Development and Distribution of Dungeness Crab Larvae in Glacier Bay and Neighboring Straits in Southeastern Alaska: Implications for Larval Advection and Retention

  • Development and distribution of larval Dungeness crab, Cancer magister Dana, 1852 were investigated in southeastern Alaska from late May to mid-September in 2004. Larvae were collected during daylight hours at three inner and two outer Glacier Bay stations at the two different depths in the water column, above and below the thermocline. Larval density decreased dramatically for three larval stages, zoeae I(ZI), zoeae IV, and zoeae V(ZV), but relatively little for zoeae II and zoeae III. ZI predominated at all stations in late May and were collected until late July. Larval stages progressed seasonally from ZI to ZV and density decreased from ZI through ZV. The densities of each zoeal stage at the inner and outer bay stations and at the shallow and deep depths were similar. The density of each larval stage above(shallow) and below(deep) the thermocline and between inner and outer bay stations were not significantly different. The occurrence of larval Dungeness crab is dramatically later than in other parts of the species range, in that larvae appear in abundance beginning in late May. The pattern of spatial distribution of larval stages for the inland waters of Alaska was also markedly different than the patterns reported for Dungeness crab larvae from other parts of the species range, in that the early and intermediate stages occurred within inland waters; from British Columbia to California these larval stages increase in abundance with distance offshore.

상류곡관에 의한 볼밸브 내부유동 영향성 연구 (A Study on Influence of Ball Valve and Upstream Curved Pipe on Internal Flow of Pipeline)

  • This study describes the effect of upstream curved pipe on internal flow characteristics ball valve. Continuity and three-dimensional Reynolds-averaged Navier-Stokes equation have been used as governing equations for the numerical analysis. The upstream curved pipe - ball valve model was assumed that it is used for Alaska pipeline project which was planned to provide reliable transportation of natural gas from ANS to Alaska-Yukon border. Therefore the characteristics of pipe and operating condition of pipeline were from report of Alaska pipeline project. The three curvature and three location of upstream curved pipe were analyzed. The results shows that there are typical flow patterns at ball valve and the upstream curved pipe makes some differences to the internal flow of ball valve.

대구경 고압 T형 분기관의 지관 형상에 따른 내부 유동 영향성 해석 (A Study on Internal Flow Characteristics of T Branch using CFD Analysis)

  • This study describes the effect of T branch shape on internal flow characteristics inside itself. Continuity and three-dimensional Reynolds-averaged Navier-Stokes equation have been used as governing equations for the numerical analysis. The T branch was modeled assuming that it is used for Alaska pipeline project which was planned to provide reliable transportation of natural gas from ANS to Alaska-Yukon border. Therefore the characteristics of T branch and operating condition of pipeline were from report of Alaska pipeline project. The nine T branch shapes were analyzed and the mass flow rate ratio between mainline and branch was assumed to be 0.95 : 0.05, 0.9 : 0.1, 0.85 : 0.15. The results shows that there are typical flow patterns in T branch and the shape of T branch makes some differences to the internal flow of branch rather than mainline.

냉동연육 원료로서연근해산 어류의 가공적성 검사연구 (Sthdies on the Adaptability for Frozen fish Meat Paste Processing of the Fishes Cought in korean coastal Off-Shore Sea)

  • Alaska Pollack (Theragramma), Mackerel (Socomber japonicus), yellow corvenia (Pseudosc iance manchurica) were dressed, and then meat was separated from the other parts through a fish meat separator. After dehydration, the meat was ground with a silent cutter, packaged in polyethylene bags, and stored at -15。C for days. Samples were taken at regular intervals throughout the storage period and investigated for changes in puality characteristics such as the amounts of nitrogenous compounds, degree of lipid oxidation, fatty acid composition, and organoleptic factors. The resrlts obtained in this study were as follows; 1. The volatile basic nitrogen[VBN] contents of Alaska pollack, and yellow corvenia meat pastes increased from 14.4, 11.2 and 10.8mg% to 41.6, 38.3 and 40.6mg%, respectively during a 120 day storage period, whereas the trimethylamine oxide nitrogen [TMAO-N] contents decreased from 117.2, 12.8 and 17.2mg% to 40.3, 2.6 and 7.1mg% during the same period. 2. The TBA value of the mackerel meat paste showed a maximum peak after 60 days, and then decreased gradually, whereas the TBAvalues of the alaska pollack and yellow corvenia meat pastes increased steadily during the same period. The acid values of the meat pastes increased during the storage period, while the iodine values decreased. 3. The fatty acid composition of the total lipid of the meat pastes changed considerably during ghe 120 days storage period : saturated fatty acids in the total lipid such as myristic, palmitic, and stearic acid increased, while unsaturated fatty acids such as linoleic, gadoleic, eicosapentaenoic, erucic and docosahexaenoic acid decreased steadily. The initial percentage contents of the unsaturated fatty acids in the total lipid of the Alaska pollack, mackerel, and yellow corvenia meat pastes were 87.2%, 63.9%, and 75.9% respectively. However, the contents decreased to 46.0%, 42.5% and 51.3% after the 120day storage period. 4. The color of the meat pastes changde gradually into dark brown. L values of the meat paste measured with a thistimulus colorimeter decreased steadily during the storage period, while a and b values increased during same period. 5. Judging from the results of organoleptic evaluation on the fish odor, color and overall acceptability, significant difference were found between the odor and color of the mackerel and those of the yellow corvenia meat pastes. Overall acceptability score of yellow corvenia was higher than that of Alaska pollack or mackerel meat pastes.

