Effect of Nitrite and Ascorbic Acid-derived Gas on Color Development and Physical Characteristics in Emulsified Sausage (아질산염과 아스코르브산 유래 가스가 유화형 소시지의 발색 및 물리적 특성에 미치는 영향)

  • In order to improve or replace the direct addition method of nitrite and ascorbic acid, the effect of nitrite and ascorbic acid-derived gas addition on color development and physical characteristics in emulsified sausage was investigated. Nitrite (150 ppm) and ascorbic acid (450 ppm) were added directly to emulsion in the control group, but in the treatment group nitrite and ascorbic acid-derived gas was used for emulsion. In the control and treatment groups, pH values were higher than raw meat, but these values did not show significant change during the storage in both groups. In the meat color, lightness (CIE $L^*$) and redness ($a^*$) values of control and treatment groups were higher compared to raw meat. The treatment group has lower redness and higher yellowness ($b^*$) values than control group during the storage (p<0.05). However, lightness was not significantly different between control and treatment groups. The cook and storage loss values were significantly different between control and treatment groups (p<0.05), but the water holding capacity and shear force values were not significantly different between groups. These results showed that treatment of nitrite and ascorbic acid-derived gas has a similar effect to direct addition of nitrite and ascorbic acid on color development and physical characteristics in emulsified sausage. Also, these results showed that nitrite and ascorbic acid-derived gas addition may be a good possible alternative of nitrite and ascorbic acid using in emulsified sausage.

Effect of Storage Temperature and Antioxidant Additives on the Color and Physiological Activity of Gamma Irradiated Green Tea Leaf Extract

  • Gamma irradiation was used as part of a new processing method to produce a brighter-colored and mild-flavored green tea leaf extract that retained all of its physiological activities. Dried green tea leaf was extracted with 70% ethanol and gamma irradiated at 0,5, 10, 20 kGy. Hunter color $L^{*}$- and $a^{*}$-values were increased with irradiation in a dose-dependent manner, which was a color range from dark brown to bright yellow. However, the irradiation effect gradually disappeared during 3 weeks of storage, with color reverting to that of untreated samples. There was no difference in the radical scavenging and tyrosinase inhibition effect by irradiation. Among antioxidants used, ascorbic acid was the most effective against color reversion. In contrast, cysteine was shown to protect the effect of color change with irradiation. Results indicated that enhanced color of irradiated green tea leaf extract can be effectively controlled by additives such as ascorbic acid and a low storage temperature.e.e.

Comparison of Amino Acid by Appearance of Albinism in Cultured Flounder Paralichthys olivaceus (양식산 넙치의 백화현상에 따른 아미노산 조성의 비교)

  • Albinism is a phenomenon that color of the body surface is changed to white orfaint brown from the specific color to the species by difficiency of pigments due to mutation or disease. This study was undertaken to investigate the experimental basis on the appearance of albinism in cultured flounder Paralichthys olivaceus. The skin and muscle from the normal and albinic flounder were used by measuring contents of amino acid free amino acid. The results were summarized as follows: Contents of amino acid in theskin and muscle are different from normal and albinic flounder. Phenolic and sulfuric amino acids in the skin of normal flounder were 2 times those of albinic ones. Especially tyrosine contents of the skin in normal flounder were 24 times higher than those. Methionine was 26 times higher than those Phenylalanine was 1.6 times higher. In free amino aicd phosphoserine and phosphoethanolamine were a little higher than that ones. The melanin formation of the skin in flounder was affected by substrates such as phenolic amino acid and cofactor such as sulfuric amino acid.

Optimum Condition of Extracting Collagen from Chicken Feet and its Characetristics

  • The objective of this research was to evaluate alternative treatments for the best extraction condition for collagen from chicken feet. Various properties such as chemical composition, amino acid, pH, swelling percentage, yield and pure collagen, collagen loss, color (Hunter L, a and b) and electrophoresis of collagen from chicken feet treated by 5% acids (acetic acid, citric acid. hydrochloric acid and lactic acid) and soaking times (12, 24, 36 and 48 h) were evaluated. The crude protein, fat, ash and moisture contents of chicken feet was 17.42, 12.04, 5.98 and 62.05%, respectively. Amino acid composition of collagen from chicken feet indicated that the protein of collagen was markedly hydrolized by the hydrochloric acid treatment. The result of electrophoresis also supported this phenomenon. Both the swelling percentage of lactic acid and citric acid treatments were significantly higher than that of acetic acid and HC1 treatment. The pH of the acid treatments ranged from 2.43-3.62. According to the result of yield, pure collagen and loss of collagen, the best condition of extracting collagen from chicken feet was soaked in 5% lactic acid for 36 h. However, a brighter yellow color of collagen from all treatments was observed with a longer soaking time.

Stability of Anthocyanin Pigment Extracted from Mulberry Fruit (오디 색소의 안정성)

  • Effects of pH, sugars, organic acids, and metal ions on the stability of anthocyanin pigments extracted from mulberry (Morus alba L) fruit were studied. The pH had marked influences on the color of the anthocyanine pigment: i.e. the lower pH of the anthocyanin solution was, the more stable and intense of the pigment was. Among the sugars, sucrose was the most deleterious followed by fructose, glucose and maltose. Among the organic acids, maleic acid was found to be the most effective in stabilizing the pigment followed by acetic acid, citric acid and tartaric acid. Most metal ions except C $u^{+2}$ and F $e^{+3}$ were found to be effective in stabilizing the pigment.

