외식기업의 조직문화가 자기효능감과 조직시민행동에 미치는 영향 (The Effects of Organizational Culture on Self-Efficacy and Organizational Citizenship Behavior)

  • The purpose of this study was to recognize the self - efficacy and organizational citizenship behavior. For the reliability and validity of the questionnaire, exploratory factor analysis was performed and the Cronbach's s value was calculated to determine the internal consistency of the questionnaire. The effect of organizational culture of self - efficacy on organizational citizenship behavior was as follows. First, it was analyzed that individual culture, collective culture, hierarchical culture, and rational culture had a significant effect on self - efficacy. Second, self-efficacy had an important effect on organizational citizenship behavior. Third, individual culture and rational culture had a significant effect on organizational citizenship behavior. However, the collective culture and hierarchical culture, which put emphasis on family relations and teamwork, had no significant effect on organizational citizenship behavior respectively. Therefore, it is found that the group culture which valuesfamily-friendly and feamwork of its members,or the hierarchical citure for adapting to the external environment has no effect on organizational citizenship behavior family-friendly and lay emphasis on the teamwork of the organization members, and it does not have an effect on the organizational citizenship behavior.

D-Limonene 유화공정에 의한 환경친화성 수성세정제 개발 (Development of Environmentally Friendly Aqueous Cleanser by Emulsification of D-Limonene)

  • For the purpose of development of an environmentally friendly aqueous cleanser, some experimental researches on emulsification of D-limonene were performed. OA series surfactants with different molecular weight were adapted as an emulsifier for preparation of O/W emulsion. Cleaning power of aqueous cleanser was measured by a dipping method adapting abietic acid(AA) as a solubilizate. Besides, drop size and drop size distribution, contact angle and storage stability of the aqueous cleansers were also measured and relationships among them were examined. Decrease in molecular weight of surfactant induced small drop size and contact angie, resulting in high cleaning power of aqueous cleanser. Aqueous cleanser consisted of 3wt.% OA300 and 30wt.% D-limonene showed the highest cleaning power, but displayed unfortunately with low storage stability. The storage stability of the aqueous cleanser with OA300 was significantly enhanced by addition of 0.5wt.% OA600 at the expanse of decrease in cleaning power.

고등학교 현장 교육에서의 암모니아 저감용 축분첨가제 개발 (Development of Livestock Manure Additives for Ammonia Reduction in High School Field Education)

  • This study focused on high school laboratory research and the main purpose was to develop alternative additives for livestock waste and ammonia volatilization methods with high school students as participants and to provide information to business owners based on the results. Compared to the control groups, The bentonite and illite treatment groups had similar ammonia volatilization, pH, EC, and total nitrogen content. In particular, the alum and aluminum chloride mixed treatment group showed low pH and ammonia volatilization, and high EC and total nitrogen content for poultry litter. As a result, when focusing on high school laboratory research, the alum and aluminum chloride mixed agent treatment fulfilled its role as an alternative additive for ammonia reduction. In addition, this approach can be suggested as a method to solve difficulties in adapting to the field through a practical cooperative relationship with livestock farms.

DEA를 이용한 농림 R&D 사업의 효율성 분석 (Efficiency of Analysis Agricultural R&D Program by Data Envelopment Analysis)

  • For the past few years, the Korean government has been consistently expanding its national research & development budget to accelerate economic growth through technology innovation and the enhancement of international competitiveness in global markets. The objective of this paper is to define the concept and analyze the current status of national R&D programs by measuring R&D efficiencies. We determine R&D efficiency by reflecting inputs and outcomes of the five main agricultural R&D programs between 2010 to 2015, and by categorizing and regrouping figures that may affect R&D performance. Among 1,128 targeted projects, 832 projects with patents and thesis were selected for analysis in terms of measuring technology efficiency, pure technology efficiency, and efficiency of scale. Also, the Kruskal-Wallis test was also utilized as well. As a result of empirical analysis, figures that affected the efficiency level of national R&D programs included differences in research resources, research management levels and skills, and research field. This study can be utilized as a reference for re-establishing national agricultural R&D policies, such as enhancement of national technology competitiveness in the global market environment, improving and adapting to new agricultural conditions, market expansion, national agricultural R&D efficiency, aging rural population, agricultural management cost increase, and climate change mitigation.

