  • The Oligomeric proanthocyanidin (OPC) in green and black tea, grape seeds, grapes and wine has raised much attention but that OPC in wild grape seed remains to be intensively investigated. This study investigated the total OPC contents and total antioxidant activity of wild grape seeds and developed an efficient extraction process with various temperatures, solvent compositions and times. Also, a chromatography column packed with the Dia-ion HP-20 resin was used for further purification of the ope. The total OPC contents were determined with the Folin-Ciocalteu reagent, and the antioxidant activity using total antioxidant potential (TAP) and 1,1-dipheny|-2picrylhydrazy| (DPPH). The yield of final purified OPC was 1.78 (+)-catechin equivalent (CE) g/100 g, with $IC_{50}$ activities of TAP and DPPH of 31.60 and $15.70\;{\mu}\;g/mL$. These activities of the final purified OPC were about two times higher than that of the BHA used as a reference sample.

  • Leaf spot disease on black chokeberry (Aronia melanocarpa) was observed at several locations in Korea during 2014-2015. Leaf spots were distinct, scattered over the leaf surface and along the leaf border, subcircular to irregular and brown surrounded by a distinct dark color, and were expanded and coalesced into irregularly shaped lesions. Severely infected leaves became dry and fell off eventually. The causative agent was identified as Pseudocercospora pyricola. Morphological observations and phylogenetic analyses of multiple genes, including internal transcribed spacer, translation elongation factor 1-alpha, actin, and the large subunit ribosomal DNA were conducted. The pathogenicity test was conducted twice yielding similar results, fulfilling Koch's postulates. To our knowledge, this is the first report on P. pyricola infection of A. melanocarpa globally.

  • Acute toxicity of the pigment fraction of Heugjinjubyeo was investigated in male and female mice following oral administration. Major component of pigment fraction was analyzed as cyanidin 3-glucoside (C3G), which composition content was 96%. The pigment fraction as given at the single oral doses of 1000,3000 and 9000mg/kg in male and female mice did not show any abnormal behaviours, body weight loss or other toxic symptoms during observation period of 14 days. There were no dead mice among 6 mice at a single dose of 9000mg/kg. Thus, it is concluded that the minimum lethal doses (MLD) of the pigment extract might be more than 9000 mg/kg p.o., in male and female mice.

  • This study proceeded an experiment that can increase such physiological properties of heated radish extract. During the extraction of radish, including the byproduct, an increase in antioxidant properties of radish according the heating temperature was performed. Upon the extracts of radish bark and radish green extract(mucheong), the physiological functionalities and antioxidant activity were investigated. As a result, the color of radish ethanol extract in dependence of heating temperature, showed light brown color at low heating temperature and black color from $150^{\circ}C$. The total polyphenol content significantly increased as a result of heat treatment; 6.7 times and 22 times higher than the control at $110^{\circ}C$ and $150^{\circ}C$, respectively. DPPH radical scavenging ability and antioxidant property increased with increasing heating temperature; in comparison to heat-treated radish at $110^{\circ}C$ and $150^{\circ}C$, $IC_{50}$ decreased by 1/22 times. $IC_{50}$ of the control was 23times higher than $150^{\circ}C$ heat treated radish (Control $IC_{50}$:130.305). According to the graph that represents ABTS activity, antioxidant activity increased in dependence of heat treatment likewise to the total polyphenol content and DDPH radical scavenging activity. Upon heat treatment at $150^{\circ}C$, antioxidant activity in consequence of ABTS assay increased 23 times higher than the control.

  • The charcoal is known to have gas adsorption capability and is used frequently to mitigate the unpleasant smells from food and clothing. It is also used to treat water to remove dissolved organic and inorganic substances. In this paper, we applied the several different kinds of charcoals to the papers in three different ways to investigate if charcoal application method affects its gas adsorption capability. Wet end addition, making multiply, and coating method were tested. Specific ethylene gas adsorption capabilities were measured. Experimental results shows that manufacturing conditions of the charcoal itself changed its gas adsorption properties. The boxes used for agricultural produces, and the packaging paper for flowers are to be well fitted application for the charcoal added paper. Mulch paper, which needs opacity and air permeability with proper strength properties, is another candidate for the application of charcoal added paper.

  • The use of GRAS microorganisms isolated from fermented foods during amylase production using an economical food-waste medium provides more opportunities to produce amylase with a wider range of applications. Hence, this study aimed to isolate a good amylase-producing fungi from the traditional Indonesian fermented cassava, gatot, and to identify the amylase-producing capability of the isolate in a potato peel waste (PPW) medium. Black-colored fungi isolated from gatot was morphologically identified and the amylase produced was characterized using SDS-PAGE and Native PAGE. The isolate was then grown on PPW medium, and the amylase produced was further characterized. Morphological identification and enzyme characterization revealed that the Aspergillus niger aggregate F isolated from gatot secreted an active extracellular ${\alpha}$-amylase with an optimum pH of 5-6. In conclusion, Aspergillus niger aggregate F isolated from gatot can be used to produce ${\alpha}$-amylase using PPW as a medium.

  • This study examind the product quality characteristics and industrial application of arrowroot powder added Yanggaeng before its industrial application. Several preliminary experiments were conducted by applying manufacturing conditions and varying the amount of arrowroot powder(1%, 2%, 3%, 4%) added to produce Yanggaeng recipes that can be sold commercially. The moisture content of the produce Yanggaeng was low due to the manufacturing standards, but it showed a significant increase with an increase in the ratio, which was similar to the results of other studies on Yanggaeng. The solubility, particale size distribution, and pH also showed a significant increasing trend. The hardness of arrowroot powder added Yanggaeng decreased with an increase in the amount of arrowroot powder, while springiness, gumminess, and chewiness increased with the addition of arrowroot powder. In terms of color, arrowroot powder showed a dark color, which was well suited to white bean paste and could also be used with black bean paste without any problem. These results were due to the manufacturing ratio being adjusted to meet commercial sales standards, resulting in a lower amount of water being used, and the characteristics of arrowroot powder being applied as they were.
