The purposes of this study were to investigate the effects of bamboo (SasacoreanaNakai)extracton chemical characteristics and biological activities. pH ranges of bamboo extract using water and ethanol were between 5.2 and 6.1. The concentration of total phenol compounds using ethanol extract was 0.51%, which was about 2.0 fold higher than that of water extract. The mineral concentrations were order of K, Mg, Ca, and Na, respectively. The nitrite scavenging ratio of bamboo extract using ethanol was 20.4% in vitro. In the case of bamboo extract using water, it was 18.0%. Especially, the maximum nitrite scavenging ratio was obtained at pH 1.5. On the other hand, when pH was increased from 3.0 to 6.0, the nitrite scavenging ratio was decreased from 16.2% to 3.0%. The antioxidant activity of bamboo extract in vitro was increased from 100 to 160% when bamboo extract using ethanol was increased from 10 to $50{\mu}L$. These results suggest that the bamboo extract of Sasa coreana Nakai using ethanol can be used in bioactive and functional material.

This study was carried out to develop Yakju, a new kind of Korean traditional rice wine added with bamboo ethanol extract and characterized by containing various health benefits. The wine with bamboo ethanol extract was fermented by adding ginger and pear to improve flavor and quality. Several quality characteristics and physiological functionalities of Yakju were investigated. When bamboo ethanol extract was added to Yakju, the pH level decreased compared to that of the control. However, total acidity and soluble solid levels were higher than those of the control. The alcohol content of Yakju added with bamboo ethanol extract was slightly higher than that of the control. In examining the colors of Yakju containing bamboo ethanol extract, L value was lower than that of the control, whereas b value and brownness were higher. Various organic acids such as citric acid, malic acid, succinic acid, lactic acid, and acetic acid were determined, and the main organic acid among them was lactic acid. Various free sugars such as sorbitol, glucose, and fructose were detected and glucose was the most abundant. Total polyphenol content of Yakju added with bamboo ethanol extract was lower than that of the control. Further, electron-donating ability ranged from 23.8~40.0%, which was higher than that of the control. Nitrite scavenging ability of Yakju added with bamboo ethanol extract ranged from 15.2~36.4%, which was higher than that of the control at pH 6.0. Sensory evaluation of Yakju showed that bamboo ethanol extract+ginger as well as bamboo ethanol extract+ginger+pear treatment significantly increased flavor, taste, and overall acceptance compared to the others.

Antibacterial activities of the bamboo(Pseudosasa japonin Makino) leaves extract on lactic acid bacteria related to Dongchimi fermentation were investigated. The bamboo leaves were extracted with 70% ethanol, fractionated it with 4 solvents which have a different polarity. Total viable count was very similar to those obtained by lactic acid bacteria during fermentation of Dongchimi. Its maximum counts were (equation omitted) 10$^{7}$ CFU/m1 at 8 days of fermention. Lactic acid bacteria isolated during Dongchimi fermentation were identified as Leuconostoc species(BK-2, BK-07, BK-22), Lactobaillus species (BK-05, BK-08) and Streptococcus species(BK-15) 70% ethanol extract of the bamboo leaves showed antibacterial activity against strain BK-02, BK-07, BK-lS and BK-22. Especially, strain BK-22 was more effective to the extracted substance. Among the each fractions, 70% ethanol and diethyl ether had the strongest antibacterial activity against strain BK-22 and BK-07, respectively. The two fractions also showed similar activities against all of the test strains.
This study was conducted to investigate optimal processing conditions, cooking characteristics, antioxidant activity and packaging method of rice coated with bamboo extract. In sensory evaluation of cooked rice, rice coated with bamboo ethanol extract was higher smell and taste than the other extraction methods, but texture showed no difference. As coating concentration increasing, L, a and b values of coated rice were increased. But L value of coated rice after cooking was decreased. On sensory evaluation of cooked rice, smell and taste were best in 10$\%$ coated with bamboo ethanol extract. Mineral contents of coated rice with bamboo extract were higher than those of uncoated. Water absorption and volume expansion of coated rice were lower than uncoated rice but showed higher toyo value. Hardness, gumminess and chewiness values of cooked rice with coated rice were higher than uncoated rice. Antioxidant activity of coated rice was higher than uncoated rice about twice times. Toyo values and alkali digestive values of coated rice were highest in paper package than the other packaging conditions. The total bacterial counts of rice coated with bamboo extract after cooking was lower than uncoated rice during storage at 25 and 6O$^{\circ}C$.
Antimicrobial activities in 70% ethanol extracts of Korean bamboo trees were investigated. Among the antimicrobial activities against ten major strains causing food poisening, Wangdae (Phyllostachys bambusoides S. et Z.) showed the strongest activity among five major bamboo trees cultivated in Korea. Although all extracts showed relatively strong antimicrobial activities against Staphylococcus aureus and Streptoccus mutans, the extracts of bamboo culms showed stronger activities than that of bamboo leaves. MICs (minimal inhibitory concentration) of the extracts of Wangdae culm against Staphylococcus aureus and Streptococcus mutans were over $10\;and\;20\;{\mu}L/disc$, respectively. The extract of Wangdae culm inhibited the growth of Staphylococcus aureus and Streptococcus mutans at over 0.5% concentration, and almost inhibited the growth of these strains at 1% level. The inhibitory effect of the extract of Wangdae culm was not destroyed by heating at 60, 80, and $100^{\circ}C$ for 60 min and at $121^{\circ}C$ for 15 min, suggesting that the component in the bamboo tree was very heat-stable. These results indicate that 70% ethanol extract of Wangdae culm could be useful as a natural antimicrobial agent.
Chemical components and physiological activities Bamboo (Phyllostachys bambusoides Starf) extracts obtained by burning, dry heating or extracting with water or 70% ethanol and were investigated. Contents of soluble solid and total phenolic compounds were highest in the ethanol extract. Contents of polyphenols such as catechin, chlorogenic acid, caffeic acid, 3-hydroxy benzoic acid and ferulic acid were determined. Free sugars consisted of galactose, glucose, fructose, and sucrose. Organic acids including citric, tartaric, malic, succinic, and acetic acid were present in the bamboo extracts. Antioxidant activities of dry heat and ethanol extracts were higher than those of BHA or ${\delta}-tocopherol$. Nitrite- scavenging effect of extracts ranged from 84.7 to 99.6% at pH 1.2 ana 3.0. Tyrosinase-inhibitory activity was higher in the water extract, and SOD-like and ACE-inhibitory activity were highest in tile dry kent extract. Antimicrobial activities of the bamboo extracts were strong against Bacillus subtilis, Escherichia coli O157, and Staphylococcus aureus.

