비타민 강화 방법에 따른 UHT 우유의 비타민 함량에 대한 연구 (A Study on the Vitamins Contents in UHT Milk according to Fortification Methods)

  • 우유 중에는 여러 종류의 생리활성물질과 우리 몸에 꼭 필요한 비타민이 매우 소량 함유되어 있어, 그 강화를 목적으로 유가공 산업의 발전과 더불어 다양한 비타민 강화우유가 소개되고 있다. 이에 본 연구에서는 가공 처리 및 비타민 강화 방법에 따른 비타민류의 손실율을 조사하였다. 실험 결과, UHT 처리 후에 비타민 C는 60~70% 가까운 손실율을 보였으며, 비교적 열에 안정하다고 알려진 지용성 비타민인 비타민 D$_3$와 비타민 E도 30~40%의 손실율을 보여 주었다. 이에 반해 비타민을 캡슐 형태로 강화하였을 경우에는 수용성 비타민의 손실율은 상대적으로 매우 낮음을 알 수 있었다. 이는 캡슬에 의해 열뿐 아니라 산소, 빛 등이 효과적으로 차단되어 비타민의 손실이 최소화된 것이라 생각된다. 따라서 열처리에 의한 시유 및 강화우유 중의 비타민의 손실을 최소화하기 위해서는 우유의 살균 온도 및 시간, 강화제 첨가 방법 등에 대한 지속적인 연구가 이루어져야 할 것으로 사료된다.

꽃송이버섯의 미네랄, 아미노산, 비타민 함량분석 (Analysis of Mineral, Amino Acid and Vitamin Contents of Fruiting Body of Sparassis crispa.)

  • 꽃송이 버섯을 이용한 의약품 및 건강기능성 식품 개발을 위한 기초자료의 목적으로 자실체의 미네랄, 아미노산 및 비타민 함량을 조사하였다. 꽃송이버섯 자실체의 건조중량 100g을 기준으로 조사한 미네랄성분은 K, P, Na, Mg가 주성분을 이루었으며 이 중 K가 1,299.44 mg로 가장 많이 함유되어 있었다. 유리아미노산의 총 함량은 3,233.45 mg이며 이중 glutamic acid 724.46 mg로 함량이 가장 높았고 전체 유리아미노산의 22.5%를 차지하였다. 총 아미노산의 함량은 8,230 mg이며 이 중 glutamine와 glutamic acid의 합이 1,960 mg로 전체 구성아미노산의 23.8%를 차지하였고 구성아미노산 중 필수아미노산은 2,985 mg이었다. 검출된 8가지의 비타민 중 vitamin E 408.5 mg, vitamin C21.58 mg로 높은 함량을 보였고 특히 칼슘보충에 도움을 주는 vitamin $D_3$은 0.166 mg로 곰보버섯보다 3배 이상 높은 함량을 나타내었다.

Nutritional status and the role of diabetes mellitus in hemodialysis patients

  • This study was aimed to investigate the nutritional status and the role of diabetes mellitus in hemodialysis (HD) patients. Anthropometric, biochemical, and dietary assessments for HD 110 patients (46 males and 64 females) were conducted. Mean body mass index (BMI) was $22.1\;kg/m^2$ and prevalence of underweight (BMI<$18.5\;kg/m^2$) was 12%. The hypoalbuminemia (<3.5 g/dl) was found in 15.5% of the subject, and hypocholesterolemia (<150 mg/dl) in 46.4%. About half (50.9%) patients had anemia (hemoglobin: <11.0 g/dL). High prevalence of hyperphosphatemia (66.4%) and hyperkalemia (43.5%) was also observed. More than 60 percent of subjects were below the recommended intake levels of energy (30-35 kcal/kg IBW) and protein (1.2 g/kg IBW). The proportions of subjects taking less than estimated average requirements for calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, and folate were more than 50%, whereas, about 20% of the subjects were above the recommended intake of phosphorus and potassium. Diabetes mellitus was the main cause of ESRD (45.5%). The diabetic ESRD patients showed higher HMI and less HD adequacy than nondiabetic patients. Diabetic patients also showed lower HDL-cholesterol levels. Diabetic ESRD patients had less energy from fat and a greater percentage of calories from carbohydrates. In conclusion, active nutrition monitoring is needed to improve the nutritional status of HD patients. A follow-up study is needed to document a causal relation between diabetes and its impact on morbidity and mortality in ESRD patients.

