  • The study was carried out to analyze vegetation structure of Pinus densiflora and Quercus mongolica forests located in Jochimryeong to Shinbaeryeong of the Baekdudaegan mountain range. The survey for 50 plots was conducted from April 2012 to August 2013 in the permanent plots ($100m{\times}100m$) using phytosociological analysis. As a result, the vegetations were classified into five vegetation units. In species composition, they were classified into Q. mongolica community group divided into 2 community such as Fraxinus rhynchophylla community and Carpinus cordata community, F. rhynchophylla community was subdivided Pinus densiflor group (into Euonymus sachalinensis subgroup, Vitis coignetiae subgroup) and Juglans mandshurica group. C. cordata community was subdivided Acer komarovii group and Betula ermanii group. In terms of importance value, P. densiflora and Q. mongolica were more than 20% respectively. P. densiflora was found to have the highest relative coverage. Analysis of interspecific association showed four types which were coincident with differential species and character species on the constancy table. Based on the diameter class distribution, P. densiflora forest presented a normal distribution pattern except for other species which showed a reverse Jshaped distribution pattern, therefore P. densiflora forest would likely be replaced by Q. mongolica forests. While in Q. mongolica forest, diameter class distribution of all species population presented a reverse J-shaped distribution pattern, therefore Q. mongolica forest could likely remain in the future.

  • The purpose of this study was to evaluate the antioxidant components and activities of HR02/04(8:2)-W, a mixture of S. quelpaertensis Nakai and F. erecta var. sieboldii. We investigated the p-coumaric acid, total flavonoid, and total phenol contents. To evaluate the antioxidant efficacy, we measured the 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2'-azino-bis(3-ethylbenzthiazoline6-sulfonic acid) diammonium salt (ABTS) radical scavenging activity, FRAP activity, reducing power, and ORAC value. We observed the protective effect of hydrogen peroxide against cell damage in human dermal fibroblasts. As a result of the experiment, the p-coumaric acid, total flavonoid, and total phenol contents were 75.62±1.56 mg/100 g, 21.57±0.84 mg rutin equivalent (RE)/g, and 21.25±1.31 mg gallic acid equivalent (GAE)/g, respectively. In the experiments on antioxidant activity, HR02/04(8:2)-W was found to have significantly increased antioxidant activity. In the human dermal fibroblasts, the HR02/04(8:2)-W treated groups could effectively protect cells against oxidative damage. In this study, we confirmed that HR02/04(8:2)-W is a material with effective physiological antioxidant activity.

  • We investigated temperature management for refrigerated foods in large discount markets, department stores, and convenience stores. Eleven stores in the Seoul area were used to examine temperature maintenance for frozen and refrigerated foods, including soybean curds (tofu), fish surimi, mook, wet noodles, kimbab, and salads. The surficial and central temperatures of foods in a refrigerator and a freezer were examined. While the difference between the highest ($7.5^{\circ}C$) and the lowest ($6.4^{\circ}C$) temperature spaces in a refrigerator was $1.1^{\circ}C$, the corresponding difference between the highest ($8.9^{\circ}C$) and lowest ($7.5^{\circ}C$) food surface temperatures was $1.4^{\circ}C$. The average temperatures of both chilled food surfaces and refrigerator spaces were $7^{\circ}C$ (max. $22.9^{\circ}C$) and 8.2 degrees C (in. $-0.4^{\circ}C$), respectively. The temperatures of chilled food surfaces were $6.1{\times}10.6^{\circ}C$ for soybean curds, $6{\sim}12.3^{\circ}C$ for fish paste, $2.3{\times}18.2^{\circ}C$ for kimbab, $4.6{\times}12.2^{\circ}C$ for salads, $3.4{\times}12.6^{\circ}C$ for wet noodles, and $7.1{\times}19^{\circ}C$ for mook. Our results indicate that chilled foods require careful management for storage at temperatures below $10^{\circ}C$ with careful recording of the warmest area of the refrigerator.

  • This study compared physicochemical properties and antioxidant activities according to different harvest times in five varieties of black rice (BR). Five cultivars of BR, Nunkeunheukchal (NKHC), Sinnongheugchal (SNHC), Sintoheugmi (STHM), Josaengheugchal (JSHC), and Heugjinju (HJJ), were selected for the study. Cultivars were transplanted on June 20th and cultivated by the Department of Southern Area Crop Science, NICS in Miryang, Korea. Heading dates of NKHC, SNHC, STHM, JSHC, and HJJ were Aug. 17th, Aug. 30th, Sep. 1st, Aug. 20th, and Aug. 12th, respectively. The five different harvest times were as follows; 35, 40, 45, 50, and 55 days after heading date. The highest level of anthocyanin was 35 days after heading date in all varieties. Levels of anthocyanin in NKHC, SNHC, STHM, JSHC, and HJJ were 164, 203, 251, 67, and 210 mg/100 g, respectively. Content of anthocyanin significantly decreased 35 days after heading in four varieties, excluding JSHC. Highest DPPH $IC_{50}$ values were 57, 29, 10, and $27{\mu}g/mL$ in NKHC, SN HC, STHM, and JSHC extracts, respectively. Highest ABTS $IC_{50}$ values were 24, 13, 9, and $11{\mu}g/mL$ in NKHC, SNHC, STHM, and JSHC extracts, respectively. The antioxidant activities were highest 35 days after the heading date and significantly decreased in four varieties, excluding HJJ. The antioxidant activity of HJJ showed no significant difference, according to harvest time. This study suggests that the content of anthocyanin and antioxidant activity could be considered as factors affecting optimal harvest period to produce highly qualified black rice.

