Quality Properties and Flavor-Related Components of Beef Longissimus Lumborum Muscle from Four Korean Native Cattle Breeds

  • This study was carried out to assess the quality properties, components associated with taste and aroma of beef as a function of breed. For this purpose, steers from four Korean native cattle breeds: Hanwoo (n=10), Chikso (n=10), black Hanwoo (n=12, BHW) and Jeju black cattle (n=12, JBC) were used. The steers all were raised under identical conditions and finished at a similar age of around 30-months old. Following 24 h of slaughter, all longissimus lumborum muscles were collected and used for analysis of meat quality, fatty acids, and flavor-related components (metabolic compounds, free amino acids, and aroma volatiles). The Hanwoo presented a significantly higher intramuscular fat content (IMF, 22.85%) than the BHW (11.78%), Chikso (9.25%), and JBC (9.14%; p<0.05). The meat of Hanwoo breed showed lighter and redder color, and lower shear force value (p<0.05). The JBC presented a "healthier" fatty acid profiles as it had a higher total unsaturated fatty acids content (p<0.05). With regard to flavorrelated components, Hanwoo also had higher total contents of free amino acids and metabolites associated with umami and sweet tastes, and fat-derived volatile compounds (aldehydes, alcohols, and ketones) associated with fatty aroma. It may be concluded that there was a considerable difference in the meat quality properties among breeds. The variations of IMF content and flavor-related components may be the main factors contributing to the typical flavors of beef among the four Korean native cattle breeds.

The Effect of Slaughter Season on the Fatty Acid Profile in Four Types of Fat Deposits in Crossbred Beef Bulls

  • The objective of this study was to determine the effect of slaughter season on the fatty acid profile in four types of fat deposits in crossbred (Polish Holstein Friesian Black-and-White${\times}$Limousine) beef bulls. The percentage share of fatty acids was determined by gas chromatography and were divided into the following categories of fatty acids: saturated (SFAs), unsaturated (UFAs), monounsaturated (MUFAs), polyunsaturated (PUFAs), desirable hypocholesterolemic (DFAs) and undesirable hypercholesterolemic (OFAs), n-3 and n-6. Perinephric fat was characterized by the highest SFA concentrations (59.89%), and subcutaneous fat had the highest MUFA content (50.63%). Intramuscular fat was marked by a high percentage share of PUFAs and the highest PUFA/SFA ratio. The slaughter season had a significant effect on the levels of C18:3, C20:4 ($p{\leq}0.01$) and conjugated linoleic acid ($p{\leq}0.05$). There was an interaction between the slaughter season and fat type for the content of C20:4 ($p{\leq}0.01$) and C20:5 ($p{\leq}0.05$). The results of this study show that beef from cattle slaughtered in the summer season has a higher nutritional value and more health-promoting properties.

The Effect of Quality Grade and Muscle on Collagen Contents and Tenderness of Intramuscular Connective Tissue and Myofibrillar Protein for Hanwoo Beef

  • Six muscles were seamed out randomly from Hanwoo carcasses (n = 12) of each quality grade (quality grades 1, 2 and 3). Samples were analysed for their total and soluble collagen contents, IMCT (intramuscular connective tissue) and Warner-Bratzler shear force (WBSF). Simple correlation (n = 21) was determined for WBSF among major muscles. For LT (longissimus thoracis), total collagen content was significantly higher (p<0.05) for quality grade 3 than those for quality grades 1 and 2. For semitendinosus (ST), semimembranosus (SM), psoas major (PM) and serratus ventralis (SV), total collagen content of quality grade 1 was lowest (p<0.05) of all quality grades. IMCT shear force for gluteus medius (GM) decreased (p<0.05) with better quality grade, and those for other muscles, with the exception of GM, were higher (p<0.05) for quality grade 3 than for quality grades 1 and 2. WBSF values showed GM and LT to be decreased (p<0.05) with better quality grade, and PM to be higher (p<0.05) for quality grade 3 than those for quality grades 1 and 2. SM, ST and SV from quality grade 1 had lower (p<0.05) WBSF value than those from quality grades 2 and 3. Total collagen content of ST was highest (p<0.05) of all muscles, whereas that of PM was lowest (p<0.05). Soluble collagen contents of LT and SV from quality grades 1 and 2 were, in general, higher (p<0.05) than other muscles, but that of SM was lowest (p<0.05). ST and SM had higher (p<0.05) WBSF values for three quality grades when compared to other muscles, whereas PM was lowest (p<0.05). LT had the strongest simple correlation with SV (r = 0.78) and GM (r = 0.77), and SM had the strongest correlation with ST (r = 0.73) and LT (r = 0.73). Also, PM had the strongest correlation with SV (r = 0.62).

