This study evaluated the growth kinetics of Salmonella spp. in processed meat products formulated with low sodium nitrite (NaNO2). A 5-strain mixture of Salmonella spp. was inoculated on 25-g samples of sausages formulated with sodium chloride (NaCl) (1.0%, 1.25%, and 1.5%) and NaNO2 (0 and 10 ppm) followed by aerobic or vacuum storage at 10℃ and 15℃ for up to 816 h or 408 h, respectively. The bacterial cell counts were enumerated on xylose lysine deoxycholate agar, and the modified Gompertz model was fitted to the Salmonella cell counts to calculate the kinetic parameters as a function of NaCl concentration on the growth rate (GR; Log CFU/g/h) and lag phase duration (LPD; h). A linear equation was then fitted to the parameters to evaluate the effect of NaCl concentration on the kinetic parameters. The GR values of Salmonella on sausages were higher (p<0.05) with 10 ppm NaNO2 concentration than with 0 ppm NaNO2. The GR values of Salmonella decreased (p<0.05) as NaCl concentration increased, especially at 10℃. This result indicates that 10 ppm NaNO2 may increase Salmonella growth at low NaCl concentrations, and that NaCl plays an important role in inhibiting Salmonella growth in sausages with low NaNO2.
This study developed probabilistic models to describe Listeria monocytogenes growth responses in meat products with low concentrations of NaNO2 and NaCl. A five-strain mixture of L. monocytogenes was inoculated in NBYE (nutrient broth plus 0.6% yeast extract) supplemented with NaNO2 (0-141 ppm) and NaCl (0-1.75%). The inoculated samples were then stored under aerobic and anaerobic conditions at 4, 7, 10, 12, and 15℃ for up to 60 d. Growth response data [growth (1) or no growth (0)] for each combination were determined by turbidity. The growth response data were analyzed using logistic regression to predict the growth probability of L. monocytogenes as a function of NaNO2 and NaCl. The model performance was validated with the observed growth responses. The effect of an obvious NaNO2 and NaCl combination was not observed under aerobic storage condition, but the antimicrobial effect of NaNO2 on the inhibition of L. monocytogenes growth generally increased as NaCl concentration increased under anaerobic condition, especially at 7-10℃. A single application of NaNO2 or NaCl significantly (p<0.05) inhibited L. monocytogenes growth at 4-15℃, but the combination of NaNO2 or NaCl more effectively (p<0.05) inhibited L. monocytogenes growth than single application of either compound under anaerobic condition. Validation results showed 92% agreement between predicted and observed growth response data. These results indicate that the developed model is useful in predicting L. monocytogenes growth response at low concentrations of NaNO2 and NaCl, and the antilisterial effect of NaNO2 increased by NaCl under anaerobic condition.

Microbial quality of baked egg products was evaluated by counting the levels of sanitary indicative bacteria (aerobic plate counts, coliforms, and E. coli), L. monocytogenes and Salmonella spp. at the critical control points (CCPs) of manufacturing process. In addition, the survival and growth of foodborne pathogens in various egg products (cheese, tuna, tteokgalbi, pizza omelets, baked egg, and steamed egg) were investigated at 4, 10, and $15^{\circ}C$. The contamination level of aerobic plate counts decreased from 4.67 log CFU/g at CCP 1 to 0.56 log CFU/g at CCP 3 in baked egg products. No coliforms and E. coli were detected at all CCPs. Although L. innocua and Salmonella spp. were identified at CCP 1, no L. monocytogenes and Salmonella spp. were detected in the final products. The contamination levels of aerobic plate counts and coliforms in egg strips and number of aerobic plate counts in Tteokgalbi omelet are higher than the microbiological standard of processed egg products. At $10^{\circ}C$, the growth of all pathogens was not prevented in omelet and baked egg, but the populations of S. Typhimurium and E. coli were reduced in steamed egg at $10^{\circ}C$, regardless of the presence of other pathogens. The growth of L. monocytogenes was faster than that of S. Typhimurium and E. coli in omelet. More rapid growth of S. Enteritidis than S. Typhimurium was observed in egg products, indicating the greater risk of S. Enteritidis than S. Typhimurium in egg products.
Even though the development of livestock industry in Asia and Australasia has brought the economic growth and thus elevated the living standard in these areas, it has also brought the pollution caused by the increasing amount of animal wastes. Among them, Japan probably is the first country that suffered from the animal waste pollution as early as in 1970s. Nowadays, the animal waste pollution has been a common problem for almost every countries in this region. To solve it, different measures and regulations have been implemented in many countries. In this paper, different methods for animal waste disposal are discussed, including: manure-bed animal housing, composting, anaerobic treatment, odor control, utilization of biogas, aerobic treatment, three-step process, N and P removal, land application, cultivation of algae, anaerobic treatment of dead animals. It is hoped that an animal industry without pollution can be achieved in the future.
Biopiles which offer the potential for cost-effective treatment of contaminated soils are above-ground, engineered systems that use oxygen to stimulate the growth and reproduction of aerobic bacteria for degradation of the petroleum constituents adsorbed to soil in excavated soils. This technology involves heaping contaminated soils into piles and stimulating aerobic microbial activity within the soils through the aeration and/or addition of minerals, nutrients, and moisture. Inside the biopile, microbially mediated reactions by blowing or extracting air through the pipes can enhance degradation of the organic contaminants. The influence of a aeration system on the biopile performance was investigated. Air pressure made to compare the efficiency of suction in the pipes showed that there were slightly significant difference between the two piles in the total amount of TPH biodegradation. The normalised degradation rate was, however, considerably higher in the aeration system than in the normal system without aeration, suggesting that the vertical venting method may have improved the efficiency of the biological reactions in the pile.
