Seed Protein Content and Fatty Acid Composition of Black Seeded Soybeans Collected From Southwestern Islands (서남해안 검정콩들의 단백질과 지방산 조성변이)

  • A total of 135 black seeded soybeans genotypes were collected in 45 island locations from January to May 2001. Seeds of 135 genotypes collected were analyzed for crude protein and fatty acid compositions. The crude protein content was averaged to be 40.75%, and was ranged from 34.70% to 44.20%. The average palmitic acid, stearic acid, oleic acid, linoleic acid and linolenic acid content were 11.41%, 3.93%, 22.75%, 53.55%, and 8.35%, and the ranges of those were 9.00% to 14.40%, 2.90% to 5.00%, 22.75% to 26.50%, 50.30% to 57.20% and 6.7% to 11.20%, respectively. Heritabilities of palmitic acid, oleic acid, linoleic acid, and crude protein were higher, but that of stearic acid and linolenic acid were relatively lower, Crude protein content was correlated positively with oleic acid content, whereas it was correlated negatively with linoleic acid, palmitic acid, stearic acid, and linolenic acid contents.

  • For the enhancement of the concrete durability, we developed high - durable portland cement (ACTPC) by physical treatment of ordinary portland cement with asphalt and carbon black. In this research, the hydration reaction characteristics of ACTPC were studied by using SEM, X-Ray, Conduction Micro Calolimeter etc. When the ACTPC is mixed with water, it is believed the asphalt films on cement particles suppress the early stage of hydration reactions of cements, because the films hinder the contact with water and the elusion of soluble ions from particles. But the carbon blacks on the cement particles accelerated the hydration reactions of cement after a while, because the micro particles can be used as seed crystals in $CaO-SiO_2-H_2O$ gel formation.

Screening of Korean Medicinal and Food Plants with Antioxidant Activity (한국 약용 및 식용식물들의 항산화성 식물탐색)

  • Sixty medicinal and food plants native to Korea were mainly selected with old traditional habit and antioxidant activity was investigated. The 80% EtOH extracts of sixty medicinal and food plants were screened for antioxidant activity. Antioxidant activity was measured by the TBA (Thiobarbituric acid), DPPH (1, 1-Diphenyl-2-picrylhydrazyl), SOD (superoxide dismutase) which was evaluated by the nitro blue tetrazolium(NBT) reduction method. Among sixty plants, black Glycine max(87. 3%) and Solanum nigrum (80.6%) exhibited the highest antioxidant activity by TBA and DPPH methods, respectively. Also, 10 species extracts including black Glycine max showed the high activity value in these two methods. The SOD characteristics on black Glycine max seed extracts which showed the highest SOD activity (53.5%) exhibited four major SODs; two Cu/ZnSODs and two FeSODs. However, Adenophaora vertidllata which showed lowest SOD value (10.4%) had only Cu/Zn SOD. No varietal differences in the high SOD value were detected in the Cu/Zn SOD isozyme patterns.

Variations of Yield Components and Anthocyanin Contents in Soritae and Yakkong Black Soybean Landraces Collected from Different Areas

  • In this study, we cultivated 115 Soritae and 86 Yakkong black soybean landraces collected from ten different locations in Korea. Then, the variations of three yield components (one-hundred seeds weight (HSW), number of seeds per pod (SPP), and yield per plant (YPP)) and three anthocyanins (cyanidin-3-O-glucoside (C-3-O-G), delphinidin-3-O-glucoside (D-3-O-G) and petunidin-3-O-glucoside (Pt-3-O-G)) were investigated according to landrace type and collection area. Both yield components and anthocyanin contents significantly varied between the soybeans demonstrating genetic differences. Soritae landraces had the highest average HSW and TAC, whereas Yakkong landraces displayed the highest average SPP irrespective of collection area. Relatively, Yakkong landraces from Gyeongsangnam-do (1697.29 mg/100 g) and Soritae landraces from Gyeonggi-do (2340.94 mg/100 g) had the highest average TAC. Principal component analysis clearly separated Soritae and Yakkong landraces. Moreover, TAC and C-3-O-G showed positive and significant associations in both Soritae (r = 0.972) and Yakkong (r = 0.885) landraces, while yield components showed negative or weak correlations with each other. Overall, ten landraces were identified as important resources owing to their high yield (>150 g/plant) and high level of TAC (>2300 mg/100g). This study could lay foundations to molecular level investigations and reinforce the use of Yakkong and Soritae landraces during cultivar development.