우지방을 현미유와 올리브유로 대체한 우육 패티의 냉장저장 중 품질변화 (Quality Properties of Beef Patties Replaced Tallow with Rice Bran Oil and Olive Oil during Cold Storage)

  • The effects of replacing tallow with plant oils on the chemical composition, physical properties, fatty acid composition, and sensory properties of beef patties were investigated. Beef patties were produced with seven different formulations: control (tallow, 100%), rice-bran oil replaced (TR) and olive oil replaced (TO) (each at 20%, 40%, and 60% substitution). Fat content of beef patties increased, whereas moisture content decreased with increased TR and TO. Beef patties had increased lightness and yellowness but decreased pH and redness compared to those in the control (p<0.05). The thiobarbituric acid reactive substances (TBARS) values of all beef patties increased during cold storage. The TBARS values in the replaced TR or TO were similar to or lower than those in the control after 3 d. Saturated fatty acid content of beef patties decreased as the level of TR and TO increased, whereas unsaturated fatty acid content increased. Monounsaturated fatty acids were higher in TO and polyunsaturated fatty acids were higher in TR. The overall acceptability scores showed no significant differences between the control and replaced TR or TO over 7 d of storage.

Application of a Kiwifruit (Actinidia chinensis) to Improve the Textural Quality on Beef Bulgogi Treated with Hydrostatic Pressure

  • In order to reduce the increased hardness of beef bulgogi due to hydrostatic pressure (HP), kiwifruit (Actinidia chinensis) was applied. To understand the changes of shear force in beef bulgogi with kiwifruit induced by HP, changes in chemical properties of myofibril (Mf) with 10% kiwifruit induced by HP were investigated. From the SDS-PAGE patterns of Mf with 10% kiwifruit, there was an observed increase in the degradation of myosin heavy chain (MHC) by HP (300-500 MPa) to that by 0.1 MPa. This result indicates that HP may enhance enzyme action from a kiwifruit for the degradation of MHC, and the similar phenomenon occurred in the beef bulgogi with kiwifruit induced by HP. The shear force of beef bulgogi without a kiwifruit induced by 400 and 500 MPa significantly increased compared to that by 0.1 MPa (p<0.05). However, in the beef bulgogi with 10% or 20% kiwifruit, the shear force induced by 400 or 500 MPa was similar or slightly lower than that by 0.1 MPa. Consequently, adding kiwifruit to bulgogi could reduce the hardness of HP-induced beef bulgogi due to the enzyme action in the kiwifruit accelerated by HP.

미국산 쇠고기 수입재개 발표에 따른 소비자 후생손실 측정 (Measuring Consumers' Welfare Losses due to Announcement of Resuming US-Beef Imports)

