Quality Changes of Pine Nuts(Pinus koraiensis) Stored in Airtight Container and Zipper Bag (밀폐용기와 지퍼백에 저장한 잣(Pinus koraiensis)의 품질변화 연구)

  • The effects of airtight containers and zipper bags on the freshness extension of pine nuts (Pinus koraiensis) were studied at 4 and $25^{\circ}C$. Changes in total microbial growth, 2-thiobarbituric acid(TBA), color, and sensory quality were evaluated during storage. Total bacterial counts of the samples continuously increased over 28 days for airtight containers and 56 days for zipper bags, and then decreased at 70 days because the lack of air could affect the inhibition of the aerobic microbial growth. However no significant differences were observed between airtight containers and zipper bags. TBA values continuously increased with storage time, but there were no significant differences between the airtight containers and zipper bags during storage. Color changes and sensory evaluation analyses showed that the data revealed similar results for both packaging systems over the storage time. Therefore, it has been concluded that airtight containers and zipper bags could be used as a good packaging system to extend the shelf life of pine nuts by controlling the microbial growth, but the packaging systems of the airtight containers and the zipper bags was not significantly affect the quality parameters for 2-thiobarbituric acid(TBA), color, and sensory quality.

Comparison of Environmental Control Characteristics of High-barrier Films for Sealed Packaging of Cultural Heritage Objects (문화재 밀폐 포장용 고차단성 필름의 보존환경 제어 특성 비교)

  • High-barrier films are used to store cultural heritage objects in a safe environment sealed from oxygen and moisture. One of the high-barrier films use populary E manufactured by Japanese company M from the 1990's. However, this product has stayed in wide use, due to dearth of research on related subjects - including studies comparing it with other similar products-, in spite of the fact that high price information about its characteristics and environmental conditions is largely lacking. This study examines the characteristics of a number of high-barrier films with the goal to establish environmental standards for safer conservation of cultural heritage objects. E by the Japanese manufacturer M is compared with four other films; an electronics packaging films by a Korean firm, a film specially produced for the purposes of experiment in this study and a zipper bag-type film. Experiments were performed to compare the properties and gas blocking ability of the films by looking at their cross-section and measuring the thickness, tensile strength, elongation, absorbance of UV and visible light, yellowing and the permeability for oxygen and vapor. Based on these experiments, there are observed changes under different environmental conditions and depending on the length of use through temparature and humidification reproucing test. The results showed that while the high-barrier film by the Korean manufacturer was suitable for use as a packaging material for cultural heritage objects, the zipper bag-type film (P) was ill-adapted for this purpose. Based on the experiments reproducing the real-world environment, the length of useful life was also determined for each.

Investigating changes of histamine content in salted mackerel - on storage containers - (염장고등어의 히스타민 변화 조사 -보관용기 중심으로-)

  • In order to find a way to reduce histamine formation when storing salted mackerel at home, a series of experiments were carried to monitor the time-related changes of histamine content, total aerobic bacteria and coliform quality of mackerel marketed in Incheon by the type of storage containers (clean, zipper and vacuum bag) during storage at $4^{\circ}C$, $24^{\circ}C$ and $-20^{\circ}C$ for 10 days. Histamine formation was continuously increased with passing time during storage at $4^{\circ}C$, whereas it was decreased after 3 days during storage at $24^{\circ}C$. The initial value of histamine was maintained during storage at $-20^{\circ}C$ for 10 days. During storage at $4^{\circ}C$, total aerobic bacteria and coliform showed a tendency to increased rapidly till 3day and then decreased gradually. The formation of histamine was increased in the order of vacuum bag$4^{\circ}C$.

Performance Analysis on the Reduction of Drowning Accident Using Buoyancy Bag (부력가방의 익사사고 저감성능 분석)

  • This study is to reduce the rate of drowning accident by using of buoyancy bag. People are exposed to the high risk of drowning accident when they have water leisure activities due to the lack of safety mind-set and shortage of safety products. In case of drowning accident, the rescue action is normally depending on the other people's assistance. Therefore, rescue activities which relyn the people doesn't improve the ratio of survival in the drowning accidents. The submarine specialists should use the buoyancy products to rescue the people in the drowning accident. The citizen can carry portable buoyancy product in the automobile as well as by hands anywhere and anytime. It will be effective rescue tool to save his/her life in the emergency. In addition, it will contribute to rescue other's life because it can be used immediately. There are 3 positive characteristics on the buoyancy bag. First, it is convenience. Documents and other stuffs can be kept in the bag. Second is safety. The material of buoyancy is placed in the inner of the bag. It is possible to float the person whose weight is 90 kg. Lastly, it is durability. It can be used long-term because the outer of the bag is made of anti-water material and anti-water zipper. As a result of performance analysis, it is evident that the buoyancy bag can be used to rescue the people in the drowning accident as a indirect rescue tool compared with the current other rescue products. It is recommended that the design of outer box and performance of buoyancy are required to be improved in order to contribute more to rescue people in the accident.

