To revise the dithiocarbamates residue analysis method and survey the residues in agricultural products that were treated with these fungicides in Korea, we purchased 20 types of foodstuffs (rice, potato, cabbage, apple etc.) from markets in five major cities. 236 samples of the purchased foodstuffs were then analyzed for the presence of dithiocarbamates by HPLC/UV and HPLC/APCI-MS. The $R^2$, LOD and LOQ in the range of 0.5-107.3 mg/L were as follows: DCC: y=174.34x+18.315, $R^2=0.9999$, 0.01 mg/L, and 0.04 mg/L; EBDC: y=227.38x-14.715, $R^2=1.0000$, 0.01 mg/L and 0.02 mg/L; PBDC: y=38.46x-21.412, $R^2=0.9999$, 0.04 mg/L, and 0.1 mg/L; ETU: y=52.752x-4.4819, $R^2=0.9998$, 0.02 mg/L and 0.03 mg/L; PTU: y=128.28x+4.4624, $R^2=0.9998$, 0.02 mg/L, and 0.04 mg/L. The levels of DDC, EBDC, PBDC, ETU and PTU in 20 agricultural products fortified to 10.0-107.3 mg/L ranged from 61.7-117.5%, 65.3-110.1%, 61.5-109.6%, 69.3-116.3% and 70.2-97.2%, respectively. Overall, dithiocarbamates were detected in 100 samples and the detection ratio was 42.4%. Among these, only 3 samples (1.3%) of Lycii fructus had residue levels that were above the action limits, while the remaining samples (233 samples) contained levels of dithiocarbamates below the detection limit or below the Korea MRLs (Maximum Residue Limits).

BACKGROUND: The Transfer Factor (TF) of heavy metals from soil to plant is important, because TF is an indicator of heavy metal in soils and a factor that quantifies bioavailability of heavy metals to agricultural products. This study was conducted to investigate the transfer ability of Arsenic (As), Cadmium (Cd), and Lead (Pb) from soil to agricultural products. METHODS AND RESULTS: We investigated heavy metals (As, Cd and Pb) concentrations in 9 agricultural products (rice, barely, corn, pulse, lettuce, pumpkin, apple, pear, tangerin) and soil. TF of agricultural products was evaluated based on total and HCl-extractable soil concentration of As, Cd, and Pb. Regression analysis was used to predict the relationship of total and HCl-extractable concentration with agricultural product contents of As, Cd, and Pb. The result showed that TF was investigated average 0.006~0.309 (As), 0.002~6.185 (Cd), 0.003~0.602 (Pb). The mean TF value was the highest as rice 0.309 in As, lettuce 6.185, pear 0.717, rice 0.308 in Cd, lettuce 0.602, pumpkin 0.536 in Pb which were dependent on the vegetable species and cereal is showed higher than fruit-vegetables in As. CONCLUSION(S): Soil HCl-extractable concentration of As, Cd, and Pb had the larger effects on thier contents in agricultural products than total soil concentrations. We suggests that TF are served as influential factor on the prediction of uptake. Further study for uptake and accumulation mechanism of toxic metals by agricultural products will be required to assess the human health risk and need TF of more agricultural products.
The purpose of this study was to improve the quality characteristics of soy ice cream supplemented with oligosaccharide, and to test its blood glucose lowering effect. Boiled soybean powder was compared to parched soybean powder and to milk, as an ingredient. The soybean powder base was prepared by incubating with fructooligosaccharide (FOS) and apple juice, along with Lactobacillus acidophilus and L. bulgaricus at $30-40^{circ}C$ for 24 hr. With the fermentation process, the fishy smell of the soybean was removed and the taste improved. The overrun and melt-down values of the boiled soybean ice cream were significantly higher than those of the parched soybean ice cream, although they were significantly lower than those of the milk ice cream. The sensory characteristics of the soy ice cream prepared with the fermented base of boiled soybeans were significantly improved, as compared to those of the ice cream made using parched soybeans, but they were not significantly different from those of the milk ice cream. The blood glucose level at 120 min after ingestion of the ice cream prepared with FOS and the fermented base of boiled soybean powder was significantly lower than that occurring with the milk ice cream made with sugar.