Variation of Contents and Color Difference of Anthocyanin by Different Cultivation Year in Black Soybean Seed (재배연도에 따른 검정콩 종자의 안토시아닌 함량 및 색차변이)

  • This research was carried out to offer the basic informations about new varietal breeding for specific use and physiological characteristics through investigation of detection, content variation and color difference of anthocyanin individual pigments within seed coats in domestic black soybean. The seed of thirteen cultivars such as Geomjeongkong 1, Geomjeongkong 2, Seonheugkong, Tawonkong, Ilpumgeomjeongkong, Geomjeongolkong, Cheongjakong, Jinju 1, Heugcheongkong, Juinunikong-Y, Juinunikong-G, Geomjeongkong 3, Geomjeongkong 4 was tested. C3G (cyanidin-3-glucoside) was detected in only Geomjeongkong 1 and Seonheugkong but D3G (delphinidin-3-glucoside) and C3G were found in Heugcheongkong. The rest cultivars that there were three anthocyanins such as D3G, C3G, and Pt3G (petunidin-3-glucoside). Anthocyanin content of tested cultivars showed a high variation. The ranges of D3G, C3G, Pt3G, and TA (total anthocyanin) contents were $0.55\~2.63mg/g,\;2.77\~8.38mg/g,\;0.38\~5.65mg/g,\;and\;3.32\~16.92mg/g$, respectively. These contents showed variation among cultivars as well as variation between two years, 2001-2002. As a result of variation of anthocyanin color difference, the ranges of L (lightness), a (redness), and b (yellowness) as Hunter's value were $34.09\~42.89,\;12.77\!22.85,\;and\;5.36\~12.10$, respectively, and these color differences showed variation among cultivars and also variation between two years, 2001-2002. D3G, C3G, Pt3G, and TA showed reciprocally a positive correlation being representive of high significance.

Studies on the Regional Distribution and Some Morphological Characters of Buckwheat, Fagopyrum esculentum Moench, Grown in Chungnam Province (충남지역(忠南地域)에서 재배(栽培)하는 메밀종자(種子)의 몇가지 특성(特性)과 그 분포(分布)에 관(關)한 조사연구(調査硏究))

  • An investigation was made to find regional differences and seed characteristics of buckwheats collected from 36 areas in Chungnam province in 1984, and the results obtained are summarized as follows; 1. Grain types of the collected buckwheats were classified as winged, semi-winged and common types. All collections were on the average composed of 50.1 % of common grain types, 26.8 % of semi-winged type and 23.1 % of winged types, respectively. However, there was a great regional difference in components of each grain type among collections. 2. The mean 1000 grain weight was 24.9 gr. The regional differences in 1000 grain weight showed that a collection (collection no. 30) from Susan was 17.4 gr and a collection (collection. no. 16) from Suchon was 31.9 gr. There wasn't any significant relationship between grain types component and 1000 grain weight. 3. Germination of seeds was accelerated as temperature goes up from $5^{\circ}C$ to $30^{\circ}C$. However, interesting germination pattern was observed. That is, seeds from Suchon (collection no. 16), Hongsung (collection no. 23), Cheonweon(collection no. 35), and Yesan (collection no. 27) showed abrupt decrease of germination rate at the temperature of $15^{\circ}C$. The seeds collected from Suchon (collection no. 29), Dangjin (collection no. 32) and from Chungyang (collection no. 21) showed decrease of germination rate at $25^{\circ}C$. These seeds showed, however, the increase of germination percentage at temperature higher than $15^{\circ}C$ and $25^{\circ}C$, respectively. The germination rate for the most collections at $5^{\circ}C$ was less than 10%. However, seeds from Asan (collection no. 33) and Daeduk (collection no. 3) showed 20% and 30% of germination rate at $5^{\circ}C$, respectively. 4. Color of seed coat could be classified into two maj or colors, dark and dark brown. Based on the seed coat color and grain types, all the collections could be classified into the following six categories: winged-black, semi-winged-black, common-black, winged-dark brown, semi-winged dark brown and common-dark brown. The different light absorption rate was found within the UV light zone (190-390 nm) depending upon the two different major seed coat color.

Studies on the Improvement of Roasting Condition of Sesame Seeds for Producing Seed Season and Oil (볶음 및 참기름용 참깨 가공방법 개선에 관한 연구)

  • This study was carried out to find optimum roasting condition of sesame seeds for making seed season and oil treated with different temperatures and time intervals. Sesame seeds with 17~18% of moisture content were treated under fixed and changed roasting temperature conditions. The fixed temperatures are ranged from 160 to $240^{\circ}C$ with $20^{\circ}C$ intervals. The changed temperatures were treated at low(160 and $180^{\circ}C$) and medium(200 and $220^{\circ}C$) for 10 minutes, and at high(220 and $240^{\circ}C$) for 3 minutes. Meanwhile, roasting times were 20-30 minutes longer under low temperature condition and 3-5 minutes shorter under high temperature condition. The optimum roasting temperature and time were determined as $220^{\circ}C$ and 3 minutes for producing seed season, and as $220^{\circ}C$ and 5 minutes for sesame oil, respectively, in roasting with small quantity of sesame seeds. On the other hand, in the large scale roasting condition, those showed $240^{\circ}C$ and 15 minutes in for producing seed season, and $280^{\circ}C$ and 10 minutes and $260^{\circ}C$ and 15 minute for producing seed season in white-colored sesame variety and black-colored sesame variety, respectively.