레토르트 살균처리가 적색육 및 백색육 어류의 성분변화에 미치는 영향 -2. 지질성분의 변화- (Changes in Food Components of Dark, White-Fleshed Fishes by Retort Sterilization Processing -2. Changes in Lipid Components-)

  • 전보에 이어 어육을 원료로 하여 보다 품질이 우수한 고온가열처리 식품을 개발하기 위한 기초자료를 얻을 목적으로, 시료 어육을 $121.1^{\circ}C$에서 Fo값을 5, 10, 20으로 달리하여 가열처리 했을 때 지질성분의 변화에 미치는 영향에 대하여 비교, 검토하였다. 시료 가다랑어육 및 명태육의 TBA값과 과산화 물 값은 가열처리에 따라 현저히 감소하였고, 감소폭은 가다랑어육 쪽이 컸다. 카르보닐 값은 가열처리 중 가다랑어육은 감소하는 반면, 명태육은 증가하였다. 색조는 양 시료 모두 가열처리 정도가 커질수록 육색이 진해졌으며, 특히 가다랑어육에서 갈변진행이 현저하였다. 지질성분은 가다랑어육에는 NL의 함량이 많았고, 명태는 PL의 함량이 많았다. $98^{\circ}C$의 열처리에서는 양 시료 모두 NL과 PL의 조성비에 변화가 거의 없었으나, $121.1^{\circ}C$은 열처리에서는 Fo값 증가할수록 NL의 조성비는 높아지고 PL의 조성비는 낮아지는 경향을 나타내었다. TL, NL 및 PL의 지방산조성은 $98^{\circ}C$ 열처리에서는 양 시료 모두 조성비의 변화가 지의 없었으나, $121.1^{\circ}C$른 열처리에서는 Fo값이 증가할수록 폴리엔산의 조성비가 점차 감소했으며, 특히 22:6의 감소폭이 컸다. 반면, 포화산 및 모노엔산의 조성비는 증가하였다. 지방산 조성의 변화폭은 명태육 쪽이 가다랑어육에 비해 다소컸다. Fo 20의 열처리에서 TL의 고도불포화지방산의 잔존율은 생시료에 비해 가다랑어육이 $73\%$, 명태육이 $65\%$였다.

전통 명태식해 저온숙성 중 휘발성 성분의 변화 (Changes of Volatile Components in Alaska Pollack Sik-hae during Low-Temperature Fermentation)

  • 명태식해의 산업화를 위한 기초자료를 제시하기 위해 명태식해를 제조한 뒤 저온(5$^{\circ}C$)에서의 저장 중 휘발성 향기성분을 LLCE/GC/MS법으로 분석한 결과 총 65종의 화합물이 검출되었다. 이는 주로 함황화합물류(11종), 알콜류(13종), acid류(13종), 알데히드류(4종), 케톤류(4종), 테르펜류(6종), 방향족 화합물류(4종) 및 기타 화합물류(10종)로 구성되어 있었다. 한편 명태식해 숙성 중 함황화합물류(3-(methylthio)-1-propene, dimethyl disulfide, diallyl sulfide, methylallyl disulfide, methyl-(E)-propenyl disulfide, dimethyl trisulfide, 2 diallyl disulfide isomers, diallyl trisulfide), 산류(acetic acid, butanoic acid), 케톤류(2, 3-butanedione, 6-methyl-5-hepten-2-one) 및 기타 화합물류 중의 에스테르류(ethyl formate, ethyl acetate)가 저장기간에 따라 유의적으로 증가하는 경향을 나타내고 있었다(p<0.05). 특히 함황화합물류는 명태식해의 숙성과정 전반에 걸쳐 영향을 미칠 것으로 추정되었고, acid류, 케톤류 및 에스테르화합물류는 숙성 후반에 더 크게 관여할 것으로 추정되었다.