Effects of Feeding Methods (Feed vs. Water) of Vitamin E on Growth Performance and Meat Quality of Broilers

  • This research was conducted to compare the effects of vitamin E (VE) when supplemented in either feed or water on the performance and meat quality of broilers. For a six-week feeding trial, a total of 330 broiler chicks were allotted to five treatments. The treatments were 1) 0 ppm VE, 2) 10 ppm VE in feed, 3) 20 ppm VE in feed, 4) 5 ppm VE in water and 5) 10 ppm VE in water. During the starter phase (0-3 weeks) chicks on non-supplemented groups grew slower (p<0.05) than the supplemented ones and the same trend was followed during the finisher (4-6 weeks) and overall period (0-6 weeks). The feed intake was significantly higher in feed supplemented groups as compared with water-supplemented groups and at higher levels as compared with lower levels of supplementation. The nutrient digestibility studies conducted after 15 and 35 days on the feeding trial showed that the digestibility of all nutrients was significantly (p<0.05) higher in supplemented groups than the non-supplemented one. The dressing percentage was higher in supplemented groups, when fed in feed and at higher levels when compared with their respective counterparts. Similar trends were noticed with respect to bone resistance. The calcium and phosphorus contents in tibia were also significantly (p<0.05) higher in supplemented, feed fed groups at higher levels than other groups. The TBARS values measured after 5 and 10 days of storage, which reflect the degree of oxidation, showed significantly lower levels in supplemented diets. The plasma and muscle vitamin E levels also showed a positive linear correlation with the levels supplemented both in feed and water. Overall it can be inferred that supplementation of VE was beneficial and there was not much difference observed when fed either in feed or water at the levels measured in the present study.

영양 섭취와 만성질환 예방을 위한 우유의 역할 (The Role of Milk Product in Nutritional Intake and Chronic Disease Reduction)

  • The milk product is one of the major foods which provide calcium for nutritional requirement. In addition to calcium, it supplies diverse nutrients including protein, potassium, vitamin A, vitamin $B_1$, and vitamin $B_2$. Adequate calcium intake throughout lifetime ensures optimum bone density and prevents osteoporosis in old age by reducing loss of bone mineral during growth and aging. The nutritional deficiency of calcium intake and spreading of osteoporosis in Korean population accentuated necessity of adequate calcium intake through milk consumption. Obstruction of milk consumption due to lactose intolerance should be overcome by educational programs for adequate milk consumption and low-lactose milk product developments. Consumption of milk products was reported to prevent high blood pressure in clinical studies and epidemiological investigations. As the feeding of milk increased, the body weight and fat of animal decreased in animal studies. The epidemiological investigations revealed that there was a negative correlation between the amount of milk consumption and the body fat. When calcium was provided as dietary supplement in the clinical trials, the body weight and body fat of subjects decreased. When calcium was particularly supplied as a part of milk, the body weight reduction rate was augmented. Calcium, vitamin D, and conjugated linoleic acid have been reported to exert a role in reducing cancer. The paramount importance of milk in nutrition as a source of calcium and other invaluable nutrients emphasizes consistent supply of milk products to adults as well as adolescents by dairy industry.

Association between cord blood 25-hydroxyvitamin D concentrations and respiratory tract infections in the first 6 months of age in a Korean population: a birth cohort study (COCOA)

  • Purpose: Previous studies suggest that the concentration of 25-hydroxyvitamin D [25(OH)D] in cord blood may show an inverse association with respiratory tract infections (RTI) during childhood. The aim of the present study was to examine the influence of 25(OH)D concentrations in cord blood on infant RTI in a Korean birth cohort. Methods: The levels of 25(OH)D in cord blood obtained from 525 Korean newborns in the prospective COhort for Childhood Origin of Asthma and allergic diseases were examined. The primary outcome variable of interest was the prevalence of RTI at 6-month follow-up, as diagnosed by pediatricians and pediatric allergy and pulmonology specialists. RTI included acute nasopharyngitis, rhinosinusitis, otitis media, croup, tracheobronchitis, bronchiolitis, and pneumonia. Results: The median concentration of 25(OH)D in cord blood was 32.0 nmol/L (interquartile range, 21.4 to 53.2). One hundred and eighty neonates (34.3%) showed 25(OH)D concentrations less than 25.0 nmol/L, 292 (55.6%) showed 25(OH)D concentrations of 25.0-74.9 nmol/L, and 53 (10.1%) showed concentrations of ${\geq}75.0$ nmol/L. Adjusting for the season of birth, multivitamin intake during pregnancy, and exposure to passive smoking during pregnancy, 25(OH)D concentrations showed an inverse association with the risk of acquiring acute nasopharyngitis by 6 months of age (P for trend=0.0004). Conclusion: The results show that 89.9% of healthy newborns in Korea are born with vitamin D insufficiency or deficiency (55.6% and 34.3%, respectively). Cord blood vitamin D insufficiency or deficiency in healthy neonates is associated with an increased risk of acute nasopharyngitis by 6 months of age. More time spent outdoors and more intensified vitamin D supplementation for pregnant women may be needed to prevent the onset of acute nasopharyngitis in infants.