Antimutagenic Effects of Extracts of Curry Powder and Its Individual Spice (카레분 및 향신료 추출물의 항 돌연변이 효과)

  • Antimutagenic effects of extracts from curry powder and its individual fourteen kinds of spices, were investigated by Ames test. The antimutagenic effects against a direct mutagen, 2-nitrofluorene(2 -NF) and two indirect mutagens, 2-anthramine(2-AT) and 2-acetamidofluorene (2-AE) in the S. typhimurium TA98 were tested. For the 2-NF, the antimutagenicity of cinnamon, fenugreek, fennel, ginger, clove, turmeric and celery seed were determined as 42, 38, 32, 28, 24, 23 and 20%, respectively. The antimutagenicity of clove against the 2-AT was the highest (116%), and followed by the order of celery seed(103%), cardamon(100%), red pepper(99%), cinnamon(92%), cumin(83%), ginger(82%), fennel(82%), coriander (71%), nutmeg(68%) and turmeric (55%). The results also showed that the antimutagenic effect of clove against the 2-AF was superior to other spices. In case of curry powder among more than 10 kinds of spices, the antimutagenenicity against the 2-AT and 2-AF showed 23% and 6%, respectively, but no effect was observed against the 2-NF.

A Comparative Study on Physiological Characters Between the Cultivar and Wild Plant in Amaranthus sp. (비름과(科)(Amaranthus sp.) 식물(植物)의 재배종(栽培種)과 야생종간(野生種間)의 생리학적(生理學的) 특성비교(特性比較))

  • The purpose of this comparative study is to investigate the differences of growth behaviors (height, weight, yield capacities etc.) and germination characters (induced photo-dormancy) among the three different species of Arnaranthus sp. The results obtained are summarized as follows. The growth of the cultivar of A.hypochondriacus was more vigor than that of the wild plant of A.retroflexus during the whole life cycle. The fresh weight, dry weight, yield capacity of A.hypochondriacus were much more higher than those of the others two species (A.retroflexus and A.Cruenthus). There are very different germinability formation and induced dormancy patterns between the cultivar and wild plant during seed formation periods. The cultivar of A.hypochondriacus was not induced primary dormancy in the any seed formation stages but wild plant of A.retroflexus was induced deep true dormancy. We suggested that these differences occured by the sum of different absorption of solar energy spectrum by the different seed colors between the cultivar (white color seed) and wild (black seed). And we confirmed the different absorption spectrum of the three different Arnaranthus sp. seeds.

Comparison of Soyasapogenol A, B Concentrations in Soybean Seeds and Sprouts

  • Soybean seeds contain many biologically active secondary metabolites, such as proteins, saponins, isoflavones, phytic acids, trypsin inhibitors and phytosterols. Among them, saponins in soybeans have attracted considerable interest because of their health benefits. Soyasaponin A and B are the most abundant types of saponins found in soybeans along with soyasapogenol (aglycone), which is a precursor of soyasaponin. The main purpose of this experiment was to determine the concentration of soyasapogenol in soybean seeds and sprouts as a function of seed size, usage, seed coat color and seed cotyledon color. The 79 Korean soybean varieties were cultivated at Yesan of Chungnam in 2006 for the analysis of soyasapogenol using HPLC with Evaporative Light Scattering Detection (ELSD). The total average concentration of soyasapogenol was $1313.52{\mu}g\;g^{-1}$ in soybean seeds and $1377.22{\mu}g\;g^{-1}$ in soybean sprouts. Soybean sprouts were about 5% higher than soybean seeds in average total soyasapogenol concentration. In the process of sprouting, the average soyasapogenol A content decreased by approximately 1.6%, but soyasapogenol B and total soyasapogenol increased by 8.31% and 4.88%, based on the content of soybean seeds. When classified according to the size of seeds, the total soyasapogenol concentration of soybean seeds were not significantly different (p<0.05) On average, small soybean seeds were increased by as much as $103.14{\mu}g\;g^{-1}$ in sprouting process. As a function of the use of the seeds, The total soyasapogenol in soybean seeds were significantly different (p<0.05). While, the soybean sprouts were not significant different (p<0.05). Altogether, sprout soybean seeds show the greatest change in content during the germination process. When seeds with different coat colors were compared, the total soyasapogenol concentration of soybean with yellow seed coats ($1357.30\mu g\;g^{1}$) was slightly higher than that of soybean with black ($1260.30{\mu}g\;g^{-1}$) or brown ($1263.62{\mu}g\;g^{-1}$) seed coats. For the color of the cotyledon, the total soyasapogenol concentration was significantly increased in green cotyledon during the germination and seedling process. The results of this study suggest the functional characteristics of soybeans through quantitative analysis of soyasapogenol. In addition, the concentration of soyasapogenol exhibited a change during the germination process, which was evaluated by the nutritional value of the soybean sprouts.