Fabrication of Breathable Film using Laser Pulses (레이저를 이용한 숨쉬는 필름 가공 기술 연구)

  • A polypropylene film was ablated using a $CO_2$ laser, Ti-sapphire femtosecond laser, and UV nanosecond laser. For modified atmosphere packaging, polypropylene films were ablated by laser pulse with different pulse energies and measured on an optical microscope. Also, we observed the shelf life of a banana contained within packaging of a breathable zipper bag. As a result, we have demonstrated that the breathable film can efficiently extend the shelf life of respiring foods, particularly fresh fruits and vegetables. The development of breathable film laser microfabrication system will more useful for industrial applications.

Effect of Storage Conditions on Survival of Fungi in Red Pepper Powder (저장조건이 고춧가루 중 곰팡이 생존에 미치는 영향)

  • In this study, we analyzed the effect of storage conditions on the survival of fungi in red pepper powder. Red pepper powder was inoculated with a total of six fungal species, namely Aspergillus terreus, Aspergillus flavus, Rhizopus microsporus, Aspergillus fumigatus, Aspergillus niger, and Aspergillus ochraceus at a final cell count of 4-6 log CFU/g. After inoculating the sterilized red pepper powder with fungi, we dried the powder on a clean bench and packaged it in zipper bags. Following drying, the water activity was 0.502±0.001. Subsequently, the red pepper powder inoculated with fungi was stored at -20℃, 5℃, 15℃, and 25℃. All six species of fungi perished the quickest at 25℃ and survived for the longest (168 days) at -20℃. In summary, this study showed that fungi survive for an extended period in red pepper powder at -20℃ and 5℃ compared to 15℃ and 25℃. Therefore, to prevent fungal contamination, red pepper powder should have a water activity below 0.6 and be stored in a zipper bag at room temperature.

Microbial Contamination Levels of Red Pepper Powder Purchased in Gyeonggi Province and Changes in Characteristics According to the Storage Method

  • The purpose of this study was to investigate the microbial contamination of red pepper powder distributed within Gyeonggi province in 2020 according to the place of purchase, the country of origin, and whether the HACCP certification and sterilization were conducted, and to evaluate the change of quality according to the storage method. Upon collecting and analyzing 100 samples, Bacillus cereus was detected in 3 cases (2 cases in large supermarkets and 1 case in traditional markets) and Clostridium perfringens in 27 cases (9 cases in large supermarkets and 18 cases in traditional markets). The levels of the total aerobic bacteria were not significantly different between the red pepper powder purchased from large supermarkets and traditional markets. However, the frequency of red pepper powder exceeding 7 log CFU/g of total aerobic bacteria was higher in traditional markets than in large supermarkets. Microbial quality was not significantly different regardless of the storage temperature (30℃, 4℃, -20℃) and the packaging method (zipper bag and clean bag) after 7 months of purchase. However, the moisture contents and ASTA color value of red pepper powder stored at 30℃ decreased remarkably after 3 months of storage. It is desirable to store red pepper powder in a refrigerator or freezer in order to maintain its quality during long-term storage.

Mornitoring of 1-hexene and 1-octene in Hygienic Polyethylene-based Packaging (폴리에틸렌계 위생용 용기포장재중의 1-hexen과 1-octene 조사)

  • The levels of migration of 1-hexene and 1-octene residues in PE (polyethylene) products were analyzed by Headspace gaschromatography (HSGC). A total of 21 samples were including lap, polyglove, zipper bag and ect. The samples were eluted with distilled water, 4% acetic acid, 20% ethanol and n-heptan. The limit of detection (LOD) was 0.06 mg/L ~ 0.30 mg/L and limit of quantitation (LOQ) was 0.21 mg/L ~ 1.01 mg/L, respectively. But because of the high volatile, n-heptan elution was not detected 1-hexene and 1-octene standard. 1-hexene and 1-octene were not detected in the sample which eluted with simulant at $60^{\circ}C$, 30min. Microwave for 1 minute also treated sample and direct heated at $100^{\circ}C$ without simulant were not detected.