  • The aim of this study was to investigate method validation for determination of sesamol, sesamin, and sesamolin in non-fermented sesame and fermented sesame by bioconversion. For validation, the specificity, linearity, precision, accuracy, limits of detection (LOD), and quantification (LOQ) of sesamol, sesamin, and sesamolin were measured by HPLC. Linearity tests showed that the coefficients of calibration correlation ($R^2$) for sesamol, sesamin, and sesamolin were 0.9999. Recovery rates of lignan contents in non-fermented and fermented sesame were high in the ranges of 100.27~115.10% and 98.43~114.90%, respectively. The inter-day and intra-day precisions of sesamin and sesamolin analyses for non-fermented and fermented sesame were 0.27~1.94% and 0.25~0.69%, respectively. The LOD and LOQ were $0.23{\sim}0.34{\mu}g/g$ and $0.70{\sim}1.03{\mu}g/g$, respectively. These results indicate that the validated method is appropriate for the determination of sesamol, sesamin, and sesamolin.

  • The quality characteristics of Goami by-product under the mixed enzyme treatment condition of $\alpha$-amylase and cellulase have been compared, and found the highest amount of soluble solids and reducing sugars at the $\alpha$-amylase treated group (A), and the contents revealed to show gradual decrease with the increase of cellulase content. The amounts of total dietary fiber and total sugars did not show large difference by both of enzyme concentration. The result of sugar analysis revealed the presence of all $G{\sim}G5$ in all treatment groups, and the content of malto-oligosaccharide recorded the highest content of 2,200 mg% at the $\alpha$-amylase treatment group (A). When the quality characteristic of the hydrolyzed powders manufactured by the optimum hydrolysis condition was compared, no significant color difference was found between samples. Among the contents of dietary fibers, insoluble dietary fiber was found to present in the lowest content of 6.95% at the Goami flour (GF) and the Goami by-product powder (GBPP) and Goami by-product hydrolysate powder (GBPHP) resulted the similar content around 14% and the highest soluble dietary fibers content was found in Goami by-product hydrolysate powder (GBPHP), which was followed by in the order of Goami by-product powder (GBPP) and Goami flour (GF), but the content variation was not large. The free amino acid was found to be highest in Goami by-product hydrolysate powder (GBPHP) followed by in the order of Goami by-product powder (GBPP) and Goami flour (GF). In the sugar analysis, the Goami by-product hydrolysate powder (GBPHP) was found with all $G{\sim}G5$ sugars by showing the highest amount of 1,800 mg% At the Goami by-product powder (GBPP), $G{\sim}G2$ sugars were detected with about 66 mg% and malto-oligosaccharides were not detected at the Goami flour (GF). Based upon the results, the functionality of Goami by-product hydrolysate powder (GBPHP) was found to be enforced compared to Goami flour (GF) and Goami by-product powder (GBPP), which allow us to expect it to be used as the various rice processing food source.

  • Objectives : In the study on the waveform analysis of radial artery pulse diagnosis, we need to establish fundamentals of contemporary pulse diagnosis research. To achieve certain experimental basis on traditional pulse diagnosis, we have to research the differences of pulse waveform according to pressure (in 5 level) and position (Chon, Gwan, Cheok in radial artery). As a first step, in present thesis, we tried to find the differences of pulse waveform according to pressure. Methods and Results : In this research, we analyzed seven parameters of the waveform at five levels of pressure. The parameters are E(so called 'energy', a representative of pulse strength), h1(height of percussion wave) and h2(height of subincisura). The results were as follows. 1. When we analyzed the change of the waveform according to pressure in the left Gwan, E, hl, h2 and A differed between 1st and 2nd grade, between 1st and 3rd grade, between 1st and 4th grade, between 1st and 5th grade, between 2nd and 3rd grade, between 2nd and 5th grade, between 3rd and 5th grade and between 4th and 5th grade in 95% confidence interval. 2. • Objectives : This cross-sectional study was performed to examine if the serum gamma-glutamyltransferase (GGT) level that is within its normal range is associated with the risk of type 2 diabetes and if the association between the waist hip ratio (WHR) and type 2 diabetes is different depending on the serum GGT levels. Methods : The study subjects were 23,436 persons aged 40 years or older and who participated in regular health check-ups at 11 hospitals (males: 5,821, females: 17,615). The gender-specific quintiles of the serum GGT and WHR were used to examine the associations with type 2 diabetes. Results : The serum GGT levels within their normal range were positively associated with type 2 diabetes only in women. The adjusted odds ratios (ORs) were 1.0, 1.0, 1.4, 2.1, and 2.5 according to the quintiles of the serum GGT ($p_{trend}$<0.01). The WHR was more strongly associated with the prevalence of diabetes among the women with a high-normal serum GGT level as compared with those with a low-normal serum GGT level (p for interaction=0.02). For example, the adjusted ORs for women with a low normal serum GGT level were 1.0, 1.2, 1.5, 2.2, and 2.4 according to the quintiles of the WHR, while those figures were 1.0, 2.4, 3.6, 5.0, and 8.3 among the women with a high normal serum GGT level. However, in men, the serum GGT was very weakly associated with type 2 diabetes and the association between the WHR and type 2 diabetes was not different depending on the serum GGT level. Conclusions : Serum GGT within its normal range was positively associated with type 2 diabetes, and central obesity was more strongly associated with the prevalence of type 2 diabetes when the serum GGT level was highnormal. However, these associations were observed only in women, which is different from the previous findings. The stronger relation between central obesity and type 2 diabetes among women with a high-normal serum GGT level can be useful for selecting a group that is at high risk for type 2 diabetes irregardless of whatever the underlying mechanism is.