건조방법에 따른 분말 청국장의 비타민 함량과 관능적 특성의 비교 (Comparison of Vitamin Contents and Organoleptic Characteristics in Powdered Cheongkukjang Dried by Different Drying Methods)

  • Cheongkukjang is a traditional fermented soybean food in Korea that is used in the manufacture of functional foods. This study was conducted to assess vitamin contents and sensory qualities of powdered Cheongkukjang dried by oven drying, far-infrared drying and freeze drying. Vitamins $B_1$, $B_2$, $B_6$, E, niacin and pantothenic acid were detected using all drying methods. However, vitamin D was not detected in the oven drying samples, and was most prevalent($82.47{\mu}g$/100 g) in the far-infrared drying samples. The sensory characteristics included color, off flavor, salty taste, bitter taste, sweet taste, roasted taste and after-taste. Oven drying and freeze drying samples exhibited highest and lowest color scores(5.62 and 2.0, respectively). Oven drying samples also exhibited the highest roasted taste score(4.76), although not significantly different from far-infrared drying samples(4.0, p<0.05), while the score of freeze drying samples(2.38) was significantly different from the other methods(p<0.05). It is concluded that freeze drying is most suitable.

식품영양성분 데이터베이스 활용도 및 요구도 조사 (Survey on utilization and demand for national food composition database)

  • 본 연구는 영양사와 영양교사, 식품업계 종사자, 식품영양학과 교수와 연구자 등 총 349명의 식품영양전문가들의 국가식품영양성분 DB에 대한 활용 현황과 요구도를 조사하고, DB 구축 및 갱신 시에 보완과 추가가 필요한 영양소를 선정함으로써 효율적인 식품영양성분 DB 구축을 위한 방안을 제시하고자 하였다. 본 연구 결과는 다음과 같다. 1. 현재 사용되고 있는 모든 식품영양성분 DB들에 대한 영양전문가들의 사용 경험 즉, 활용도는 약 73.6%로 높았고, 특히 식품영양 연구자군이 97.8%로 가장 높았다. 2. 식품영양성분 DB를 활용한 프로그램의 사용경험은 90.5%로 식품영양성분 DB 자체를 사용한 경험보다 더 높게 나타나, DB 자체 보다는 DB를 활용하여 개발한 프로그램에 대한 사용의존도가 더 높음을 알 수 있었다. 3. 식품영양성분 DB의 각 영양성분별 활용도를 조사한 결과, 활용도가 높은 영양소는 단백질, 탄수화물, 지질이었고, 비타민 중에서는 비타민 C, 비타민 A, 비타민 D가, 무기질 중에서는 나트륨과 칼슘의 활용도가 높았다. 반면, 개별 아미노산과 개별 지방산, 토코트리에놀, 망간, 황, 불소 및 크롬의 활용도는 낮았다. 4. 조사대상자의 직종별로 영양성분 활용도를 비교한 결과 식품영양 연구자군은 모든 영양성분에 있어 전반적으로 활용도가 높았고, 특히 식이섬유와 비타민 A, 엽산, 비타민 C, n-3 지방산, 콜레스테롤, 레티놀, 베타카로틴, 비타민 E와 토코페롤, 비타민 $B_2$, 니아신과 비타민 $B_6$의 활용도가 다른 직종에 비해 높았다. 5. 피토케미컬 DB를 활용한 경험은 전체 대상자 중 17.4%이었고, 식품영양 연구자군이 33%, 식품산업체 종사자군이 18.8%, 영양사 및 영양교사가 14.5%의 활용도를 보이는 것으로 나타났다. 피토케미컬 중에서 카로티노이드류, 안토시아닌류, 이소플라본류의 순으로 DB 활용도가 높았다. 6. 식품영양성분 DB의 영양소별 중요도는 활용도 조사결과와 유사한 경향을 보였고, 모든 영양성분별 중요도 점수가 5점 만점에 3점을 상회하여 대체로 보통이상의 중요도를 가진 것으로 평가하였다. 7. 앞으로 식품영양성분 DB에 보완 또는 추가되기를 희망하는 영양성분은 당류와 비타민 D, 엽산, 셀레늄, 요오드, 식이섬유, 비타민 $B_{12}$, 카로티노이드류 등으로 나타났다. 이상의 결과로 볼 때, 각 정부 부처의 노력으로 구축된 한국의 식품영양성분 DB는 여러 가지 목적으로 활용되고 있는데, 급변하는 사회에서 필요로 하는 영양정보를 얻기 위해 보다 완성도 높고 다양한 영양소가 보완된 국가식품영양성분 DB 구축에 대한 요구가 큰 것으로 파악되었다. 앞으로 다양한 분야의 소비자를 대상으로 한 요구도 조사가 이루어질 필요가 있으며, 이를 DB 개선에 반영해야 할 것으로 보인다.

