The present study evaluated the difference in objective and subjective meat quality properties among the pure-breed boars of Duroc, Berkshire and Yorkshire. Ten longissimus lumborum (LD) muscles were collected from each breed after 24 h slaughtering. The breed type showed a significant effect on intramuscular fat content, moisture (p<0.01), pH, sarcoplasmic protein solubility and color (p<0.05), whereas cooking loss and Warner Blazer shear force (WBsf) did not differ among the breeds. The Yorkshire breed showed significant (p<0.05) lower sarcoplasmic protein solubility, pH and CIE $a^*$ value when compared with other breeds. The sensory panels identified Duroc as having greater overall acceptability and higher rating values than other breeds. The oleic acid content was significantly lower in the Berkshire (29.85 %) than in the Duroc (40.19 %) and Yorkshire breeds (38.18 %, p<0.05). The Yorkshire breed showed the most desirable ratio of polyunsaturated and saturated fatty acids (0.31) than the Berkshire (0.16) and Duroc breeds (0.15, p<0.05). 40 volatile compounds have been identified and quantified, while aldehydes were the most abundant among flavor substances. Aldehydes were negatively correlated with oleic acid content (p<0.05). Current data indicated that each breed had their own merits and deficiencies in terms of meat qualityThe Yorkshire breed showed a greater number of weak points. Furthermore, this study indicated that individual fat-driven flavor components were greatly influenced by fatty acid composition. The polyunsaturated fatty acids did not show any negative effects on meat flavor if cooked meats were consumed soon after cooking.
This study was carried out to investigate the quality comparison of M. longissimus from 4 crossbred wild boars(wild boar ♂×Duroc ♀, 113kg, 1 barrow and 3 gilts, CWB) reared outdoor, 5 Korean native black pigs(64kg, 5 barrows, KNP) and 5 modern genotype pigs(Landrace×Yorkshire×Duroc, 114kg, 5 barrows, MGP) reared indoor. The samples were stored at 2±0.2℃ for 12 days and utilized in the quality measurement. The moisture content was significantly higher in CWB than in KNP(p<0.05), however crude fat content was significantly lower in CWB than in KNP(p<0.05). The pH value of CWB was significantly lower than that of MGP during 12 days of storage(p<0.05). Therefore the CWB showed significantly lower water-holding capacity than MGP(p<0.05). The L*, a*, b* and C* values of CWB were significantly lower than those of KNP during 12 days of storage(p<0.05), however those of CWB were significantly higher than those of MGP after 3 and 6 days of storage(p<0.05). In fatty acid composition, the CWB had higher unsaturated fatty acid including linoleic acid, arachidonic acid and lower saturated fatty acid. However, the lipid oxidation of CWB was delayed during storage compared with KNP and MGP. The aroma patterns by principal component analysis(PCA) from electronic nose was discriminately different among 3 different pork at 0 and 12 day of storage.
Reproductive traits of sows are determined chiefly by the genetic background of the dam herself. Whether the breed of the serviced boars also contributes is not yet clear. A total of 8,946 litters of Landrace (L) sows from 68 farms were examined. Of these, 876, 1,260, and 6,810 litters were produced from natural mating with L, Yorkshire (Y), and Duroc (D) breeds, respectively. The birth litter size (BLS), weaning litter size (WLS), live born piglets (LBP), and survival rate % (SR), of every litter were recorded. A general linear-model procedure was followed to estimate the effects of boars' breed (B), parity (P) and B${\times}$P interaction on the reproductive traits of the sows. Results show that BLS, WLS, and LBP were all significantly (p<0.001) affected by B and P. SR% was significantly influenced by B but not by P. L sows crossbred with Y or purebred with L produced litters with higher BLS, WLS, and LBP values than those bred with D. Pure L breeding yielded litters with lower SR% than did crossbreeding with D, while the difference between SR% due to LY and that due to LD crossbreeding was not significant. The interaction of B with P was significant with respect to BLS, WLS, and LBP (p<0.001), but not SR%. No significant B effect on reproductive traits was measured in sows at their first parity; but at latter parities, LL or LY produced litters with similarly high BLS, WLS and LBP, which values were all significantly greater than those of LD litters. The breed of boar evidently affected the subsequent reproductive performance of L sows and this effect may be further manipulated by the parity effect. Breed differences in semen quality and the success of fetus development with different interactions of the genetic background with the uterus function of the sow that may contribute to these effects are discussed.