  • This study developed a natural seasoning (NS) and characterized its food components. Hydrolysate from Alaska Pollock Theragra chalcogramma heads and sea tangle Laminaria japonica byproduct were obtained by incubating them with Neutrase for 4 h. NS was prepared by mixing sorbitol 2%, salt 2%, ginger powder 0.04%, garlic powder 0.2%, onion powder 0.2% and inosine monophosphate (IMP) 0.1% based on concentrated hydrolysates from Alaska pollock head and sea tangle byproduct before vaccum filtering. The proximate composition of NS was 82.7% moisture, 9.0% crude protein, and 5.1% ash. It had a higher crude protein content than commercial anchovy sauce (CS), it was lower in moisture and ash. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and angiotensin-I converting enzyme (ACE) inhibiting activity of NS were 90.1% and 88.9%, respectively, which were superior to those of CS. The free amino acid content and total taste value of NS were 1,626.0 mg/100 mL and 165.86, respectively, which were higher than those of CS. According to the results of taste value, the major free amino acids were glutamic acid and aspartic acid. In the sensory evaluation, the color and taste of NS were superior to those of CS. No difference in fish odor between NS and CS was found.

황태채, 북어채 및 대구채 판별을 위한 전자코 분석 (Discrimination of Shreds of Frozen and Dried Alaska Pollack, Dried Pollack, and Cod using Electronic Nose)

  • 본 연구는 황태채, 북어채 및 대구채간의 차이를 MS-전자코를 이용하여 분석하였다. 이들 각 시료의 mass spectrum은 뚜렷한 차이를 보였으며 판별함수분석을 통해 휘발성 성분의 패턴을 분석한 결과 황태채와 북어채, 대구채가 구분되었다($r^2$= 0.7787, F = 185.2). 이러한 결과는 황태채, 북어채 및 대구채를 러시아산만을 선택하여 비교한 결과 그 차이가 더욱 뚜렷이 구분되었다. 결과적으로 전자코를 이용하여 유사 식품 간의 차이를 충분히 구분 가능하였으며 EMA 식품을 선별하는 데에도 도움이 될 것으로 기대된다.

알래스카 명란의 DPPH, OH, NO의 항산화 특성 분석 (Analysis of the Antioxidant Properties of 2,2-diphenyl-1 Picrylhydroazyl, Hydroxyl Radicals, and Nitric Oxide in Alaska Pollock Roe, with or without Natural Fermented Seasoned)

  • 알래스카 산 대구(Gadus chalcogrammus)는 대구과(family Gadidae)의 해산어종이다. 알래스카 명란 원료, 고추장 명란, 발효 명란을 증류수와 에탄올로 추출하여 2, 2- diphenyl - 1- picrylhydroazyl (DPPH), 하이드록시 라디칼(OH), 산화질소(NO)의 항산화 소거능을 평가하였다. 철 이온 환원력(FRAP)을 조사하였다. ABTS+ 소거능은 Brand-Williams 등의 방법에 따랐다. 고추장 명란의 증류수 추출물의 DPPH 소거능은 1.0 mg/ml 농도에서 71.9%였으며 에탄올 추출물에서 소거능은 73.7%였다. 발효 명란의 증류수 추출물의 DPPH 소거능은 1.0 mg/ml 농도에서 78.0%였고 에탄올 추출물에서 소거능은 78.4%였다. 명란 원료의 증류수 추출물과 에탄올 추출물의 DPPH에 대한 최소 저해 농도 값($IC_{50}$)은 각각 11.65 ug/ml과 11.47 ug/ml이었다. 명란 원료, 고추장 명란, 발효 명란의 에탄올 추출물의 OH 소거능은 1.0 mg/ml 농도에서 70.9%, 79.0, and 80.6%였다. 명란 원료의 증류수 추출물과 에탄올 추출물의 NO의 최소 저해 농도 값은 11.45 ug/ml과 11.41 ug/ml였다. 본 연구 결과, 고추장 명란과 발효명란은 원료 명란 보다 높은 DPPH, OH, NO 소거능을 나타내었다. 고추장 명란과 발효 명란은 자연 라디칼 소거능이 있어 식품으로써 항산화 보충제가 될 수 있을 것이다.