This study was performed to compare optimum analytical method for the contents of naturally occurring sulfur dioxide in foods and to investigate the contents of sulfur dioxide in foods in order to provide a fundamental data when distinguish between added and naturally occurring sulfur dioxide. The determination of the contents of sulfur dioxide in foods from the 20 kinds, 180 cases of samples has been analyzed by the optimized Monier-Williams method, modified Rankine method and Acid Distillation/Ion Chromatography. As a result of the study, the contents of naturally occurring sulfur dioxide in foods by the optimized Monier-Williams method showed from 1.02 to 43.87 ppm and highly content of 43.87, 15.37, 11.50, 11.21 and 10.60ppm were observed in garlic, platicodon, green onion, cabbage and onion, the others were less than 10.00ppm. The sulfur dioxide contents in green onion and garlic by modified Rankine method were showed to be 2.87 and 6.14ppm, respectively, the others were detected less than 2.50ppm. The contents of sulfur dioxide by Acid Distillation/Ion Chromatography showed 15.43, 9.82, 5.74, 5.37, 2.14 and 0.49ppm in garlic, cabbage, green onion, onion, potato and apple, respectively and the others were not detected. And the contents of sulfur dioxide in green onion, onion, cabbage and garlic showed higher levels of sulfur dioxide in these foods than the others because of the naturally occurring sulfur containing compounds. The optimized Monier-Williams method, which is the of official analytical method of Korean Food Code, was suitable for monitoring of sulfur dioxide of most foods. Acid Distillation/Ion Chromatography was thought to be adequate for sulfur containing foods such as green onion, onion and cabbage. In order to distinguish between added and naturally occurring sulfur dioxide, it is though to be need of the fundamental data for the contents of sulfur dioxide in sulfite-free foods and continue the investigation for it.
As a primary study for cell growth and alcohol production of a cider yeast, Saccharomyces sp. R-11, cultural and nutritional characteristics of the strain were investigated. The results obtained were as follows: The optimum culture medium for this strain was a synthetic medium, Henneberg B, and sucrose was the best carbon source for yeast growth and alcohol production. Optimum sugar concentrations for yeast growth and alcohol production were 15% and 25%, respectively. Optimum pH and temperature of the basal medium for growth of this strain were 4.5 and $30^{\circ}C$ respectively. The yeast growth was enhanced by the addition of 100 ppm of $Mg^{2+}$, but significantly inhibited by the addition of 100 ppm of $Co^{2+}$. Lower temperature and maintenance of optimum pH for yeast growth increased the final alcohol concentration. Under optimum condition for cell growth at stationary culture, generation time and specific growth rate of the strain were 7.5 hr and 0.092 $hr^{-1}$, respectively. At 8% initial alcohol concentration, yeast growth was inhibited about 50% and this strain could not be grown at more than 12% initial alcohol. The strain could be grown at less than 125ppm $SO_2$without alcohol addition, and at less than 75 ppm $SO_2$ with 8% initial alcohol. The higher sulfur dioxide concentration of a medium, the longer lag phase in yeast growth was observed. This strain could induced alcoholic fermentation at less than 10% initial alcohol concentration with 0 and 25 ppm $SO_2$, at less than 8% initial alcohol with 50 and 75 ppm $SO_2$, and at less than 6% initial alcohol with 100 and 125 ppm $SO_2$.
The recent trend for pesticide residue analysis in food involves fast cleanup and use of mass spectrometry to achieve quantitative and qualitative analysis at the same time. Recently, the QuEChERS (quick, easy, cheap, effective, rugged and safe) multi-reside method has received much attention as a fast extraction and cleanup method of pesticide residue analysis. Therefore, multi-residue analysis of 236 pesticides was tested with the QuEChERS method by concurrent use of PTV-GC/TOFMS (gas chromatography/ time-of-flight mass spectrometry with programmable temperature vaporizer). PTV condition was optimized and when the method was applied to apples, pesticide recovery rates (spiked at 400 ng/g) ranged from 80% to 120%, and RSD values were under 10% for most compounds. The results showed that the QuEChERS sample preparation and PTV-GC/TOFMS analysis can be applied to multi-residue analysis of pesticides in fruits and vegetables.
This study was carried out to develop a kiwi dressing which was lower in calories and a more beautiful color by using Kiwi rather than mayonnaise. This study was aimed to standardize a recipe for Kiwi dressing using sensory characteristics as well as to examine the changes of pH and chromaticity by the storage period. Results of this study were as follows: from the results of sensory evaluation on kiwi dressing using different kinds of oil, the pure olive oil showed the higher scores than the corn oil in the taste, fresh-sour taste and overall palatability. Sensory evaluation scores of kiwi dressings with various amounts of oil were not significantly different, which suggested that use of kiwi for a dressing was a good way to develop a low calorie dressing because the addition of 32% (360g) oil in kiwi dressing could replace the 75% oil used in mayonnaise without my significant differences in the overall palatability. From the result of sensory evaluation on kiwi dressing with different kinds of acid, lemon juice showed the higher scores than apple vinegar in flavor. The kiwi dressing showed the highest scores in the overall palatability and fresh-sour taste when 12% (60g) onion juice was added and in as well as flavor, taste and the overall palatability at 10 days of storage. The pH values of kiwi dressing Increased significantly in proportion to the storage period (p<0.001), and showed the highest pH value of 2.99 at 17 days of storage. Lightness in color showed the lowest value at 3 days of storage and the greenness of kiwi dressing increased gradually, but the yellowness decreased significantly in proportion to the storage period(p<0.001).