  • The dyeing property of milling type acid dyes with various chemical constitution were studied in one bath dyeing of Wool/Nylon blended fabrics and the proper dyeing condition to get solid color by using reserving agent was also examined. The result of the experiments can be summarized as follows; 1) Although the effect of pH on dyeing of wool with a highly hydrophiilic dye is great in the dyeing of wool and nylon, the proper pH of dyeing bath is weakly acidic 5, in which levelling dye can be obtained by increasing the solubility product. 2) Under a constant pH, the dye with fewer numbers of sulfonic acid groups increases the dyeing amount of nylon as the concentration of the dye is increased. Thus the appropriate dye for light color is the one with many numbers of sulfonic acid groups and the proper dye for medium and deep color is of fewer sulfonic acid groups for one-bath dyeing. 3) When the dye concentration is greater than the critical depth, the K/S value of wool and nylon was almost not effected or slightly increased.

A Study on Photofading of Cellulose Fabrics Dyed with Safflower Red Colorants (홍화의 홍색소로 염색한 셀룰로오스계 직물의 광변퇴색 고찰)

  • The purpose of this study was to increase uv-cut ability of cotton, ramie, and rayon fabrics dyed with safflower red colorants. For this purpose, samples treated with uv-cut agent and tannic acid were compared with the untreated samples after ultraviolet(uv)-light exposure in terms of K/S value, color changes(${\Delta}E$), SEM, and tensile strength retention. K/S value rapidly decreased with increasing exposure time, but K/S value of the samples treated with both uv-cut agent and tannic acid decreased less than that of untreated samples. As increasing exposure time, $L^*$ and $b^*$ increased, $a^*$ decreased, and so ${\Delta}E$ increased, indicating less red character and more yellow character in color. This leads to change hue, value and chroma value. But color change of samples treated with both uv-cut agent and tannic acid was less than that of untreated samples. SEM pictures showed a severe degradation by uv exposure in all samples. Tensile strength slowly decreased for 21 days. And after this point, the decreased proceeded more rapidly. Tensile strength retention of the samples treated with uv-cut agent and tannic acid was higher than that of untreated samples.

Characteristics of the Yakju Fermented with Differently-processed Lotus Leaves (연잎의 처리방법에 따른 약주의 품질특성)

  • This study was to investigate the characteristics of the Yakju fermented with differently-processed lotus leaves such as blanching, steaming, roasting, and drying, and fresh one for control. The total acid content was high (0.82~1.22%) in the lotus leaf Yakju, and lactic acid was the main compound among organic acids. Volatile acid content was high (200~500 mg/L) compared to the results of organic acid composition, and the main volatile acid in lotus leaf Yakju was acetic acid. Though the polyphenol content (616.5~693.1 mg/L) was similar among the Yakju, the Hunter's color value of those were quite different and also had a big impact on the sensory evaluation of color. Therefore, it seems that the enzyme activity of polyphenol oxidase in differently-processed lotus leaves may have an influence on the color of lotus leaf Yakju. In a sensory evaluation of color and aroma, lotus leaf Yakju fermentaed with fresh leaves and roasted ones were preferred to the others, and steamed leaves and roasted ones were the best in taste and overall acceptability.

The Effect of Potato Lipoxygenase on the Change of Lipid Distribution, Fatty Acid Composition, Carotenoids Content and Color Value in Wheat Flour Dough (감자 lipoxygenase가 밀가루반죽의 지질분포, 지방산조성, 카로테노이드 및 색도 변화에 미치는 영향)

  • This study was designed to investigate the effect of potato lipoxygenase on the change of dough chemical composition including lipid distribution, fatty acid composition, carotenoids content and color value in wheat flour dough. For the study, the potato lipoxygenase was added to wheat flour at a level of $6.5{\times}10\;unit/g$ flour. The addition of potato lipoxygenase to wheat flour dough was found to cause an increase in free lipid content, an effect apparently related to the decrease in linoleic acid content and increase in peroxide value. This phenomena might be due to the enzymatic oxidation of polyunsaturated fatty acid. Also, the bleaching effect of lipoxygenase was observed as the decrease in carotenoids content of wheat flour dough. In comparison of color value, it was shown that redness, yellowness and total color difference$({\delta}E)$ were lower by addition of lipoxygenase.

The Effect of Antibrowning Agents on Enzymatic Reaction in Apple Concentrate (사과농축액에 대한 갈변억제제 처리효과)

  • The effect of antibrowning agents such as PVPP (polyvinylpolypyrrolidone), bentonite, gelatin, celite 545, tannic acid and sodium sulfite in apple concentrate was investigated for the control of enzymatic browning by comparing physicochemical properties (pH, color, turbidity), polyphenoloxidase activity and contents of polyphenol compounds. In color value, apple concentrate containing PVPP showed higher L value (lightness) than control and other antibrowning agents. The turbidity (absorbance at 660 nm) of apple concentrate added PVPP, gelatin celite 545, tannic acid and sodim sulfite were 0.003, 0.038, 0.018 and 0.022, respectively. PVPP was regarded to remove suspended solids effectively. Polyphenoloxidase activity and polyphenolics(catechol, catechin, chlorogenic acid, epicatechin) content of apple concentrate used PVPP significantly reduced. Therefore PVPP was proved to be effective for enzymatic antibrowning agent considering to color, turbidity, polyphenoloxidase activity and polyphenol compounds in apple concentrate.