The objective of this study was to investigate the antioxidative components and anti-oralmicrobial effect of bamboo (Phyllostachys nigra var. henonis Stapf) leaves. The moisture, crude protein, crude fat, crude ash, and carbohydrate contents were 6.30%, 5.10%, 1.73%, 10.61%, and 76.26%, respectively. Vitamin C content was higher than Vitamin A and E contents. Among organic acids, citric acid content was the most abundant organic acid, followed by succinic acid, acetic acid, malic acid, and formic acid. Total polyphenol and flavonoid contents were 21.66 mg/g and 42.78 mg/g, respectively. Minimum inhibitory concentrations (MICs) of extracts of bamboo leaves for Streptococcus mutans and Streptococcus sobrinus were determined to be 0.04% and 0.16%, respectively. MICs of extracts of bamboo leaves for Porphyromonas gingivalis and Prevotella intermedia were determined to be 0.02%. Extract of bamboo leaves had strong antimicrobial activity against S. mutans, S. sobrinus, P. gingivalis, and P. intermedia at a concentration of 0.32%. At this concentration, extract of bamboo leaves inhibited growth of these pathogenic bacteria up to 60 h. The results of the present study demonstrate the antimicrobial effects of bamboo leaves ethanol extract against oral pathogenic bacteria, suggesting that bamboo leaves could be an effective natural agent for oral hygiene.

This study was performed to investigate the effects of Radix Puerariae (RP), Flos Puerariae (FP) and Caules in Liquamen Phyllostachyos+Radix Puerariae water extracts on the alcohol dehydrogenase (ADH). transaminase (GOT, GPT) activities, and two hepatic antioxidant enzyme (SOD, catalase) activities in acute ethanol administered mice, and we have investigated the morphological changes that occur in hepatocytes of the experimental mice. The activities of ADH decreased compared with control group in the A1(66%), C1(57%), C2(54%) groups. The transaminase activites increased in the control groups compared with experimental groups. Ethanol treatment group without the RP or FP administration significantly lowered the activities of hepatic SOD and catalase, whereas MnSOD increased in the A1(27%) and B2(43%)groups, CuZnSOD increased in the B2(25%) and C2 groups. The catalase activites were increased in the A1(270%), A2(478%), B2(487%) and B1(770%) compared with control group, A lot of PAS-positive granules were observed in the A1, A2, C1 and C2 groups compared with the other groups. These results suggested that RP, FP and RP+Bamboo extracts administration may be prevent from liver damage in the alcohol treatment mice.
Bamboo trees have been used for a long time as folk remedies for treatment of hypertension and stroke symptoms in Oriental regions. These pharmaceutical effects of bamboos look like to be related to its antioxidant capacity and phytochemicals in bamboos. To evaluate the antioxidative effects of bamboo trees, five kinds of bamboo varieties dominant in Korean peninsular were chosen and determined its total antioxidaive activities, free radical scavenging activities and nitrite scavenging activities by TEAC (Trolox Equivalent Antioxidant Capacity) assay, DPPH and Griess reagent assay using in vitro system, respectively. To evaluate the correlation between antioxidative activities and Maillard reaction during hot water extraction, contents of reducing sugar and total nitrogen and brown color intensity at 420 nm were determined. When total antioxidative activities, free radical scavenging activities and nitrite scavenging activities of five kinds of bamboo trees were compared, wang-dae (Phyllostachys bambusoides S. et Z.) showed the strongest effect among samples, although all kinds of extracts showed relatively strong effects against oxidation. The bamboo culms extract showed stronger antioxidative effects than that of bamboo leaves. In each fraction obtained from 70% ethanol extract, antioxidative effect were increased in order of dichloromethane>ethyl acetate>butanol>water>hexane fraction. In reducing sugar analysis of extracts, reducing sugar contents of water extracts were higher than that of 70% ethanol extracts and wang-dae water extract showed the highest level which was 708.92 mg/g. Total nitrogen contents of the extracts were $1.785{\sim}2.605\;mg%$ and contents in water extracts were lower than that in 70% ethanol extracts. Brown color intensity at 420 nm showed similar tendency with results in reducing sugar contents.