병원식사 부적응으로 인한 식사 거부 환자의 영양관리 (Nutrition Care of Diet - refusal Patients having Difficulties in Adapting to Hospital Diet)

  • The purpose of this study was to produce proper nutrition and foodservice through positive intervention for diet-refusal patients who has difficulties in adaptation to hospital diet, and to contribute to hospital management with the focus of fast recovery. The survey was conducted using questionnaires between July 18 and August 17, 2000. The subjects were consisted of 24 diet-refusal patients who were hospitalized in St. Mary's Hospital except the patients hospitalized for the purpose of operation or pre-therapy tests. Also chart reviews were conducted. The statistical analysis of data was done by SAS/win 6.11 package to determine descriptive analysis and paired t-test and Pearson's correlation. The summary of study results is as follows : 1. Most of the subjects was receiving chemotherapy. The leading place for offering private food was from patient's home. Subjects worried about delayed recovery from illness due to nutritional problems caused by extreme fasting. The problems were in order of anorexia, nausea and vomiting during therapy process. 52.4% of subjects ate hospital diet after positive intervention. 2. Major reasons of hospital diet-refusal patients' dissatisfaction were in order of expenses, dissatisfaction, serum total protein levels were significantly lower(p<.05). 3. Serum Alb(p<.05), Hb(p<.05), Hct(p<.05) and TLC(p<.001) levels showed significantly negative correlations with fasting duration. With these results, it is concluded that a major cause of malnutrition among patients is to last fasting.

김치에서 분리한 유산균에 의한 아질산염 소모(I) (Depletion of Nitrite by Lactic Acid Bacteria Isolated from Kimchi(I))

  • 김치로부터 20종의 유산균을 분리하여 이들 중 6종은 Lactobacillus sake, 10종은 Leuconostocmesente-roides, 4종은 Lactobaillus plantarum으로 동정되었다. 이들 균주에 의하여 MRS 액체배지에 최종 농도가 250$\mu\textrm{g}$/$m\ell$가 되도록 첨가한 아질산염을 소모시키는 능 력을 시험한 결과 아질산염 소모율은 시험된 모든 온도 조건에서 L. plantarum, L. sake, L. mesenteroides 순서로, 성장 온도가 상승함에 따라 높았다. 특히 공시 L. Plantarum은 시험 된 모든 온도 조건에서 성장하는 중에 대부분의 아질산염을 소모시켰다. 그러나 온도에 대 한 적응성에 기인하여 L. plantarum은 15와 2$0^{\circ}C$에서 2일과 1일의 유도기간을 요하였으며, L. sake는 15$^{\circ}C$와 2$0^{\circ}C$에서 모두 1일의 유도기간을 요하였다. 반면 L. mesenteroides는 시험된 모든 온도 영역에서 유도기간을 요구하지 않았다.

미국의 국가식품안전관리체계 평가 사례연구 (A Case Study of National Food Safety Control System Assessment in the U.S.)

  • 수입식품 안전관리 확보와 효율성 제고를 위한 목적으로 국가식품안전관리체계 평가도구를 활용하여 수출국의 국가식품안전관리체계 현황을 평가하고 이를 자국의 수입식품안전관리에 활용하는 방안에 대한 논의가 미국을 중심으로 진행되고 있다. 본 연구는 미국의 평가도구와 도구를 활용한 평가사례를 비교조사하고, 관계 전문가의 의견을 검토하여 시사점을 도출하였다. 미국 FDA가 개발한 식품안전관리체계 평가도구는 외국의 식품안전 전문성을 이용하여 수입식품 안전성을 확보하기 위하여 마련되었으며, 평가도구는 10개 기준으로 구성되어 외국의 전반적인 식품안전관리 수준을 판단할 수 있도록 고안되어 있다. FDA는 평가도구를 활용하여 뉴질랜드와 캐나다를 대상으로 평가를 실시하였으며 두나라 모두 미국의 식품안전관리체계와 동등한 것으로 인정하였다. 전문가 인터뷰에서는 국가식품안전관리체계 평가를 통해 수입 전 위생평가와 수입식품의 국경검사 빈도관리에 활용함으로써 수입식품 안전관리에 있어 국가예산의 효율적인 배분과 대국민 신뢰도 향상에 기여할 것이며, 향후 국가식품안전관리체계 평가에 대한 활용도 제고를 위해서는 국제적인 조화와 전문가 예산의 확보도 중요하다는 의견을 제시하였다. 미국의 평가도구 조사 분석과 전문가 인터뷰를 토대로 도출한 시사점으로는 국가식품안전관리체계 평가 논의의 국제적 흐름에 능동적으로 대응할 필요가 있으며, 국가식품안전관리체계 평가도구를 활용하여 국내 식품안전관리체계를 검토하는 것이 가능할 것이다. 아울러 식품안전관리체계 평가결과는 수출입 안전관리에도 활용할 수 있을 것으로 보이며, 이러한 국제흐름에 따라 향후에는 우리나라 자체 국가식품안전관리체계 평가도구를 개발하는 방안도 고려할 필요가 있다.

