메수수가루 첨가에 따른 생면의 품질특성 및 라디칼 소거활성 (Quality and Antioxidant Activity of Wet Noodles Supplemented with Non-glutinous Sorghum Powder)

  • 본 연구에서는 수수 분말 함량이 반죽 분말의 총 5, 10, 15 및 20%가 되도록 첨가하여 제조한 생면의 품질 특성과 총 폴리페놀 및 플라보노이드 함량, 라디칼 소거활성의 변화를 조사하였다. 수수 분말을 첨가한 생면의 조리 후 중량, 부피, 수분 흡수율 및 탁도는 수수 분말 첨가량에 따라 유의적으로 변화하는 경향을 나타내었다. 조리 전 색도는 수수분말을 첨가하였을 때 명도와 황색도는 감소하였고, 적색도는 증가하였으며, 조리 후 면의 색도는 조리 전에 비하여 명도, 적색도 및 황색도 모두 감소하게 나타났다. 수수 분말 첨가 면의 조리 후 인장강도는 force, time 및 distance 모두 메수수가루 첨가량이 증가할수록 감소하는 경향을 나타냈으며, 또한 조리 후 생면의 총 폴리페놀 및 플라보노이드 함량과 라디칼 소거활성을 평가한 결과 첨가량이 증가할수록 유의적으로 증가하였다. 이상의 결과에서 동안메수수가루를 첨가하여 생면을 만들 경우 메수수가루의 첨가는 면의 품질특성은 유지하면서 항산화성을 향상시킬 수 있을 것으로 판단된다.

Evaluation of Antioxidative Activity of Various Levels of Ethanol Extracted Tomato Powder and Application to Pork Patties

  • This study was performed to evaluate antioxidant activity of tomato powder extracted by various concentrations of ethanol (0, 25, 50, 75, 100%) and to evaluate the physicochemical properties and antioxidant activities of pork patties with ethanol extracted tomato (EET) powder. No differences in the contents of total of individual phenolic compounds including gallic acid and catechin, were observed among the treatments (p>0.05). Among the various concentrations, 50% and 75% EET powder showed the highest free radical scavenging and iron chelating activities (p<0.05). Lipid peroxidation was retarded in linoleic acid emulsion with the addition of 50% and 75% EET powder (0.1%). Based on the model study, five pork patties were actually manufactured; control patty, reference patty with 0.01% of butylated hydroxytoluene, patty with 1% of water extracted tomato (WET), and patties with 0.5 and 1.0% of EET. Addition of 1% WET and EET decreased pH value, and increased redness values of pork patties, as compared to the control (p<0.05). Pork patties with WET (1.0%) and EET (0.5% and 1.0%) had lower 2-thiobarbituric acid reactive substances values compared with control patties after 7 d of storage (p<0.05). Pork patties containing EET powder showed lower total bacterial and Enterobacteriaceae counts than control patties (p<0.05). In conclusion, WET and EET (50%) could be used as a natural antioxidant and antimicrobial agent in meat products.

장기간 대기오염 및 기상자료를 이용한 유효강수세정 기여율 회귀모델의 개발 및 유효성 검사 (Development and Validation Test of Effective Wet Scavenging Contribution Regression Models Using Long-term Air Monitoring and Weather Database)

  • This study used long-term air and weather data from 2000 to 2009 as raw data sets to develop regression models in order to estimate precipitation scavenging contributions of ambient $PM_{10}$ and $NO_2$ in Korea. The data were initially analyzed to calculate scavenging ratio (SR), defined as the removal efficiency for $PM_{10}$ and $NO_2$ by actual precipitation. Next, the effective scavenging contributions (ESC) with considering precipitation probability density were calculated for each sector of precipitation range. Finally, the empirical regression equations for the two air pollutants were separately developed, and then the equations were applied to test the model validity with the raw data sets of 2010 and 2011, which were not involved in the modeling process. The results showed that the predicted $PM_{10}$ ESC by the model was 23.8% and the observed $PM_{10}$ ESCs were 23.6% in 2010 and 24.0% in 2011, respectively. As for $NO_2$, the predicted ESC by the model was 16.3% and the observed ESCs were 16.4% in 2010 and 16.6% in 2011, respectively. Thus the developed regression models fitted quite well the actual scavenging contribution for both ambient $PM_{10}$ and $NO_2$. The models can then be used as a good tool to quantitatively apportion the natural and anthropogenic sink contribution in Korea. However, to apply the models for far future, the precipitation probability density function (PPDF) as a weather variable in the model equations must be renewed periodically to increase prediction accuracy and reliability. Further, in order to apply the models in a specific local area, it is recommended that the long-term oriented local PPDF should be inserted in the models.

