The object of this study was to investigate the effects of blanching and lactic acid bacterial inoculation on the quality of kimchi. The pHs of the group added Leuconostoc mesenteroides were rapidly decreased, and then kept almost steady states. However, the pHs of the groups added Bifidobacterium bifidum were gradually decreased. Blanching treatment reduced the number of viable cells. At the beginning of the fermentation, the total organic acid contents of the blanched groups were lower than those of the non-blanched groups, but later on they were higher. With fermentation, the contents of malic, citric and fumaric acid were decreased in the control group, but increased in the cultured groups and all blanched groups. The cutting forces of the blanched groups were higher than those of the non-blanched groups during the whole fermentation period. The inoculation of Leu. mesenteroides was effective on the preservation of ascorbic acid. Blanching and the inoculation of Leu. mesenteroides gave good effect on the sensory acceptability. The acceptability of the groups added Bifidobacterium bifidum was low in initial fermentation period, but increased during the late fermentation period.
Carotenoids in commercial green-yellow vegetables(carrot, mugwort, perilla leaf, leek and water dropwort) were analyzed by HPLC. Carotenoids detected were lutein, ${\alpha}$-carotene, and ${\beta}$-carotene. ${\beta}$-Carotene and lutein were detected in every sample analyzed, but ${\alpha}$-carotene could only be detected in carrot. Blanching vegetables in 3% saline increased the content of carotenoids, however, the components of carotenoids were not changed. This result suggests that blanching increases the amount of available carotenoids.

This study was conducted to investigate processing condition and characteristics of chestnut paste. The kinds of chestnut powder processed with blanching and drying of raw material were four named RH(not blanched, hot air dried), RF(not blanched, freeze dried), BH(blanched, hot air dried) and BF(blanched, freeze dried). Blanching affected the reduction of drying time in chestnut. Water absorption index of the blanched samples were higher than the nonblanched. Blanching affected the viscosity of pastes when water was added to process paste also, but drying methods did not affected to it. The proper ratio of water to the powder to process paste was 1.3 to 1.5 times in RH and RF, whereas 2.7 times in BH and BF by sensory evaluation. Soluble tannin content of paste was higher in RF and RH paste than BF and BH. Vitamin C content was the highest(88.49mg/100g) in RF paste and reducing sugar content was the highest in RF paste. Hunter's L and a values were the highest in BF and RH pastes, respectively, among the all paste samples. Volatile compounds detected from chestnutpastes were hydrocarbons, alcohols, phenols, ketones. The major volatile compound in all the pastes was 2,6 bis(1,1 dimethylethyl) 4 methyl phenol.
In order to enhance the firmness of retorted onion, long time, low temperature blanching(LTLT) in calcium solution was conducted. Pre-heating onion in calcium solution significantly improved its texture after high temperature sterilization as compared to conventional blanching alone. The improvement of the firmness by the LTLT blanching is related to the formation of strongly cross-linkages between carboxyl groups and divalent cations($Ca^{2+}$) by the action of pectin methy-lesterase(PME) in onion. A maximum firmness of retorted onion was obtained at the condition of pre-heating at $70^{\circ}C$ for 120min in 0.5%calcium solution. This result supports that the activity of PME and the content of bonded calcium in onion were highest at $70^{\circ}C$. Additionally, the reaction of alkali calcium with various divalent cations such as $Mg^{2+}$ provided a function to hydrolyze pectin molecules, resulting in firmer retorted onion in various calcium agents. Further investigation should be carried out to determine the optimal condition for prevention of tissue softening of various retorted vegetables.
This study analyzed the qualitative characteristics and antioxidant effect of Artemisia by experimenting its medicinal effect and functionality. Moisture content increased in proportion to heating time and decreased in reverse proportion to temperature and time. In the contents of mineral compounds, P was shown in the order of roasting temperature $230^{\circ}C$ > $80^{\circ}C$ > $110^{\circ}C$, and blanching condition was 0.50% in one and two minute treatment and 0.38% in five minute treatment. The contents of Ca didn't have significant differences according to the types of treatment. The contents of Fe were higher than general vegetables with 0.54~1.02 mg/100 g. The contents of phenolic compounds were highest in the control plot, followed by one minute blanching and roasting at $110^{\circ}C$ was the lowest. The intensity of electron donating ability was decreased in 14 minute blanching at $230^{\circ}C$. Based on the result of the study, roasting at low temperature and blanching which is Korean traditional method are desirable when cooking with Artemisia.