  • 본고는 식품위험이 현실화되지 않은 상황에서 건강위해에 대한 심리적 불안과 우려로 인하여 발생할 수 있는 소비감소와 후생손실을 2008년 4월 미국산 쇠고기 수입재개 발표에 따른 BSE 위험을 사례로 분석하였다. 조건부가치측정법이나 실험시장접근법을 사용하여 식품안전에 대한 소비자들의 단위당 지불의사나 가격프리미엄을 도출했던 기존의 연구들과는 달리, 소비자들이 기록한 쇠고기 구입량, BSE 위험에 대한 주관적 심각성, 표본내 개인들이 직면한 가격지수 등을 산정하여 개인별 쇠고기 수요함수를 추정하고 소비자들이 주관적으로 체험하는 정확한 후생효과인 동등변화(EV)와 소비자잉여의 변화를 측정함으로써 소비자들이 식품안전성에 부여하는 가치를 측정하였다. 2008년 10월 말부터 11월 중순까지 쇠고기를 소비하는 360명의 주부들을 대상으로 실시한 설문조사 자료를 사용하여 쇠고기 수요함수를 추정한 결과, 수입재개 발표 전 후의 경우 모두 자체 가격, 대체재의 가격, 그리고 소득변수 등의 부호가 경제이론에 부합되었고 통계적으로 유의하였으며 발표 전 후 두 기간 동안에 큰 차이가 관찰되지 않았다. 반면에 수업재개 발표 이후 형성된 BSE 위험에 대한 심각성을 나타내는 변수는 발표 이후의 수요함수에서는 통계적으로 유의한 부의 부호를 가진 반면에, 발표 이전의 수요함수에서는 통계적으로 유의하지 않았다. 그리하여 수입재개 발표 후의 BSE 위험에 대한 우려증가로 인한 품질저하 인식에 따른 소비자들의 후생손실을 측정한 결과 가구당 30,000원 정도로 계산되었다. 또한 이 정도의 후생손실을 가져올 BSE 위험에 대한 우려수준은 수입재개 전에 비하여 35% 이상 증가한 것으로 나타났다.

한약재 물 추출물 첨가에 의한 양념우육의 저장성 및 품질 증진 효과 (Study on the Improvement of Storage Property and Quality in the Traditional Seasoning Beef Containing Medicinal Herb Extracts)

  • 한국의 전통적인 식육가공품인 양념 불고기에 한약재 물 추출물을 첨가함으로서 얻어지는 저장성 및 품질 증진효과를 살펴본 결과, pH는 4$^{\circ}C$에서 저장 9일 이후에도 변화가 거의 없이 안정하게 유지되었다. 수분함량은 전반적으로 감소하는 경향을 보였지만 한약재 물 추출물을 2% 첨가한 구에서는 가장 안정하게 유지되었다. 양념 우육의 전단력은 저장기간 동안 점점 낮아졌는데, 한약재 물 추출물 처리구가 무 처리구보다 전단력이 낮게 나타나 식육의 연화효과가 있음을 보여 주고 있다. 양념우육의 색은 적색도에 있어 한약재 2% 처리구에서 저장 기간 중 큰 변화가 없이 가장 안정하게 유지되었다. TBA값은 저장 9일 이후에 한약재 물 추출물을 첨가한 구에서 매우 낮게 나타났고 증가 비율도 낮았다. 양념 우육의 생균수 변화는 무 처리구에서 가장 빠르게 증가해, 한약재 물 추출물을 첨가한 경우 저장 6일까지 $10^{5}$ CFU/g으로 안정하게 유지되어 가식기간을 연장시켜 주었다. 관능평가에서 양념우육의 색, 외관, 연도, 탄성, 다즙성, 향, 맛은 전반적으로 한약재 물 추출물 처리구에서 무 처리구보다 더 높은 값을 얻었으며, 양념우육의 저장성과 연도에 있어서 한약재 물 추출을 0.5%에서 1% 첨가했을 때 관능적 특성과 색 등에 관하여 가장 바람직한 결과를 기대할 수 있음을 알 수 있었다. 이상의 결과를 종합해 보면, 양념우육에 한약재 물 추출물을 0.5%에서 1% 정도 첨가하는 것이 저장성의 증진 및 연도의 개선, 관능적 특징의 개선 등으로 양념우육의 품질을 향상시키는데 적합한 방법이라 사료된다.

