughout the country and analyzed for their fat contents and pesticide residue levels. Organochlorine insecticides detected in the meat samples were ${\alpha}-BHC,\;{\beta}-BHC,\;heptachlorepoxide\;and\;DDE$. The average residue levels of the four pesticides on fat basis were 0.466 ppm in domestic beef, 0.145 ppm in imported beef, 0.264 ppm in pork and 0.106 ppm in chicken, in decreasing order of ${\alpha}-BHC>DDE>heptachlorepoxide>{\beta}-BHC$. Daily intake per person of the residues from meat by Korean population was estimated to be $1.0{\mu}g$ of total BHC, $0.1{\mu}g$ of heptachlorepoxide and $0.3{\mu}g$ of DDE. This level was far below the acceptable daily intake of organochlorine insecticides $(18\;{\mu}g/㎏\;body\;weight)$ as recommended by FAO/WHO.