Microbiological, pH and sensory evaluations of pork loins treated with lactic acid cultures (Lactococcus lactis subsp. lactis ATCC 11454 grown in 10% milk solids) during storage at 4$^{\circ}C$ were assessed. Pork loins were immersed in solutions containing 3.96 log units, 4.10 log units, or 4.23 log units of individual lactic acid cultures for 2 min. Pork loins treated with lactic acid cultures had a inhibitory effect (P<0.05) on the growth of aerobic palate counts during storage of 3 days at 4$^{\circ}C$. Pork loins treated with lactic acid cultures during storage of 3 days at 4$^{\circ}C$ significantly (P<0.05) decreased pH values compared to those of controls. Sensory evaluations for odor and appearance of pork loins treated with lactic acid cultures during storage of 9 days at 4$^{\circ}C$ were a "liked less" to "typical" category compared to those of controls.
A seven-year-old male poodle was presented with multiple non-pruritic draining skin lesions. On physical examination the dog was depressed and had three draining nodules 3.0 to 4.0 cm in diameter on the neck, flank and back. The multifocal sparing of fat lobules, macrophages, and numerous neutrophils were observed in aspiration cytologic examination of nodule. Haematological examination demonstrated a moderate leukocytosis and neutrophilia. An aerobic bacterial culture was undertaken from draining lesions on the flank. But there was no bacterial growth in aerobic culture. Therapy was initiated with oral cephalexin at a dose of 20 mg/kg, body weight three times daily and prednisolone at 1.0 mg/kg twice daily. The (lug returned to normal within 24 hours of treatment and its general attitute and appetite were improved. However, within 1 month new nodules had appeared on the dorsum over the rump, coalescing into a mass of draining nodules and tracts.
The cultivtion efficiencies of enzyme treated nightsoil liquid manure were investigated. As a result of applying the liquid manure prepared by the nightsoil digestion due to aerobic or anoxic conditions with enzyme treatement to cultivate greenstuffs as compared with the controls (conventional cultivation) due to application of none enzyme treated fertilizer, the yield was markedly increased. In the cases of kidney bean, seedleaves were increased over 2~4 times and stem growth and diameter was increased 40% as compared the controls. Finally, cultivation yield of liquid manure prepared by the nightsoil aerobic or anoxic digestion with enzyme treatment were more increased as compared with the controls.
The objective of this study was to examine and compare to transient response to quantitative and hydraulic shocks which produce equal changes in mass rate of organic feed in aerobic fixed-film process. The general experimental approach was to operate the system at several growth rates under steady-state(pre-shock) conditions, then to apply step changes during day 3 in dilution rate(hydraulic shock) , or feed concentration(Quantitative shock) at the same organic mass loading rate. Performance was assessed in both the transient state and the new steady-state (post- shock). Shock load of different type did not produced equivalent disruptions of effluent quality for equal increases in mass loading rate. Based on effluent concentrations, a hydraulic and a Quantitative shock at the same mass loading caused equal increase in total effluent COD, but the increase was primarily a result of suspended solids the hydraulic shock and COD in the quantitative shock. The time which effluent COD came to peak values were about 32~48 hours at the low organic loads and 52 ~ 72 hours at the high organic loads, respectively A quantitative shock produced a much greater increase in effluent COD than did a hydraulic shock at the same mass loading. Mean and peak values of effluent concentration weve increased in 2.8~4.2 times at low organic loading rate, 5.2~6.6 times at the high organic loading rate, respectively. In this study, an experiment was conducted on influent water with low concentrations of organic matter, such as river water or secondary treatment water of a sewage treatment plant, according to HRT changes by using aerobic biofilm. In the biofilm process, as the biofilm increases in thickness, the inner membrane can be low in oxygen transfer rate and become anaerobic conditions, while the detachment of biomass from biofilm occurs. To overcome these limitations in the detachment of microorganisms in biofilm, the yarn, which was made from poly propylene(PP), was weaved and manufactured into a tube. Then, a test was carried out by injecting air so that the interior of the biofilm could create aerobic conditions. The results of the experiment showed that the removal efficiency of $TCOD_{cr}$ reached 66.1~81.2% by HRT 2hr, and 50.9 ~61.8% after HRT 1 hr. The removal efficiency of $SCOD_{cr}$ was 45.9 to 55.1% by HRT 1hr, and 26.1% in HRT 0.5hr, showing the highest removal efficiency in HRT 1hr. The SS removal efficiency was at 81.8 to 94.6%, and the effluent SS concentration was very low, indicating less than 2.2 mg/L in all HRT's. As a result, the $SCOD_{cr}$ and $NH_4{^+}$-N that were removed per specific surface area and attached to microbial biofilm showed the highest efficiency in HRT 1hr with 8.37 $gSCOD_{cr}/m^2{\cdot}d$, 2.93 $gNH_4{^+}-N/m^2{\cdot}d$. From the result of reviewing the characteristics of biofilm growth, microorganisms were found to be attached, and increased by 36 days. Later, they decreased in number through detachment, but showed a tendency to increase again 41 days later due to microbial reproduction.