신선도표시계를 이용한 쇠고기 및 돼지고기의 저장 중 신선도 측정 및 품질 변화 (Use of Freshness Indicator for Determination of Freshness and Quality Change of Beef and Pork during Storage)

  • 식육의 신선도를 판정 할 수 있는 신선도표시계를 제작하여 냉장 저장 중 돼지고기의 삼겹살과 쇠고기의 등심의 신선도 및 품질 변화를 측정하고자 저장 중 표면 pH, VBN, TBARS, 총균수 전자코 측정 및 관능검사를 수행하였다. 저장기간 중 삼겹살과 등심 모두 저장 6일 경과 후 신선도표시계의 색이 변하였다. 저장 기간 중 품질의 변화를 측정 한 결과 신선도표시계의 반응 시점과 같은 저장 6일에 VBN, TBARS, 총균 수의 값도 부패 시점 기준에 도달하는 값을 나타내었고 관능검사 결과도 저장 6일 이후에는 이취 등에 의하여 가식이 불가능 하였다. 전자코 분석에서도 저장 0일째, 저장 6일째, 저장 10일째의 향기 분석에 있어서 뚜렷한 차이를 보였다. 본 연구 결과는 저장 중 식육의 이화학적, 미생물학적, 관능적 변화를 고려할 때, 제작된 신선도표시계의 시료 부착을 통하여 유통 중인 식육의 선선도 측정이 가능하다고 판단된다.

지방종류에 따른 Hamburg Patty의 이화학적 특성에 관한 연구 (Study on the Physicochemical Characteristics of Hamburg Patties with Different Lipid Sources)

  • This study was carried out to evaluate the different physicochemical properties of various lipid sources in beef patties during storage for 6 months. Four groups of samples were made of beef meat patties with 22% of tallow, lard, chicken fat and 20% of palm oil. On the analysis result of physicochemical compositions, the patty has its own fatty acids composition and characteristic different from other lipids. Patty with chicken fat has the highest percentage of unsaturated fatty acid composition of 61.0% compared to the other groups of patties. Beef patty with chicken fat has 18.8% of poly unsaturated fatty acid(USFA) and beef patty with beef lipid has 1.5% of poly USFA which is the least percentage among the others. SFA/USFA ratio of beef patty with chicken lipid was 0.5 which was the least value. The composition of PUFA in beef patty with lard increased to 10.0% from 1.9% over initial value after storage for 6 months. On the contrary, the composition of PUFA in beef patty with chicken fat decreased to 9.2% from 18.8% over initial value after 6 months. Volatile free fatty acids of beef patties were evaluated with four kinds of lipid sources. Formic acid was the most as of 59$\mu\textrm{g}$/g in beef patty with tallow, acetic acid was 15$\mu\textrm{g}$/g, and heptanoic acid was 10$\mu\textrm{g}$/g at starting time of storage. However, propionic acid, butyric acid, valeric acid and caproic acid were not detected. After 6 months, formic acid decreased from 59$\mu\textrm{g}$/g to 7$\mu\textrm{g}$/g in the patty with tallow, from 12$\mu\textrm{g}$/g to non-detect level in the patty with palm oil, but two the others patties slightly increased. Volatile compounds in meat patties were reported nearly 1000 kinds of chemical compounds. Beef patty with tallow has aldehydes 5.3, alcohol 1.3, hydrocarbon 0.8, ketones 0.2, ester 0.1, furans 0.1, acid 0.04, sulfur 0.03 in peak area at starting and increased to aldehydes 8.5, alcohol 2.1, ketones 0.5, ester 1.0, furans 1.5 in peak area during the storage. But only furans was not detected after 6 months of storage. From starting to 6 months, aldehydes increased 2∼10 times, alcohol increased 2∼3 times, acids 4∼50 times and ester 9∼20 times in beef patties with pork lipid, chicken lipid and palm oil. Some volatile compounds such as alcohol, aldehydes and acids in all kinds of patties significantly increased after 6 months of storage. These increases cause oxidative rancidity taste in meat patties. These results showed that selt-life of meat patties with 4 different lipids were not over 6 months even though they were stored at -20$^{circ}C$. Therefore, they should be classified as off-grade because of oxidative rancidity. Although beef patties with tallow are currently common type, the possibility for new type of hamburg patty can be developed by applying different lipids. Finally, we found out new type of beef patty added with lard, which has the best taste and quality compared to the other common types.