서울지역 장기간 강수와 미세먼지의 특성 분석에 기반한 미세먼지 세정효과 (Scavenging Efficiency Based on Long-Term Characteristics of Precipitation and Particulate Matters in Seoul, Korea)

  • The variabilities of precipitation and particulate matters (i.e., PM10 and PM2.5) and the scavenging efficiency of PMs by precipitation were quantified using long-term measurements in Seoul, Korea. The 21 years (2001~2021) measurements of precipitation and PM10 mass concentrations, and the 7 years (2015~2021) of PM2.5 mass concentrations were used. Statistical analysis was performed for each period (i.e., year, season, and month) to identify the long-term variabilities of PMs and precipitation. PM10 and PM2.5 decreased annually and the decreasing rate of PM10 was greater than PM2.5. The precipitation intensity did not show notable variation, whereas the annual precipitation amount showed a decreasing trend. The summer precipitation amount contributed 61.10% to the annual precipitation amount. The scavenging efficiency by precipitation was analyzed based on precipitation events separated by 2-hour time intervals between hourly precipitation data for 7 years. The scavenging efficiencies of PM10 and PM2.5 were quantified as a function of precipitation characteristics (i.e., precipitation intensity, amount, and duration). The calculated average scavenging efficiency of PM10 (PM2.5) was 39.59% (35.51%). PM10 and PM2.5 were not always simultaneously scavenged due to precipitation events. Precipitation events that simultaneously scavenged PM10 and PM2.5 contributed 42.24% of all events, with average scavenging efficiency of 42.93% and 43.39%. The precipitation characteristics (i.e., precipitation intensity, precipitation amount, and precipitation duration) quantified in these events were 2.42 mm hr-1, 15.44 mm, and 5.51 hours. This result corresponds to 145% (349%; 224%) of precipitation intensity (amount; duration) for the precipitation events that do not simultaneously scavenge PM10 and PM2.5.

Effect of Far-infrared Radiation for Dying Citrus By-products and Their Radical Scavenging Activities and Protective Effects Against H2O2-induced DNA Damage

  • Efficiency of a far-infrared radiation (FIR) dryer for drying of citrus by-products (CBPs) was evaluated through their antioxidant activities. The CBPs dried through FIR were enzymatically digested by six carbohydrases (AMG, Celluclast, Pectinase, Termamyl, Ultraflo and Viscozyme) to prepare digests for evaluation of the activities. The total polyphenolic and total flavonoid contents of the digests were determined by colorimetric assays. The AMG digest was selected for the further experiments. The antioxidant potential of the digests were evaluated by DPPH, superoxide, hydroxyl and alkyl radical scavenging activities, $H_2O_2$ scavenging activity, metal chelating, lipid peroxidation inhibition and the reduction of DNA damage. The AMG digest from CBPs dried through FIR at $50^{\circ}C$ showed strong antioxidant activities in DPPH, superoxide, hydrogen peroxide, alkyl and metal chelating assays while all the digests showed strong lipid peroxidation activities. Further, enzymatic digests showed remarkable inhibitory activities against $H_2O_2$-induced DNA damage. Hence, the data obtained using different in vitro models clearly established the antioxidant potential of enzymatic digests from CBPs dried through FIR. Furthermore, they can be used as a source of natural antioxidants; hence, far-infrared radiation drying is a viable method for transforming wet CBPs into a dried form without destroying the bioactive components.