주민의 외식행동에 따른 지역 외식산업의 마케팅 전략 (A Study on Dining-Out Behaviors of Community for Marketing Strategy of Local Foodservice Industry)

  • The purpose of this study was to propose the marketing strategy for the local foodservice industry which can lead to successful business in keen competitive foodservice industry by adapting community residents' dining-out behaviors. A total of 350 adults (291 collected, 102 men and 188 women) was surveyed with a questionnaire about the frequency of dining-out, company when out to eat, proper price for one meal, reasons why one chooses a specific restaurant, and general information. Data was analyzed by SPSS/win 7.5. Over the 1/3 of residents (36.3%) ate out 1-2 times a week and slightly over the 1/4 of residents (26.4%) did so 1-2 times a month. Usually men did more dining out than women. Teachers/ professors' (52.6%) dined out 1-2 times a week. Respondents with 1-2 million won of monthly income (46.4%) ate out 1-2 times a week. Almost 3/4 of respondents chose Korean restaurant. The main factors affected selecting the specific restaurant were 'cleanliness of food and atmosphere of restaurant', and 'reasonable price'. More than 1/3 of respondents (38.9%) answered 5,000-8,000 won was reasonable price for eating-out. Respondents in 20's dined out with friends (70.4%) and friends (43.0%) chose the specific restaurant; on the other hand, the other age groups usually dined out accompanied by family (60.7 - 73.7%) and respected spouse or children's opinion when selecting a restaurant. Thus, the menu must be reevaluated from the customers' view point and nutritional status for the well-being of community residents.

초등학교 학생들의 환경인식과 태도에 관한 연구 (A Study on the Environmental Awareness and Attitude of Elementary School Students)

  • The purpose of this study is to survey and analyze the environmental awareness and attitude of elementary school students, adapting the CHEAKS(Children's Environmental Attitude and Knowledge Scale) for Korean elementary students, which is the valid-tested tools for children's environmental awareness and altitude. The subjects are 580 students from 6 elementary schools. The differences of the environmental attitude are surveyed and analyzed by environmental education activities, such as environmental activities in school and “the school forest movement”, and environmental awareness and concern. The results are as followings: First, the subjects replied that the environmental problems are very serious, such as atmospheric pollution(37.6%), water pollution(22.2%) and food waste(16.3%), but they are relatively optimistic of the future environment. Second, the verbal commitment subdomain and the affect domain are evaluated higher than the actual commitment subdomain, and the environmental issues of water, energy and recycling are considered more importantly than other issues such as environmental generals, pollutions and animals. Third, the grade and the sex have little effect on the environmental attitude, but the environmental education activities have great positive effect, such as the experience of environmental camping, the education of saving resources, waste separation and the experience of raising plants and flowers. Fourth, the students with high awareness and concern about the environmental problems have high environmental attitude. Especially, the awareness and concern on the flowers and plants have very strong correlation with environmental attitude, regardless of the subdomains. Finally, the students from the school participating “the school forest movement” have relatively positive environmental attitude. Particularly, the participation of students and the positive approach of the school have positively great influence on the students' environmental attitude in all of 3 subdomains and 6 environmental issues.

비판적 리터러시를 통한 시민성 함양 가정과 교육과정 개발: 중학교 주생활 영역을 중심으로 (Development of Citizenship Promoting Home Economics Education Curriculum through Critical Literacy: Focusing on Housing Area of Middle School)

  • 본 연구는 시민성 교육의 일환으로서 비판적 리터러시 역량을 향상시킬 수 있는 주생활 교육과정을 개발하는 것을 목적으로 한다. 이를 위해 비판적 리터러시 관점에서 현행 2015 개정 가정과 교육과정 주생활 영역의 내용 체계와 성취기준 및 교과서를 분석하였고, Laster(1986)의 비판과학 관점의 교육과정 개발 과정을 적용, 미국 위스콘신 주의 식생활 교사용 지도서 "A Teacher's guide : Family, Food and Society"(Staaland & Storm, 1996)을 참고하여 주생활 교수·학습지도안을 개발하였다. 본 연구의 결과를 요약하면 다음과 같다. 첫째, 교과 목표 및 주생활 영역 성취기준, 학습요소, 평가방법에서는 비판적 리터러시 내용이 포함될 수 있는 실천적 문제해결 교육과정으로 구성되어 있으나, 교수학습방법에서는 실천적 추론과 비판적 사고 기술이 포함되어 있지 않았다. 또한, 3개의 교과서 주생활 영역의 텍스트를 분석한 결과, 대부분 현재 문화에 적응, 대처하는 내용으로 기술되었고 비판적 해석과 사회행동에까지 이를 수 있는 문제 제기나 사회적 이슈가 거의 없었다. 둘째, 현행 교육과정과 교과서를 분석한 결과를 바탕으로 주생활 교육과정을 개발한 결과, 주생활의 지속적인 관심사, 가치를 둔 목표, 학습내용선정 및 조직, 그리고 총 7개 모듈로 된 13차시 교수·학습지도안과 읽기 자료, 학습지, 영상자료 등 총 학습자료 26개를 개발하였다. 본 연구결과를 토대로, 차기교육과정과 교과서에서 비판적 리터러시를 활용할 수 있는 주생활 관련 사회적 이슈와 다양한 계층의 주생활 모습을 다루어야 하며, 학생들이 실천적 추론과 비판적 사고 등의 모범이 되는 교사를 지원하는 교사공동체 및 연수가 운영되어야 할 것이다.