Hypertonicity Down-regulates the $1{\alpha},25(OH)_2$ Vitamin $D_3$-induced Osteoclastogenesis Via the Modulation of RANKL Expression in Osteoblast

  • Bone remodeling is a process controlled by the action of two major bone cells; the bone forming osteoblast and the bone resorbing osteoclast. In the process of osteoclastogenesis, stromal cells and osteoblast produce RANKL, OPG, and M-CSF, which in turn regulate the osteoclastogenesis. During the bone resorption by activated osteoclasts, extracellular $Ca^{2+}/{PO_4}^{2-}$ concentration and degraded organic materials goes up, providing the hypertonic microenvironment. In this study, we tested the effects of hypertonicity due to the degraded organic materials on osteoclastogenesis in co-culture system. It was examined the cellular response of osteoblastic cell in terms of osteoclastogenesis by applying the sucrose, and mannitol, as a substitute of degraded organic materials to co-culture system. Apart from the sucrose, mannitol, and NaCl was tested to be compared to the effect of organic osmotic particles. The addition of sucrose and mannitol (25, 50, 100, 150, or 200 mM) to co-culture medium inhibited the number of tartrate-resistant acid phosphatase (TRAP) positive multinucleated cells induced by 10 nM $1{\alpha},25(OH)_2vitaminD_3$ ($1{\alpha},25(OH)_2D_3$). However, NaCl did exert harmful effect upon the cells in this co-culture system, which is attributed to DNA damage in high concentration of NaCl. To further investigate the mechanism by which hypertonicity inhibits $1{\alpha},25(OH)_2D_3$-induced osteoclastogenesis, the mRNA expressions of receptor activator of nuclear factor (NF)-kB ligand (RANKL) and osteoprotegerin (OPG) were monitored by RT-PCR. In the presence of sucrose (50 mM), RANKL mRNA expression was decreased in a dose-dependent manner, while the change in OPG and M-CSF mRNA were not occurred in significantly. The RANKL mRNA expression was inhibited for 48 hours in the presence of sucrose (50 mM), but such a decrement recovered after 72 hours. However, there were no considerable changes in the expression of OPG and M-CSF mRNA. Conclusively, these findings strongly suggest that hypertonic stress down-regulates $1{\alpha},25(OH)_2D_3$-induced osteoclastogenesis via RANKL signal pathway in osteoblastic cell, and may playa pivotal role as a regulator that modulates osteoclastogenesis.

성염색체 연관 저인산혈증성 구루병 환자의 증례 보고 (X-LINKED HYPOPHOSPHATEMIC RICKETS : CASE REPORT)

  • X-linked hypophosphatemic rickets(이하 XLH로 기술)는 구루병의 일종으로 임상적으로는 비타민 D의 대량 투여로도 개선되지 않고 성염색체 우성 유전되는 유전성 질환이다. 저인산혈증성 구루병, 비타민 D저항성 구루병이라고도 불린다. 본 증례는 서울대학교병원 소아과에서 XLH로 진단받은 6세 6개월의 여아로, 상악 좌측 중절치의 매복을 주소로 소아치과에 의뢰된 환자이다. 환아는 XLH환자에서 전형적으로 보이는 보행 장애, 다리의 휨현상 작은 키, 손목, 무릎, 발목 관절의 종창 등이 관찰되었다. 또 치과적 특징으로 임상적으로 건전한 치아에서 자발적인 치근단 농양과 농루가 발생하였고 치아의 맹출 지연, 우상치 (taurodontism), 근단공의 폐쇄 지연, 확대된 치수강 등을 나타내었기에 이전 문헌 고찰을 통하여 XLH 환아의 특징을 살펴보고 본 환자의 의과적, 치과적 특성 및 매복된 치아의 치료에 대하여 보고하는 바이다.