동결 건조 자색고구마 가루를 첨가한 국수의 품질특성 및 항산화성 (Quality Characteristics of Wet Noodles Added with Freeze-dried Purple Sweet Potato Powder)

  • 본 연구는 동결로 건조한 자색고구마 가루를 첨가하여 국수를 제조하고 안토시아닌 함량과 항산화 활성도 및 품질특성을 검토하여 국수 제조 시 최적의 비율을 연구하고자 하였다. 색도는 자색고구마 분말 첨가량이 증가 할수록 명도(L)와 황색도(b)는 대조군에 비해 점차 감소하는 경향이 나타났고 적색도(a)는 첨가량이 증가 할수록 확연히 증가하였다. 안토시아닌 함량은 99.62, 항산화 활성도는 94.60로 비교적 우수한 것으로 나타났다. 조리한 국수의 기계적 성질은 견고성, 응집성 및 씹힘성은 첨가량이 증가 할수록 감소하는 경향을 보였으며 탄력성과 점착성에서 유의적 차이를 확인할 수 있었다. 관능적 품질 평가에서는 색, 향미, 맛과 씹힘성 및 전반적 기호도에서 6% 첨가군이 가장 높게 평가되었으며 안토시아닌 함량과 DPPH 라디컬 소거 활성에서 우수한 결과로 나타나 품질 특성과 관능검사에서 긍정적으로 평가된 6% 첨가군이 국수 제조 시 가장 알맞은 첨가 비율로 사료된다.

벌 화분에서 습식 나노화 공정에 의한 유효성분의 추출 (Enhanced Extraction of Bioactive Compounds from Bee Pollen by Wet-grinding Technology)

  • 벌 화분은 꿀벌로부터 생산되며 자연으로부터 얻을 수 있는 가장 균형 잡힌 영양 식품으로 받아들여지고 있다. 역사적으로도 벌 화분은 질병치료와 에너지 보충의 목적으로 사용되어 왔다. 최근의 연구 결과에서는 벌 화분의 항산화, 항염증, 심지어 항암작용과 같은 다양한 생리활성이 과학적으로 규명되고 있다. 그러나 벌 화분은 exine이라는 외피로 둘러싸여 있어 강산이나 고압 그리고 소화효소 등에 매우 저항성이 강한 것으로 밝혀졌고, 이로 인하여 생체이용률이 낮아 영양공급과 임상적 이용에 제한을 받고 있다. 본 연구는 벌 화분의 외피를 분쇄할 수 있는 습식분쇄기술을 개발하여 벌 화분의 생리활성을 분석하고자 기획되었다. 먼저 습식분쇄를 통해 벌 화분의 외피가 효과적으로 분쇄됨을 현미경을 통해 확인하였다. 게다가 습식분쇄에 의해 벌 화분의 활성성분으로 잘 알려진 polyphenol 화합물의 양이 약 11배 증가하였고 ABTS 항산화 분석법과 DPPH 라디칼 소거능 시험을 통해 항산화 효과가 증가함을 확인하였다. 이러한 결과는 습식분쇄기술을 통해 벌 화분을 임상적 및 향장 목적으로 사용할 수 있음을 증명한다.

승검초분말을 첨가한 생면의 품질특성 및 항산화 활성 (Quality characteristics and antioxidant activities of wet noodle added with seunggumcho (Angelica gigas N Leaf) powder)