The thermal drying of chestnut powder showed a distinct discoloration from yellow to reddish brown color and resulted in a decrease in lysine content of chestnut protein. Chanted powders were blanched in hot solutions of 0.1% sodium bisulfate, 0.2% alum, 0.05% vitamin C and 0.1% citric acid and dried for 7 days in $50^{\cire}C$ of heatine drier. The color difference values in contrast with the original chestnut powder were 1.05, 1.24, 3.47 and 3.34, respectively. In particular, the effect of 0.1% potassium metabisulfide was distinguished. Under the blanching conditions used, a blanching period of 3 min resulted in the most favorable color of chestnut powder.
In this study Ragwort, which had various and excellent pharmacological activity, was selected as a functional material, and intended to present an optimum condition of Ragwort Injeolmi by the blanching method, commonly used in the field. The general components, antioxidation, and dietary fiber of Ragwort were analyzed, and produceableness of Ragwort added Injeolmi was reviewed through instrumental inspection and sensory evaluation of various adding ratio of lyophilized Ragwort power and Ragwort pre-processed by blanching. It was proved that the SOD-likely active of Ragwort was 45.69%, total poly- phenol content was 12.45 mg, and total flavonoid content was 10.25 mg. The pH of Injeolmi adding Ragwort powder showed an increasing trend in the order of 0%, 1%, 3%, 5%, while that of Injeolmi adding blanching Ragwort showed increasing trend in the order of 0%, 10%, 15%, 20%, and there were significant difference (p<0.001). The soluble solid content of all sample groups showed constant value, and it was understood that no sugar was added in the process. From chromatography measurement result, a-value (redness) of 1% sample group was the lowest, and there were significant differences among sample groups (p<0.001). During 3 days of storage period, total microbial count of Injeolmi showed increasing trend while the storage period was getting longer. From the acceptability test Injeolmi adding blanching Ragwort had shown generally higher value.
This study was conducted to devise appropriate blanching-process conditions as a means to convert Doraji, which is widely used in Korean food due to its unique fragrance and flavor, into frozen food materials for various uses. For the Hunter L values representing the brightness transformation among the surface color and gloss changes that were observed in Doraji before and after freezing, and after Doraji went through a blanching process, the specimen that went through a blanching process at $80^{\circ}C$ showed a significantly higher value compared to another specimen processed at a higher temperature, and the first specimen's value also rose after freezing. Meanwhile, for the hardness values, they declined more as the blanching temperature became higher and as the processing time became longer. For the number of total counts and the number of coliform groups, the number of total counts at $3.75{\times}10^5$ and $1.25{\times}10^5$ cfu/g before the blanching process was reduced into the approximately 2-3 log scale, and no coliform group was detected after the blanching process. As for the peroxidase activity, its activation was decreased by the blanching process, and more than 89% of the peroxidase became inactivated in all the specimens that went through the blanching process. The sensory characteristics of the frozen-thawed Doraji by test group showed the radish leaves blanched at $90^{\circ}C$ for 1 min to be the most highly evaluated in terms of the overall preference level (p<0.05).
Objective methods to assess quantitatively port wine stain (PWS) blanching in response to laser therapy are needed to improve laser therapeutic outcome. Previous studies have attempted to assess objectively PWS color based on point measurement devices. To date, these approaches have typically been limited by a number of factors such as small test area and need for contact. To address these issues, a polarization spectral imaging system and an image analysis method have been developed to evaluate quantitatively erythema and melanin content distribution in skin. The developed polarization spectral imaging system minimizes artifacts such as glaring, shadowing, and non-uniform illumination that interfere with image fidelity. Furthermore, the image analysis method has been employed to get images of skin melanin and erythema indices from the acquired color images for quantitative analysis. Finally, using PWS patient color image, the effectiveness in laser treatment of PWS was evaluated by calculating relative erythema index image that is the relative erythema index of PWS region to the normal region. The developed device and analysis method appears to be a simple and effective method for quantitative analysis of PWS blanching.

Changes in quality of blanched vegetables(carrot, green onion, spinach) by microwave heating were evaluated. Ceramic coating treatment(CCT) within microwave oven caused the reduction of blanching time and Hunter's L, a, b values of vegetables. Also, CCT showed the higher cutting force compared to NCCT after microwave heating. Photomicrographs of cross-section of blanched vegetables after heating in ceramic coated microwave oven showed better appearance than those in nonceramic coated microwave oven. CCT process improved retention of vitamin C.