An empirical model to predict initial disease occurrence and subsequent progress of Alternaria leaf spot was constructed based on the modified degree day temperature and frequency of rainfall in three years field experiments. Climatic factors were analized 10-day bases, beginning April 20 to the end of August, and were used as variables for model construction. Cumulative degree portion (CDP) that is over $10^{\circ}C$ in the daily average temperature was used as a parameter to determine the relationship between temperature and initial disease occurrence. Around one hundred and sixty of CDP was needed to initiate disease incidence. This value was considered as temperature threshhold. After reaching 160 CDP, time of initial occurrence was determined by frequency of rainfall. At least four times of rainfall were necessary to be accumulated for initial occurrence of the disease after passing temperature threshhold. Disease progress after initial incidence generally followed the pattern of frequency of rainfall accumulated in those periods. Apparent infection rate (r) in the general differential equation dx/dt=xr(1-x) for individual epidemics when x is disease proportion and t is time, was a linear function of accumulation rate of rainfall frequency (Rc) and was able to be directly estimated based on the equation r=1.06Rc-0.11($R^2=0.993$). Disease severity (x) after t time could be predicted using exponential equation $[x/(1-x)]=[x_0/(1-x)]e^{(b_0+b_1R_c)t}$ derived from the differential equation, when $x_0$ is initial disease, $b_0\;and\;b_1$ are constants. There was a significant linear relationship between disease progress and cumulative number of air-borne conidia of Alternaria mali. When the cumulative number of air-borne conidia was used as an independent variable to predict disease severity, accuracy of prediction was poor with $R^2=0.3328$.
Platform is considered as an alternative strategy to the traditional linear pipeline based business. Moreover, in the 4th industrial revolution period, efficiency driven pipeline business model needs to be changed to platform business. We have such success stories about platform as Apple, Google, Amazon, Uber, and so on. However, for those smaller corporations, it is not easy to find out the transformation strategy. The essence of platform business is to leverage network effect in management. Thus platform based management can be rephrased as network management across the business functions. Research on platform business is popular and related to diverse facets. But few scholars cover what the research trend of the domain is. The main purpose of this paper is to identify the research trend on platform business in Korea. To do that we first propose the analytical model for platform architecture whose components are consumers, suppliers, artifacts, and IT platform system. We conjecture that mapping of the research work on platform to the components of the model will make us understand the hidden domain of platform research. We propose three hypotheses regarding the characteristics of research and one proposition for the transitional path from pipeline to platform business model. The mapping is based on the research articles filtered from the Korea Citation Index, using keyword search. Research papers are searched through the keywords provided by authors using the word of "platform". The filtered articles are summarized in terms of the attributes such as major component of platform considered, platform type, main purpose of the research, and research method. Using the filtered data, we test the hypotheses in exploratory ways. The contribution of our research is as follows: First, based on the findings, scholars can find the areas of research on the domain: areas where research has been matured and territory where future research is actively sought. Second, the proposition provided can give business practitioners the guideline for changing their strategy from pipeline to platform oriented. This research needs to be considered as exploratory not inferential since subjective judgments are involved in data collection, classification, and interpretation of research articles.
Identification of fruit sucking moths, their larval host plant, and degree of damages to fruits were investigated in $1982{\sim}'83$ at two orchards in Cheonnam province. In this study, 4 families 30 species were collected as fruit sucking moths and among them 10 species are newly recorded in Korea as fruit sucking moth: Catocala electa(B.), Spirama helicina(H.), Erebus ephesperis(H.), Parallelia stuposa(F.), Simplicia niphona(B.), Marumba gaschkewitschii(B. et G.), Agrius convolvuli(L.), Thyatira batis (L.), and Spilosoma niveum(M.). Larval host plants of fruit sucking moths in the vicinity of the fruit orchard include Cocculus trilobus D., Albizzia julibrissin D., Pterocarya rhoifolia S., Jaglans mandshurica M., Solanum melongena L., Brassia campestris S., Rubus idaeus C., Thalictrum aquilegifol L., and Rhus succedanea L. As the damage on different varieties of the main fruit trees, plum was orderly Santa Rosa>Beauty, Apple was Chook>Hong Og, Peach was Choseng Baeg Do>Hwang Do>Baeg Do, and Grape was Campbell Early>Neo Mascat>Golden Queen. Seasonal occurrence of main fruit sucking moth Spirama retorta(C.) showed peak 3 times in early-July, late-July, early-September. Oraesia emerginata(F.) showed peak 3 times in late-July, early-August, early- September and Lagoptera juno(D.) showed peak only in late-July and Adrias tyrannus amurensis(S.) showed peak only in mid-July. Fruit sucking moths were immigrated from p.m. 6 to a.m. 2, with peak in p.m. 10 to p.m. 12.