  • 본 논문에서는 승검초를 동결건조하여 분말을 제조하고 이를 각각 밀가루 중량 대비 1, 2, 3, 4% 첨가한 생면을 제조하였다. 수분함량, pH, 색도, 총 폴리페놀함량, DPPH radical 소거활성, ${\alpha}-glucosidase$ 저해활성의 다각적인 품질특성을 분석하였다. 승검초분말을 첨가한 생면의 조리 후 중량, 부피, 수분흡수율, 탁도는 승검초분말의 첨가량이 증가함에 따라 유의적으로 변화하였다. 조리면의 경도와 탄력성은 승검초분말 첨가량이 증가함에 따라 감소하였다. 총 폴리페놀 함량은 40.53-59.27 mg GA/100 g으로 나타났으며, DPPH 라디칼 저해 활성은 승검초분말 무첨가구에서 10.85%, 첨가량이 증가할수록 15.51, 27.64, 42.48과 44.84%로 증가하여 총 폴리페놀 함량과 양의 상관관계를 보였다. 생면의 ${\alpha}-glucosidase$ 저해활성도 첨가량에 따라 증가하여 혈당 상승 억제 효과를 확인하였다. 또한 조리면의 소비자 기호도 조사를 실시하여 색(color), 향(flavor)과 맛(taste), 쫄깃한 정도(chewiness)를 조사하여 승검초분말 2% 첨가군이 색, 향, 맛, 쫄깃한 정도, 전반적인 기호도에서 가장 높은 점수를 보였다. 본 연구결과 기호도가 높은 첨가군의 최적 배합비율을 제시하고 건강기능성을 포함한 식품으로서 승검초 첨가 생면의 개발 가능성과 승검초를 이용한 다양한 건강식품 개발에 기초자료를 제시하였다.

장기간 대기오염 및 기상측정 자료 (2000~2009)를 이용한 PM10과 NO2의 강수세정 기여율과 바람분산 기여율의 정량적 추정연구 (Quantitative Estimation of Precipitation Scavenging and Wind Dispersion Contributions for PM10 and NO2 Using Long-term Air and Weather Monitoring Database during 2000~2009 in Korea)

  • Long-term air and weather data monitored during the period of 2000 to 2009 were analyzed to quantitatively estimate the precipitation scavenging and wind dispersion contributions of ambient $PM_{10}$ and $NO_2$ in Korea. Both air pollutants and meteorological data had been respectively collected from 120 stations by the Ministry of Environment and from 20 weather stations by the Korea Meteorological Administrations in all parts of Korea. To stochastically identify the relation between a meteorological factor and an air pollutant, we initially defined the SR (scavenging ratio) and the DR (dispersion ratio) to separately calculate the precipitation and wind speed effects on the removal of a specific air pollutant. We could then estimate the OSC (overall scavenging contribution) and the ODC (overall dispersion contribution) with considering sectoral precipitation and wind speed probability density distributions independently. In this study, the SRs for both $PM_{10}$ and $NO_2$ were generally increased with increasing the amounts of precipitation and then the OSCs for $PM_{10}$ and $NO_2$ were estimated by 22.3% and 15.7% on an average in Korea, respectively. However, the trend of the DR was quite different from that of SR. The DR for $PM_{10}$ was increased with increasing wind speed up to 2.5 m/s and further the DR for $NO_2$ showed a minimum in the range of $1<WS{\leq}1.5$. The ODCs for $PM_{10}$ and $NO_2$ were estimated by 14.9% and 1.0% in Korea, respectively. Finally, we have also provided an interesting case study observed in Seoul.

Laboratory-scale Experiment and Model Calculation on the Washout Mechanism of Asian Dust Particles

  • In this study, an investigation was conducted to assess the washout mechanism of Asian dust particles through both laboratory-scale experiment and model calculation. To artificially simulate Asian dust particle, $CaCO_3$ particles were generated inside an experimental chamber. They were then scavenged by the artificial rain drops. The abundant $CaCO_3$ particles scavenged on a rain drop were successively identified by SEM observation. The concentrations of Ca in residual $CaCO_3$ particles on individual droplet were quantified by PIXE analysis. There was a tendency toward a high accumulation of Ca on a relatively small drop (e.g., <1.0 mm diameter). It is thus suggested that smaller rain drops can effectively scavenge a significant amount of Asian dust particles in ambient atmosphere. The numerical estimation can account for 92.1% and 83.2% of Ca that were measured in small (<1.0 mm diameter) and large (>2.0 mm diameter) size drops, respectively.