The purpose of this study was to establish proper shipping weight and backfat thickness by applying the growth model to backfat thickness, measured by means of not only body weight, but also ultrasonography, and predicting the changes by age. Three breeds, i.e. Duroc, Landrace, and Yorkshie, were analyzed, and the Gompertz, logistic, and Von Bertalanffy model were used for inference with the parameter of the growth model being sex. As a result, both body weight and backfat thickness showed different growth curve parameters and characteristics at inflection points depending on model selection and sex. As for backfat thickness, in estimating the inflection point, unlike the case of body weight, the inflection ages of the boars of the Duroc breed was earlier than that of sows, whereas the inflection ages of the sows of the Landrace and Yorkshire breeds was earlier than that of boars. More than anything else, in the analysis of the changes in backfat thickness according to body weight, as the body weight reached 145kg, the backfat thickness showed much variation as great as 1.7-3.2 cm in each breed and sex. In addition, unlike the other breeds, the boars of the Landrace breed showed an exponential type of relationship between body weight and backfat thickness. As they grow to become 100 kg or heavier, abrupt change in back fat thickness was confirmed. If the growth of body weight and backfat thickness is understood and the genetic relationship is taken advantage of like this, it would be possible to set desired body weight and backfat thickness, and thus help effectively set the shipping time. If not only the phenotype, but also genetic parameters about growth characteristics are estimated and analyzed additionally, more effective data can be generated.
c-MYC (v-myelocytomatosis viral oncogene homologue) is a transcription factor that plays important role in many biological process including cell growth and differentiation, such as myogenesis and adipogenesis. In this study, we aimed to detect MYC gene polymorphisms, their genotype frequencies and to determine associations between these polymorphisms and meat quality traits in Berkshire pigs. We identified a single nucleotide polymorphism (SNP) in intron 2 of MYC gene by Sanger sequencing, i.e., g.3350G>C (rs321898326), that is only found in Berkshire pigs, but not in other breeds including Duroc, Landrace, and Yorkshire pigs that were used in this study. Genotypes of total 378 Berkshire pigs (138 sows and 240 boars) were determined using Hha I restriction enzyme digestion after polymerase chain reaction. Observed allele frequencies of GG, GC, and CC genotypes were 0.399, 0.508, and 0.093 respectively. Statistical analysis indicated that the g.3350G>C polymorphism was significantly associated with $pH_{45min}$ and cooking loss (p<0.05), suggesting that g.3350G>C SNP can be used for pre-selection of $pH_{45min}$ and cooking loss traits in Berkshire pigs.
This study was carried out to investigate the effects of breed, age of boar, season, parity and mating system on boar semen characteristics and fertilizing capacity. A total of 4181 sows and 199 boars of Durocs (D), Landraces (L), and Yorkshires (Y) were used for this experiment at Darby Artificicial Insemination Center from 1996 through 1999. Semen volume per ejaculate was largest in Landrace (266.8 $m\ell$), followed by Yorkshire, and was smallest in Duroc. Sperm motility did not show significant differences among the above breeds. Sperm concentration was lowest in Landrace (4.7$\times$10$^{9}$ sperm/$m\ell$) and was highest in Duroc (5.7$\times$10$^{9}$ sperm/$m\ell$). Semen volume per ejaculate according to the age of boars was largest at the age of 2 years, followed by the age of 4 and 3 years, and was smallest at the age of I year. Semen volume per ejaculate according to the season in boars was largest in winter (228.6 $m\ell$), followed by autumn and summer, and was smallest in spring. Sperm concentration was highest in spring (5.9$\times$10$^{9}$ sperm/$m\ell$), followed by summer and winter, and was lowest in autumn. The average litter weight at birth did not show any differences according to the mating type. But the number of pigs born alive per litter was largest (9.5 pigs) in the natural mating + artificial insemination group, followed by the artificial insemination group (9.2 pigs), and was smallest (8.9 pigs) in the natural mating group (P<0.01). The average litter weight at birth and number of pigs born alive per litter did not show any differences between the natural mating and artificial insemination. The L (♀)$\times$Y (♂) and L (♀)$\times$L (♂) matings show $\varepsilon$ d higher average litter weight at birth and number of pigs born alive per litter than the Y (♀) $\times$ Y (♂) and Y (♀) $\times$ L (♂) matings. The pigs in the 2~6th parities had higher average litter weight at birth and number of pigs born alive per litter than those in the 1 st and 7~9th parities.

Objective: O-linked N-acetylglucosamine (O-GlcNAc) transferase (OGT) catalyzes the addition of O-GlcNAc and GlcNAcylation has extensive crosstalk with phosphorylation to regulate signaling and transcription. Pig OGT is located near the region of chromosome X that affects follicle stimulating hormone level and testes size. The objective of this study was to find the variations of OGT between European and Chinese pigs. Methods: Pigs were tested initially for polymorphism in OGT among European and Chinese pigs by polymerase chain reaction and sequencing at the U.S. Meat Animal Research Center (USMARC). The polymorphism was also determined in an independent population of pigs including European and Chinese Meishan (ME) breeds at the National Institute of Animal Science (NIAS, RDA, Korea). Results: The intron 20 of OGT from European and Chinese pigs was 514 and 233 bp, respectively, in the pigs tested initially. They included 1 White composite (WC) boar and 7 sows ($2Minzu{\times}WC$, $2Duroc\;[DU]{\times}WC$, $2ME{\times}WC$, $1Fengzing{\times}WC$) at USMARC. The 281-bp difference was due to an inserted 276-bp element and GACTT in European pigs. When additional WC and ME boars, the grandparents that were used to generate the $1/2ME{\times}1/2WC$ parents, and the 84 boars of 16 litters from mating of $1/2ME{\times}1/2WC$ parents were analyzed, the breeds of origin of X chromosome quantitative trait locus (QTL) were confirmed. The polymorphism was determined in an independent population of pigs including DU, Landrace, Yorkshire, and ME breeds at NIAS. OGT was placed at position 67 cM on the chromosome X of the USMARC swine linkage map. Conclusion: There was complete concordance with the insertion in European pigs at USMARC and NIAS. This polymorphism could be a useful marker to identify the breed of origin of X chromosome QTL in pigs produced by crossbreeding Chinese and European pigs.
Castration of male pig produces significant negative effects on skeletal muscle development. The androgen receptor (AR), two splice variants of insulin-like growth factor-I (IGF-I Ea and MGF) and the myostatin gene may play important roles in this process. In the present study, the expression of AR, IGF-I Ea, MGF and myostatin genes in three skeletal muscles, the brachialis, longissimus and semitendinosus, were studied using real-time quantitative RT-PCR. Our experimental design used 14 pairs of male Landrace sire${\times}$Yorkshire dam piglets. The two piglets in each pair were full sibs, one of which was castrated at 21 d of age; the other remained intact. The study group was divided into subgroups of equal size. Animals in the first subgroup were slaughtered at 147 d and those of the second at 210 d of age. Carcass weight and lean meat yield were similar between boars and barrows at 147 d of age (p>0.05), whereas barrows had lower carcass weight and less lean meat yield at 210 d of age (p<0.05). Castration caused down-regulation of AR gene expression at both 147 and 210 d of age (p<0.05). The two splice variants of the IGF-I gene from porcine skeletal muscle were cloned using RT-PCR, and it was found that MGF differs from IGF-I Ea in having a 52-base insert in the last coding exon of the mRNA. Both splice variants were down-regulated by castration only at 210 d of age (p<0.05). No differences in expression of the myostatin gene were observed between boars and barrows at either 147 or 210 d of age (p>0.05). These results suggest that the downregulation of AR, IGF-I Ea and MGF gene expression following castration helps to explain the negative effect of castration on skeletal muscle development.
Objective: This experiment was conducted to determine the differences in the apparent ileal (AID) and total tract digestibility (ATTD) of nutrients and indispensable amino acids (IAA) in high-fiber diets with wheat middlings, rice bran or alfalfa meal fed to Duroc${\times}$(Landrace${\times}$Yorkshire) (DLY) and Duroc${\times}$ (Berkshire${\times}$Jiaxing) (DBJ) growing barrows. Methods: Eighteen DLY and 18 DBJ growing barrows were randomly allotted to a $2{\times}3$ factorial arrangement involving 2 crossbreeds and 3 high-fiber diets. The experiment lasted 15 d with 10 d for diets adaptation, 3 d for feces collection and 2 d for digesta collection. Three diets were based on corn and soybean meal with 25% wheat middlings, rice bran and alfalfa meal respectively. Results: DBJ had a greater (p<0.05) AID of isoleucine, leucine, lysine, phenylalanine and valine and a lower (p<0.05) AID of methionine than DLY. The hindgut disappearance of acid detergent fiber for DBJ was greater (p<0.05) than DLY. The ATTD of gross energy, dry matter, organic matter, neutral detergent fiber and acid detergent fiber in wheat middlings diet were greater (p<0.05) than in rice bran and alfalfa meal diets. The hindgut disappearance of neutral detergent fiber and acid detergent fiber in wheat middlings diet or rice bran diet were the highest or lowest (p<0.05), and those of alfalfa meal diet were the middle. Barrows fed rice bran diet had a greater (p<0.05) hindgut disappearance of gross energy, dry matter and organic matter and lower hindgut disappearance of neutral detergent fiber and acid detergent fiber than barrows fed alfalfa meal diet Conclusion: DBJ growing barrows showed a significant higher digestibility of fiber in the hindgut and most IAA in the small intestine compared with DLY barrows. The digestibilities of chemical constituents and IAA were affected by the diets formulated with different fiber sources.

This study was carried out to investigate the effects of liquid boar semen on reproductive performance in swine artificial insemination. Many factors, which were breeds, time of insemination, breeding season, sperm per dose etc, have been tried to improve reproductive efficiency. Boars were raised at Swine Artificial Insemination Center in National Livestock Research Institute, Sunghwan, Chungnam, Korea. This experiment was carried out from 1995 to 2000. There were no differences in the fertility results compared with 3 breeds (Landrace, Yorkshire and Duroc), frequencies of artificial insemination (double and triple) per estrus cycle and different seasons by using liquid boar semen. There were no significant differences in conception rate, farrowing rate and litter size using 4 trials of 3.0, 2.5, 2.0 and $1.5{\times}10^9/80ml$ in liquid boar semen with 70% of motile sperm cells. We confirmed that the sperm number per dose of $1.5{\times}10^9/80ml$ could be used for commercial artificial insemination.
